Triture as bolachas até ficarem praticamente em pó. Numa tigela, bata as natas em chantilly, com a ajuda de uma batedeira eléctrica, começando na velocidade mínima e indo aumentando gradualmente. No fim desse tempo, escorra bem a água e deite a soja numa frigideira com azeite. Junte os cogumelos e tempere de sal, pimenta e noz-moscada. Deixe fritar lentamente, mexendo de vez em quando. De seguida, deite as natas e o vinho do Porto, mexa e rectifique os temperos. Depois escorra, reduza a puré, coloque num passado de rede e deixe escorrer bem.&lt;br /&gt;Ligue o forno a 180ºC. Forre um tabuleiro com papel vegetal e unte com margarina. Numa tigela, bata o açúcar com as gemas, adicione o puré de cenoura e bata novamente. Junte depois a farinha peneirada com o fermento batendo sempre. Por fim, bata as claras em castelo e envolva-as cuidadosamente na mistura.&lt;br /&gt;Verta o preparado anterior para o tabuleiro e com a ajuda de uma colher de pau ou uma espátula, alise toda a superfície da massa. Leve ao forno durante 20 minutos, deixando ficar ligeiramente mal cozido.&lt;br /&gt;Retire do forno, desenforme sobre um pano de cozinha polvilhado com açúcar, polvilhe a parte que agora ficou para cima com canela em pó a gosto e enrole com a ajuda de um pano. É só espetar o esparguete, ainda cru, em salsichas das alemãs (de frasco) partidas aos pedaços. Depois é só levar a cozer em água temperada de sal. Cortam-se os filetes de pescada às tiras e tempera-se de sal e alho em pó. Num pirex, deita-se um pouco de azeite, só para cobrir o fundo. Deita-se num prato um pouco do conteúdo da sopa de marisco em pó e passam-se lá os filetes até ficarem bem cobertos. Cortam-se as delícias do mar às rodelas grandes. No tabuleiro deita-se os filetes, as delícias, os cogumelos, os óregãos, o molho béchamel e mistura-se tudo com cuidado. Leva-se ao forno, o tempo suficiente para cozinhar o peixe. Quando estiver pronto, deita-se a massa lá para dentro, volta-se a misturar bem, cobre-se com queijo ralado e volta para o forno para gratinar. Quando a massa ficou pronta estendi-a na bancada polvilhada com farinha e estiquei-a com o rolo da massa para ficar fininha. De seguida, coloca-se no tabuleiro do forno e faz-se umas dobras no fim da massa. Cobre-se com o molho de tomate e depois com o queijo fatiado suficiente para cobrir toda a massa. Deita-se todos os outros ingredientes por cima, deixando o queijo ralado e os orégãos para polvilhar no fim. Enquanto isso, descascam-se as pêras deixando-as inteiras, corta-se o fundo da pêra a direito porque assim criamos uma base para a pêra ficar de pé, também tem de se ter o cuidado de não se lhes partir o pé. Quanto a mistura que está no tacho começar a ferver, deita-se lá dentro o pau de canela, a casca de limão e as pêras. Se as pêras não estiverem todas dentro do molho, deixam-se ficar deitadas metade do tempo nessa posição e depois viram-se do outro lado e ficam o resto do tempo, eu deixo ficar 15 minutos em cada lado, ou 30 minutos se tiverem todas cobertas de molho.&lt;/div&gt;&lt;div align="justify"&gt;Depois tiram-se com cuidado as pêras e colocam-se numa taça. Deixa-se o molho ao lume e deita-se o vinho do porto.
