Oh my goodness.... 4 WHOLE months since I posted anything...I'm Crazy!

Here is a Rainbow Muffin Tin Monday

Red cup: Sauce for dipping

Orange cup: Shamrock Pretzel (receipe below)

Yellow cup: Oranges

Green cup: Green Beans

Blue cup: Tilipia ( he is loving fish right now)

Purple cup: Lucky Charms ;) (The only thing he didn't eat)

Pepperoni Pretzels

Ingredients:

1 1/4 cups water

1 egg yolk -- room temperature

1 tablespoon oil

2 tablespoons sugar

1 teaspoon salt

3 1/2 cups bread flour

1 cup chopped pepperoni

2 tablespoons grated Parmesan cheese

1 tablespoon active dry yeast

=== GLAZE ===

1 egg white

1 tablespoon water

=== TOPPINGS ===

1 tablespoon kosher salt

Follow the instructions for your particular brand of bread baking machine.

Use "Dough" program.

Place on a greased baking sheet 1 1/2 inches apart. Brush with glaze and

sprinkle with topping. Bake at 375 degrees 15 to 20 minutes or until done.

Let the Halloween Crafts begin....

So... I took the Goosemonster to Acmoore and Michael's today. So many cute things I was in Spooky Halloween Heaven.

Anyway I came across these and thought they were so cute and since I am having a Kid's Baking Halloween party this month with all the neighbor kids I thought they would be perfect. BUT not for 24.00, even Martha can't get me to pay that much.

Here is the 6.99 version!

Yankee's inspired Muffin Tin Monday

We went to the Yankee's farm team last weekend and I thought that would be a great tin for the Goose. Funny thing is that the tickets were 10.00 for all three of us and the food, drinks and one beer for hubby was 39.00. Funny part is that I put this tin together for about 4.00!!!

Of course there is Hotdogs, a baseball and the tickets, cracker jacks, peanuts, milk and a pretzel.

Frog Life Cycle Muffin Tin Monday

Thanks for Hopping on over to Chasing the Goose! I have not done a Muffin Tin Monday in 2 MONTHS!!! What have I been doing....working, taking care of my Goose and I started Grad School and I am so excited about it. WOOOO HOOOO!

So I work in a school and we had an end of the year field trip to a park and guess what I brought home yupers...tadpoles. I have 5 of them and we have been feeding them and watching them grow over the last week. One of them has their legs developed and the other ones are starting to get leg buds.

For the "tin" which don't hate me because this is not really a muffin tin lunch at all but how could I resist the water placemat.

1. Waterplace Mat with a lily pad and hot dog and celery cattails with french onion dip and cheese flower.

2 Frog eggs marshmellows with mini chocolate chips

3. Tadpoles chocolate sauce and a couple gold fish for dipping

4. Apple and carrot Red Eyed Tree Frog. I like him! Goose didn't want to eat him--just make him hop which was kinda funny. I took a bite of his "head" and Goose started screaming

"NO more mom hop froggy hop!"

Then we made frog egg pops 2 kewi's, cup of juice and 2tbs of sugar or honey in the blender and then pour it into paper cups and stick a spoon in it or stick and freeze.

This week since it is so nice in Northeastern PA I decided to do a garden theme with the Goose for lunch.

Leapin' Leprechaun's...we had a busy day today. Grocery Shopping, Cleaning, Laundry and then the FUN stuff.
First, we made Irish Soda Bread Muffins recipe here.
(I didn't use the Caraway seed and they were so yummy!)

YEL*LOW Muffin Tin Monday!!!!

After a VERY stressful day at work ... no heat, fighting students and the usually Monday mayham that comes with working in a special needs class I was so tired. I came home from work took an asprin for the pounding headache and popped in a BLUES CLUES video and closed my eyes. Ahhh the joy that 22 minutes of piece and quiet brings. Then it was off to make Muffin Tin Monday.

It is so hard for me to think of such an easy theme, I was wandering around the grocery store trying to find stuff that was YELLOW and most importantly something that the Goose would eat. I knew that I wanted "peeps" and yogurt, the rest just followed. Here's my tin.

1: Milk in a yellow duck cup.
2: Yellow Peeps and golden rasins
3: Hard boiled eggs cut up in quarters ( which he put the whole thing in his mouth at once perhaps next time I will do eights. LOL
4: Golden Fish Filet--yes my son loves fish!!! Too funny Mommy and Daddy don't!
5: Vanilla yogurt which was white and then I added a couple drops of food dye and presto YELLOW! I also got this cute spoon and fork set with different colors it was on clearance at the grocery store. Yah me!
6: Apple Slices

Painting with one of those water paint books--I never thought they were as clean as they are. The water color paint books make a mess all over everything but these books are really easy to clean up. I MUST add more to our art station.

Dr Seuss-- Muffin Tin Monday

Well alot of planning went into this muffin tin monday. Mostly at work on my lunch breaks last week.

My predrawing that I do at work--they think I am crazy but, I would rather be crazy then boring! LOL I had two back up ideas if two of them didn't work out. The Ten apples on top and the Tooth book!

I used 6 different and favorite books from Dr. Seuss.

1. "One Fish, Two Fish, Red Fish, Blue Fish-- used colored goldfish.

2. The Lorax--Used three pretzel rods and some cotton candy.

3 The Cat in the Hat--Cut hat pieces out of apples and peeled the apples to form the stripes.

4. Horton Hears a Who-- used a uncrustables pb&j sandwich some chocolate frosting in a piped bag and a little cotton candy for the "who".

5. Green eggs and Ham-- Cooked egg whites, peas and a tortilla cut like the shape of a ham and dyed green with food coloring.

6.The Grinch who stole Christmas-- pink yougurt in a heart cup for the heart that grew bigger and a pretzel rod for the ten foot pole.

Muffin Tin Monday --CHRISTMAS MORNING

We really enjoyed this Muffin Tin Monday...I made Brayden's "Christmas Morning" dinner and Dad made omelets for us. WIN WIN!

I made his breakfast with eggs in a nest but I used a gingerbread cookie cutter instead of ripping a hole in the bread. These are my favorite way to have eggs too! :) I cut up "extra" (other wise go as it didn't go as planned)bread reindeer, snowmen and a christmas tree and placed them with marshmellows. He also had peaches, bacon and a cupcake snowman that we bought at the store this morning for 2.99...ONLY for muffin tin monday! I could have made a dozen for that price but my little goosey is so spoiled! Then he had what was my favorite looking thing on the tray chocolate milk with whipped cream and snowflakes. He hate hot chocolate...go figure! I bought the snowflakes at Rite Aid for 1.99 for about 100 of them to a bag. I figured I would do something with them. Hope you enjoy and I can't wait for next weeks theme. Christmas Stories

Super Easy Advent Tree

A house can never have too many trees! I finshed this wonderful tree in no time. I have been buying little toys and treats for a couple of weeks now and stockpiling them, hidden from my 2 year old son of course. I bought all of these wonderful boxes at the dollar store. What a find 4 for a dollar!!! Then I just filled them and took extra ribbon from around the house that I found and attached it on the handles with numbers. Every night we plan on reading the passages below with our son and making this one of our new traditions in our home. I hope you will do the same.

Supplies:

24 boxes or tiny bags

24 numbers I looked and looked for them on the internet and decided to just use word to make my own they are fancy enough. :)

12 feet of ribbon

Tree + decorations

24 goodies, I used Matchbox cars, candies, soap, chapstick, any kinda tiny stocking stuffer.

Changes of the season walk

Over the last couple weeks we have been going on walks where I have the Goose pick up a leaf or two. I thought this idea was great to show how the leaves have been changing. We live in Pa and the leaves are so colorful in the fall, it is one of my favorite times of year.

First we gathered leaves over the last couple of weeks. I put them in a cookbook to dry and flatten them.

I then numbered the leaves just incase some would be close in color.

Putting them all together and seeing the changes in the leaves thoughtout the season.

Muffin Tin Monday Kabobs/Columbus Day

After the Flu sweeping through our house, countless birthday and baby showers over the last three weeks, and the activation orders that my husband will be going over seas for the third time now since we we got married, my blog just got put on the back burner for a while. I am up and ready to blog again. We completed although I forgot it was Monday when I went shopping yesterday so I just through this together. Enjoy!

Well I finally made a muffin tin on Sunday. (Shhhh!) I always am so busy on Monday's I never get home from work till about 6:30pm. It is just too much work! (even for a muffin tin meal)

On to the Tin: I wouldn't say I love this tin, it is okay sometimes it is harder to think of something to do when the book has food in it. Does anyone have that problem too?

The Town was created by searching miniature buildings on ABOUT.COM. They have many buildings on there that you can download or purchase. I also made two signs from the book (Meat Street, and Welcome to Chewandswallow). I just placed them on straws and taped them to the top. The height was created by taking a box of tin foil and placing the "grass" scrapbooking paper over it.

Now for in the tin:

Jello Mountain- I bought these today when I went to the store. I don't know how they work because when I made jello it never fully set but he ate it anyway. ??? I will have to test it out again later. Do you leave the lids on or keep one off???

Giant Pancake (thank goodness I make a whole box of mix once a month because I was in no mood to make pancakes. Yup that's right! I take one day a month or every two months and make a hole box of pancakes then place them each in a bag and freeze them. Then just microwave and they come back to life ;) They taste just as good as if you made them that morning. I also put a little mashed banana and syrup in the batter so that it is a bit more moist.

Oreos- mainly because I would want them to fall out of the sky if I had a choice.

Craft: Cloudy With a Chance of Food Falling From The Sky

I just printed out a picture from the book and cut around it. Also I cut food out of the sunday ads so that he could paste them on the paper above the umbrella.

It really came out cute, I will have to post a finished picture.

FNCCC #3 Alexandra Guarnaschelli- Linzer Cookies (sort of)

The chef for this week's Food Network Chefs Cooking Challenge is Alexandra Guarnaschelli.

Okay so I noticed that the "deadline" was today for this challenge, I already had dinner in the crock pot and I was thinking I am not going to the store AGAIN today. I made these cookies with a slight variation as you can see. I had no jam or anything or time to make any, and as you remember from the perogies I lost my big circle cookie cutter to the hands of the Goose. I wanted to keep with the Apple theme that I am doing all this week for my son, so the apple cookie was born. This dough is so buttery and the nutmeg and cinnamon make it the perfect "fall" dough. For my variation of the cookies I just did everything mentioned below except before I baked them I rolled the edges in red sprinkles, when they came out I put 4-5 chocolate chips and piped on some green icing for the leaf and brown for the stem.

Linzer Heart Sandwich Cookies

Prep Time: 40 min Inactive Prep Time: hr min Cook Time: 15 min Level:
Intermediate Serves:
2 1/2 to 3 dozen cookies, about 1 1/2 inches Ingredients
2 1/2 sticks butter
3/4 cup granulated sugar
2 1/3 cups all-purpose flour, plus additional flour for rolling the cookies
1/2 cup slivered almonds, ground
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup seedless raspberry jam
Powdered sugar, optional
Special Equipment:
2 heart-shaped (or round) cookie cutters: 1 about 1 1/2 inches and 1 about 3/4-inch
Waxed paper (or parchment)
Rolling pin
3 baking sheets
Directions
In the bowl of an electric mixer fitted with a paddle attachment, whip the butter until smooth. Add the sugar and continue mixing until the mixture becomes light and fluffy, 3 to 5 minutes. In another bowl, combine and mix the flour, almonds, cinnamon, and nutmeg.

Note: because this dough has a good amount of butter, it needs "resting" time and needs to be rolled fairly quickly. Lay 3 large pieces of waxed paper in a single layer on a flat surface. Sprinkle each with a light coating of flour. Remove the bowl from the mixer and, using a rubber spatula, blend the flour mixture in with the butter. When the ingredients are fully integrated, place 1/3 of the batter on each piece of waxed paper. Coat dough with a light layer of flour, and top with another piece of waxed paper of the same length to make 3 batter "sandwiches". Place 2 of them in the refrigerator and work with 1 at a time.

Preheat the oven to 350 degrees F.

Roll the first batch into as neat a shape as possible. What matters most is avoiding creases or cracks and getting it to about 1/8-inch in thickness. When the first is rolled, refrigerate it and repeat the same process for the other 2 pieces of dough.

Make the cookie bottoms: Remove the first rolled sheet from the refrigerator and cut as many 1 1/2-inch hearts (or rounds). Reserve the scraps in the refrigerator. Arrange them neatly in a single layer on a greased baking sheet. Repeat with the other two sheets, reserving any scraps.

Make the cookie tops: Cut a heart, with the smaller cutter, out of the center of half of all the cookies to create a heart outline. Roll the scraps in between 2 pieces of waxed paper and cut additional hearts, if desired.

Bake the cookies until they are lightly brown, 12 to 15 minutes. Remove the trays from the oven and allow them to cool slightly for a few minutes before gently transferring them to a flat surface. In a small pot, pour in the raspberry jam and bring it to a light simmer. Remove from the heat to cool slightly as well.

Spoon about 1/4 to 1/2 teaspoon raspberry jam on each bottom and place a "top" heart on each. Dust with powdered sugar, if desired.

"NO BAKE" Apple Pie

Last night I was thinking of things to do with Apples hmmmmm.... I was putting away the dishes and moved the paper plates and it hit me Paper Plate Apple Pies!!! I really like how these came out and so did the Goose.

Now here's what you need:

2 paper plates

Something to color the plate brown, (crayon, paint or this bingo markers that the goose is in love with)

String or ribbon ( I left the string long so we could hang it in the kitchen.

Directions: Take the two paper plates and hole punch them, ( Hint make a mark of where they line up because you will have a hard time finding the way the holes line up or save till end. ;) Then crumble paper and paste on bottom "crust". I cut holes in the top so it looks more like a pie, just fold "crust" like you would cut out a snowflake. Paint top and apply extra glue to "apple pie filling" and sprinkle with cinnamon mixture and string them together. Enjoy!!
