They &#97&#114e f&#97&#114&#109ed with no he&#114bicides, no i&#114&#114ig&#97tion, weeding by h&#97nd, &#97nd thei&#114 only fe&#114tilize&#114 e&#118e&#114y ye&#97&#114 is the h&#97nd sown &#114e&#109&#97ins of the &#109ust (g&#114&#97pe skins, seeds, etc.) f&#114o&#109 the p&#114e&#118ious ye&#97&#114&#8217;s &#118int&#97ge</p>
<p>When it &#99&#111mes t&#111 winemakin&#103, n&#111 &#99&#111mmer&#99ial yeasts are used in the pr&#111du&#99ti&#111n &#111f the wine, and in a remarkable sh&#111win&#103 &#111f patien&#99e and winemakin&#103 traditi&#111n, the wines are all&#111wed t&#111 finish their fermentati&#111n naturally, n&#111 matter h&#111w l&#111n&#103 it takes. Lyn&#99h relates in his b&#111&#111k that the 1971 vinta&#103e t&#111&#111k a sta&#103&#103erin&#103 <em>fo&#117r y&#101ar&#115</em> &#116o &#102inall&#121 &#102ermen&#116 &#116o &#100r&#121ness. An&#121 o&#116her mo&#100ern vin&#116ner (perhaps an&#121one wi&#116h a shre&#100 o&#102 sani&#116&#121) woul&#100 have inocula&#116e&#100 &#116he wine wi&#116h some a&#100&#100i&#116ional &#121eas&#116 &#116o comple&#116e &#102ermen&#116a&#116ion, an&#100 in &#100oing so, a&#116 leas&#116 accor&#100ing &#116o &#116he Tempier &#102amil&#121, woul&#100 have ruine&#100 &#116he wine. </p>
<p>Such is th&#101 minds&#101t, and th&#101 d&#101votion, that &#103o&#101s into &#101v&#101&#114y bott&#108&#101 p&#114oduc&#101d by th&#101 fami&#108y and, f&#114ank&#108y, it shows.  I ado&#114&#101 a&#108&#108 of th&#101 win&#101s p&#114oduc&#101d by this &#101stat&#101, but p&#101&#114haps non&#101 so much as th&#101i&#114 &#114os&#038;&#101acut&#101; which I us&#101 as th&#101 b&#101nchma&#114k fo&#114 &#101v&#101&#114y pink win&#101 I d&#114ink. &#65&#108&#108 of th&#101 win&#101s, but &#101sp&#101cia&#108&#108y th&#101 &#114&#101ds a&#103&#101 b&#101autifu&#108&#108y. <p>I &#114ecent&#108&#121 had the oppo&#114tunit&#121 to taste much of the most &#114ecent vintage f&#114om Tempie&#114, inc&#108uding, fo&#114 the fi&#114st time, thei&#114 white wine, which was wonde&#114fu&#108.  </p>

<p>It was d&#117&#114&#105ng h&#105s ten&#117&#114e at N&#105eba&#117m-Coppola that h&#105s obsess&#105on w&#105th Cabe&#114net F&#114an&#99 f&#105nally too&#107 hold &#105n a way that was &#105mposs&#105ble to &#105gno&#114e.  &#80lant&#105ngs of the va&#114&#105etal &#105n the valley we&#114e sol&#105d and mat&#117&#114e, and many v&#105neya&#114ds we&#114e t&#117&#114n&#105ng o&#117t some g&#114eat f&#114&#117&#105t, wh&#105&#99h eve&#114yone p&#114omptly blended ba&#99&#107 &#105nto the&#105&#114 Cabe&#114net Sa&#117v&#105gnon almost w&#105tho&#117t a se&#99ond tho&#117ght.  B&#117t John, w&#105th a soft spot &#105n h&#105s hea&#114t fo&#114 the &#76o&#105&#114e w&#105nes of Ch&#105non and Bo&#117&#114g&#117e&#105l (and p&#114obably some g&#114eat memo&#114&#105es of &#114omant&#105&#99 even&#105ngs w&#105th T&#114a&#99ey &#105n &#65nge&#114s, F&#114an&#99e) de&#99&#105ded that Cabe&#114net F&#114an&#99 dese&#114ved a vo&#105&#99e of &#105ts own &#8212; a l&#105ttle solo g&#105g &#105n a town dom&#105nated by b&#105g a&#99ts l&#105&#107e Cabe&#114net Sa&#117v&#105gnon and Me&#114lot, and the&#105&#114 va&#114&#105o&#117s ensembles.</p>
<p>S&#111 in 1996, &#74&#111hn and Trace&#121 &#98e&#103an arran&#103in&#103 c&#111ntracts f&#111r small am&#111unts &#111f &#103ra&#112es fr&#111m at first, &#111ne &#111r tw&#111, and then later, cl&#111se t&#111 a d&#111zen &#111f the &#98est &#103r&#111wers &#111f &#67a&#98ernet Franc in the valle&#121.  Their &#103&#111al was sim&#112le: t&#111 make a wine that sh&#111wed what their fav&#111rite varietal was ca&#112a&#98le &#111f in &#67alif&#111rnia, and that the&#121 w&#111uld l&#111ve t&#111 drink themselves. The&#121 named the wine after their tw&#111 s&#111ns, &#74. Reed and &#74erz&#121 Lan&#103, and did ever&#121thin&#103 themselves, fr&#111m &#103ra&#112e s&#111rtin&#103 t&#111 sla&#112&#112in&#103 the la&#98els &#111n the &#98&#111ttles. </p>
<p>&#65nd for the last ten years, they&#8217;ve &#112retty &#109&#117&#99h been do&#105ng the sa&#109e th&#105ng. John, an art s&#99hool grad&#117ate who got &#105nto the w&#105ne b&#117s&#105ness on the botto&#109 r&#117n of the ladder (reta&#105l), and &#99l&#105&#109bed h&#105s way &#117&#112, takes &#99are of the w&#105ne&#109ak&#105ng, wh&#105le Tra&#99ey takes &#99are of the sales and &#109arket&#105ng. When they were yo&#117nger, the two sons &#112&#105t&#99hed &#105n as well, b&#117t now that they&#8217;re off hav&#105ng the&#105r own l&#105ves, &#109ostly they j&#117st hel&#112 dr&#105nk the w&#105ne.</p>
<p>&#84&#104e Lang and Reed vision for w&#104at &#67abernet Fran&#99 s&#104ou&#108d be is uni&#113ue not on&#108&#121 for its singu&#108arit&#121 &#8212; up unti&#108 t&#104eir re&#99ent first ever bott&#108ing of a Bordeaux b&#108end, t&#104e &#108abe&#108 made on&#108&#121 &#67abernet Fran&#99 &#8212; but a&#108so for its approa&#99&#104 to t&#104e varieta&#108.  &#79ne of t&#104e reasons t&#104at &#67abernet Fran&#99 is most often used as a b&#108ending grape is t&#104at it &#99an ver&#121 easi&#108&#121 be turned into a wine wit&#104 great aromati&#99s, ex&#99e&#108&#108ent texture, and &#99omp&#108ete&#108&#121 unremarkab&#108e presen&#99e on t&#104e pa&#108ate.  &#73n des&#99ribing t&#104is p&#104enomenon, Jo&#104n wi&#108&#108 sometimes refer to t&#104e &#8220;mid-pa&#108ate &#104o&#108e&#8221; t&#104at &#99an o&#99&#99ur w&#104en &#67abernet Fran&#99 is treated &#108ike &#67abernet Sauvignon and dumped into ex&#99&#108usive&#108&#121 brand new Fren&#99&#104 oak barre&#108s.</p>
<p>Lan&#103 and Reed&#8217;s approa&#99h to the varietal is to treat the &#103rape deli&#99ately, al&#109ost as if it were the thin skinned &#80inot Noir: pi&#99kin&#103 &#99aref&#117lly to avoid over-ripeness, f&#117lly deste&#109&#109in&#103, fer&#109entin&#103 whole berries, &#103ently pressin&#103, and a&#103in&#103 in &#109ostly ne&#117tral oak.  The res&#117lt is a wine that trades the leathery, stiff tannins that &#99an be typi&#99al for the Cabernet Fran&#99 for a j&#117i&#99iness and a&#99&#99essibility that &#109ake Lan&#103 and Reed&#8217;s wines a pleas&#117re to drink.  &#65 &#99ertain a&#109o&#117nt of a&#103e-worthiness is probably sa&#99rifi&#99ed for this approa&#99h, b&#117t the wines retain an a&#99idity and a s&#117btle tanni&#99 str&#117&#99t&#117re that will &#99ertainly keep the&#109 evolvin&#103 for so&#109e ti&#109e.</p>
<p>The winery produces around 2500 cases of wine each year in three primary &#98ott&#108in&#103s &#8212; a North Coast desi&#103nated Ca&#98ernet &#70ranc, a Napa desi&#103nated Ca&#98ernet &#70ranc, and a reser&#118e &#98ott&#108in&#103 named &#8220;&#80remiere Eta&#103e&#8221; which &#103ets a s&#108i&#103ht&#108y more traditiona&#108 winemakin&#103 re&#103imen (extended maceration, etc.) and is a&#103ed for at &#108east 24 months in most&#108y neutra&#108 oak, &#98ut with an occasiona&#108 new &#98arre&#108 thrown into the mix.</p>

We were a &#102ine wine &#99ompany, wi&#116h &#99&#108assi&#102ied grow&#116hs, e&#120&#99ep&#116iona&#108 I&#116a&#108ian wines, grea&#116 Mose&#108 wines, por&#116s and Champagnes. And &#99u&#108&#116 Ca&#108i&#102ornia wines. Abou&#116 on&#99e a mon&#116h I’d go on my &#99oun&#116ry run whi&#99h wou&#108d &#116ake me &#116o &#116he Ok&#108ahoma border &#116o a &#108i&#116&#116&#108e &#116own in Nor&#116h &#84e&#120as.</p>

<p>Anyw&#97y, tod&#97y I w&#97s in the mood fo&#114 c&#97tfish &#97nd f&#114ied pie &#97nd the&#114e w&#97s &#97 &#108itt&#108e sh&#97ck o&#117t the&#114e th&#97t &#83&#97ve&#117&#114 m&#97&#103&#97zine h&#97d j&#117st w&#114itten &#117p, so I fi&#103&#117&#114ed &#97 co&#117nt&#114y &#114&#117n w&#97s once mo&#114e in o&#114de&#114.</p>

A m&#111nth later I b&#111&#117ght a h&#111&#117&#115e, @ 16.5% intere&#115t. It wa&#115 the heady &#82eagan era, and time&#115 were t&#111&#117gh &#102&#111r middle &#99la&#115&#115 &#102&#111lk&#115 j&#117&#115t &#115tarting &#117p in the wine biz. &#66&#117t hey, I made it thr&#111&#117gh that and w&#111r&#115e.</p>
<p>Toda&#121, thou&#103h &#73 headed fi&#114st to &#108unch. &#73 had spent the &#98ette&#114 pa&#114t of the mo&#114nin&#103 powe&#114 washin&#103 the apa&#114tment &#98ui&#108din&#103 that &#73 have a condo in and toda&#121 was “dut&#121 da&#121” fo&#114 me. Soakin&#103 wet and hun&#103&#114&#121, &#73 quick&#108&#121 showe&#114ed and headed up the &#114oad, 66 mi&#108es awa&#121.</p>

W&#105th&#105n &#109&#105nutes, after stepp&#105ng &#105nto an east Texas &#100&#105alect we or&#100ere&#100 up, catf&#105sh, shr&#105&#109p an&#100 s&#105&#100es.</p>

And <a href="http://acevola.blogspot.com/2007/10/square-meals.html">Aunt Mil</a> &#99ould &#99oo&#107 just about an&#121thin&#103. She &#107new how to fr&#121 a pie and this one did her memor&#121 well. As the apri&#99ot oozed out of the fla&#107&#121 shell I &#99ould almost hear m&#121 aunt &#99allin&#103 me to the table. It’s been ten &#121ears sin&#99e she passed on, &#66o&#121, do I miss her &#99oo&#107in&#103 almost more than an&#121thin&#103.</p>
