Optional toppings: lettuce, tomato, mayonnaise.&lt;/p&gt;&lt;p&gt;Instructions: Preheat a skillet or griddle over medium heat. Cook the bacon until crispy, then remove and drain on paper towels. While the bacon cooks, whisk the eggs in a bowl and season with salt and pepper. In the same skillet, melt a little butter over medium-low heat. Salt and pepper to taste.&lt;/p&gt;&lt;p&gt;Instructions: Heat a skillet over medium-low heat. Butter one side of each bread slice. Place one bread slice, buttered side down, in the skillet. Layer the caramelized onions on the bread in the skillet. Add the sliced figs on top of the caramelized onions. Sprinkle the shredded Gruyre cheese evenly over the figs. Dot the goat cheese on top of the Gruyre cheese. Season with a pinch of salt and a dash of pepper. Place the second bread slice on top, buttered side up. Cook until the bottom slice is golden brown, about 3-4 minutes. Carefully flip the sandwich and cook the other side until it&amp;rsquo;s golden brown and the cheese is melted. Remove from the skillet and let it cool for a minute before slicing. Fresh berries, for garnish.&lt;/p&gt;&lt;p&gt;Instructions: Preheat the oven to 350F 175C. In a bowl, toss the diced apples with lemon juice, maple syrup, cinnamon, nutmeg, ginger, and sea salt. Spread the apple mixture evenly in a baking dish and bake for 25-30 minutes, or until the apples are tender. In another bowl, combine almond flour, melted coconut oil, maple syrup, cinnamon, and chopped pecans or walnuts to make the crumble topping. Spread the crumble mixture onto a baking sheet lined with parchment paper and bake for 10-12 minutes, or until golden brown and crisp, stirring occasionally. Allow the apple mixture and crumble topping to cool. To assemble the parfait, layer coconut yogurt, baked apple mixture, and crumble topping in serving glasses. Repeat the layers until the glasses are filled, ending with a layer of crumble topping on top. Garnish with fresh berries.
