<p>The Caprese burger is a take on a Caprese salad, which has fresh mozzarella cheese, tomato, and basil. If you haven&#8217;t had this, it&#8217;s an awesome, fresh-tasting combo. It&#8217;s also very similar to bruschetta.</p>



<p>We&#8217;re taking that Italian flavor and combining it with a burger. Delizioso!</p>

<p>For this Caprese burger, I combined the core mozzarella, tomato, and basil flavors with some olive oil, salt, and pepper, and toasted the bun for a little more crunch like you&#8217;d get in bruschetta.</p>



<p>I&#8217;ve seen some people also add balsamic vinegar to the top of these, so you could also give that a shot. This burger is pretty light and refreshing. If you want more punch, I think some Italian-type peppers or even a touch of cayenne might work on the burger.</p>

<p>Another quick tip: I&#8217;ve been using this burger press to quickly make perfect burgers. It&#8217;s especially helpful when you want to make a bunch of burgers.</p>

<p>I&#8217;m not a big soup fan, but I love chili. Chili is a winner in my book because it&#8217;s thick, hardy and preferably spicy. When I saw the idea of a Chili Cheese Burger I knew I had to give it a try.</p>

<p>I knew the Chili Cheese Burger would be good, but I had no idea it&#8217;d be one of my favorites. The tomato, chili spices, and cheese all go together amazingly well as a burger. It&#8217;s really simple to make too, so you&#8217;ve gotta give this burger a try.</p>



<h2 class="wp-block-heading">Making The Chili</h2>



<p>To make this a true chili cheese burger, we&#8217;re going to make a chili topping. This helps incorporate the chili spices &amp; tomato into the burger. It&#8217;s a really simple version of chili that only takes a few minutes to make.</p>

<p>All it takes is frying up some onions and then adding a bit of extra ground beef, spices, and tomato. This chili adds extra flavor and texture to the burger.</p>



<h2 class="wp-block-heading">Creating the Chili Cheese Burger</h2>



<p>To make the burger we&#8217;ll follow the normal procedure, but spice the meat up just a bit with some chili powder &amp; garlic powder. After cooking on one side and flipping we&#8217;ll add in our chili &amp; cover in cheese.</p>

<p>It&#8217;s helpful to have a lid or another pan to set on top at this point to get the cheese to melt faster. Once it does you&#8217;ll see how amazing this burger is looking!</p>



<h2 class="wp-block-heading">Topping It Off</h2>



<p>Slide that burger on a bun and you&#8217;re just about ready to go. I like to add some extra spice to my chili so I recommend adding some sliced jalapeños to the top. I&#8217;m also adding some green onions for a bit more flavor. Plus it just makes this amazing burger look even better.</p>

<p>If you&#8217;re not familiar with In-N-Out, it&#8217;s a fast-food burger joint that started on the West Coast. It&#8217;s been around a long time (1948) but has stayed small because they never allowed franchises to keep control of the quality. Just like when McDonalds started, In-N-Out focuses on only serving great burgers (and also soda, fries &amp; shakes).</p>
<p>In-N-Out only offers a few varieties of their burger: hamburger, cheeseburger, and double-double (2 patties and 2 slices of cheese). There are a few &#8220;secret menu&#8221; variations that you can order including increasing the patty count (3&#215;3 or 4&#215;4), protein style (wrapped with lettuce instead of a bun), or Animal Style. For our In-N-Out burger recipe, we&#8217;ll build a double-double animal style.</p>
<p>An Animal Style burger is slightly different from the standard burger because it has grilled onions, pickles, and extra special sauce. It&#8217;s also cooked with some yellow mustard.</p>
<h2>In-N-Out Burger Sauce Recipe</h2>
<p>In-N-Out has their own burger sauce that is unique to the chain. You can pretty closely replicate it by combing 2 parts mayo, 1 part ketchup and some sweet relish. The sauce really enhances the burger to make this guy taste authentic.</p>

<h2>Building the In-N-Out Burger Recipe</h2>
<p>The rest of the burger is pretty simple. Just high quality ingredients. One trick for the animal style burger is to top your burger with some yellow mustard before flipping it. This cooks some extra flavor into the meat.</p>
<p>The standard burger has regular onions on it, but the animal style has them diced and grilled. It&#8217;s up to you what you&#8217;d prefer. Finally, the bottom of the burger has 4 pickle chips added.</p>

<p>If you&#8217;ve been to an <a href="https://www.applebees.com/Menu/All-in-Burgers/Quesadilla-Burger" target="_blank">Applebee&#8217;s</a> restaurant, you may have had a quesadilla burger before. This is going to be pretty similar without being an exact copycat.</p>
<h2>Quesadilla Burger Toppings</h2>
<p>There are all kinds of awesome toppings you can choose from for this burger. Some options include:</p>
<ul>
<li>salsa / pico de gallo</li>
<li>bell peppers</li>
<li>corn</li>
<li>black or pinto beans</li>
<li>avocado / guacamole</li>
<li>cilantro</li>
<li>lettuce</li>
<li>tomatoes</li>
<li>jalapeño or chipotle peppers</li>
<li>sour cream</li>
<li>bacon</li>
</ul>
<p>Feel free to pick out your favorites, or follow along with the choices I made. For my version I&#8217;m adding some pico de gallo, sliced avocado, diced jalapeños, and shredded lettuce.</p>
<p>Finally, I&#8217;m topping it off with a mixture of 50/50 ranch and taco sauce. You can&#8217;t go wrong!</p>

<h2>Making The Quesadilla Burger</h2>
<p><span class="hardreadability"><span data-offset-key="6be04-0-0">To make this a quesadilla burger, we&#8217;ll take two small tortillas and top with shredded Mexican cheese</span></span><span data-offset-key="6be04-1-0">.</span> Cooking them is simple. Just grease a pan and put it over med-low heat for a few minutes. Then toast the tortillas until the cheese on top melts.</p>
<p>To add some extra flavor to the burger meat, we&#8217;re adding in some cumin and chili powder. Then shape your burger to match the size of the tortillas. It&#8217;ll be a little bigger than a normal burger. Keep in mind that the burger will shrink up a bit as its cooked.</p>
<p>Once you&#8217;ve cooked up the burger, drop it on one of the tortillas and then stack up your ingredients. This burger is awesome &#8211; but slightly messy. To make it easier you could try and eat it with a fork/knife&#8230; or get a good knife and slice it right in half.</p>

<p>There are a lot of good ingredients that could be used to make up an Irish burger. I&#8217;ve taken a few favorites to make this burger irresistible. Think of it as burger meets corned beef sandwich.</p>
<h2>Corned Beef Topped Irish Burger</h2>
<p>Corned beef is salt-cured beef, treated with large-grain &#8216;corns&#8217; of salt. This was originally done to preserve the meat. Today corned beef has has become an Irish-American favorite. In the US, St. Patrick&#8217;s Day food often consists of corned beef sandwiches or corned beef and cabbage.</p>
<p>The best corned beef comes fresh from the deli and will make this burger awesome. Pile it as high as you want!</p>

<h2>Guinness Mustard</h2>
<p>Next up for Irish Burger ingredients is <a href="https://www.guinness.com/en-us/" target="_blank">Guinness</a>. The classic Irish beer is the #1 alcoholic drink in Ireland and popular world-wide. It&#8217;s crazy to think that this dry stout was first brewed in 1759.</p>
<p>You can drink a Guinness along with your Irish burger, but let&#8217;s also cook with it! Instead of using the standard mustard we&#8217;ll make Guinness mustard.</p>
<p>This doesn&#8217;t change the mustard too much, but it gives it a little bit of sweetness and richness. Simply add Guinness &amp; brown sugar to coarse dijon mustard.</p>

<h2>Finishing off the Irish Burger</h2>
<p>A few finishing touches and our delicious burger ready to eat. First off we&#8217;ll add some Swiss cheese &amp; thinly sliced onions to the burger.</p>
<p>Then we&#8217;ll toast up some marbled rye bread to put it on. You can do this by putting some butter in a pan or using a toaster. When making your burger, make sure to shape it to the size of your bread.</p>

<p>First off, forget the cheese dust packet. It&#8217;s not tough to make mac and cheese with real cheese, and it&#8217;s so much better. All you need is some milk, flour, butter, and cheese. We&#8217;re looking to step up our game with this buffalo chicken mac and cheese, so we&#8217;ll switch that up a bit.</p>
<h2>Buffalo Chicken</h2>
<p>The first ingredient we need for our buffalo chicken mac and cheese is some chicken. You can cook a chicken breast in the oven and shred it, or cook some ground chicken in a pan. If you don&#8217;t want any chicken, I&#8217;m sure this is as great without it.</p>

<h2>Making the Sauce</h2>
<p>Mac and cheese should be creamy &amp; delicious. To accomplish that, we&#8217;re going to mix in some ground mustard, eggs, cornmeal, evaporated milk and buffalo sauce. Stir that all up so it&#8217;s blended.</p>

<h2>Pile on the Cheese</h2>
<p>We&#8217;ve got a ton of flavor going into this buffalo mac and cheese recipe, so we&#8217;re going to use some basic cheddar and American cheeses. Then to add a little more killer flavor we&#8217;ll top it off with some blue cheese.</p>
<p>If you&#8217;re not doing the buffalo mac, you can follow this same recipe and switch up the cheese. You&#8217;ll want to use a cheese that melts well such as:</p>
<ul>
<li>Gouda</li>
<li>Swiss</li>
<li>American</li>
<li>Muenster</li>
<li>Gruyere</li>
<li>Monterey Jack</li>
<li>Fontina</li>
<li>Cheddar</li>
</ul>
<p>Also some of these come aged but you&#8217;ll want to avoid that and use a &#8216;young&#8217; version of the cheese.</p>

<h2>The Making of a Chipotle</h2>
<p>When you get a jalapeño pepper you&#8217;re usually buying the unripe green peppers. A jalapeño actually turns red when it&#8217;s ripe at the end of the season (you can buy them this way too).</p>
<p>To make a <a href="https://en.wikipedia.org/wiki/Chipotle" target="_blank">chipotle pepper</a>, farmers let jalapeños ripen until they turn red and begin to dry out. Then they pick them and put them in a smoker for several days until they dry out and shrivel up.</p>

<h2>The Chipotle Burger Recipe</h2>
<p>So how are we going to turn this delicious, smokey pepper into a burger?</p>
<p>First, we&#8217;re going to get a can of chipotles in adobo sauce. Adobo sauce is made with tomatoes, garlic, vinegar, salt, and spices such as cumin and oregano. It pairs great with the peppers and will add flavor to our burgers.</p>
<p>The peppers have seeds in them that can be removed by slicing length-wise and pulling them out.</p>
<p>Next, we&#8217;ll dice up the peppers and put them in the burger meat &amp; make an aioli to top it all off.</p>

<h2>Choose Your Spice Level</h2>
<p>We&#8217;ll use the peppers in an aioli for the top of the burger as well as mixing them in with the meat. This burger wasn&#8217;t outrageously spicy, but it had some heat to it. If you want to cut back on the spice: mix only adobo sauce in the meat (instead of the peppers) or use less of the diced pepper.</p>

<p>Buffalo chicken dip is a combination of:</p>

<p>You&#8217;ll want the chicken to be cooked evenly and moist enough to shred easily. I wouldn&#8217;t normally boil chicken, but in this case it works best. After that&#8217;s done you can decide how you&#8217;re going to prepare the dip.</p>
<h2>Variations on Buffalo Chicken Dip &amp; Spice</h2>
<p>If you want to experiment, there are a couple tweaks to the recipe you can try out. First, you can swap out the ranch dressing for blue cheese or top with blue cheese crumbles. This is a great option, but not everyone loves blue cheese, so know your audience.</p>
<p>Another option is varying the spice. This is by no means spicy for my taste, but some people are more sensitive to spice. To tame it down a bit just add less buffalo sauce or sometimes you can find a mild sauce.</p>

<h2>Choose Your Cooking Method</h2>
<p>The recipe I&#8217;m suggesting involves using a crockpot on low for a couple hours to cook the dip. This is an easy set it and forget it way to make the dip. Then you can transport it somewhere and just plug it back in to stay warm. If you don&#8217;t have the time to let the crockpot do it&#8217;s thing you can try baking it. Put the ingredients in a baking dish and cook for about 20-25 min at 350 degrees.</p>
<h2>Buffalo Chicken Dip Side Options</h2>
<p>There are tons of things that go great with buffalo chicken dip. It&#8217;s got a lot of flavor so I&#8217;d stick to things that have simple flavors. Some of my favorites are:</p>
<ul>
<li>tortilla chips</li>
<li>celery sticks</li>
<li>carrots</li>
<li>cauliflower</li>
<li>baguettes / bread</li>
</ul>
<p>This dip is definitely not healthy but it&#8217;s a nice way to get some veggies in the mix when eating apps. It makes anything taste incredible. If you have any other great ideas to scoop up this dip with feel free to leave them in the comments.</p>

<p>Jalapeño poppers are a classic app to eat while watching your favorite team. As I write this the Super Bowl is coming up soon so I was looking for some burger inspiration.</p>
<p>Unfortunately, my Vikings don&#8217;t make it to the big game very often so I&#8217;m usually more focused just enjoying the event. That revolves around good food and I couldn&#8217;t think of a much better combo than a jalapeño popper burger.</p>
<p>And boy was I right!</p>
<h2>Jalapeño Popper Burger Stuffing</h2>
<p>I tried making these burgers a couple different ways: bacon stuffed &amp; bacon wrapped. I think you could go either way with it. The stuffed version was a little more blended flavor and the topped version was more bacon flavor.</p>

<p>To make the filling I diced up two jalapeños. Then I added those to a half package (40z) of cream cheese in a bowl. Finally, take a fork and mix it all up so the peppers are evenly distributed.</p>
<h2>Getting the Burgers Prepped</h2>
<p>I made 6 sliders out of a pound of ground beef. So I cut the beef in half, and then split each half into thirds. You&#8217;ll end up with 6 balls of meat.</p>
<p>For each burger, split the ball in half and press it out thinly to make a bottom &amp; top. These will be pretty thin, but don&#8217;t go so thin that they fall apart. If you do this on some wax paper it&#8217;ll be easier to lift up and avoid the thin patty sticking to the plate.</p>
<p>Add a scoop of filling to every other burger half and spread it out. Top it off with crumbled bacon. Then just put one half on top and carefully press the corners together to seal it up.</p>

<h2>Cooking It Up</h2>
<p>You can choose to grill these guys up or cook them on the stove. It&#8217;s cold here at the moment so I put some oil in a hot cast iron pan and cooked them that way. They&#8217;re pretty thin so they won&#8217;t take long (about 1.5min per side). On a grill they&#8217;ll take just a little bit longer, but not much.</p>
<p>Feel free to try this out out either in slider form or as a full burger. The process is exactly the same, just with a longer cook time.</p>

<p>Fries come in all shapes and sizes; from thin shoe-string fries to thick cut wedges. The easiest solution is to just buy some frozen fries from the grocery store and put them in the oven. The down-side of those fries are they just aren&#8217;t as fresh tasting and don&#8217;t have the same awesome crust. You end up with a &#8216;just ok&#8217; mushy substitute.</p>
<p>If you want to up your french fry game you can either get frying or make these oven baked potato wedges. These use fresh potatoes so they&#8217;re fluffy when you bite into them. Creating your own batter also means they have a great texture and crispness. They do take a little extra work, but sometimes it&#8217;s just worth it!</p>

<h2>Tips for Baked Potato Wedges</h2>
<p>I found some tweaks for this recipe in J. Kenji Lopez-Alt&#8217;s <a href="http://amzn.to/2iIpHnI" target="_blank">The Food Lab</a>. If you don&#8217;t have that book I&#8217;d recommend checking it out. He goes through the science behind making awesome food and it&#8217;s got a ton of recipes.</p>
<p>The tricks he mentions for making these fries:</p>
<ul>
<li>pre-cooking the potatoes</li>
<li>mixing the flour with cornstarch to improve the texture</li>
</ul>
<p>The process is pretty simple. First wash &amp; cut the potatoes before boiling them. Then soak them in buttermilk so the dredge has something to attach itself to. Finally coat them in the flour &amp; cornstarch and put them in the oven.</p>
