Aliás, depois de escrever essa mensagem vou precisar espanar a poeira e tirar umas teias de aranha que começam a tomar conta de tudo por aqui.&lt;br /&gt;&lt;br /&gt;Tive uns probleminhas que me afastaram desse cantinho que eu amo durante quase dois (longos) meses... Mas, estou de volta e espero nunca mais ficar tanto tempo assim sem poder atualizar o blog.&lt;br /&gt;&lt;br /&gt;Tem muitos comentários para serem aprovados e vou ser sincera, vou responder à medida do possível. O motivo é simples... Meu tempo, que já era meio escasso, ficou ainda mais curto.&lt;br /&gt;&lt;br /&gt;Também quero aproveitar a oportunidade e agradecer a todos que notaram a minha ausência, deixando comentários ou enviando e-mail's perguntando se estava tudo bem... Lave as berinjelas, elimine os pedúnculos e com a ponta de uma faca pequena escave o interior, retirando parte do miolo. Tome cuidado para não furar as berinjelas. Faça o mesmo com os tomates e reserve. Lave a pimenta, retire o pedúnculo, os filamentos internos e as sementes. Lave o arroz e reserve. Bata no processador a cebola, a pimenta e o alho por 1 minuto e coloque a mistura numa tigela. Misture 3 colheres (sopa) de azeite, o alecrim, o arroz, as uvas passas e o sal. Recheie os tomates e as berinjelas, disponha-os numa assadeira e regue com o azeite restante. Leve ao forno médio por 1 hora e 20 minutos, ou até os legumes murcharem e o arroz ficar macio. Descasque e lave a cebola e os dentes de alho e pique-os finamente. Escorra o tofu e pique-o finamente.&lt;br /&gt;&lt;br /&gt;Leve uma panela ao fogo e aqueça o azeite. Junte depois a cebola e os dentes de alho e deixe refogar até que a cebola fique murcha. Adicione o tofu e regue com o vinagre. Tempere com sal e pimenta e polvilhe com orégano. Envolva tudo e deixe cozinhar durante 2 minutos até que os aromas fiquem envolvidos.&lt;br /&gt;&lt;br /&gt;Retire do fogo e distribua pelos cogumelos. Leve-os depois ao forno pré-aquecido a 180º C até que fique tudo douradinho e os cogumelos fiquem macios. Reserve.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Recheio&lt;/em&gt;&lt;br /&gt;Em uma panela, aqueça o azeite e coloque a cebola e o alho para refogar um pouco. Em seguida, adicione o palmito picado, as ervilhas, as azeitonas, a pimenta do reino e o extrato de tomate. Deixe para colocar o sal só depois de engrossar o refogado. Mexa bem e junte a farinha de trigo dissolvida na água, mexendo rapidamente até formar um creme espesso. Acrescente a salsinha picada e sal a gosto.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Montagem&lt;/em&gt;&lt;br /&gt;Forre com a massa forminhas de empada do tamanho desejado.
