The scales say I haven't lost any weight, but...I've had to cut another hole into the belt, and a colleague who hadn't seen me since the beginning of December said that I looked more svelte - so here's hoping that I've burned off some of the fat and added some muscle.

I had a lie-in this morning - it was simply too cold to get out of bed - and ended up getting a taxi to the train station, boy did I miss walking there this morning.

I'm wearing in a pair of hi-tec v-lite altitude boots, in preparation for walking holiday in April (sans offspring) to celebrate our wedding anniversary.

A riposte

Before you all start, I know the Duck has forbidden me from viewing his and Edie's blog...but when someone pointed this out to me, I just had to run, laughing to my keyboard.

Carbophiles aka Tubolards latest post. “Haven’t quite lost the war yet !”
ad ho·mi·nem [ad hom-uh-nuhm]1
adjective
1. appealing to one's prejudices, emotions, or special interests rather than to one's intellect or reason.
2. attacking an opponent's character rather than answering his argument.
“I understand the definition to mean that when I say "Edie, I think you're wrong because..." I am providing a reasoned argument to why I think he's wrong. When Edie says "I think you're wrong because you're a retard!"' he's lost the battle”

Retard…to hold back, slow down, delay, check, hinder and impede. It think that covers very well what you and ‘readers’ try to achieve. Though to be honest, in your case, mentally deficient may well apply. Let’s face it, it does not require the brains of Einstein, or iron will, to get to a safe and healthy weight. Where do you think you have gone so far wrong ?

I don't know that I have gone wrong and you, not knowing anything about me or my medical history are certainly not in a position to tell me either. What I do know though is that only being slightly shorter than Jimmy Moore and having been dieting for a shorter time than him, we are both the same weight...we are both capable of admitting it isn't an ideal weight, but we're both in a better position than we were when we started.

Tell me Carbo, what do call a person who was fired in disgrace as a forum mod. Whose own forum collapsed and a was complete faluire.

Someone who can spell and can string a sentence together? But more importantly someone who tried...what would you call them?

What do you call a person who sets up a blog and does nothing but pour scorn and ridicule on innocent people. From Jay Wortman, AliB, Dillinger, Fergus, Hanna, and so many more. I see your cronies were running down Viv recently. The day before your misfits were running down Borofergie and Grazer.

Carbosoze? Crusty white oaf? The authors of The Ides of Starch?

Actually, I don't know that I have poured scorn on them personally, I may have suggested that their ideas were certainly off the wall and that they had no right to speak for all diabetics, but as for hurling insults at them...nope, not me.

What do call a person, who after more than three years trying to loose weight, is still in the morbidly obese range.

Someone who's trying. What do you call a low carber who's still in the morbidly obese category after eight years of dieting? Jimmy Moore? or someone who is trying.

What do you call a person that states you have the right to remain anonymous, yet twice signpost people, on your blog, to my private address. I’ll save the rest till next time, with you, there is sure to many next times. You are very crafty aren’t you. Placing a post inviting people to say the words, you have not the courage to say yourself, despite hiding cowardly in the dark, anonymous and gutless !

Was it only twice? The first time was here in response to a typical rant from you, the second was in response to your proud boast that you'd made an unsolicited phone call to someone who perceived it as threatening. Is it really courageous to hurl insults at people from behind a keyboard? Or 'phone potentially vulnerable people? I don't think it is, which is why I don't do it. If you can't tell the difference between an ad hominem attack and an attempt to hold a reasoned dialogue - I sympathise. I've often said that it's always better to tackle the individual's arguments rather than the individual.

You may be looking for a part in the next Robin Hood film as Friar Tuck, or maybe Billy Bunter, possibly Laurel and Hardy is more your scene, (I am sure Graham will be happy to play the thin bloke) but many diabetics are not.

Welcome back Carbosoze, the Ides of Starch or Crusty White Oaf - whichever persona you are today.

Having a go at fat or over weight people I hear you say ? I was a fat person. I chose to lose the foods that lead to my obesity, while you were pushing your 400 carb loaves and pedalling Orlistat.

You know the old saying "there's nothing worse than a former smoker", does the same apply to ex-fatties? I really don't think you can accuse me of pedalling Orlistat. Orlistat was a personal choice made by me acting in partnership with my GP, as I think I explained in the original post. As for loaves of bread, not even I in my wildest hey day could eat a whole loaf in one sitting - whatever happened to your concept of portion control?

As I said on here yesterday, most of our posts and comments are offering links to sound information, peer revued scientific papers and simple recipes that result in weight loss or maintenance. The sort of foods that lead to safe BG numbers, safe lipids and nil/minimal medication. Let me give you a clue as to the quality of your blog. You recently posted a good recipe for pate, not one single comment, you also looked for a pat on the back because you can walk, three comments.

I had to hold back a chortle as the mental image of a collection of piers dancing on a stage crossed my mind, but I don't think I was looking for a pat on the back, I don't need constant reassurance from others that I'm really a good bloke. It depends on what you see a blog as - to me it's a means of communicating my thoughts - not necessarily regurgitating the thoughts of others.

Yet when you post an article encouraging your cronies to ridicule or humiliate good people, your comments section goes crazy. Says it all don’t you think. And you, and almost all of your commentors anonymous of course.

I would point you to my comments policy, your own experiences with DCUK and with LCD demonstrate that people need a place where they can be splenetic. The evidence suggests that people enjoy venting their spleen.

Don’t forget I have offered to meet you twice.

How could I, the latest invitation was so...well inviting.

I know women and children read this blog, so I will refrain from what I would like to call you.

Do let us know when you open your next blog dedicated to ridiculing the innocent!

Keep up your good work, and thank you for giving us the opportunity, to promote our low carb lifestyle, and it’s many benefits once again. Try it sometime, and you may not have to go another three years in the morbidly obese club. You may have good control of your BG numbers, but morbid obesity won’t get you to an old age pension.

What would you say to Jimmy then?

Why are you and your readers so hell bent on taking others with you ? Check out diabetes.co.uk, look at the massive amount of evidence. Low carbing is reducing weight, BG numbers, and lowering medication, even you must feel the joy coming down the wires.

I don't know that I'm taking anybody with me? Follow the recommendations found throughout this blog - find out what works for you and keep with it.

As Borofergie said recently, only a ninja can sneak up on a ninja, and you certainly ain’t no ninja.

Not knowing anything about Ninjas I have no idea about that which you speak.

Haven't quite yet lost the war!

ad ho·mi·nem   [ad hom-uh-nuhm]1
adjective
1. appealing to one's prejudices, emotions, or special interests rather than to one's intellect or reason.
2. attacking an opponent's character rather than answering his argument.

I understand the definition to mean that when I say "Edie, I think you're wrong because..." We are advised that we should be aiming to complete around 10,000 steps a day. That's easy I thought to myself, I must do that everyday just walking around the office from meeting to meeting as I do.

I've got an app on my 'phone that purports to be a pedometer and as I carry the damned thing around with me wherever I go (one of the perils of being such a popular person), I enabled the app.

Here are the statistics from the 16th December onwards when started my Christmas leave, I returned to work on the 3rd January.

<thread>

Date

Steps

Calories

Mileage

287,816

20,889

163.5

16/12/2011

12,392

899

7.0

17/12/2011

12,622

916

7.2

18/12/2011

14,280

1,037

8.1

19/12/2011

13,793

1,001

7.8

20/12/2011

14,372

1,043

8.2

21/12/2011

10,699

777

6.1

22/12/2011

12,681

919

7.2

23/12/2011

16,956

1,230

9.6

24/12/2011

14,799

1,074

8.4

25/12/2011

12,938

939

7.4

26/12/2011

12,252

889

7.0

27/12/2011

15,256

1,107

8.7

28/12/2011

11,300

820

6.4

29/12/2011

15,762

1,144

9.0

30/12/2011

9,986

725

5.7

31/12/2011

11,988

870

6.8

01/01/2012

11,233

815

6.4

02/01/2012

9,642

699

5.5

03/01/2012

4,787

347

2.7

04/01/2012

7,459

541

4.2

05/01/2012

6,912

501

3.9

06/01/2012

4,614

335

2.6

07/01/2012

11,329

821

6.4

08/01/2012

9,211

668

5.2

09/01/2012

10,553

772

6.0

That's right folks, first the highlights. In 25 days I've walked over 160 miles (based on the assumption that one of my strides is approximately 3 feet and that there are still 1760 yards in an imperial mile), that's an average of 6.5 miles a day (or 11,355 steps). I've made 283,863 steps and burned 20,263 calories (according to my pedometer).

I quite enjoyed the 23rd December, that was our Christmas food shopping day and did we walk, yes we did...around three different supermarkets just to get everything we wanted - and then carried the shopping home - none of this driving around to the corner shop malarkey for us. It's likely that I burned more than 1,230 calories that day because of the weight training I was doing!

But what really surprised me was how little walking I do during the business day, I had convinced myself that I was walking well in excess of 10,000 steps/day. So I was concerned to discover that I wasn't even achieving 5,000 steps. So I've had to revise my new years resolution and I'm now catching up on the missing 6000 or so at the beginning and end of each working day.

On a slightly different note, I'd been making the pate recipe with defrosted chicken livers, this weekend I found some fresh chicken livers - and I can thoroughly recommend using the fresh over frozen - a completely different taste

Introductions

It has come to our notice that people want to put faces to our names, so here goes. Wondered what people thought?

Field mouse meatballs
Mashed tuna eye
Slug gravy
Cow bird cake

I found a recipe for mouse meatballs, here

I guess this is what they mean by slug gravy.

In Japan, apparently tuna eye can be bought quite cheaply.

Presumably then you can use this product in making a cow bird cake.

Kinky Cake

I'm sure you'll all love this one

Ingredients

140g polystyrene
60g re-extruded foam scrap
1.6g nucleating agent
5ml food colouring - yellow

Instructions
Mix everything together :) and cook at a very high temperature until everything is melted, take out of the oven and allow to cool. After eight years following a low carb diet, Jimmy's weight has dropped from 410 lbs (186 kg) to 280 lbs (127 kg). I think that's an achievement that deserves congratulations, it's a real victory and demonstrates what determination can do for you.

When my diabetes was diagnosed I weighed in at slightly less than Jimmy. Today? I weigh in at slightly less than Jimmy, it's a real victory and demonstrates what determination can do for you.

So is Jimmy's success any different than mine? I don't believe so, I believe we both deserve a hearty slap on the back for being weight loss heroes.

I don't believe that any one diet is better than any other, in fact I believe that you'll find this statement repeated throughout this blog.

Canonisation?

The things I have to do to get noticed!

This little ditty caught my eye as well.

2012

Wishing everyone a fruitful 2012.

Pâté anyone

One of our Christmas traditions is Pâté and toast for Christmas breakfast. Whilst reading through one of the many food magazines that we picked up during this Christmas season I happened to spot a recipe which looked, and proved to be, easy to make.

This has proved to be a popular dish in our household, I've had to make it three times since I've been on holiday. It will keep for three days in the fridge, if you want to freeze it pour some clarified butter over the top and it should keep for about a month.

Ingredients

1 onion chopped

1 garlic clove (crushed)

225g chicken livers

2 bacon rashers (rindless)

50g butter

2tsp brandy or whiskey (optional)

2tsp thyme

Instructions

Chop the chicken livers and trim off all fat;

Melt the butter in a pan, and add the onion and garlic, leave to cook in the butter until the onion is transparent;

Add the bacon and livers, and fry until the livers are just cooked;

Pour into a blnder and add the liquor and thymme, and then blend;

Pour into a suitable container, and leave to chill for a couple of hours. Hey presto a delicious pâté.

Fad diet?

This article refers to a fad diet sweeping through Norway that has meant that they are running short of butter.

Here’s what one site says about “fad” diets:

Because they often cut out key foods, fad diets may cause the following symptoms:

Weakness and fatigue;

Dehydration;

Nausea and headaches;

Constipation;

Inadequate vitamin and mineral intake

Fad diets that severely restrict food groups or nutrients may also mean that you miss out on the protective health effects that a balanced eating plan provides.

Here's a list of ten signs that indicate you could be being sold a fad diet:

Promises a large or fast weight loss (more than two pounds per week);

Does not include suggestions to consult with your doctor or a registered dietitian;

Encourages you to eliminate food groups (such as grains) or eat from a limited selection of foods;

Offers rigid menus that don’t consider your likes, dislikes and lifestyles;

Neglects active living or lifestyle changes;

Provides far fewer calories that what is needed for an energized, healthy lifestyle;

Contradicts what most trusted health professionals say;

Depends on special products, supplements or treatments;

Has miraculous claims;

Relies on testimonials and anecdotes rather than scientific evidence.

I’ll leave it to your own fertile imaginations to decide whether you’ve read claims that ring these particular alarm bells. We bought a cauliflower and some mature cheddar this week, so out came Delia. Try this if you fancy:

1 pint of milk or a Delia suggestion is 1/2 pint of milk and 1/2 pint of vegetable stock

12 peppercorns

Onion slice

Mace

Bay leaf

Warm the milk up, don’t allow it to come to the boil with the peppercorns, onion, mace and bay leaf. Leave standing for around 45 minutes.

30g butter

30g chickpea flour

Melt the butter and stir in the flour to make a roux.
Sieve the liquid into the roux and whisk until the roux has dissolved into the liquid, heat over a low flame until the sauce begins to thicken. Add 75g of your favourite cheese, finely grated into the hot sauce and stir until there are no lumps.
Pour over the cooked cauliflower and sprinkle 25g of your favourite cheese over the dish and heat under a grill for a couple of minutes.

Lies, damned lies, and statistics

I remember a certain somebody telling a type 1 diabetic that if they just cut back on their carbohydrate intake then they would no longer need insulin. Unfortunately a certain somebody else in a fit of pique deleted all the posts from that certain somebody so that everybody else’s responses to that certain somebody no longer made sense – like an exchange between tubolard and a certain somebody surrounding the benefits (or otherwise) of using Splenda.

But let’s get back to statistics:

The 2009-10 National Diabetes Audit data can be found here, and the stats are presented in a rather neat spread sheet. I suggest you examine them, rather than rely on a executive overview of them written by someone with a specific aim in mind.

So a little bit of an overview, just under 78% of registered practices submitted data to the NDA.

Between 2003/04 and 2009/10 the number of registered patients with diabetes increased by 895% (from 191,198 to 1,901,604). In the same period the number of patients receiving all the due care processes rose from 6.5% (12,543 patients) to 50.11% (952,894 patients) – given the increase in registered patients, not bad – it’s not brilliant – but it’s not bad.

In the 2003/04 audit just shy of 75% of registered patients achieved an HbA1c ≤ 7.5 – that’s 143,399 patients in 2009/10 just less that 88% of registered patients had achieved that target – that’s 1,673,412 patients. Whether or not you agree that 7.5 is an appropriate HbA1c target – these are pretty impressive statistics.

The spread sheet gives a national breakdown, and also provides statistics by PCT and allows you to compare your PCT against others – for instance, my PCT who encourage SMBG for type 2s just over 87% of registered diabetics achieve an HbA1c ≤ 7.5 and in a neighbouring PCT just shy of 92% of registered diabetics achieve that.

Anyway, perhaps we ought to discuss the statistics – what do you think?

Indigestion strikes vocal low carber.

Poor ol Edie is having one of his frequent bouts of indigestion.
An oil which is predominantly unsaturated fat.

The master baker expects us to trust in him, yet he openly admits to creating a sock puppet – in his wife’s maiden name (no hiding his true identity there then) and openly lied. Isn’t that the behaviour of that much maligned individual, the troll?

In this post (contradicted by the post discussed in the previous paragraph) he concludes “To say low fat low gi could never work would be ridiculous”, yet that is what he does throughout his blog.

The great Barry Groves (an alumnus of that well known diploma mill Trinity College and University) informs us that we were intended to eat meat, and nothing but meat. In fact Groves goes to great lengths to demonstrate that our Gods intended us to eat nothing but meat, yet the majority of recipes on the master baker’s site are vegetarian dishes.

I’m confused, will the real Eddie come out and make his views known?

Them Canadians ain’t all bad y’know

I haven’t mentioned my slow cooker at all – it was an impulse purchase two Christmases ago that makes the odd appearance now and again. Around the same time we bought it, we were given a Canadian book called The Best Diabetes Slow Cooker Recipes by Judith Finlayson a Canuck Registered Dietitian. I only mention it, because today – for a change – we decided to use it.

Dinner tonight was the alliterative recipe, Lamb Shanks with Luscious Legumes:

The recipe (for 12 services):

500g Flageolet beans (11.3g carbs/100g);

2 tbsp. all purpose flour (77.7g carbs/100g);

1 tsp. salt

1/2 tsp. cracked peppercorns;

6 lamb shanks, split in half;

2 tbsp. olive oil;

2 chopped onions (7.9g carbs/100g);

2 carrots, peeled and diced (7.9g carbs/100g);

4 stalks celery, diced (1g carbs/100g)

6 cloves garlic, minced (16.3g carbs/100g);

1 tbsp. finely chopped rosemary;

250ml beef stock;

125ml red wine;

Season the flour with the salt and pepper and lightly coat the lamb shanks. Brown the lamb in half of the olive oil.

Fry the carrots, onions, and celery until the carrots are just softening. Add the remaining flour, garlic and rosemary.

Add all the ingredients to your stock pot and cook on low for between 10 and 12 hours or on high for between 5 and 6 hours, until the meat is just falling off the bone.

The smell wafting through the house today was mouth wateringly divine.

According to the book there are around 255 calories and just under 30g carbs per serving.

The serving suggestion was a slice of crusty bread and a salad, tonight I fancied some steamed Basmati rice with some sun dried tomato.

Going through my bookshelf

'Er indoors and I were going through our book shelves a couple of weeks ago, and I happened across a book I'd bought in the late eighties, Elizabeth David's French Provincial Cooking. I remember reading it when I bought it, it isn't your traditional cook book - rather she talks about a dish and gives some instructions. It's all a bit rule of thumb, no list of ingredients - you have to read the recipe to get a feel for amounts and methods. I'd recommend it to each and every one of you.

I remarked that I hadn't actually cooked anything from that book, and 'er indoors pulled a face as if to say "here we go again, he's going to spoil my kitchen and create a pile of washing up for me". Flicking through the book my eyes fell upon something called a tomato omelette which looked fairly simple. So here goes for a wonderful breakfast.

Take a tomato and peel it and then chop it.
Prepare eggs for the omelette, and as you introduce the egg to the pan spread the tomato over the egg. Simples.

Even More Brain Health

Further to my brain health post – I was watching Watchdog last night and I watched the review of the Dukan Diet, and today whilst I was browsing the interweb I found this article in Psychology Today – admittedly it’s by an author of a competing diet, but it does reinforce the message from the research referred to in brain health.

I like Fridays

It’s Friday. Yay! I get to work from home on Fridays – that’s nice, I don’t have to get up before 6am and catch the 7:08 to London, and I don’t have to come home in the dark – that’s really nice.

Anyway the sun was out this morning, the sky was nearly blue – it’s a lovely shade of blue as I write this post.

I got up at 7am and went for a walk. My new pedometer tells me I walked 3,364 steps which is good, and later on today I might do another 6,000 – I haven’t quite made my mind up yet.

After having walked that many steps, I felt I needed a breakfast. I haven’t had a sausage since the Orlistat incident. A friend (yes, I do have at least one friend) pointed out to me that Black Farmer sausages are gluten free – so I thought I’d try some.

I can now testify to the quality of Black Farmer sausages – very tasty. Rather more fat than I would normally like (nearly 80g in a 400g pack of 6) but only 4g carbohydrates, but hey ho! what the heck, you only live once after all.

Ketones Fuel Cancer?!

My Carb Sane-Asylum: Ketones Fuel Cancer?!:
I thought I’d post the following.

I don’t want to get embroiled in another low carb row. I absolutely respect any person’s choices no matter what I may personally feel about those choices. I’d just like to say that I believe everyone is different, and each to his own.

However… If low carb is of great benefit to our mental health why did this long-term study conclude that whilst diet did not necessarily affect working memory or processing speed

there was a favorable effect of an energy-restricted LF diet compared with an isocaloric LC diet on mood state and affect in overweight and obese individuals.

I don’t know about you, I’d prefer to be happy and have a good working memory rather than be miserable and angry and have a good working memory – wouldn’t you?

As Colpo says

If you’ve been following a ketogenic low-carbohydrate diet and have found yourself lately feeling more depressed, anxious, moodier, nastier, angrier and/or grumpier, maybe it’s time you started tucking into some good old low-GI carbs from nutrient-rich plant foods. Relax, your body won’t explode or collapse from carbohydrate poisoning…we humans have only been safely eating naturally occurring carbohydrate foods for, well, our entire evolutionary history.

Edie’s posts demonstrate that he obviously thinks that anyone who disagrees with his one size fits all approach to diabetes management must be eating a completely inappropriate diet. As one low-carbing commenter on this blog has already stated

I dont know very much about GI or whatever.

I’ve always thought it a good idea to find out for myself what people are talking about before jumping in and making a contribution to the discussion. I think I’d prefer it if someone actually bothered to find out what I was talking about before criticising me for my dietary choices.

Sorry Edie, deviated from your guidelines there – there’s only supposed to be one paragraph which disagrees with you. I also haven’t used the word evangelical (well, I have now – so I shan’t bother to use it again). Nor have I told you where to go (you see – that’s what debate is all about – you take the argument and you dissect it, not the individual). Nor are there any typos, no matter how hard I try I just cannot allow any misspellings to occur.

Back to the guidelines then, paragraph three apparently is reserved for an inconsequential anecdote – well here goes – I was out on walk yesterday when I bumped into my GP, who congratulated me on how good I was looking. I offered to take her out on the town and show her how a well managed diabetic enjoyed themselves on a Friday night – unfortunately for me, she declined claiming she had to wash her hair.

Now, as my last three HbA1c’s have all been in the 5s I am obviously an expert in all things diet and diabetes so you’d better listen to me and do what I tell you or else.

Does that satisfy the guidelines Edie?

Will those with a sense of humour failure please note that the paragraph declaring my qualifications as a diet and diabetes expert is totally tongue-in-cheek and should not be taken seriously at all.
