Cook chicken until no longer pink inside.  (about 10 minutes depending on thickness of chicken)&lt;/li&gt;&lt;li&gt;In a small bowl add water and whisk in corn starch.&lt;/li&gt;&lt;li&gt;Move chicken to one side of the skillet and add starch mixture to broth. I haven't had that much fun shopping in a long time.  I had my 5 year old daughter with me and she was such a great helper.  She pushed the cart for me, in a very responsible way.  She helped me keep track of my Mega sale purchases and checked off the items on my grocery list as I bought them.  She beamed in the car after we were done when I told her how proud I was of her and how much she helped me.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Below is a picture of everything I bought at Kroger's today for $59.65.  (Except for the gallon of milk that ended up in the refrigerator before the picture.  There are 4 packages of chicken breasts, 8 cans of Progresso soup and 3 bags of steam fresh veggies. No.  I go with the flow and do my best to make a meal with what I have on hand.  I really need to go grocery shopping.  I think I will tomorrow! Here is what we have had so far this week.&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Monday - &lt;a href="http://www.carriescooking.com/2007/08/spaghetti-dinner.html"&gt;Spaghetti&lt;/a&gt;  (It was on the menu last week but didn't happen because of a change in plans.)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Tuesday - Leftover/Frozen &lt;a href="http://www.carriescooking.com/2011/01/spicy-chicken-soup.html"&gt;Spicy Chicken Soup&lt;/a&gt; (So thankful that this makes so many servings because it is delicious.)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Wednesday - Soft Tacos (I will be using my recipe for &lt;a href="http://www.carriescooking.com/2007/09/taco-seasoning.html"&gt;taco seasoning&lt;/a&gt; and this recipe for &lt;a href="http://thehappyhousewife.com/cooking/tortillas/"&gt;Homemade Tortillas&lt;/a&gt;.  Lucky for me I have lettuce, cheddar cheese, salsa, and ground beef at the ready.)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;As it stands right now I will be winging it tomorrow too. They turned out great so I will share the recipe here.&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;&lt;i&gt;Ingredients&lt;/i&gt;&lt;/b&gt;&lt;/div&gt;&lt;div&gt;4 teaspoons active dry yeast&lt;/div&gt;&lt;div&gt;1 teaspoon white sugar&lt;/div&gt;&lt;div&gt;1 1/4 cups warm water&lt;/div&gt;&lt;div&gt;5 cups all-purpose flour&lt;/div&gt;&lt;div&gt;1/2 cup white sugar&lt;/div&gt;&lt;div&gt;1 1/2 teaspoons salt&lt;/div&gt;&lt;div&gt;1 tablespoon vegetable oil&lt;/div&gt;&lt;div&gt;3 to 4 tablespoons baking soda&lt;/div&gt;&lt;div&gt;6 cups hot water&lt;/div&gt;&lt;div&gt;1 to 2 tablespoons kosher salt&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;To see how to make these tasty buns watch the video below. Bring to a boil.&lt;/li&gt;&lt;li&gt;Cover and reduce heat to a simmer, cooking for about 5 minutes.&lt;/li&gt;&lt;li&gt;In a small bowl mix together flour, milk, sage, thyme and salt.&lt;/li&gt;&lt;li&gt;Add milk mixture to carrots along with butter. Bring to a boil.&lt;/li&gt;&lt;li&gt;Cook for about a minute and then add remaining ingredients.&lt;/li&gt;&lt;li&gt;Pour filling into a 3 quart casserole dish.&lt;/li&gt;&lt;li&gt;In a medium bowl make biscuits by mixing together flour, thyme, garlic powder, onion powder, salt and baking powder.&lt;/li&gt;&lt;li&gt;When well mixed add milk and butter, mixing until it forms a ball of wet dough.&lt;/li&gt;&lt;li&gt;Add spoonfuls of biscuit dough around filling. (This budget includes toiletries.)  I enjoy this healthy and frugal challenge each week.  You see the meals I make each week and thus know that we eat well.  (At least in my opinion.)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Below is what I picked up this week for $68. Cover and simmer until potato has softened about 15 minutes.&lt;/li&gt;&lt;li&gt;Add salt, pepper, and milk. &lt;/li&gt;&lt;li&gt;Bring to a soft boil and add cheese.&lt;/li&gt;&lt;li&gt;Reduce heat to a simmer and stir to blend in cheese.&lt;/li&gt;&lt;li&gt;Serve warm.&lt;/li&gt;&lt;/ol&gt;&lt;div&gt;You can top your soup with more shredded cheddar cheese, bacon, or sour cream.&lt;/div&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;To see how easy this soup is to make watch the video below. I am a mom of two small children, age 5 and 3.  I am a mom that likes to cook but refuses to cook more than one meal just because what I want to eat may not be what my kids want to eat.  However, I am a mom that isn't above dressing up my dinner to convince my kids to eat it.&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;So, tonight I made a wonderful dinner of &lt;a href="http://www.carriescooking.com/2011/01/creamy-chicken-pasta.html"&gt;Creamy Chicken &amp;amp; Pasta&lt;/a&gt;.  It was so good I ate all of mine before I had a chance to take a picture of it.  My husband and my mother in law both loved it too.  (You can see a finished picture of it by watching my video &lt;a href="http://www.youtube.com/watch?v=vaaT8Lzht0k"&gt;here&lt;/a&gt;.)  My daughter came over to see what I am making and made the comment she always seems to make when I am making dinner, "Yuck." I pull out a normal serving size for my child.   I then separation the meat out and cut it into kid sized bites.  I then add a small amount of ketchup for dipping.  Then I put the rest of the meal in a separate area of the plate.  (This is often veggies or a starch type item.)  I add some cheese or yogurt and a fruit to round out the meal.  99% of the time I can get all of the meat, cheese or yogurt and fruit eaten.  Sometimes I get lucky like tonight and the veggie/starch gets eaten too. I finally gave it a try and I botched it.  Half way through I turned off my microphone and forgot to turn it back on.  So, here is my first attempt.  (Sorry, I am not remaking dinner to try to get it right.)  Let me know what you think.  Please keep in mind that I am only using the webcam on my computer.
