Passeando por SP encontrei esse leite Italiano, o mesmo que produz o queijo Grana Padano...Apesar de ser UHT o gosto e a textura são incríveis. O leite muito doce, encorpado e o queijo, com &amp;nbsp;belas notas frutadas...&lt;br /&gt;

Depois de passar uma temporada em Nova Iorque, confesso que voltei para o Brasil cheio de idéias... Falando a verdade... com as idéias mais desenvolvidas.&lt;br /&gt;

Quase 1 ano e meio atrás, já tinha montado no Rio de Janeiro na cafeteria Cafuné um bar de extrações manuais, usávamos Aeropress, Drip Station Hario e a French Press...A idéia foi ótima, deu certo mas talvez tenha pecado na execução.&lt;br /&gt;
&lt;br /&gt;
A experiência nos EUA foi muito enriquecedora, onde pude comprovar que precisamos deixar os consumidores mais próximos de nossas ousadias. De mostrar que eles podem fazer aquilo em suas casas mas que sempre em nossas mãos, as surpresas serão inevitáveis.&lt;br /&gt;
&lt;br /&gt;
Foi assim que tive a idéia de lançar um grupo, chamado Pour Over - Extrações Manuais, onde além de promover encontros e degustações, vamos tentar deixar os consumidores domésticos próximos ao nosso mundo, assim quem sabe aumentando o consumo de cafés especiais.&lt;br /&gt;

Foi difícil, não esperado mas muito festejado. O título no Torneio Capolavoro de Latte Art organizado pela Italian Coffee/ Cimbali caiu bem em minha vitrine de troféus. Foram 32 competidores, alto nível técnico e muita emoção. Minha chave foi bem complicada...O primeiro desafio foi com o Barista do Santo Grão (Warner Oliveira)... no sorteio uma roseta...O segundo desafio foi com o Campeão Brasileiro de Latte Art (Éder Ferreira)... no sorteio um coração... Já nas quartas de final enfrentei o Barista do Museu de Santos (Emanuel Nogueira)...no sorteio uma roseta... Na semi o desafio foi contra outro Barista do Santo Grão (Éder Hilário)... no sorteio outra vez uma roseta...&lt;br /&gt;

&lt;br /&gt;
Na grande final a regra mudou, em uma melhor de 3, dois diferentes desenhos seriam sorteados e um terceiro caso necessário seria livre a cada Barista. Na outra chave o Barista do Octavio Café ( Thiago Aparecido), que eliminou fortes concorrentes, como o Barista Richard Kumagai do Suplicy Cafés. &lt;/div&gt;&lt;div style="float: right; width: 45%;"&gt;&lt;br /&gt;
No sorteio, o primeiro desenho foi uma Tulipa e o segundo uma Roseta... Além da técnica perfeita para uma final, acho que o fator nervosismo pode ter me ajudado. Creio que esse ano estou muito seguro em participar de competições e acho que o Thiago ficou pelo menos um pouco nervoso e não conseguiu repetir suas belas latte arts das outras etapas.&lt;br /&gt;

Como prêmio recebi da Italian Coffee/Cimbali passagem, estádia e um prêmio em $ para assistir ao Campeonato Mundial de LAtte Art na Holanda e torcer para nosso amigo Felipe Oliveira.&lt;br /&gt;

Essa é a minha carta do atual momento... O nome é forte mas olhe a carta com toda atenção...Uma flor linda com uma borboleta mais linda ainda. Na verdade essa carta significa uma mudança repentina... uma grande transformação, o fim de um momento e o renascimento de um outro ainda melhor...&lt;br /&gt;

&amp;nbsp;Não, não&amp;nbsp;estou falando do ciclo do café, e sim de mais uma mudança na minha vida profissional e pessoal.&lt;br /&gt;
&lt;br /&gt;
Parafraseando Fernando Pessoa ''Sempre é preciso saber quando uma etapa chega ao final.. E lembra-te: Tudo o que chega, chega sempre por alguma razão.''&lt;br /&gt;
&lt;br /&gt;
Com esse pensamento, termino meu ciclo na Cafeteria Cafuné no Rio de Janeiro e parto para novos desafios na cidade de São Paulo.&lt;br /&gt;
Sem nunca esquecer minhas origens, continuarei promovendo o café do Rio. Ser carioca é como ser flamengo. Uma vez carioca, sempre carioca ;-)&lt;br /&gt;
&lt;br /&gt;
Por isso, desejo sucesso ao Cafuné, que continue zelando pela qualidade ímpar e que continue cativando e formando novos apreciadores de café no Rio.&lt;br /&gt;

Participei desse evento Internacional de Vinhos Biodinâmicos representando a fazenda Camocim Organic... Ao lado do empresário,playboy,surfista e fazendeiro Henrique Sloper, tive a oportunidade rara de degustar cafés com inúmeros enólogos, somelliers e produtores de vinhos biodinâmicos incríveis.&lt;br /&gt;
&lt;br /&gt;
O Evento foi em um local fantástico no Morumbi/SP, na Casa da Fazenda... Uma grande oportunidade em provar vinhos e café com o Campeão Mundial de Sommelier de 2007 Andreas Larsson.&lt;br /&gt;

Outro evento interessante foi conferir a palestra de Silvia Magalhães e do produtor Paulinho Almeida no Octávio Cafés. Silvia lançou o primeiro Micro Lote da cafeteria junto com seu produtor e promoveu ma degustação tanto na French Press quanto para Espresso...&lt;br /&gt;
&lt;br /&gt;
O que posso dizer? Fato que é o melhor espresso de SP, não percam está raridade... PArabéns a Silvia e a equipe que torrou esse microlote, a Barista Cecília SAnada e Bruno Ferreira e minha adoração a esse produtor chamado Paulinho de Almeida, vai fazer café bom assim lá em Paraisópolis!!!&lt;br /&gt;

O certo é que Mestre de Torras e Degustador eu nunca vou adotar, tão somente pq acredito que nunca vou chegar a esse nível.&amp;nbsp;&lt;/span&gt;&lt;br /&gt;

&lt;span id="”fullpost”"&gt;Provar um lote selecionado e dar uma nota não é uma tarefa das mais difíceis mas embarcar containers e mais containers para inúmeros países é algo realmente impressionante e acho que esse é o verdadeiro profissional Degustador de Cafés.&lt;/span&gt;&lt;br /&gt;

&lt;span id="”fullpost”"&gt;Torrar cafés também não é nada complicado, até em uma pipoqueira dá pra fazer... Mas criar inúmeros perfis, entender não só as leis da termodinâmica mas saber aplica-lás em segundos, é algo que realmente só um Mestre de Torras é capaz.&lt;/span&gt;&lt;br /&gt;

A Técnica&lt;br /&gt;

Busco extrair um café muito aromático, doce e com acidez pronunciada. Utilizo um pequeno mixer para provocar um redemoinho de extração, ou seja, a saturação dos grãos é feita com esse movimento e não com a queda da água direta no grão ou uma colher. Em meus testes o resultado foi uma bebida masi limpa e sem amargor.&lt;br /&gt;

&lt;/div&gt;&lt;div class="texto"&gt; Um solo ideal é constituído por minerais (45%), poros ocupados pelo ar (25%) e pela água (25%), pela matéria orgânica (5%) e microrganismos, podendo a proporção de cada uma destas partes variar bastante de solo para solo, embora nos solos tropicais os teores de matéria orgânica dificilmente ultrapassam 2%. &lt;/div&gt;&lt;div class="texto"&gt;A matéria orgânica do solo (MOS) é resultante da deposição natural de resíduos vegetais (exudados e/ou morte de raízes, queda de folhas, galhos, frutos, etc) e animais (excrementos e/ou morte da biota) que chegam ao solo, podendo ter a sua origem também no próprio homem, por meio da adubação orgânica feita com estercos (bovinos, de aves e de suínos), compostos orgânicos preparados na fazenda, adição de resíduos vegetais, tais como restos culturais ou adubos verdes plantados com a finalidade de incorporação ao solo. &lt;/div&gt;&lt;div class="texto"&gt;Sabe-se que a MOS tem efeito direto sobre as características físicas, químicas e biológicas do solos, sendo considerada uma peça fundamental para a manutenção da capacidade produtiva dos solos em qualquer ecossistema terrestre. Do ponto de vista físico, a MOS melhora a estrutura do solo, reduz a plasticidade e a coesão, aumenta a capacidade de retenção de água e a aeração, permitindo maior penetração e distribuição das raízes. A MOS atua diretamente sobre a fertilidade do solo por constituir a principal fonte de macro e micronutrientes essenciais às plantas, como também indiretamente, através da disponibilidade dos nutrientes, devido à elevação do pH, além de aumentar a capacidade de retenção dos nutrientes, evitando suas perdas. Biologicamente, a MOS aumenta a atividade da biota do solo (organismos presentes), sendo fonte de energia e de nutrientes para a mesma. &lt;/div&gt;&lt;div class="texto"&gt;Nas últimas décadas, a preocupação com a rápida degradação dos solos agrícolas no mundo, especialmente nas regiões tropicais e subtropicais, onde as elevadas temperaturas e umidade são mais propícias à decomposição da MOS, despertou grande interesse pela qualidade do solo e pela sustentabilidade da exploração agrícola. Surgiram assim, vários conceitos de qualidade do solo, entre os quais está o de Doran &amp;amp; Parkin, citado por Mielniczuk (1999), que define a qualidade do solo como sendo a sua capacidade em manter a produtividade biológica, a qualidade ambiental e a vida vegetal e animal de forma saudável na face da terra. &lt;/div&gt;&lt;div class="texto"&gt;O teor de MOS está intimamente relacionado ao manejo adotado (adubação, preparo de solo, método de controle de invasoras etc), sendo por esta razão, utilizada para monitorar a qualidade do solo em sistemas agrícolas para que intervenções sejam realizadas a tempo de evitar sua degradação. &lt;/div&gt;&lt;div class="texto"&gt;O cultivo de espécies perenes, tais como café, fruteiras entre outras, geralmente favorece o acúmulo de matéria orgânica no solo, em função de diversos fatores, tais como menor revolvimento da camada arável, maior entrada de biomassa vegetal através de podas, quedas de folhas, galhos, ramos e frutos e maior proteção do solo contra erosão. &lt;/div&gt;&lt;div class="texto"&gt;Atualmente, fala-se muito do café produzido de forma orgânica (café orgânico), sistema de produção que evita ou exclui o uso de agroquímicos e de adubos minerais de alta solubilidade. Entretanto, considerando-se os benefícios da MOS para os agroecossistemas, a manutenção dos seus teores torna-se igualmente importante para os sistemas tradicionais de cultivo, devendo a sua aplicação ser realizada sempre que possível, mesmo que os programas de adubação sejam constituídos predominantemente por formulações minerais comerciais, como também é bem vinda a adoção de práticas de manejo que favoreçam o acúmulo ou a manutenção da MOS, tais como plantio direto, adubação verde, uso de cobertura morta, roçada do mato ao invés da capina completa, práticas de controle da erosão etc. &lt;/div&gt;&lt;div class="texto"&gt;Como foi mencionado anteriormente, a MOS melhora as características físicas, químicas e biológicas dos solos, sendo considerada uma substância condicionadora. Um exemplo da importância da sua aplicação, mesmo na cafeicultura tradicional reside no fato de que possui o poder de adsorver ou reter nutrientes, tais como potássio, cálcio, magnésio, manganês, ferro, cobre, zinco, amônio, sódio etc, liberando-os posteriormente para as plantas. A vantagem desta retenção está na diminuição das perdas por lixiviação. Esta retenção pode ser entendida tomando-se como exemplo a atração que o ímã realiza quando em contato com limalhas de ferro, as quais ficam aderidas ao ímã, sem contudo, fazerem parte de sua composição ou estrutura molecular. Por exemplo, em solos pobres em matéria orgânica, o potássio aplicado via fertilizantes minerais, é facilmente deslocado para as camadas mais profundas do solo pela água das chuvas ou da irrigação, comprometendo o retorno econômico esperado com a aplicação do fertilizante, o qual poderia ser potencializado caso o teor de MOS estivesse em níveis adequados. &lt;/div&gt;&lt;div class="texto"&gt;Portanto, a manutenção dos teores de MOS, quer seja através da aplicação de adubos orgânicos, quer seja através de outras práticas de manejo, torna-se indiscutivelmente necessária à recuperação e/ou manutenção de potencial produtivo de qualquer sistema agrícola. &lt;/div&gt;&lt;div class="texto"&gt; Dentre as várias fontes de matéria orgânica para os solos, podem ser citadas as aplicações de adubos ou insumos orgânicos, entre os quais os mais importantes são, os estercos (de ruminantes, não-ruminantes e aves), os compostos, a adição de biomassa vegetal por meio de podas, o uso de cobertura morta ou de cobertura viva (adubação verde) e o cultivo de árvores associadas à cultura principal, conhecidos como sistemas agroflorestais. &lt;/div&gt;&lt;div class="texto"&gt;A fim de reduzir os custos com transporte, o produtor deve buscar sempre utilizar resíduos orgânicos disponíveis na região, levando em consideração a distância da fonte até o local onde será utilizado. &lt;/div&gt;&lt;div class="texto"&gt; Entre os &lt;b&gt;estercos&lt;/b&gt;, estão os provenientes de bovinos, eqüinos, caprinos, suínos, ovinos, aves e coelhos, cuja a composição química varia com a idade do animal, com a espécie e a alimentação (Tabela 1). Animais que são alimentados com ração geralmente produzem estercos com maiores teores de nutrientes. Por esta razão, espera-se que o esterco proveniente de gado de leite seja de melhor qualidade que o de gado de corte. Antes de serem utilizados, os estercos devem ser curtidos (envelhecidos naturalmente) ou, de preferência compostados, por duas razões: para evitar a fitotoxidez ou “queima” das plantas e porque, com a elevação da temperatura durante a decomposição, é possível eliminar microrganismos patogênicos e reduzir a presença de sementes de ervas invasoras. &lt;/div&gt;&lt;div class="texto_centralizado"&gt; Tabela 1. (1988). &lt;/div&gt;&lt;div class="texto"&gt; Outra boa fonte de matéria orgânica são os &lt;b&gt;compostos orgânicos&lt;/b&gt;, resultado de uma mistura de resíduos orgânicos de origem animal e vegetal, submetidos ao processo de compostagem, um processo onde os microrganismos (bactérias, fungos e actinomicetos) são os decompositores. A composição química dos compostos é muito variável, porque depende dos resíduos utilizados. A compostagem, além de eliminar microrganismos patogênicos e reduzir a presença de sementes de invasoras, acelera a decomposição (Foto 1). Para saber como fazer um composto, o leitor pode acessar a página da &lt;a href="http://www.cnpab.embrapa.br/publicacoes/sistemasdeproducao/cafe/index.htm"&gt;Embrapa Agrobiologia &amp;gt; publicações on line &amp;gt; Sistemas de Produção &amp;gt; Cultivo do café orgânico&lt;/a&gt;. &lt;/div&gt;&lt;div class="texto"&gt; Os resíduos utilizados para &lt;b&gt;cobertura morta do solo&lt;/b&gt;, provenientes da lavoura ou de agroindústrias, tais como palha de café, bagaço de cana, etc. No café, é comum o produtor utilizar a palha de café para este fim, protegendo o solo da erosão, do ressecamento e contribuindo para elevar o teor de matéria orgânica. Entretanto, é importante observar que os resíduos de culturas são materiais geralmente ricos em carbono e pobres em nitrogênio, visto que este nutriente, assim como demais, são retirados pelas colheitas. Geralmente, quanto maior o teor de carbono e menor o de nitrogênio nos resíduos (relação C:N), mais difícil e vagarosa é a sua decomposição. &lt;/div&gt;&lt;div class="texto"&gt; O uso de &lt;b&gt;adubos verdes&lt;/b&gt; (cobertura viva do solo) é outra forma muito utilizada pelos produtores com o objetivo de incorporar matéria orgânica ao solo e controlar o mato no verão, reduzindo a necessidade de capinas. Considera-se &lt;b&gt;cobertura viva&lt;/b&gt; do solo toda vegetação presente, quer de procedência cultivada ou espontânea, inclusive o mato. Os adubos verdes são plantas cultivadas no local ou trazidas de fora, que são incorporadas ao solo com a finalidade de preservar a fertilidade das terras, podendo ser utilizados em consórcio, rotação de culturas, cercas-vivas, quebra-ventos, faixas de contorno e beiras de estrada. A utilização de biomassa vegetal como fonte de matéria orgânica representa uma oportunidade para o produtor diminuir a necessidade de insumos por serem ótimos recicladores de nutrientes no sistema. &lt;/div&gt;&lt;div class="texto"&gt;A presença de vegetação cobrindo o solo, protege-o do impacto das chuvas e consequentemente, de sua desagregação e posterior erosão. A fitomassa aumenta a infiltração e a capacidade de retenção de água, a porosidade e a aeração do solo. A massa vegetal roçada e deixada em cobertura ou incorporada ao solo, além de atuar como fonte de carbono e nutrientes (fonte energética), atenua as oscilações de temperatura e umidade, intensificando a atividade biológica. &lt;/div&gt;&lt;div class="texto"&gt;Em um experimento conduzido pela Embrapa Agrobiologia com café arábica plantado no espaçamento 2,5 x 0,7m, foi cultivada nas entrelinhas do café a leguminosa &lt;i&gt;Crotalaria juncea&lt;/i&gt; para fins de adubação verde. A crotalária produziu 16 toneladas de fitomassa seca por hectare, que serviu como adubo orgânico para o cafeeiro. Após a sua decomposição, foi possível reciclar 444, 21, 241, 191 e 44 kg/ha de nitrogênio, fósforo, potássio, cálcio e magnésio, respectivamente, considerando-se uma poda a meia altura realizada aos 76 dias após o plantio, e o corte aos 175 dias (Foto 2). &lt;/div&gt;&lt;div style="float: right;"&gt;&lt;a href="http://www.cnpab.embrapa.br/images/linhas_crotalarias.jpg"&gt;&lt;img src="http://www.cnpab.embrapa.br/images/linhas_crotalarias.jpg" /&gt;&lt;/a&gt; &lt;div class="texto"&gt; &lt;b&gt;Foto 1. &lt;i&gt;Crotalaria spectabilis&lt;/i&gt; cultivada&lt;br /&gt;
nas entrelinhas de uma lavoura de café&lt;br /&gt;
arábica para fins de adubação verde.&lt;/b&gt; &lt;/div&gt;&lt;/div&gt;&lt;div class="texto"&gt; Em outro experimento, também conduzido pela Embrapa Agrobiologia, em Paty de Alferes, RJ, com café arábica, a &lt;i&gt;Crotalaria spectabilis&lt;/i&gt; foi cultivada nas entrelinhas como adubo verde (Figura 1 ), tendo sido produzida 1,99 toneladas por hectare de biomassa aérea seca, que permitiu a reciclagem de 39; 4,5; 7,3; 5,9 1,0 kg/ha de nitrogênio, fósforo, potássio, cálcio e magnésio, respectivamente (Foto 1). &lt;/div&gt;&lt;div class="texto"&gt;Um aspecto a ser considerado pelo produtor é que apenas a utilização de adubos verdes não supre totalmente as exigências nutricionais do cafeeiro, havendo a necessidade de se utilizar outras fontes de adubos minerais e/ou orgânicas a fim de complementação. &lt;/div&gt;&lt;div class="texto"&gt;A quantidade de adubo orgânico a ser aplicado deve ser calculada de acordo com a fertilidade do solo e com o material orgânico a ser utilizado. O ideal é buscar aconselhamento com um agrônomo antes de aplicar. Se a lavoura for orgânica, a dose a ser aplicada deverá ser calculada em função do teor de nitrogênio existente no material utilizado (ver Tabela 1), procurando suprir a exigência do cafeeiro por este nutriente. &lt;/div&gt;&lt;div class="texto"&gt;A população de plantas “invasoras” ou “daninhas” também pode ser considerada uma importante fonte de matéria orgânica para o cafeeiro. Antigamente, era comum o produtor deixar as entrelinhas completamente livre dessas plantas, pelo temor que havia da competição que elas poderiam exercer sobre o cafeeiro. Considerava-se tais plantas como “daninhas” por se considerar que causavam mais danos do que benefícios. Hoje em dia, já é sabido que nem toda planta invasora é considerada daninha. Tal idéia é defendida considerando-se os seguintes fatos: essas plantas são capazes de reciclar nutrientes das camadas mais profundas do solo para a superfície, disponibilizando-os novamente ao cafeeiro; promovem a descompactação do solo; protegem o solo da erosão e da insolação; aumentam a aeração e a retenção de água dos solos; servem de abrigos para inimigos naturais auxiliando no controle biológico de pragas e são capazes de reciclar expressivas quantidades de nutrientes, comportando-se desta maneira como adubos verdes. Com base neste conhecimento, o ideal é que o produtor faça a capina manual completa na linha, abrangendo uma faixa ligeiramente mais larga que a projeção da copa do cafeeiro, deixando-a livre de invasoras, evitando a competição das invasoras por água e nutrientes. Nas ruas ou entrelinhas as invasoras não devem ser erradicadas totalmente, mas sim, manejadas ou controladas por meio de roçadas com foice, roçadeira tratorizada ou tipo costal. &lt;/div&gt;&lt;div style="float: right;"&gt;&lt;a href="http://www.cnpab.embrapa.br/images/eritrina_cafeeiro.jpg"&gt;&lt;img src="http://www.cnpab.embrapa.br/images/eritrina_cafeeiro.jpg" width="264" /&gt;&lt;/a&gt; &lt;div class="texto"&gt; &lt;b&gt;Fig 2. poeppigiana&lt;/i&gt;&lt;/b&gt; &lt;/div&gt;&lt;/div&gt;&lt;div class="texto"&gt;Outra opção que o produtor pode dispor como fonte de matéria orgânica é o cultivo de árvores e arbustos associadas ao cafeeiro. O cafeeiro por ser uma espécie originária de florestas caducifólias da Etiópia, se beneficia com um sombreamento ralo, entre 20 a 40%. As árvores além de criarem um microclima favorável ao cafeeiro, são capazes de extrair os nutrientes das camadas mais profundas do solo e devolvê-los para os solos através da queda natural ou da poda de folhas, galhos, ramos e frutos, que ao decomporem são incorporados ao solo, fazendo com que as árvores tenham um importante papel na ciclagem de nutrientes para o sistema cafeeiro (Fotos 4 e 5). Heuveldop et al. (1985) obtiveram um aporte médio de 20 t/ha/ano de resíduos orgânicos de &lt;i&gt;Erythrina poeppigiana&lt;/i&gt;, dos quais 7.6 t/ha/ano foram oriundos de quedas naturais e, 12.4 t/ha/ano das podas. &lt;/div&gt;&lt;div class="texto"&gt; É importante que o cafeicultor tenha em mente que a MOS não é simplemente sinônimo de adubação, e que seus benefícios vão mais além da questão nutricional, especialmente quando se considera a microbiologia do solo, atualmente muito considerada pelos especialistas em solos. Portanto, o produtor que desejar obter boas colheitas, deve investir no manejo do sistema de forma a aumentar ou preservar a sua matéria orgânica. &lt;/div&gt;&lt;div class="texto"&gt;&lt;br /&gt;
