Vegan Papaya-Mango Sorbet

For my sweet tooth lovers out there! I made this sorbet that is super easy and simple.

1 large papaya, peeled and pitted
2 large mangos, peeled and pitted
1/4 cup of sweet dreams brown rice syrup
1/2 cup water
2 tablespoons lime juice
and mint leaves

I Scream, You Scream, We All Scream for Ice Cream

This past weekend I went to my favorite vegan spot Healthy Nibbles with my family to grab some ice cream. I had a vegan grape-nut ice cream with a vegan sugar cone. I been wanting to make vegan ice cream at home now I'm more inspire to. I'm wearing crop top and pants by Topshop, shoes Christina Louboution Piagalle 120mm.

My birthday was last month and my love got me the Christina Louboutin Pigalle 120mm. I was so excited been eyeing these shoes for so long. It goes with everything a must to my shoe collection.

This week I decided to make a simple healthy vegan snack Banana Almond Tarts. Have it with soy or almond milk delicious!!

Ingredients

1 cup almond flour

2 ripe bananas

1/2 cup of egg replacer

1 tablespoon almond butter

1 tablespoon cinnamon

Bake for 10-15 minutes for 350

My go to breakfast is scramble tofu with vegan cheese, spinach, and avocado. Then add some salt and black pepper for taste. With a glass of vegetable juice. It's delicious and healthy!

Beyond excited to share this news Johnny Rocket restaurant finally is vegan friendly. Last week me and my sister went to grab a burger and fries. Also, excited that they have sweet potato fries. I'm allergic to potatoes, so I'm jumping up and down with joy!!

Who said Vegan's cant have fun?!

I made carob chip cookies. I'm allergic to chocolate so I'm happy I get to enjoy it by replacing it with carob. Have it with almond milk or almond vanilla ice cream, soy whip cream with some blackberries and your in for a treat.

I try my best when making sweets to stay away from sugar by adding applesauce or some other substance.

The recipe:

2 1/4 cup whole wheat flour
1 tsp salt
1 tsp baking soda
1 cup vegan margarine
3/4 cup applesauce
3/4 cup Bee Free
1 tsp vanilla
Ener-G Egg Replacer for 2 eggs (prepared according to package instructions)
1 1/2 cups of carob chips

Bake 350 degree for 10-20 minutes. Enjoy!

The other day I made vegan pasta and vegan pesto sauce. Its super simply and so delicious. I used angel hair for the pasta. I made my own vegan pesto sauce.

Vegan Pesto Sauce:

2 cups packed fresh basil leaves, washed and well drained

3/4 cup freshly grated Vegan parmesan cheese

1/2 cup olive oil

2 garlic cloves

Just place all in a blender.

Vegan Whole Wheat Fruit Tarts

I'm so glad to be in this era where being vegan is so easy. They have everything to replace what I use to love.

For Crust:
2 cups whole wheat flour
1/2 cup warm water
1/2 cup safflower or canola oil

For Filling:
4-5 apples, peach, pears, or papaya thinly sliced
1/4 cup of sweet brown rice syrup
Dash of cinnamon or nutmeg

This pass weekend I had an order to make a Rolls Royce Silver Cloud cake. Making the cake made me feel like I was in the Jay-Z & Kanye West video Otis when they redesign the Maybach. The cake is made of marble and buttercream.

I'm actually allergic to chocolate, but I'm able to have carob. I used vegan carob chips to make chocolate covered strawberries. You can watch this video that shows step by step to make your own. So simple and yummy!

Lately I been in love with items that is a star on its own, for example this Jimmy Choo bag makes such a bold statement. You can wear it with something simple and the outfit will be so stylish. I'm so in love with these booties by Aquazzura. I love the color and the orange heel it's so different. I'm a huge fan of wide leg trousers. I would own every color if I could. Something about big ruffles on the bottom of a gown always catches my eye its a show stopper no matter what.

Vegan Creme Brûlée

After a delicious meal I always reach for something sweet. So I decided to make creme brûlée the other night. I'm vegan/vegetarian for almost a year now. I had creme brûlée one time before I was vegan and fell in love right away. Luckily I found a vegan creme brûlée recipe here that has the same rich texture. I used Almond butter instead of Cashew butter.

I'm a huge fan of space in a room I feel that I'm able to think clearly and be more creative. A room with long curtains, fresh flowers, and a chandelier gets me in a great mood. I been on the hunt for the Jordan's Bugs Bunny like forever, I'm glad to say they will be coming out soon. I been wearing big sweaters rolled up and more lace lately. I'm so in love with these Bottega Veneta shoes it reminds me of Ms. Carrie very Sex in The City.
