&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;Caramel Sauce&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;1 cup granulated sugar&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;1/4 cup water&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;3/4 cup whipping cream&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;1. In a large bowl, cream butter and granulated sugar.&amp;nbsp; Beat in eggs one at&amp;nbsp;a&amp;nbsp;time.&amp;nbsp; Beat in vanilla and lemon peel.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;2. In a separate bowl, combine flour, baking powder, baking soda and salt.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;3. Add flour to butter mixture alternating with yogurt in three or four additions, beginning and ending with flour.&amp;nbsp; After each addition, stir until just combined.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;4. Spoon batter into well greased bundt pan.&amp;nbsp; Bake in a pre-heated 350F oven for 40 to 45 minutes or until a cake tester inserted in the cake comes out clean.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;5. Cool pan for 10 minutes.&amp;nbsp; Loosen cake around edges, remove from pan and transfer to a rack.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;6. Meanwhile, combine lemon juice and icing sugar.&amp;nbsp; Mixture should be runny.&amp;nbsp; When cake is cool, drizzle glaze over cake.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;Serve with Caramel Sauce.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

But first, last week's recipe was A Fig Cake For Fall.&amp;nbsp; This is a lovely and not-too-sweet cake made with cornmeal.&amp;nbsp; I think a finer grain of cornmeal than the one I used would have prevented it from drying out the next day.&amp;nbsp; Instead of figs, I stewed Italian plums in port.&amp;nbsp; They were delicious and provided a great syrup.&amp;nbsp; It was chosen by Alvarosa of the blog &lt;a href="http://cookierookie-alvarosa.blogspot.com/2011/10/twd-fig-cake-for-fall.html"&gt;Cookie Rookie&lt;/a&gt;.&lt;br /&gt;

To me it tasted like a pecan pie but with eggy custard where there should be treacle.&amp;nbsp; My tastebuds were confused and not satisfied, but the family loved it.&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;Getting Ready:&amp;nbsp; Center a rack in the oven and preheat the oven to 325 degrees F.&amp;nbsp; Line a 9-inch square pan with foil, butter the foil and place the pan on a baking sheet.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;Whisk the flour, salt and ground ginger together.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;Put the minced fresh ginger and 1 1/2 tbsp of the sugar in a small bowl, stir and set aside.&amp;nbsp; (If you do this a day ahead, cover the bowl with plastic wrap; if you do it several days ahead, cover and refrigerate.)&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;Melt the chocolates in a heatproof bowl set over a saucepan of simmering water, or melt them in a microwave oven; keep the heat low so the chocolates do not get very hot.&amp;nbsp; Set aside to cool.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter at medium speed until it is smooth and creamy.&amp;nbsp; Beat in the corn syrup, then the remaining 1 cup sugar, and continue to &lt;/em&gt;&lt;em&gt;beat for another 2 minutes or so, until the butter is smooth again and the sugar is incorporated.&amp;nbsp; Add the vanilla.&amp;nbsp; On medium speed, add the eggs one at a time, beating for 1 minute after each one goes in and scraping the bowl down as needed.&amp;nbsp; Beat for 1 minute more, then reduce the mixer speed to low and add the macerated ginger (and any liquid), then the dry ingredients, mixing only until the flour disappears.&amp;nbsp; Remove the bowl from the mixer and, using a rubber spatula, gently and thoroughly stir in the melted chocolate.&amp;nbsp; Scrape the batter into the pan.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;Bake for 30 to 35 minute, or until the top forms an even sugar crust; a thin knife inserted into the center of the brownies should have streaks of moist, fudgy chocolate on it.&amp;nbsp; Transfer the pan to a rack and cool to room temperature.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;em&gt;When the brownies are completely cool, turn out onto a rack, peel away the foil and invert onto a cutting board.&amp;nbsp; Cut into 16 squares, each roughly 2 1/4 inches on a side.&lt;/em&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

My honey cake recipe comes from my&amp;nbsp;first recipe book.&amp;nbsp; It's Craig Claiborne's The New York Times Cookbook (pub. 1961).&amp;nbsp; Nothing to tweak in this recipe.&amp;nbsp; It's perfect as is.&amp;nbsp; Though, I added my own icing because, well, we like icing.&amp;nbsp; &lt;br /&gt;
&lt;br /&gt;

&lt;br /&gt;
&lt;em&gt;Honey Cake&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;&amp;nbsp;4 eggs&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1 cup sugar&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1 cup honey (I used wildflower.)&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/2 cup strong coffee&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;2 tbsp oil (I used canola.)&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;3 1/2 cups flour&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1 1/2 tsp baking powder&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1 tsp baking soda&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/4 tsp cloves&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/2 tsp allspice&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/2 tsp cinnamon&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/2 cup chopped nuts (I used walnuts.)&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/2 cup raisins (I used currants.)&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/2 cup citron, finely cut&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;2 tbsp cognac (I omitted this.)&lt;/em&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;em&gt;Preheat oven to 300F.&amp;nbsp; Line a 10 x 15 x 2 1/4" pan with waxed paper.&amp;nbsp; (I used a lined 12x9" pyrex.)&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;Beat the eggs lightly.&amp;nbsp; Add the sugar gradually and continue beating until the mixture is light and fluffy.&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;Combine the honey and coffee and stir it into the oil.&amp;nbsp; Blend the mixture into the eggs and sugar.&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;Sift the flour, baking powder, soda and spices together.&amp;nbsp; Stir in the nuts, raisins and citron and blend the mixture into the egg mixture.&amp;nbsp; Stir in the cognac and pour the batter into the prepared pan.&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;Bake one hour.&amp;nbsp; Cool and cut into squares.&lt;/em&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;em&gt;Icing&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/2 cup cream cheese&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/3 cup butter&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/4 cup Crisco&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/2 tsp vanilla&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1 1/2 cups icing sugar&lt;/em&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;em&gt;Cream the soft ingredients.&amp;nbsp; Add the vanilla.&amp;nbsp; Slowly mix in the icing sugar, tasting after each 1/2 cup.&amp;nbsp;&lt;/em&gt;&lt;br /&gt;

1 3/4 sticks unsalted butter,  room temperature&lt;br /&gt;
1 cup minus 2 TBSP sugar&lt;br /&gt;
1/4 cup chopped walnuts or  pecans&lt;/em&gt;&lt;/span&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;span style="font-family: inherit;"&gt;&lt;em&gt;2 cups cranberries-fresh or frozen(if frozen, do not  thaw)&lt;/em&gt; I used&amp;nbsp; 8 fresh figs cut into quarters.&lt;/span&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;span style="font-family: inherit;"&gt;&lt;em&gt;2 large eggs&lt;br /&gt;
1 tsp vanilla extract&lt;br /&gt;
1/3 whole  milk&lt;br /&gt;
1/3 cup red currant jelly, for glazing the cake&lt;br /&gt;
Center a rack in the  oven and preheat the oven to 350F. Put a 8X2 inch round cake pan on a baking  sheet.&lt;br /&gt;
Whisk together the flour, baking powder, salt and cinnamon.&lt;br /&gt;
Melt 6  TBSP of the butter in a small saucepan. Sprinkle in 6 TBSP of the sugar and  cook, stirring, until the mixture comes to a boil. Pour this evenly over the  bottom of the cake pan, then scatter over the nuts and top with the cranberries,  smoothing the layer and pressing it down gently with your fingertips. Set  aside.&lt;br /&gt;

Add the remaining 1/2 cup of sugar and  continue to beat until pale and creamy, about 3 minutes. Add the eggs one at a  time, beating for 1 minute after each addition and scraping down the bowl as  needed. Pour in the vanilla. Reduce the mixer speed to low and add half of the  dry ingredients, mixing only until they disappear into the batter. Mix in the  milk, then the rest of the dry ingredients. Spoon the batter over the  cranberries and smooth the top with a rubber spatula.&lt;br /&gt;
Bake for 40-45 minutes,  or until the cake is golden and a thin knife inserted into the center of the  cake comes out clean. Remove it from the oven and run a blunt knife between the  sides of the pan and the cake. Carefully turn the cake out onto a serving  platter. If any of the berries stick to the pan-as they might-just scrape them  off with a table knife and return them to the cake.&lt;br /&gt;
Warm the jelly in a small  saucepan over low heat, or do this in a microwave oven. Gently brush the glaze  over the hot cake.&lt;/em&gt;&lt;/span&gt;&lt;/div&gt;&lt;span style="font-family: inherit;"&gt;&lt;em&gt;&lt;/em&gt;&lt;/span&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;When Dorie suggested, in her recipe, to flatten the dough into a rectangle and then roll it into a log, I thought this was the perfect fix for a very sticky batter.&amp;nbsp; She even advised that you make sure the log is&amp;nbsp;solid, so&amp;nbsp;you are not&amp;nbsp;left with a hole in the centre.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

Here, I've paired the cookie with the last of my Creamy Dark Chocolate Sorbet.&amp;nbsp; That was a recipe chosen earlier in the summer by Steph of &lt;a href="http://awhiskandaspoon.com/2011/07/26/twd-creamy-dark-chocolate-sorbet/"&gt;A Whisk and a Spoon&lt;/a&gt;.&amp;nbsp;&amp;nbsp;This being my first sorbet, I was very surprised by the creamy texture.&amp;nbsp; Delicious and so easy to put together.&lt;br /&gt;

Last week's recipe, Cornmeal and Fruit Loaf,&amp;nbsp;was the pick of Caitin from &lt;a href="http://engineerbaker.blogspot.com/2011/08/twd-cornmeal-and-fruit-loaf.html"&gt;Engineer Baker&lt;/a&gt;.&amp;nbsp; I love anything with cornmeal, so this recipe had me at hello.&amp;nbsp; I liked the density of the added grated apples - I omitted any dried fruit.&amp;nbsp; The bread made a lovely morning toast with a slight spread of jam.&lt;br /&gt;

Lastly, my favourite recipe of the summer was Carrot Spice Muffins, the choice of Nancy at &lt;a href="http://noe847.blogspot.com/2011/08/twd-carrot-spice-muffins.html"&gt;The Dog Eats The Crumbs&lt;/a&gt;.&amp;nbsp;&amp;nbsp; I made this several times over the summer and will continue to make it until my family cries "uncle".&amp;nbsp; To me, this is the perfect breakfast muffin.&amp;nbsp;&amp;nbsp;Dense, filling and not too sweet, if you don't count the drizzle.&amp;nbsp; I&amp;nbsp;substituted a half cup of rolled oats for&amp;nbsp;the coconut and&amp;nbsp;ws generous&amp;nbsp;with the currants and walnuts.&lt;br /&gt;

I remember the last time we made biscotti.&amp;nbsp; For the second baking of these cookies, they are supposed to be stood on end like an army of cookies.&amp;nbsp; I completely missed that the first time and wasn't going to let that happen again.&amp;nbsp; However, I should have anticipated that to stand the cookies would need a flat end.&amp;nbsp; I've made note of this on the recipe and &lt;em&gt;next time I will get it right.&lt;/em&gt;&lt;br /&gt;
&lt;br /&gt;
Instead, I leaned my biscotti into each other.&amp;nbsp; This might have worked out better had I not used chunks of chocolate.&amp;nbsp; Baked, they created weak spots.&amp;nbsp; &lt;br /&gt;

I&amp;nbsp;think a baked pudding  is much easier to prepare than one that must be constantly whisked over stovetop heat to a certain temperature.&amp;nbsp; Mix, bake, cool on the racks.&amp;nbsp; Simple.&amp;nbsp; Everyone agreed that at room temperature the eggy goodness of this dessert really shone.&amp;nbsp; &lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Last week's recipe was the choice of Patricia of the blog &lt;a href="http://lifewithawhisk.blogspot.com/2011/05/riff.html"&gt;Life With a Whisk.﻿&lt;/a&gt;&lt;/div&gt;This recipe is a great basis for many healthy breakfast treats.&amp;nbsp; I made the banana variation of these yummy scones.&amp;nbsp; As well, I used half whole wheat flour.&amp;nbsp; Next time - and there well definitely be a next time - I'll throw in some chia seeds and whatever other grains I've got.&amp;nbsp; &lt;br /&gt;

This may be my go-to summer pie recipe.&amp;nbsp; It starts with Dorie's Sweet Tart Dough, fully baked and cooled.&amp;nbsp; When you are ready to serve dessert, you cut as many slices of pie crust as you are going to serve, spread a generous amount of good strawberry jam on each slice, then top with strawberries (which I macerated in a little agave and creme de cassis).&amp;nbsp; Is there a simpler pie?&amp;nbsp; &lt;br /&gt;
&lt;br /&gt;
Along with the pie I served Lemongrass Ice Cream.&amp;nbsp; It had such a delicate flavour.&amp;nbsp; Here's the recipe:&lt;br /&gt;

&lt;em&gt;This recipe was adapted from &lt;/em&gt;&lt;a href="http://icecreamfellow.blogspot.com/2008/07/lemongrass-ice-cream.html"&gt;&lt;em&gt;The Ice Cream Fellow&lt;o:p&gt;&lt;/o:p&gt;&lt;/em&gt;&lt;/a&gt;&lt;br /&gt;
&lt;span style="font-family: &amp;quot;Verdana&amp;quot;,&amp;quot;sans-serif&amp;quot;; font-size: 16pt;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;em&gt;&lt;br /&gt;
1 cup whole milk&lt;br /&gt;
1 cup cream&lt;br /&gt;
½ cup sugar&lt;br /&gt;
3 egg yolks&lt;br /&gt;
1 cup of chopped fresh lemongrass (100 grams by weight)&lt;br /&gt;
&lt;span style="font-family: Times New Roman; font-size: small;"&gt;  &lt;/span&gt;&lt;/em&gt;&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: x-small;"&gt;&lt;div class="MsoNormal" style="margin: 0in 0in 0pt;"&gt;&lt;em&gt;1. Peel the outer two or three leaves of the lemongrass. Chop off and discard the ends so the remaining stalks are around 8 inches in length. Bruise the stalks by crushing them with the flat side of a meat tenderizer. You can also use the flat side of a chef’s knife and your hand to do this (just as if you were crushing a garlic clove). &lt;br /&gt;
2. Place the milk and the lemongrass in a blender and blend to finely chop the lemongrass.&lt;br /&gt;
3. Place the milk, lemongrass, and cream into a saucepan. Bring to a bare simmer. Remove from the heat and allow the mixture to steep for 30 minutes so the lemongrass can infuse its flavor with the dairy products.&lt;br /&gt;
4. Return the saucepan to the heat after 30 minutes steeping time and as it reheats, quickly mix the eggs and sugar.&lt;br /&gt;
5. You know the drill from here. Once the dairy is warm again, slowly add some of it to the eggs. Once the eggs are tempered, add them to the saucepan and cook, stirring constantly until the thermometer reads 175 degrees F.&lt;br /&gt;
6. Remove the custard from the heat, strain it into a bowl. Be sure to press the excess dairy out of the lemongrass in the strainer. Cool the mix to room temperature then chill it overnight. The next day, freeze it in your ice cream machine. &lt;/em&gt;&lt;/div&gt;&lt;div class="MsoNormal" style="margin: 0in 0in 0pt;"&gt;&lt;/div&gt;&lt;/span&gt;&lt;div class="MsoNormal" style="margin: 0in 0in 0pt;"&gt;&lt;br /&gt;

If there's one crucial&amp;nbsp;skill I take away from these years of working through Dorie Greenspan's book &lt;a href="http://www.amazon.com/Baking-Home-Yours-Dorie-Greenspan/dp/0618443363/ref=sr_1_1?s=books&amp;amp;ie=UTF8&amp;amp;qid=1301956071&amp;amp;sr=1-1"&gt;Baking &lt;em&gt;from my home to yours&lt;/em&gt;&lt;/a&gt;, it's the ability to make great pie crust.&amp;nbsp; Her Good For Almost Everything Pie Dough and her Sweet Tart Dough are second to none.&amp;nbsp; So, I was very pleased to see that this week's pie recipe included a crust I hadn't made.&lt;br /&gt;
&lt;br /&gt;
The ice cream filling sits in an almond crust, using crushed almonds, flour and butter.&amp;nbsp; With the addition of an egg, I found it very hard to work with.&amp;nbsp; It smeared, it globbed, it wouldn't behave.&amp;nbsp; After eating the frozen pie, I realize I should have been more ruthless and spread&amp;nbsp;the crust&amp;nbsp;very thin.&amp;nbsp; Live and learn.&lt;br /&gt;
&lt;br /&gt;
For the filling, I used strawberry goat's milk ice cream from &lt;a href="http://www.hewittsdairy.com/our-products/goat-ice-cream/"&gt;Hewitt's Dairy&lt;/a&gt;.&amp;nbsp; I love the light texture and true flavour of Hewitt's.&amp;nbsp; It saved the day.&lt;br /&gt;

As you can see, the whole centre of my brownies was very gooey.&amp;nbsp; Instead of using an 9" pan, I grabbed my 8" springform.&amp;nbsp; I gave the brownies 70 minutes - an extra 20 minutes - &amp;nbsp;and still the centre was underdone.&amp;nbsp; I shouldn't have been so impatient.&amp;nbsp; But you know how it is when you're waiting to eat brownies.&lt;br /&gt;
&lt;br /&gt;
Even the gooey bits were delicious!&amp;nbsp; I loved the not-overly-chocolate flavour, balanced with the honey.&amp;nbsp; I used pecans which floated to the top, giving the brownies a sweet top crust like a chocolate pecan tart.&amp;nbsp; &lt;br /&gt;
&lt;br /&gt;
I want to make this recipe again sometime, if only to prove that I can do it right.&amp;nbsp; I also think there's an audience for a less chocolately brownie.&lt;br /&gt;

These pancakes are made with a traditional recipe&amp;nbsp;that&amp;nbsp;includes separating&amp;nbsp;and whipping the egg whites.&amp;nbsp; The butter is melted.&amp;nbsp; This means that, including the pancake filling, four bowls are used in preparing this recipe.&amp;nbsp; Four!&amp;nbsp; At 6 in the morning!&amp;nbsp; Was I crazy?&amp;nbsp; You decide.&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Dinner was already on the stove top.&amp;nbsp; I wanted something that I could put together quickly and that would be done in less than an hour.&amp;nbsp; I could have had all that, but at the last minute I wanted a variation that would make this recipe my own.&amp;nbsp; Into the batter I threw 3/4 cup of frozen blueberries.&amp;nbsp; Oops.&amp;nbsp; Volume displacement and all that extra water.&amp;nbsp; &lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

&lt;em&gt;Crumb Topping&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1 cup packed dark brown sugar&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/2 cup granulated sugar&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/2 teaspoon salt&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1 1/2 tablespoons cinnamon&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1 cup (2 sticks) unsalted butter, melted (and still warm)&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;2 1/2 cups all-purpose flour&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;Cake&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;2 1/2 cups all-purpose flour&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;3/4 teaspoon baking powder&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1 teaspoon baking soda&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1/2 teaspoon salt&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1 1/2 cups sugar&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;2 large eggs, at room temperature&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1 1/4 cups sour cream, at room temperature&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;1 teaspoon vanilla extract &lt;/em&gt;&lt;br /&gt;
&lt;em&gt;&lt;br /&gt;
&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;Preheat oven to 350 F. Spray a 9x13 baking pan with cooking spray. A glass pan is recommended, but metal works too - your edges may be a little more crispy if you bake in metal.&lt;/em&gt;&lt;br /&gt;
&lt;em&gt;To make the crumb topping: Whisk the flour, brown sugar, granulated sugar, salt and cinnamon together in a large bowl. Add the melted butter and whisk to combine. Use a rubber spatula to fold in the flour - you'll have to use a little elbow grease to work in the final bits. &lt;/em&gt;&lt;br /&gt;
&lt;em&gt;To make the cake: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar together on medium speed until light and fluffy, about 2-3 minutes. Beat in the eggs, one at a time, letting the first incorporate fully before adding the second. Scrape down the sides of the bowl and beat for an additional 30 seconds. Add the sour cream and vanilla to the mixer and beat until just incorporated. Finally, add the flour mixture in thirds, beating just until combined.&lt;/em&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;em&gt;Transfer the batter to the prepared baking pan. The batter will be thick - just use a spatula to spread it evenly. Pick up the crumb topping by handfuls, and break off chunks, scattering them over the top of the batter. Use all of the topping - it will be a very thick layer! &lt;/em&gt;&lt;br /&gt;
&lt;em&gt;Bake for 45-55 minutes (rotating the pan at 15 minute intervals), or until a toothpick inserted in the center of the cake comes out clean. Let the cake cool in the pan for at least 30 minutes before serving. &lt;/em&gt;&lt;br /&gt;

I made them with rolled oats.&amp;nbsp; My audience enjoyed them, but I kept wanting to spit out the hard flakes.&amp;nbsp; The second time I made them I used quick cooking oats.&amp;nbsp; Nice and chewy, so I made a note beside the recipe.&lt;br /&gt;
