It’s done from hart goat- or sheepcheese, red peppers and olive oil. I had my first one in a little restaurant in &quot;El Purtito&quot;. Fresh from the sea and very easy cooked.&lt;br /&gt;&lt;br /&gt;Recipe:&lt;br /&gt;&lt;br /&gt;1 whole Dorade (600g)&lt;br /&gt;3 cloves pealed garlic&lt;br /&gt;1 Tablespoon Oliveoil&lt;br /&gt;1 Tablespoon fresh parsley&lt;br /&gt;Oceansalt and pepper&lt;br /&gt;&lt;br /&gt;Fill the dorada with the parsley, garlic and spread the olive oil all over. Season the dorade with salt &amp;amp; pepper. Put it in tin foil and close it like a bonbon. Now cook it in the oven on 160 degrease for about 22 min. You get them with nearly every kind of food and you always eat them with one of the famous &quot;mojo&#39;s&quot;.&lt;br /&gt;&lt;br /&gt;Recipe:&lt;br /&gt;&lt;br /&gt;1kg new potatoes&lt;br /&gt;100gr Oceansalt&lt;br /&gt;1/2 lemon&lt;br /&gt;&lt;br /&gt;Leave the potatoes unpealed and wash the potatoes very well. Put them in a big pot with cold water and add the lemon and the salt. When the water starts boiling lower the fire and keep it cooking for about 30 mins. You get it normal acompanied with &quot;papas arrugadas&quot; (new potatoes) and you it it with all kind of meats.
