Rachel cooked up another tasty, healthy meal. One amazing thing about Rachel's cooking is that she uses whole foods. Not food from the "Whole Foods Store" (we don't have any of those around here).

What I mean is that when she cooks with chicken, she uses the whole chicken! You ever see at the grocery store where they sell the entire chicken? That's what I'm talking about.

She gets the bird and knows just what to do with it. She'll cut that sucker up in to pieces and cook them up and then take the bones and boil them down in to stock. Chicken stock. With the chicken stock you can make all sorts of stuff. You can use it in Quinoa, Cous-Cous lentil soup. Any soup really. Especially if you like the flavor of chicken in your soup. You can steam vegetables in it. The list is endless.

So for tonight's dinner she used both breasts of the chicken and cut them in to 1" cubes. Then they were marinated in the sauce. The special "Tasty Sauce" that is made with yogurt. It wasn't a creamy, yogurt base. She used some left-over Baba Ganousch.
Other things in the Baba Ganousch sauce included cloves, cinnamon, cumin, tumeric, lemon juice and a little touch of love :)

Really, I don't know what most of those spices are but when they're mixed up together, they sure taste great!

She just told me that Tumeric and Cumin have anti-inflammatory properties. After tonight's CrossFit workout I'm sure going to need that!

After that toast the cumin seeds and half of a thinly sliced onion until they are soft. Then she added a can of home-made stewed tomatoes. Honestly, anything with tomatoes gets my vote of confidence.

Cook that delicious concoction for 20 minutes.

Rachel makes this delicious side sauce that I like to call Cilantro Chutney. It's got lots of cilantro (as all sauces should) cumin seeds, juice from a lemon and jalapenos. MMmmmmm, gotta love jalapenos.

This dinner, which combines some of the tastiest tastes from two different cultures: Indian and Mediterranean, pairs quite nicely with a Sierra Nevada Ruthless Rye. Then again what doesn't pair nicely with a Ruthless Rye?

For dessert I highly recommend half a box of limited edition Tagalongs Peanut Butter Patties Girl Scout Cookies. Available from your neighborhood Girl Scout. (Thank you Zora!)
