Em seguida, escorra a água e passe-as por um espremedor de batatas. Coloque as batatas espremidas em uma panela, leve ao fogo, junte os demais ingredientes e mexa por mais alguns poucos minutos. Reserve.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Recheio&lt;/em&gt;&lt;br /&gt;Hidrate a proteína texturizada de soja (&lt;a href="http://cantinhovegetariano.blogspot.com/2007/06/como-hidratar-protena-de-soja.html" target="_blank"&gt;saiba como&lt;/a&gt;) e reserve. Numa panela, coloque o azeite e refogue o alho e a cebola até dourarem. Em seguida, coloque a salsinha, a cebolinha e a PTS. Refogue por alguns minutos e adicione o shoyu e o cominho. Refogue por mais alguns poucos minutos e desligue.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Montagem&lt;/em&gt;&lt;br /&gt;Forre o fundo de um pirex com metade do purê. Em cima do purê, coloque o recheio e finalize fazendo outra camada com o restante do purê. Leve para cozinhar e, assim que ferver, reduza o fogo e cozinhe por 20 minutos, ou até a abóbora ficar macia, mexendo de vez em quando. Acerte o sal e acrescente a pimenta. Misture e retire do fogo. Transfira a metade da sopa para o liquidificador e junte a hortelã. Bata por 1 minuto e despeje na panela com a sopa restante.
