<p>I thought I just wasn't a sweet tooth kind of person.  The idea of dessert usually just doesn't appeal to me.  Cheese?  Yes. Sweets?  Not so much.  </p>
<p>Well, I've been living a lie.  Apparently all you need in order for my sweet tooth to come out is the mention of fruit.  As soon as I get the notion of cream topped berries in my head I become a woman obsessed.  </p>
<p>This is how I discovered the six minute spongecake.  </p>
<p>Last night I started thinking about all the berries in my fridge and needed a cake right that minute for dessert.  After doing some research on the web I came across the idea of cooking the cake in the microwave.  Genius!  In six minutes you have a piping hot fresh cake in your hands.  It cooks in a bowl, which causes the adorable dome shape.  Wouldn't the entire thing look so charming topped with fruit and whipped cream?  </p>
<p>Six Minute Spongecake</p>
<p>3/4 c self-rising flour</p>
<p>3/4 c sugar</p>
<p>10 T butter, softened (1 stick, 2 T)</p>
<p>3 eggs</p>
<p>1 t vanilla</p>
<p>In a microwave safe bowl (I used pyrex) cream together the sugar and butter.  Add in the eggs one at a time and mix.  Add vanilla.  Mix in the flour a little at a time.  </p>
<p>Place uncovered in the microwave.  Heat for six minutes on high.  Using hotpads, pull your cake out of the microwave and test with a toothpick.  If any cake comes off onto the toothpick, heat for an additional minute.  </p>

<p>We met with a mover for an estimate.  Exciting and a tad stressful, but we're old vets at this moving thing.  </p>
<p>Picking up some things at Ikea while talking about our future home in Corpus.   Time is ticking down and we are fighting the excitement that comes from a new place, trying to stay right here in the moment.  We were going to eat in their restaurant until we remembered that the Asian market is right down the street.  Who can resist Banh Mi?  Oh, and some onion and pork rolls.</p>
<p>It was a really great day.  I've been a bit regretful that I haven't taken any of my other cameras out with me lately, but then again I guess it's true that the best camera is the one you have with you.  </p><xhtml:img xmlns:xhtml="http://www.w3.org/1999/xhtml" src="http://feeds.feedburner.com/~r/ButtonsMageeWeblog/~4/D5oAHY1u7uU" height="1" width="1" /></div></content>
