I’ve had the opportunity to taste a lot of gluten-free beers across the USA. When I was the editor for the largest gluten-free magazine in the country, I found myself on the road a lot. I was always speaking at conventions or on a trade show floor looking for what’s next in gluten free. Thankfully, I found some incredible gluten-free beer along the way. And yes, I have carried an entire suitcase full of gluten-free beer home with me on a plane.

While there are several gluten-free beer brands out there, I’ve put together a list of my absolute favorites for you here at Celiac and the Beast. If you get a chance to buy these – you won’t regret it!

Best Gluten-Free Beer by Brand

Ghostfish Brewing Company

They took home a Gold Medal for their Watchstander Stout in 2021, and a Bronze Medal for their Dark Ale in 2018 at the annual Great American Beer Festival!

Ghostfish Brewing Company beers are produced in a dedicated brewery, made from gluten-free grains and are celiac safe.

You can purchase Ghostfish in stores in the Pacific Northwest and the Northeast.
A List of Gluten-Free Beer Brands in the USA 2021

We’re very lucky to have so many celiac-safe gluten-free beer brands available here in the US. You used to have to visit a taproom to find these gems, but now they’re available on store shelves at liquor stores and grocery stores across the country. While distribution still isn’t nationwide for many of these gluten-free beers, it’s worth searching for them when you can! These are the dedicated gluten-free beer brands that I have tried myself during my travels and can vouch for. If you would like to know more beer brands, or want to know brands outside of the USA, visit Best Gluten Free Beers.

Is Gluten Reduced Beer Safe For Celiac Disease?

If you’re looking for celiac-safe beer, do not be fooled into drinking gluten reduced beer.

Most beer is made from malted barley, which contains gluten. But gluten-free beer is brewed using other grains, including sorghum, buckwheat, millet and brown rice. These naturally gluten-free grains make gluten-free beer naturally gluten-free. Many companies make gluten-free beer from these grains. Some of these companies take the extra step to make sure their beer is certified gluten-free too.

Gluten removed beer – also called “gluten reduced” or “crafted to reduce gluten” – muddies the water for those who have celiac disease. In these beers, brewers add an enzyme (Clarex) to break down the gluten molecule into smaller pieces that are too small to be detected in lab tests and supposedly too small for your body to detect as gluten. Even if these “gluten reduced” beers contain less than 20 ppm of gluten, they may not be safe for those with celiac disease.

A 2017 Gluten Intolerance Group (GIG) study looked at whether gluten-free or gluten-reduced beer induced an immune response in blood samples from individuals with celiac disease. None of the blood samples indicated a reaction to the gluten-free beer. However, the gluten-reduced beer elicited an immune response in almost 10 percent of the celiac blood samples. As comparison, none of the non-celiac control group showed a reaction to the gluten-reduced beer. This may indicate that there are residual gluten peptides that may be specifically recognized by people with celiac disease. Until more studies are conducted, gluten-reduced beer is not recommended for people with celiac disease.

Best Gluten-Free Beer

Make sure you support these incredible gluten-free beer brands! The more money they make, the more beer they can make for the celiac community! Encourage retailers to stock dedicated gluten-free beer in a liquor store or grocery store near you – don’t keep this gluten-free beer a secret!

I recently had endoscopic sinus surgery to relieve symptoms that I’ve been experiencing for a while. I spent so much of my time Googling the surgery (before and after the surgery) looking for answers to questions that I had. If you’re here, you’re probably looking into sinus surgery too!

Why Did I Get Sinus Surgery?

For about a year now I was getting sinus migraines, sinus pressure, pain and congestion I couldn’t relieve. I went to several board-certified allergists and they found nothing through multiple IgE and skin prick tests. They thought it could be nasal-specific non-allergic rhinitis. However, I was not getting relief, and using far too many Sudafed pills for my health. I was always taking Advil for headaches. Lastly, I’ve been snoring horribly since a year or more ago, and making super weird sounds like creaking doors or bubbles which usually indicate a sinus issue. Something had to change.

I finally went to an ENT that I found through a Facebook group for those with Ehlers Danlos Syndrome. I thought maybe it was a mast cell issue, if they couldn’t find anything else. Thankfully, this doctor was an incredible listener, and had an in-house CT scan. All but one of my sinus passages were inflamed. I also had a deviated septum and enlarged turbinates. He told me that I would definitely need a sinus surgery – and gave me an option for just doing a balloon sinuplasty in the office without general anesthesia or a full-blown sinus surgery under general anesthesia. Because of the deviated septum and enlarged turbinates, he suggested I would get the most relief from surgery. He also introduced me to the Latera implant to help my lateral wall collapse, and to help open my nostrils to get in the most air that I can.

So, in one big sinus surgery, my ENT did:

a balloon sinuplasty dilation to open up my sinuses and drain them, flush them, and Culture any infection.

balloon eustachian tubes dilation – to hopefully get rid of my tinnitus, ear fullness and ear popping issues I’ve had for years.

septoplasty for the deviated septum

turbinate reduction surgery to shave off some bones and open airways

Latera implant by Stryker, like a permanent Breathe Right strip in my nose.

Sinus Surgery Recovery

What’s sinus surgery recovery like? Honestly, t’s not very painful, unless I accidentally touch my nose. I’ve had a hysterectomy, knee surgery, and several other surgeries and this one was pretty painless compared to those. The afternoon after my surgery, I had a lot of blood drainage in the first few hours, but it stopped after a day or two, and I only saw blood when I used a saline nasal spray as instructed.

An unexpected issue was with the tape used in my surgery (nothing to do with the actual procedure itself). The tape they used for my nasal drip pad gave me rashes (see face above) so I had to make my own modified non-tape drip pad out of a mask.

Breathing out of my mouth 24/7 sucked but in my case, it was only for a day or two, until I got used to the new breathing with surgical packing inside my nose.

After the first few days, recovery was much easier. I was lucky enough to not have splints in my nose. I just had dissolvable packing in my sinus cavity. Depending on your surgeon, you might have plastic splints in your nasal cavity, protecting your septum. If you have splints, you might have trouble breathing out through your nose and may have to breathe through your mouth for a few days. This may feel claustrophobic to some people. These splints will typically come out in a week or so after surgery at your follow-up appointment.

You’ll be instructed not to blow your nose, and to open your mouth while sneezing. Thankfully I was wearing masks due to COVID, so I could sneeze with an open mouth without judgement. It’s really hard not to blow your nose after this, it feels like you have a gallon of snot stuck up there – because you probably do.

The roof of my mouth was numb for a few weeks, and my cheek bones and my teeth ached. I wasn’t expecting that, but it makes sense because they went pretty deep back into my nasal cavities, and I’m sure there were nerves that needed my patience before they started working again.

Keep in mind that you’ll have weight limitations for lifting (no heavy weights!), and you’ll have to avoid exercise for about a week, and strenuous exercise until you are approved to do so – about a few weeks after. You shouldn’t keep your head down, like inverted yoga positions, or the blood will rush to your head, and it might cause swelling or a nose bleed.

Some patients are told to use saline spray or rinse after surgery, however, I was told that I couldn’t use a nasal rinse until after my follow-up appointment. During the first appointment, they basically just looked up there and made sure that things looked out, that I wasn’t bleeding still or having pain or any infection. Because I didn’t have splints, they didn’t get to take anything out.

The first time I did a nasal rinse, I was terrified. I didn’t know what was going to come out! Trust me, sometimes it’s better if you don’t look. A few times, something that looked like a deep sea creature came out of there. I was instructed to continue doing a nasal rinse 1-2 times daily until my 6 week appointment.

The follow up appointment, about 7 weeks after your surgical date, your physician will evaluate how you are healing and any further questions you have about recovery. Keep in mind that complete recovery takes much longer to heal on the inside of your nasal cavity and sinuses – mine quoted me about 3-6 months. Make sure you write down any symptoms you’re experiencing or questions that you might have in advance – so you don’t forget anything during your appointment.

At about 6 weeks post surgery, I would say that my snoring is 80% better than before. I still snore at times, like most people. The biggest difference is that I don’t get sinus headaches anymore, and I haven’t used Sudafed or Advil for a sinus headache since the surgery. I still feel stuffy, like I could use about 25% better openings in my airway, and I’m not sure if this is my new normal, or if my breathing will still improve over time as my nose continues to heal.

Latera Implant Recovery

While the Latera implant was part of my overall care plan, the recovery is slightly different than what you’ll go through with just septoplasty or sinuplasty. After surgery, and for a few weeks, my nose was too sore to touch because of my Latera implant. The nostrils up to the nasal bridge was sore if I touched them, smiled, laughed, or flared my nostrils. I could definitely feel the top of my implants if I touched my nasal bridge. It was so sore, I didn’t wear my glasses or sunglasses for a few weeks. I was also terrified that I would do something to permanently indent or change the implants position with my glasses – as they were very strict about not touching your nose around the implant site. It hurt to laugh or smile for a few weeks.

The Latera implant is still sore to an accidental movement now (about 7 weeks after surgery), especially if I touch my nostril in the wrong spot, or smile very big – as it scruntches up my nose and jars the implant slightly. I can definitely notice a difference already in breathing thanks to the implant, so I definitely think the pain is worth it.

According to Stryker, the Latera implant material is absorbed at around 18 months and is replaced by a collagen matrix. The relief continues to last for another 6 months or so.

This surgery is typically covered by insurance. My ENT submitted photographic and video evidence to the insurance company to get it covered by insurance.

Sinus Surgery Recovery Must-Have Products

Sinus Surgery Recovery Products: Keep Sinuses Moist!

After surgery, but before the stitches and packing are removed, you’ll want to keep the nose moist. This helps the sinus cavity to clear out, and to help the blood from crusting over in your nose! The first few days of sprays might be pretty gross, but by my fourth and fifth day, I was no longer seeing the spray turn red coming out of my nose. Some surgeons will have you do nasal rinses after surgery, so refer directly to your surgeon’s post-operative instructions.

Vick’s Sinux Saline Nasal Mist or Arm & Hammer Simple Saline Nasal Mist are must-have products to have on hand. Yes, I have a Neti-Pot, but with instructions to use a sinus spray every hour, refilling and re-making a warm Neti-pot for the few days after recover seemed too much work. I used one can of these a day – as I was to spray my nose every hour that I was awake. I purchased in bulk knowing that I could use them far after surgery – they’re always useful during allergy season and when our cats are shedding their winter coat.

When the internal stitches or packing is removed from your nose (and with the approval of your surgeon), you can use a nasal rinse instead of a nasal spray. For this, you can ditch plastic and use a ceramic Neti Pot, or buy a cheap (like under $12) or sinus rinse plastic container you’ll probably only use after this surgery. If you choose to buy a Neti Pot, remember that you’ll also have to purchase sinus rinse salt packets. These NeilMed Sinus Rinse packets are about $12 for 100, and again, will last past your surgery. You’ll want to use distilled or bottled water – do not use tap water with sinus rinses.

Sinus Surgery Recovery Products: Manage the Pain

Compared to other surgeries that I’ve had (like my hysterectomy or knee surgery), this surgery was pretty pain-free. However, it was one of the most annoying surgeries (hello sleeping upright and breathing through my nose only for how many days?!?!). I was able to manage the pain after surgery with just Tylenol and Advil – all over the counter dosages – every three hours until about day three. After day three, I was only taking one Tylenol every 6-8 hours if I felt any discomfort behind my nose in my sinuses. My nose still hurts to touch, but since I’m supposed to leave it alone because of the Latera implant inside, I don’t mess with it enough to cause pain. I had a bit of a sinus-type of headache, but again – nothing that OTC pain relievers and an ice pack couldn’t handle.

Hold up – IS TYLENOL GLUTEN FREE? Yes, Tylenol, specifically the Extra Strength Caplets, are gluten-free. They’ve even been tested by Gluten Free Watchdog in 2017 and tested under 10ppm. They are also found on GlutenFreeDrugs.com – a reputable source for gluten-free OTC and prescription medications.

You’ll also want to purchase a reusable ice pack for your face. Just make sure it doesn’t put too much pressure on your nose. If you use frozen vegetables, make sure you put a towel down between the package and your face.

Sinus Surgery Recovery Products: Manage Nausea

Post-Surgery nausea is no joke! Thankfully, I ask for Phenergan before I leave the hospital, because sometimes Zofran doesn’t cut it for me! Once I get home, I start by eating really plain foods like Schar crackers, apple sauce, or bananas. I don’t eat bigger meals until I know that my nausea is under control. My must-haves for at-home nausea relief are Sea-Bands and Tummy Drops! I keep the Sea-Bands on 24/7 until my nausea has worn off. I take the Tummy Drops when I am feeling a little queasy from the medication. I have these on call after every surgery or procedure that I had anesthesia. I also purchased some facial spray from Evian. While it’s just a spritz of cold water, it helped me from feeling under the weather.

I hope that this helps you better understand what you’re going to experience during a balloon sinuplasty, septoplasty and/or a Latera implant. Being prepared for your recovery with the right knowledge and the right products is crucial to a smooth and easy recovery.

I know it sounds strange, but…they taste like Oreos! That’s right, coming from Non-GFBF, they taste like the original. I think they are slightly (only slightly) more grainier – and honestly saltier – than I remember.

What are the ingredients of the Gluten-Free OREO?

The ingredients for the regular gluten-free OREO are: sugar, white rice flour, tapioca starch, palm oil, canola oil, whole oat flour, cornstarch, cocoa, invert sugar, soy lecithin, baking soda, salt, xanthan gum, chocolate, artificial flavor.

The gluten-free OREO products are certified by the Gluten Intolerance Group GFCO and are tested for under 10ppm of gluten.

How does the Gluten-Free OREO compare to other gluten-free sandwich cookies?

I’ve been preparing for this moment all of my life – I’m a sandwich cookie fanatic! Anything cookies and creme, I’m into. So, I’ve been patiently waiting for my sample gluten-free OREO cookies to arrive via mail. I did a comparison between the regular OREO (did you know they also make a DOUBLE STUFF?!?!?!) and chocolate sandwich cookies from Glutino and Kinnikinnick – the two most popular brands that are easily accessible on store shelves. Both competitor brands are also certified gluten-free (Glutino is certified GFCO and Kinnikinnick is certified by the Beyond Celiac certification program).

Clockwise from top: Oreo, Glutino, Kinnikinnick

How do they compare Glutino Sandwich Cookies?

The Glutino Chocolate Vanilla Creme Sandwich Cookies are currently my go-to sandwich cookies for a gluten-free OREO substitution. However, as you can see on their review page, consumer complaints have been high over the new recipe of the cookie. The texture isn’t perfect – they’re thick and sturdy (some call that too crunchy or hard), but I’ve been happily purchasing them – as they were the only easy-to-find substitute for OREO-like cookies on gluten-free shelves. They’re easy to find, pretty affordable, and I think taste the most like OREO sandwich cookies apart from actual OREOs. Also, I LOVE their vanilla sandwich cookie version – so I won’t stop buying those varieties for something different.

Glutino Chocolate Vanilla Creme Sandwich Cookies Cost: $3.72 for 10.5 oz. package

Glutino Chocolate Vanilla Creme Sandwich Cookies Ingredients: Tapioca flour, rice flour, sugar, palm oil, cocoa, tapioca syrup, water, cassava flour, cocoa, potato flour, soy lecithin, natural vanilla flavor, salt, sodium bicarbonate, xanthan gum. Contains soy, may contain milk, eggs, peanuts and tree nuts.

How do they compare to Kinnikinnick KinniToos Sandwich Cookies

Unfortunately, these sandwich cookies ranked the lowest of the three sandwich cookies we tested. They are very sugar-y and have more of a cake-like taste (per non-GFBF), more crumbly and sand-y, and were the least like Oreo cookies. While I definitely don’t mind buying them if I’m in need of a cookie fix, the price and taste aren’t worth it – compared to the new GF Oreos (unless you cannot tolerate ingredients in the other products).

Kinninnick KinniToos Cost: $5.15 for 8 oz. package

Kinninnick KinniToos Ingredients: sugars, non-hydrogenated shortening, pea starch, potato starch, white rice flour, cocoa powder, tapioca starch, water, pea protein, salt, natural flavor, pea fiber, sunflower lecithin, inulin, sodium bicarbonate, modified cellulose. May contain eggs

free sample provided by OREO

Are Gluten-Free OREO Cookies Worth Buying?

Absolutely! Unless, of course, you’re part of the small percentage of those with celiac disease who cannot tolerate oats of any kind – as these contain oat flour, and those who cannot tolerate soy. But if you’re looking for a gluten-free sandwich cookie worth your time – they have FINALLY ARRIVED!

Please note that I received samples of the new GF OREO cookies as a member of the press, but purchased the other cookies to do a side-by-side comparison of all of the gluten-free sandwich cookies on the market. Receiving free product has not swayed my review of these cookies – as I take cookies very seriously.

COVID-19 has ravaged the United States, along with the world, in 2020. Thankfully, in late 2020 and early 2021, the COVID-19 mRNA vaccines (two of them – Pfizer and Moderna) are finally making its way into our communities. There are probably two questions on your mind – first is it safe – period, and second, is is the COVID-19 vaccine safe for someone with celiac disease?

Listen, I’m just a blogger. I’m not a doctor, but thankfully we have enough incredibly smart voices in the medical community that are linked throughout this post. If you don’t trust me (and that’s fine, I mean give me a few glasses of champagne and I can get sketchy), please trust the medical community and the information linked in the post about the safety of vaccines.

Are mRNA COVID-19 Vaccines Safe?

I get it – you hear “mRNA” and think of DNA and your mind automatically jumps to the scene in Jurassic Park about frog DNA and you’re thinking that you don’t want to become a genetically modified velociraptor. Good thing that’s now how this (or anything????) works.

Thankfully, the School of Pharmacy of Waterloo University (thanks Canada) came up with this incredible graphic busting some of the top myths that we’re hearing about the COVID-19 mRNA vaccine.

Photo from University of Waterloo School of Pharmacy

Here are some thoughts about vaccines and their safety:

Yes, developing a vaccine in a year – whew, that’s fast. But it wasn’t rushed. This vaccine was put as top priority globally – meaning more time spent just working on COVID-19 vaccines, more researchers, more companies involved, more money put towards just this, and less lag time between research. This is what happens when the greatest scientific minds across the world get together and are fully supported by the government. Okay, now let’s do this solving the rest of the world’s problems! Yay science!

While mRNA vaccines are new(ish), they have been used before in studies for ZIKA and other viruses. Why haven’t they been used yet for mass vaccination like COVID-19? No sense of urgency for these other viruses that as a whole are typically under control – unlike COVID-19 that is raging like a toddler who needs a nap.

Vaccines do not cause autism. Period.

Vaccines will not get you sick with the virus, but it may make you feel sick for a few days. Don’t worry, this is your immune system mounting a response against the infection. These few days help you fight future infections of COVID-19, just like the flu shot. The flu shot makes me sick every year. I feel fatigue, my lymph nodes in my armpit swell up, and my arm feels like it was used in boxing practice. But I understand that it’s my body doing what it needs to do with my annual flu shot. You might be lucky and not have any symptoms at all!

No, the vaccine will not make you infertile. Let’s check with our friends at Mayo Clinic to bust this myth!

A sophisticated disinformation campaign has been circulating online, claiming that antibodies to the spike protein of COVID-19 produced from these vaccines will bind to placental proteins and prevent pregnancy. This disinformation is thought to originate from internet postings by a former scientist known to hold anti-vaccine views.

These postings are not scientifically plausible, as COVID-19 infection has not been linked to infertility. Also, no other viral infection or vaccination-inducing immunity by similar mechanisms has been shown to cause infertility. Antibodies to the spike protein have not been linked to infertility after COVID-19 infection. There is no scientific reason to believe this will change after vaccination for COVID-19.
Mayo Clinic, COVID-19 Vaccine Myths Debunked

So vaccines are safe for the general population, but what about those with celiac disease? We have an autoimmune disease, so should we be extra cautious about getting this vaccine? The top minds of celiac disease state that it’s safe, and encourage getting this vaccine.

Society for the Study of Celiac Disease Says COVID-19 Vaccine Safe

The Society for the Study of Celiac Disease (SSCD) – a professional organization featuring our favorite gluten-free rockstar doctors (like Dr. Kelley, Lebwhol, Crowe, Fasano, and Verma) and researchers from North America, released a statement on the safety of the COVID-19 vaccine for celiac disease patients.

With the recent news that the Food and Drug Administration has granted Emergency Use Authorization for a vaccine against SARS-CoV-2, the virus that causes Covid-19, patients with celiac disease are asking for guidance about the advisability of this and other Covid-19 vaccines in the context of celiac disease, an immune-mediated condition. As scientists and clinicians who care for people with celiac disease, we urge people with celiac disease to receive a Covid-19 vaccine that has met government regulatory approval. This includes agents comprised of RNA (a vaccine technology that has been in development and has undergone safety testing for years) and peptide (protein) vaccines.

During the onset of the Covid-19 pandemic, there was initial concern that people with celiac disease might be at a slightly increased risk of severe outcomes from SARS-CoV-2 infection, given prior studies suggesting risks related to pneumonia and viral infections. Studies thus far, including the international registry www.covidceliac.org, have indicated no increased risk of severe outcomes. Even though the risk among people with celiac disease is comparable to that of the general population, we have seen that Covid-19 can nevertheless have devastating effects, and we share in the consensus belief by the public health community that mass vaccination is crucial. As the safety and efficacy data on Covid vaccination has emerged, there is no evidence to suggest that people with celiac disease would be more prone to an adverse effect of vaccination. Celiac disease is not considered an allergy, and by itself does not prompt additional precaution when proceeding with vaccination. Patients with concerns about vaccination and their particular circumstance should speak with their health care provider. We will undergo Covid-19 vaccination as soon as it is offered to us, and we urge our patients to do so.

The Society for the Study of Celiac Disease
The Society for the Study of Celiac Disease, https://www.theceliacsociety.org/

But Could I Be Allergic to the COVID-19 Vaccine?

For the vast majority of the universe – no. At first, there were scares that people with a history of anaphylaxes (typically NOT those with celiac – more like those with a true wheat allergy would suffer), could not take the vaccine. Thankfully, CDC recently issued guidance on these issues.

CDC recommends that people with a history of severe allergic reactions not related to vaccines or injectable medications—such as food, pet, venom, environmental, or latex allergies—get vaccinated. People with a history of allergies to oral medications or a family history of severe allergic reactions may also get vaccinated.
Centers for Disease Control, https://www.cdc.gov/coronavirus/2019-ncov/vaccines/safety/allergic-reaction.html

However, if you have a very rare allergy to an additive that’s often used in vaccines, including polyethylene glycol (PEG) or its close relative polysorbate, you are advised not to receive either of the currently available mRNA COVID-19 vaccines. Check out Allergy Amulet’s blog on the ingredients of the current vaccines.

So You’re Saying I Should Get the COVID-19 Vaccine?

Yes, yes I am. Unless you have other issues besides celiac disease (ex. reactions to other vaccines or allergies to inert ingredients), you should help us achieve herd immunity against COVID-19. Until we reach herd immunity, we all need to do our part by wearing masks, washing our hands regularly, practicing social distancing, and being good stewards of public health. I urge you to treat COVID-19 seriously – we’ve already seen it take too much from us. Please fight vaccine myths when you see them – we need everyone in the good fight for science.

Raised Gluten Free is on my must-have list for Thanksgiving! They are all gluten-free, dairy-free, and egg-free (as well as vegan). They offer pies in a variety of flavors from pumpkin, apple, strawberry rhubarb, cranberry apple, blueberry bliss, and southern peach pie. Thankfully, most of you can find these pies in Whole Foods, Kroger, or other locations near you. Their pies are not available for nationwide shipping.

Katz personal-sized pies are available at my local Sprouts, so I’m pretty lucky. For the holidays I recommend the apple pie and the pumpkin pie. If you’d like to buy their pies, you can visit Gluten-Free Mall or Katz website. Also, don’t forget to pick up their donuts while you’re stocking my cart. And the mini hand pies. Okay, so you might want to just pile everything in on the Katz website so you can qualify for next-day delivery.

Erin McKenna’s offers Thanksgiving items to ship via Goldbelly like their vegan gluten-free pumpkin pie, Thanksgiving sugar cookies, apple pie, and apple upside-down cake. Right now there’s a waitlist, but hop on there because her stuff is worth it.

Gluten-Free Turkey

White Oak Pastures

Don’t panic about turkeys! Most store-bought frozen or fresh turkeys are gluten-free. Most turkeys have some sort of liquid injected into the breast before freezing to keep the bird moist. Look for any broth injection into the bird – unless it is labeled or states gluten-free, skip these. Again, it’s very rare to find anyone conciously injecting an allergen into a non-allergenic meat, but I can’t tell you that it never happens.

If you buy pre-made turkey online, always check ingredients for hidden allergens like barley or wheat hidden in spices. It will be rare to find gluten being added to a turkey unless it’s a flavoring or spice used to cook the bird.

Gluten-Free Stuffing

A while back I collaborated with MYBREAD Bakery on their new Thanksgiving pack! Each order contains 7 oz. of double-baked bread cubes, a stuffing recipe (that I made below from Instagram) and 8 dinner rolls!

Want pre-seasoned stuffing mix? Try Aleias Savory Stuffing. It’s too late to order on their site, but they do supply on Amazon. They have the best stuffing I’ve found from a box.

Gluten-Free Rolls

Bread SRSLY offers sourdough dinner rolls in a 24 pack – perfect for Thanksgiving. These rolls are gluten-free, dairy-free, egg-free, and vegan.

Canyon Bakehouse launched Brioche-Style Sweet Rolls and Hawaiian Sweet Rolls within the past few years and are a perfect fit for the holiday. Canyon Bakehouse products are all gluten-free and dairy-free.

Gluten-Free Thanksgiving Side Dishes

Epicured offers a great low-fodmap gluten-free Thanksgiving menu. Please note that while some options are lactose-free, they are not suitable for a milk allergy. Don’t miss the green beans with almonds, pumpkin soup, or cranberry orange sauce! You can literally freeze your Thanksgiving dinner today!

Epicured thanksgiving side dishes available to ship frozen

Watch out for delivery dates!

I love ordering online and having Thanksgiving come to me! The biggest thing to know about ordering online is going to be delivery dates and shipping minimums. I’ve never struggled with shipping minimums because I love ordering online, but it’s something to consider. If you can score free shipping by adding another item to your cart that you can save for after Thanksgiving, do it! Make sure that you place orders before the delivery date deadline, especially if you’ll be traveling for Thanksgiving. You don’t want to order online and miss the delivery!

Happy shopping and here’s to a happy Thanksgiving!

If you’re headed to the pacific northwest, don’t discount visiting Seattle! Over the past few years, Seattle has exploded in gluten-free bakeries, breweries, and bars. I’ve compiled a list from my visits of the best gluten-free restaurants in Seattle!

However, with COVID-19, many gluten-free bakeries and restaurants have closed across the country. Seattle is no exception. In 2019 and 2020 we saw the close of Niche and Lucky Santo in Seattle. This was a devastating blow to the Pacific Northwest gluten-free scene.

However, several strong gluten-free bakeries and restaurants stand strong in 2020. On your next trip, please visit these restaurants in Seattle and keep them going strong!

Ghostfish Brewing Company

Ghostfish Brewing Company was one of my favorite things I’ve eaten in 2019. The fish and chips were incredible, but it’s only one of the many things you can eat in their dedicated gluten-free restaurant and brewery. Get an Uber there, because you’re going to want to try the whole tasting menu!

2942 1st Avenue South, Seattle, WA 98134, GhostfishBrewing.com

Wild Ginger

When I was going to Seattle several times a year, Wild Ginger was always on my list. It’s easy to order gluten-free, and they take it seriously!

Have you been to Seattle, Washington lately? What was your favorite gluten-free stop there?

My first trip to Seattle in 2014

I’ve traveled a lot across the USA and, because of my passion for carbs, I’ve tasted a lot of gluten-free bread. Sourdough is a hard thing to find once you go gluten-free. You’ve got to start with a gluten-free sourdough starter and put love, care (and more effort than I have time for) to cultivate the starter that brings this fermented, deliciousness to your bread. But there’s hope – there are lots of delicious sourdough breads out there! I’ve put together a list of my favorite gluten-free sourdough breads and the best gluten-free sourdough available!

The Best Gluten-Free Sourdough

Bread SRSLY

I love Bread SRSLY! I’m proud to be an ambassador for the brand. Because I’m obsessed with their sourdough. It ranks number one as the best gluten-free sourdough available to purchase! Remember, use my unique coupon code “celiacandthebeast” for $5 off your first purchase on all Bread SRSLY orders.

Bread SRSLY is certified gluten free and certified vegan. They are produced in a dedicated gluten-free facility. Not only do they have sourdough, they they also offer seeded sourdough, sweet onion sourdough, buns, and dinner rolls. But nothing can compare to their classic loaf – it’s perfect. Their bread is thick and yeasty, and flavorful – everything you love about homemade sourdough. When I eat Bread SRSLY sourdough, I prefer it to be the star of the show, like topped with butter or jam, not playing second fiddle in a sandwich.

Price: A 3 pack is sold for $37.00.

Ingredients: Organic White Rice Flour, Organic Millet Flour, Organic Sorghum Flour, Arrowroot, Sourdough Starter (Water, Organic Sorghum Flour), Xanthan Gum, Kosher Salt

Really Great Gluten-Free Sourdough

Zukkee Kitchen Sourdough Toasting Bread

I had a few loaves of Zukkee Kitchen sourdough toasting bread sent to my house to sample several years ago. I love this bread. It’s probably the bread that tastes the most like Bread SRSLY out of all the competitors. They’re out of Southern California, and you can catch them at farmer’s markets in the area – or simply buy online!

Cost: 2 loaves for $24.00

Ingredients: organic sourdough starter, water, organic sorghum flour, arrowroot flour, millet flour, organic brown rice flour, xanthan gum, salt.

Young Kobras Gluten-Free Sourdough

I met Young Kobras at a San Francisco Nourished Festival in 2019. They remind me of Bread SRSLY, although their loves are smaller. These loves are made in San Fran – much like Bread SRLY – and available in original, fig walnut, olive herb, and seeded buckwheat flavors. Young Kobras are made in a dedicated gluten-free facility.

Cost: 4 loaves for $45.00 including free shipping

Ingredients: The original loaf contains GF flour (sorghum flour, millet flour, cassava flour), starter (water, brown rice flour), psyllium husk, and sea salt.

Promise Gluten Free

Promise Gluten Free is straight out of Ireland. I met their team at a gluten-free trade show where they introduced me to the brand and promoted that they were finally selling in the USA. I was blown away by their packaged sourdough. They are made to be baked on site – in a store or in the home. Their rosemary and olive oil sourdough was so good. Tasty and chewy and fragrant. They also offer a rustic sourdough as well. They are made in a dedicated gluten-free facility.

Cost: not available to ship, check your local Albertsons or Shop-Rite for Promise Gluten Free Products.

Ingredients: Water, Tapioca Starch, Yeast, Rice Flour, Maize Starch, Psyllium Husk Powder, Egg White Powder, Wholegrain Maize Flour, Sugar Cane Fiber, Potato Starch, Buckwheat Flour, Sugar, Xanthan Gum (Thickener), Guar Gum (Thickener); Spirit Vinegar, Canola Oil, Rice Starch, Concentrated Grape Juice, Iodised Salt (Salt, Potassium Iodate), Cassava Flour, Citric Acid (Acidity Regulator), Sodium Carbonate (Acidity Regulator); Rice Bran.

Arise Bakery Gluten-Free Sourdough Boule

Arise Bakery is a dedicated gluten-free bakery in Humbolt County, California. Their sourdough boules are made in a facility that processes common food allergens (excluding gluten and peanuts).

Cost: $9.00

Ingredients: Filtered water, GF flour (millet, tapioca, potato starch, buckwheat), wild yeast starter (filtered water, brown rice flour), flax meal, sunflower seed meal, psyllium husk, salt.

New Grains Gluten-Free San Francisco-Style Sourdough Bread

While I love New Grains for their frosted pink vegan sugar cookies, their sourdough is a second. Their San Fran-style sourdough is really good for a mass-produced sourdough. It’s more bread-y than the thick yeasty sourdoughs above. Easier on your jaw, for sure!

Cost: $9.75

Ingredients: White rice flour, Water, Eggs, Tapioca flour, Sugar, Potato flour, Palm fruit oil, Yeast, Psyllium husk powder, Vinegar, Sea salt, Xanthan gum, Powdered sugar, Enzyme.

Simple Kneads Gluten Free Sourdough

Simple Kneads Gluten-Free Sourdough is another great mass-produced sourdough loaf. Again, it’s not as yeasty as the homemade style loaves like Bread SRSLY or Young Kobras. These are better for stacked-high sandwiches.

Cost: A case of 4 loaves is $34.99.

Ingredients; Water, Millet Flour, Sorghum Flour, Teff Flour, Buckwheat Flour, Quinoa Flour, Psyllium Seed Husk Powder, Expeller Pressed Sunflower Seed Oil, Raisin Juice Concentrate, Flax Meal, Salt, Sunflower Seeds, Cultured Dextrose.

National Donut Day, or any day, is a good day for a gluten-free donut. Find the Best Gluten-Free Donuts from across the USA and in a store freezer near you!

National Donut Day is honestly every day if you’re me. I absolutely love donuts – always have always will. Unfortunately, celiac disease got in my way. A great gluten-free donut is hard to find. But I’ve tried almost all of them. Here are my favorites – the best gluten-free donuts.

Best Gluten-Free Donuts Found on Store Shelves

For gluten-free donuts in a grocery store, you’ll have to look inside a freezer. That’s right, frozen donuts are what we have available – but that doesn’t mean that they’re bad. Frozen donuts just require a little more prep work, like defrosting in advance, or using the microwave. Although, don’t let desperation stop you from eating a frozen donut. God knows I have done that way too many times to count. Two contenders fight it out in grocery store freezers – Kinnikinnick and Katz Gluten Free. Both have their winners in their own flavors and categories. I’ve broken it down for you.

Kinnikinnick

Definitely buy their maple donuts – they are the best thing that Kinnikinnick puts out. However, their soft baked donuts are not as good, and something you can easily do at home with a good donut recipe and silicone donut baking pan. Save your money and go for their traditional donuts.

Since Kinnikinnick is in Canada, they have a $50 minimum shipping order to the USA, if you can’t find them in a store near you.

Katz Gluten Free

Katz Gluten Free was the first donut I had after my celiac diagnosis, so it has a soft spot in my heart. But also, these donuts are incredible. The donut texture, the dough, the glaze. Everything is right about these – but yes, still frozen. I would skip the seasonal flavors like gingerbread (although the pumpkin isn’t bad), and stick with their primary donut flavors – glazed, chocolate, and powdered. These are the first jelly donuts I had tasted since diagnosis too – and their formula has improved since then. And yes, Katz ships. Just be mindful that Katz shuts down operations and shipping for Jewish holidays, so you might run into some blackout dates.

Freedom Gluten Free

Freedom Gluten Free is an often-talked about brand in gluten-free donuts. Sadly, they are limited by their current distribution. They are mainly found in retailers in the Northeast, but also some Sprouts locations. Guys, run out and buy these if you have them near you. Worth every penny.

Best Gluten-Free Donuts Found in Bakeries

I’ve been pretty lucky to travel across the country to visit gluten-free bakeries far and wide.

I’ve got to hand it to Portland, Oregon – once again – for having the best selection of gluten-free donuts in bakeries. You can find donuts at Kyra’s Bake Shop (two locations), Gluten Free Gem, Back to Eden Bakery, and New Cascadia Traditional.

Click here to see more of my favorite gluten-free bakeries in Portland!

Kyra’s Bake Shop

You know i’ve got mad love for Kyra’s Bake Shop. I’ve been a super fan since it was called Crave (that dates me – here’s a super old post from 2012 that hasn’t been updated to prove how loyal I was even back then!). These maple donuts are SO good – so sweet, but daaaaang! A must buy if you’re in the area!

Gluten Free Gem

Another “gem” of a bakery in Portland, OR. While Gluten Free Gem is small, they’ve got a great selection of products, including baked donuts in fun and often funky flavors. Keep in mind about half of their products contain dairy, but allergens are easily marked by different “gems” on the labels!

Back to Eden is a dedicated gluten-free and vegan restaurant and bakery in Portland, OR. I absolutely adore their products – and they ship some of their mixes too! While they are currently closed due to the pandemic, I hope that you support them by purchasing their mixes. Their scone and biscuit mix is the best!
