The best way to obtain a smooth, evenly textured ice cream is to whisk the mixture carefully and freeze quickly.
The main thing you want to avoid is ice crystals forming in the mixture this can be achieved by adding air into the mix, you can do this by taking the mixture out of the freezer after 20 minutes and giving it a further whisk.

Tips
Chill all ingredients and utensils before you use them
Be accurate with the quantity of sugar, to much will prevent the mixture from freezing and to little will cause the mixture to freeze hard and rocky
Do not put warm mixtures into the finished container allow to cool
Do not fill the container because freezing will increase the size of the contents
Put freezer on coldest setting

Ingredients (serves 3-4)

200ml of milk
1 egg
40g of fine sugar

120g of Lindt 99% excellence chocolate
70ml of water
140ml of cream
7ml of vanilla essence

Whisk the egg and sugar and add the warm milk whilst whisking.
Add the mix to a bowl and heat without boiling for about five minutes
Strain this mix then leave to cool

Break the chocolate into pieces and place into another bowl add the water, dissolve this slowly over a low heat.
Add the melted chocolate to the previous mix and stir.
Important you now need to cool this mix.
Once cooled add the half whipped cream and vanilla and gently whisk for 1 minute.
Place this in your freezer remove after 20 minutes and whisk (churn) for a couple of minutes then return to freezer

There is a strong correlation between obesity and the onset of type 2 diabetes with its associated insulin resistance. It should be pointed out that in the United States the proportion of the population under 40 that can be clinically defined as obese now exceeds 25%. Many children are obese and are developing type 2 diabetes at an alarming epidemic rate. The dramatic rise in obesity in the US has lead to an equally alarming increase in the percentage of the population who suffer from the metabolic syndrome. The metabolic syndrome is a clustering of atherosclerotic cardiovascular disease risk factors, one of which involves insulin resistance characteristic in type 2 diabetes. It should be pointed out that obesity alone does not always lead to insulin resistance as some individuals who are obese do not experience insulin resistance and conversely, some individuals who manifest insulin resistance are not obese.

Is diabetes serious?

Yes. Diabetes is a life-long condition. High blood glucose levels over a long period of time can cause blindness, heart disease, kidney problems, amputations, nerve damage, and erectile dysfunction. Good diabetes care and management can delay or prevent the onset of these complications.

The good news

You can live a long and healthy life by keeping your blood glucose levels in your target range. You can do this by:

1. Eating healthy meals
2. Being physically active regularly
3. Taking diabetes medication, including insulin

Things you should know about insulin
When insulin was first discovered and made available for people with diabetes, there was only one kind of short-acting insulin. This required several injections a day. As time went on, new insulins were developed that lasted longer, requiring fewer injections, but requiring strict attention to timing of meals.

This gives more flexibility in the number and timing of injections, making it easier to maintain target blood glucose levels, based on your lifestyle. One to four injections a day may be suggested to you for optimal control of your blood glucose.

Are there any precautions before changing over to insulin?

Before considering a move to insulin it is worth examining all the option with regard to combination therapy. Diet should be optimised and the benefit of exercise discussed. It is important to be aware of the possibility of weight gain and of the need to maintain weight neutral especially if already obese.

Around the time of A.D 850 legend has it that a lone shepherd and his flock happened upon a strange new plant that was growing upon the slopes of lonely hillside. Before the shepherd could intervene some of his herd had started to chomp away at this newly discovered delicacy. After about a quarter of an hour the shepherd began to notice that the entire flock were acting in an extremely lively manner. They appeared to be not only very alert but even hyperactive. Now the shepherd being slightly weary and more than a little tired decided that he also should sample the berries and see what, if any effect they would have on him. He secretly hoped that the dramatic effect that he had observed the berries to have on his greedy flock of sheep would also be his experience. Just as had happened with his herd, he too started to feel the benefits and in a matter of minutes he also [pardon the pun] was extremely full of beans. A few hours passed and along came a wandering monk. The herder proceeded to tell him of the plants amazing qualities but he was immediately scolded for his outlandish ways and foolhardy behaviour. After he had finished telling the shepherd just what a sinner he had been the monk went on his way but not before he had hidden a little something in his bottom of his backpack.

Back at the monastery the monks decided to try this new and exciting substance. Soon the endless hours of praying were endured with the greatest of ease. Coffee, the drink had been revealed to the world. Its widespread use then took a grip in the Ethiopian lands before then migrating on to the Arabian outlands. Here it was to be held for many years as a sacred substance but was eventually to be unlawfully exported by a merchant called Baba Budan. Word of its qualities were soon to spread and within a few years coffee was to emerge as one of the most valued commodities of all time. Now would you believe that each year we drink an amazing four billion cups and there are those among us who would cry at the thought of starting their day without it.

Although coffee is mainly known as a sleep suppressant there are those who consider coffee to have many health benefits. It is thought that people who suffer from asthma and partake of the beverage have at least 25% less symptoms which may be due to a substance in coffee called theophylline. This is known as a bronchodilator and quite simply it is thought to help those who suffer with the disease to breath with a little more ease. Drinking coffee on a daily basis is also thought to help lower your chances of developing colon cancer by a figure also in the region of about 25%. This may be due to the fact that coffee helps to keep you regular. Coffee can do more than just help you get through your day!

Its curious that the vast majority of folk have no idea of the different tastes and delights that this king of all drinks has to offer us. One of the swiftest growing trends of the last few years has to be the rising popularity of buying coffee via the internet. Never before have we been able to so easily get hold of such a large and voluptuous variety of blends, tastes and tantalising aromas from all over the world. With the aid of the wonderful web, trekking around the local neighbourhood to try and find some new exciting coffee blends has became a thing of the past. Sitting at home I can now search out an almost infinite variety of coffees from all over the world and order them at the click of a mouse. I tend to place numerous orders via the web and I always make a point of recording blend, country, and from exactly whom I purchased.

Now you know the history of this magical bean I hope that if in the days to come you are thinking of visiting your local coffee shop you recall the information you have read on this website and make the most of this wonderful drink. Go on and try some new varieties. Not only will you impress your friends, your tastebuds will be thrilled as well.

Latte or Cappuccino?

A majority of people wake up in the morning and the first thing they do is fire up the old coffee maker. Most models today are very easy to use, all you need is a filter, some coffee, and running water. Hit the button and you can have a pot of steaming hot coffee in just a few minutes. Today, almost every home has a coffee maker in the kitchen. The fact is, the coffee maker has become a must-have for the kitchen. There are many variations on the coffee maker. The basic model is nothing special ? it brews you a a cup of coffee and thats it.

However, some advanced models offer much more. Many brands of coffee makers offer automatic shutoff mechanisms. That means that if you leave your coffee maker on for an extended period of time, or forget to turn it off before you leave the house, the machine will shut off automatically after a while. This automatic shutoff mechanism is designed to prevent the coffee maker from starting a fire if left for too long.

Then, there are the more advanced versions of the coffee maker that offer more features. Some advanced models sport timers, which are great for ensuring that you have a pot of steaming coffee before you even wake up in the morning. Set the timer the night before, prepare all of the ingredients, and when you wake up your coffee will already be made. You can save ten to fifteen minutes off your morning just by having a timer on your coffee maker. People can now enjoy all the coffee they want in the comfort of their own homes. Most people probably thought that with more and more coffee shops opening up, coffee makers at home would probably disappear. However, even though coffee shops are springing up everywhere and are more popular than ever, it will probably be a long time before people throw out their coffee makers.

Chopped, sliced or wedged, hard-cooked eggs are the basis of egg salad and add protein and a happy glow to tossed and composed salads and casseroles. Chopped yolks and whites comprise Eggs Goldenrod and Polonaise Sauce. Whole hard-cooked eggs become comforting, familiar deviled eggs or zingy, newly rediscovered pickled eggs. Simply sprinkled with an herb or more fancily coated in sausage for Scotch eggs, hard-cooked eggs are nature’s own hand-held snack food. With a supply of hard-cooked eggs on hand, you’re ready for almost any meal occasion.

Hard-cooked eggs are often incorrectly called hard-boiled eggs. Yes, the cooking water must come to a boil. But, you’ll get more tender, less rubbery eggs without a green ring around the yolk and you’ll have less breakage if you turn off the heat or remove the pan from the burner, allowing the eggs to cook gently in hot water.

Very fresh eggs may be difficult to peel. The fresher the eggs, the more the shell membranes cling tenaciously to the shells. The simplest method for easy peeling is to buy and refrigerate eggs a week to 10 days in advance of hard cooking. This brief “breather” allows the eggs to take in air which helps separate the membranes from the shell.

1. Place eggs in single layer in saucepan. Add enough tap water to come at least 1 inch above eggs.

2. Cover. Quickly bring just to boiling. Turn off heat.

3. If necessary, remove pan from burner to prevent further boiling. Let eggs stand, covered, in the hot water about 15 minutes for Large eggs (12 minutes for Medium, 18 for Extra Large.)

4. Immediately run cold water over eggs or place them in ice water (not standing water) until completely cooled. Once cooled, refrigerate eggs in their shells and use within one week of cooking or peel and use immediately.

5. To remove shell, crackle it by tapping gently until a fine network of lines appears all over the shell.

6. Roll egg between hands to loosen shell.

7. Peel, starting at large end. Hold egg under running cold water or dip in bowl of water to help ease off shell.

8. To segment eggs evenly, use an egg slicer or wedger. For chopped eggs, rotate a sliced egg 90 degree in a slicer and slice again. Or chop eggs with a sharp pastry blender in a bowl. Draw down a wedger’s wires only partway to open an egg to hold a stuffing or resemble a flower.

Coffee tables take many shapes and forms but, generally speaking, a coffee table is considered to be a fairly small, low sitting table that would typically be the centerpiece of the common waiting room, lounge, or family room. Coffee tables are utilitarian, in that they are normally used to store remote-controls, for the entertainment suite, books and magazines, and fittingly, are a great place to set down snacks or one’s coffee mug when entertaining guests. However, as the center-piece, contemporary coffee tables are also usually chosen to suit the style and match the existing interior-decoration of one’s home to add to the overall effect.

Accordingly, it is easy to find a very wide variety of modern coffee tables in different sizes, colors, shapes, fashions, and construction materials. Glass coffee tables are quite popular and if kept free of dust, add a pleasing aspect to the room. If combined with a stainless-steel or chromed frame, a glass-top coffee table will help to add to an overall clean, sleek, modern feel in a room.

Art-deco style tables are still readily available too as something of a relic from the 80s that is one style that seems to be diminishing in popularity as we now approach the end of the noughties. Even still, one can still find lopsided pastel-colored plastic blobs and planes that appear to be stretched straight from some Picasso work, serving as coffee tables. Due to their diminishing popularity and simple construction, they tend to be cheaper these days. It should be noted that it is possible to find more tasteful designs built around similar themes.

If you are after a more classical look in your coffee tables then you probably want to be looking at wooden construction. On the cheaper end of the scale you can find new tables made from plastic imitation-wood, or veneer-covered chipboard coffee tables, but these can have a somewhat tacky appearance and will tend to be poorer in quality.

If you are willing to spend big money, anywhere upwards of US$200 for this small article of furniture, then you can find good quality solid wooden coffee tables that can really set a room off. With supplies of good timber and the loss of most of the world’s old-growth forests, the only place one can find beautiful coffee tables made from solid wood (with the exception of pine) for less than about $1000, is at an antique furniture store.

If your pockets aren’t quite that deep do not despair! If you’re prepared to put some work in the best option is to look around for something you like at second-hand stores. For bargain prices one can find beautiful coffee tables in need of sanding down, staining, possibly some filling or new fasteners, and a couple of coats of clear varnish. The end result can be quite stunning, rendering a $60 stick of furniture into a $400 centerpiece that any homeowner would be proud of.

With the nature of business today the cost of producing complex hand-crafted mosaic coffee tables, either made with inlays of slices of wood with alternating patterned shades, or ceramic-tile based table top surfaces, has become prohibitive. One may still purchase machine manufactured tables like this, with a less pleasing effect, or one could import such furniture from places like Pakistan and India at great expense. Once again real masterpieces in need of a little attention can be sourced at second-hand stores and the like, rewarding industrious home-improvement enthusiasts with coffee tables of outstanding quality and appeal.

Ampalaya is the indigenous name of Bitter Melon or Momordica charantia Linn., a vegetable native to the Philippines and Southeast Asia, known for its bitter taste.

A popular vegetable often grown by many households around the world, the Ampalaya vine can grow up to 5 meters and its leaves can reach to about 4 to 10 cm. Its yellow flowers are both male and female and are responsible for what makes the Ampalaya vine famous – the melons.

The Ampalaya fruit is usually eaten while still green, because as the fruit ripens its taste grows more bitter and much less tasty. During preparation, the seeds, which turn from white to red over time, are removed. Removing the seeds helps to lessen the bitterness. The skin is retained and proves to be soft and tender once cooked.

Used as a regular vegetable ingredient for many Asian dishes, the Ampalaya is also significant for its well-documented blood sugar-lowering effect. Aside from being rich in fiber and nutrients such as iron and potassium, several key compounds have been identified in the fruit, notably charantin, vicine and polypeptide-p, a known plant insulin that numerous pre-clinical studies and limited clinical trials have attributed to the plants beneficial effects to blood sugar. Several supplements for diabetics have been developed using the Ampalaya, most notably an Ampalaya tea and capsules using the dried Ampalaya fruit.

As diabetes continues to rapidly spread across countries and social strata, the Ampalaya is expected to provide diabetics with a safe and natural alternative to help control their elevated sugar levels. While the herb is still rare in countries where it is not indigenous, expect the Ampalaya and Ampalaya-based products to start gracing local grocery shelves as more and more people realize its potential anti-diabetes use.

Bitter melon has many documented health benefits – get some today and try it for yourself!

1 1/4 cups graham cracker crumbs
2 tablespoons sugar
3 tablespoons butter or margarine melted
2 pounds cream cheese
1 cup sugar
8 ounces sour cream
1/4 cup cocoa
2 eggs
1 cup flour
3/4 cup heavy whipping cream

In a 5 quart mixing bowl place 2 pounds of cream cheese and 1 cup granulated sugar and mix on low speed until cream cheese is softened and smooth, place in bowl 8 ounces sour cream and continue mixing until well blended, at this time add 2 eggs, mix for 2 minutes then add 1 cup flour, 1/4 cup cocoa, and 3/4 cup heavy whipping cream, mix on second speed until smooth and creamy.

At this time your cheesecake mixture should be fluffy like ice cream as it comes out of the ice cream machine. Prepare your 10 inch x 2 inches spring form pan, in a large bowl place your graham cracker crumbs and 2 tablespoons sugar, and your melted butter or margarine, then with a wire whisk, whisk them together until well combined, brush onto the sides of your spring form pan a little softened butter so the crumbs have something to hold to, place the crumbs on the sides and bottom of the pan. Now you add slowly to the pan your cheesecake mix as not to disturb the crumbs too much, now you should have a full pan.

Preheat your oven to 275 degrease and not more, when your oven is hot place the cake in it and bake for 55 minutes then shut off the oven and let it in there for 3 hours, at the end of this time you should have the most beautiful cheesecake you ever seen, let the cake on the table for 1 1/2 hours then place it in the refrigerator for about 2-3 hours. Now remove it from the pan and enjoy. You can put a coconut pecan topping on it if you like.

Cleaning trout. Does that bring back memories! I think I was about 9 years old when I first learned how to clean trout. It is really pretty easy. A little practice and you will soon be cleaning trout with ease. If at all possible, use clean, running water to rinse the trout as you clean.

Scaling the trout.

For this step, you will need a fish-board with a clip to hold the tail or you can hold the tail with your hand. You will also need a fish scaler or use the unsharpened side of a good sturdy knife (short blade is best). With the trout held firmly by the tail, scrape very firmly from the tail to the gills several times on both sides. This will remove the scales so you dont have to deal with them later. No one wants to find them in a bite of grilled fish!

Gutting the trout.

To properly gut the trout without tearing into the stomach or intestines, you will need a sharp, short bladed knife. The short blade gives you better control. The first cut you want to make is just at gill level from the belly side. This results in a cut between the jawbone and the tongue. Do not cut through the spine. Next, place 1 or 2 fingers inside the trouts mouth with the palm of your hand pressed firmly on the top of its head and your thumb in the gill to hold it solid. Then, carefully, begin to slit the trouts belly starting at the anus and working your way up to the cut under the gills. You need to be careful not to cut into the guts themselves, as this will foul the flesh, making it inedible. Keep your knife just under the skin. To pull the guts out, hold the trout firmly with your thumb under the jaw and your index finger in the mouth. Then get a firm grip on the guts and pull them out. All that is left to do is to scrape your thumb along the spine in the gut cavity to clean out the bloodline.

To behead or not to behead.

This last step can be a matter of personal preference. Removing the head of the trout. Some people like it left on, but, personally, I dont like my food looking back at me.
To do this, you need a good sturdy knife. The same one you used to cut the belly open will work. Just be sure to rinse it good first. To cut the head off, grasp the trout firmly in the middle with your thumb in the gut cavity and the rest of your hand wrapped around it. Hold the trout so that the head is pushed down on your cutting surface. With your knife, make a firm slicing motion through the spine at gill level, preferablywith the gut cavity up. Once this is complete, rinse the trout and you are ready to proceed with the rest of your trout cleaning.

Of course, you could use my favorite method to clean a trout. Filet it!
