&lt;p&gt;This salad dressing is my own li&amp;#8217;l concoction. I&amp;#8217;d forgotten about it for some time. But, today, I decided to make the family a great salad &amp;#8212; because, really?, what better way to show your family you love them than make them a fresh salad, especially after DADA took them out for grilled cheese, french fries and popcorn. Ahem.&lt;/p&gt;
&lt;p&gt;It is seriously delicious &amp;#8212; nutty and tangy &amp;#8212;  and composed of only a few ingredients. Walnut oil may be an unusual one for you, but it&amp;#8217;s a TASTY alternative to flax seed oil for getting your daily dose of omega 3 fatty acids (which, as most of you know, are essential fats &amp;#8212; essential to both physical and emotional health).&lt;/p&gt;
&lt;p&gt;Check it!&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;INGREDIENTS&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1/2 cup Walnut Oil&lt;br /&gt;
1/4 cup Balsamic Vinegar&lt;br /&gt;
1 tsp Dijon Mustard&lt;br /&gt;
1 clove Garlic (minced)&lt;br /&gt;
Pepper (to taste)&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;INSTRUCTIONS&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;Put all the ingredients in a bowl, stir, and drizzle on salad. It would be great if you could let it sit for a bit before serving, so the vinaigrette can absorb the garlic flavour, but no biggie. &lt;/p&gt;

&lt;p&gt;The Monkey actually ASKED me to make muffins today. And she LOVED these ones. She loved them even more, &lt;a href="http://cheatymonkey.com/index.php/2009/03/04/joys-amid-the-chaos/" target="_blank"&gt;she claimed&lt;/a&gt;, than her favourite STARBUCKS muffins. SO THERE! Ha!&lt;/p&gt;
&lt;p&gt;So, I try to keep this blog as vegan as possible. And I&amp;#8217;m finding so many baking recipes I love call for eggs.  Without further ado, then, I give you vegan egg substitutes &amp;#8212; good for vegans AND those who, like me, couldn&amp;#8217;t crack an egg properly if their life depended on it&amp;#8230;.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;FLAX SEEDS AND WATER&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;For one egg, grind 1 tablespoon of flax seeds (or just measure 2.5 tablespoons of ground flax seeds) and mix with 3 tablespoons water.  The mixture will become thick and gooey as you beat it. If the recipe you&amp;#8217;re using is already pretty wet, you may be able to skip the water &amp;#8212; just blend the flax in well. Of course, the best part about substituting eggs with flax (aside from happier hens) is the omega 3 factor! Ground flax is a great source of omega 3 fatty acids.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;MASHED BANANAS&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;For one egg, mash half a banana! EASY! Just, be careful: only use this egg replacer if you don&amp;#8217;t mind your baked goods tasting a wee bit like banana&amp;#8230;.&lt;/p&gt;
&lt;p&gt;These are my favourite egg substitutes because they&amp;#8217;re so easy and available&amp;#8230;. But, there are others. See &lt;a href="http://www.theppk.com/veganbaking.html" target="_blank"&gt;HERE&lt;/a&gt; for more on the above ideas and other great egg substitutes.&lt;/p&gt;
&lt;p&gt;In the meantime&amp;#8230;, I give you your muffins, Gorgeouses!&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;INGREDIENTS&lt;/strong&gt;&lt;br /&gt;
(Makes 12)&lt;/p&gt;
&lt;p&gt;2 cups oat bran &lt;em&gt;(preferably a hot cereal mix &amp;#8212; get your high fiber!)&lt;/em&gt;&lt;br /&gt;
1 cup whole wheat flour&lt;br /&gt;
1/2 tsp baking powder&lt;br /&gt;
1/4 tsp sea salt&lt;br /&gt;
1/2 tsp ground cinnamon&lt;br /&gt;
1/2 cup milk substitute &lt;em&gt;(I used rice milk)&lt;/em&gt;&lt;br /&gt;
1/2 cup canola oil &lt;em&gt;(or vegetable oil of your choice)&lt;/em&gt;&lt;br /&gt;
1 organic egg or egg replacer &lt;em&gt;(beaten)(see above)&lt;/em&gt;&lt;br /&gt;
1/2 cup maple syrup&lt;br /&gt;
3/4 cup raisins&lt;br /&gt;
1/4 cup ground walnuts &lt;em&gt;(grind a small handful of whole walnuts)&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;INSTRUCTIONS&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1. Preheat oven to 375°F and grease muffin tin.&lt;/p&gt;
&lt;p&gt;2. Combine all the dry ingredients in a large bowl.&lt;/p&gt;
&lt;p&gt;3. Combine the wet ingredients in a separate bowl.&lt;/p&gt;
&lt;p&gt;4. Pour the dry mixture into the wet, and combine until just blended.&lt;/p&gt;
&lt;p&gt;5. Spoon the mix into the muffin tin.&lt;/p&gt;
&lt;p&gt;6. Bake for 20 minutes (or until they look ready to you &amp;#8212; golden&amp;#8230;).&lt;/p&gt;
&lt;p&gt;7. Let cool for 5-10 minutes. And ENJOY!&lt;/p&gt;

&lt;p&gt;So, I&amp;#8217;m cooking for myself. Even if I have Rascal at my feet, tugging at my lululemons, I&amp;#8217;m cooking for myself &amp;#8212; not just rice and beans &amp;#8212; but FANCY stuff. Well, I&amp;#8217;ve made one meal. But, it&amp;#8217;s served me well for THREE DAYS, and the monkeys enjoyed it, too (sort of &amp;#8212; they only REALLY like &amp;#8220;treats&amp;#8221;). The apple in this dish DOES taste like APPLE PIE, though!&lt;/p&gt;
&lt;p&gt;As a vegan dish, this is wonderfully nutritious and convenient: a mixture of grains and legumes makes it a good source of protein; the sweetness of the light coconut milk helps satisfy sugar cravings, and it&amp;#8217;s oh-so-nutritious; the dish is loaded with fiber, beta carotene; and, finally, it&amp;#8217;s LIGHT, one-pot, easy-peasy.&lt;/p&gt;
&lt;p&gt;I adapted the recipe from Dreena Burton&amp;#8217;s wonderful cookbook &lt;em&gt;&lt;a href="http://www.amazon.ca/gp/product/1551521695?ie=UTF8&amp;amp;tag=ablogofherown-20&amp;amp;linkCode=as2&amp;amp;camp=15121&amp;amp;creative=330641&amp;amp;creativeASIN=1551521695" target="_blank"&gt;Vive le Vegan!&lt;/a&gt;&lt;/em&gt;&lt;/p&gt;

&lt;p&gt;2-3 cups cooked/canned chick peas &lt;em&gt;(and/or kidney/aduki beans)&lt;/em&gt;&lt;br /&gt;
1 (400 ml) can of light coconut milk &lt;em&gt;(I&amp;#8217;m sure you could try this with vegetable stock instead &amp;#8212; let me know, if you try that)&lt;/em&gt;&lt;br /&gt;
1/2 onion (chopped)&lt;br /&gt;
1-2 sweet potatoes (chopped)&lt;br /&gt;
2 parsnips (sliced) &lt;em&gt;(optional, but nice because adds more variety with each bite)&lt;br /&gt;
&lt;/em&gt; 1 cup celery (sliced) (optional)&lt;br /&gt;
1-2 apples (peeled, cubed)&lt;br /&gt;
1-2 garlic cloves (minced)&lt;br /&gt;
1 tbsp curry paste (optional) &lt;em&gt;(I didn&amp;#8217;t have any on hand&amp;#8230;.)&lt;/em&gt;&lt;br /&gt;
1.5 tbsp grated fresh ginger &lt;em&gt;(or around 1/2 teaspoon dried)&lt;/em&gt;&lt;br /&gt;
2 tsp mustard seeds&lt;br /&gt;
1 tsp cumin&lt;br /&gt;
1/2 tsp turmeric &lt;em&gt;(for orange glow&amp;#8230;, and more importantly for its HEALTHY properties)&lt;/em&gt;&lt;br /&gt;
3/4 tsp sea salt&lt;br /&gt;
1/8 tsp allspice&lt;/p&gt;
&lt;p&gt;2 cups &lt;a href="http://cheatykitchen.com/index.php/2008/06/01/cheatys-favourite-quinoa-recipe/" target="_blank"&gt;cooked quinoa&lt;/a&gt; (or other grain)&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;span style="text-decoration: underline;"&gt;INSTRUCTIONS&lt;/span&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1. Preheat oven to 375°F (190°C).&lt;/p&gt;
&lt;p&gt;2. Place all the ingredients in a large pot or casserole dish.&lt;/p&gt;
&lt;p&gt;3. Stir it up &amp;#8217;till nice and combined.&lt;/p&gt;
&lt;p&gt;4. Bake for 60-70 minutes, stopping midway to give it a stir.&lt;/p&gt;
&lt;p&gt;5. Let it sit for a bit, and then serve in individual bowls with quinoa (or other grain)!&lt;/p&gt;
&lt;p&gt;6. ENJOY!&lt;/p&gt;

My friend set it in front of me after I insisted that she don&amp;#8217;t go out of her way &amp;#8212; on our pizza playdate &amp;#8212; to feed my vegan self&amp;#8230;. And, I was inspired. Inspired to cook again (and, thus, to update this blog, finally) and inspired to get back into the kitchen and create. Fennel! She put fennel in the salad!&lt;/p&gt;
&lt;p&gt;The next day, I went to the bookstore and finally bought this book I&amp;#8217;ve been eyeing a long time: &lt;em&gt;Becoming Vegan: The Complete Guide to Adopting a Healthy Plant-Based Diet&lt;/em&gt;&amp;#8230;.&lt;/p&gt;
&lt;p&gt;&lt;a href="http://www.amazon.ca/Becoming-Vegan-Complete-Adopting-Plant-Based/dp/1570671036?&amp;amp;camp=212529&amp;amp;creative=383481&amp;amp;linkCode=waf&amp;amp;tag=ablogofherown-20" target="_blank"&gt;&lt;img src="http://i92.photobucket.com/albums/l30/haley-o/becomingvegan.jpg" alt="" width="155" height="218" /&gt;&lt;/a&gt;&lt;/p&gt;
&lt;p&gt;Because something had to be done. I mean, the way my body thanked me upon each bite of delightfully bitter arugala, each nutty crunch of walnut, each juicy squish of orange slice? It was like Minden at cookie time&amp;#8230;.&lt;/p&gt;

&lt;p&gt;&amp;#8230;THANKFUL. See, I AM a yoga instructor. So, I might be a little more aware of my body than most people. And I totally felt the thanks with every bite. I KNOW my body needs work. It needs help and proper, educated nourishment. If I&amp;#8217;m going to be a vegan &amp;#8212; which I am, because I love animals beyond the norm &amp;#8212; I have to do it right. If I want to live to a ripe old age with healthy bones and peace of mind, I have to do it right.&lt;/p&gt;
&lt;p&gt;So, here are some things I&amp;#8217;ve learned from the book (my eyes HURT from scanning its pages all day), that I&amp;#8217;ll do, or that I&amp;#8217;ll do more consistently, to get healthy and stay on the HEALTHY vegan wagon for life (fingers crossed!)&amp;#8230;.&lt;/p&gt;
&lt;p&gt;1. Have I told you about the sweet potatoes? I can&amp;#8217;t remember. I buy about four a week &amp;#8212; all for me because my kids won&amp;#8217;t touch &amp;#8216;em now, for some reason&amp;#8230;. Right when I get home from the grocery store, I take out my sweet potatoes, poke &amp;#8216;em with a knife several times and stick &amp;#8216;em in the oven at 400°F. Sweet potatoes are one of the healthiest vegetables on the planet &amp;#8212; loaded with beta carotene, fiber, and so much more. More importantly&amp;#8230;, they&amp;#8217;re like CANDY. Their juice even oozes out of the holes I poke, and it caramelizes, and I peel it off the baking sheet AND EAT IT &amp;#8212; total CANDY. YOU MUST TRY IT&amp;#8230;.&lt;/p&gt;

&lt;p&gt;2. OMEGA 3s. OMG, have I told you about Omega 3s? You need &amp;#8216;em. &lt;em&gt;Especially&lt;/em&gt; if, like me, you&amp;#8217;re prone to depression and anxiety (of course, they&amp;#8217;re essential for a host of other reasons&amp;#8230;). If you don&amp;#8217;t eat fish, you must take a supplement. I am now making a concerted effort to get my omegas 3s from walnuts (I make sure &lt;a href="http://cheatymonkey.com/index.php/2009/02/19/everything-but-the-kidsxo/" target="_blank"&gt;my kids eat walnuts&lt;/a&gt;), hemp seeds, and a daily dose of &lt;a href="http://udoerasmus.com/products/oil_blend_en.htm" target="_blank"&gt;Udo&amp;#8217;s Choice&lt;/a&gt;, which came highly recommended to me by the vitamin person at the health food store&amp;#8230;. At first, I thought I had to put a tablespoon into a smoothie every time I wanted to take it. But, yesterday, I realized I could take it no problem mixed in a glass of water. Easy.&lt;/p&gt;
&lt;p&gt;&lt;a href="http://udoerasmus.com/products/oil_blend_en.htm" target="_blank"&gt;&lt;img src="http://i92.photobucket.com/albums/l30/haley-o/pro_oil.jpg" alt="" /&gt;&lt;/a&gt;&lt;/p&gt;
&lt;p&gt;3. KALE. You know I love my kale. From now on, I eat one whole bunch of kale a week &amp;#8212; at least. I just stick it in a pot with an inch of water and some chopped portobello mushrooms, cover, and leave it on the stove until it&amp;#8217;s just steamed. When it&amp;#8217;s ready, I pour on a little tamari (soy sauce) and some olive/canola oil, sprinkle with pine nuts (and maybe a press of garlic), and ENJOY. It&amp;#8217;s a really nice dish&amp;#8230;. Kale, and all dark leafy greens, are such important non-dairy sources calcium. Indeed, since the Monkey decided she doesn&amp;#8217;t love milk, I ask her to eat a little kale whenever I make it. She forces it down &amp;#8212; it&amp;#8217;s great. Heh. I&amp;#8217;ll also puree kale and put it in smoothies, and I&amp;#8217;ll puree spinach and put it in my kids&amp;#8217; scrambled GREEN EGGS!&lt;/p&gt;

&lt;p&gt;4. FORTIFIED ORANGE JUICE. I love that ORANGE JUICE is now part of my diet. I need it because FORTIFIED orange juice is a valuable source of calcium AND vitamin D &amp;#8212; which has been all over the news as a major cancer preventer. If you can&amp;#8217;t get into direct sunlight for 15-20 minutes a day, you need to take a D supplement. While I have some D in my multivitamin, it&amp;#8217;s not enough in these winter months. PLUS, you need vitamin D to properly absorb calcium. So, HOLLAH to the new orange juices that are adding not only calcium but vitamin D to the mix&amp;#8230;. One cup a day! Cheers!&lt;/p&gt;

&lt;p&gt;5. LENTILS. I hereby vow to have cooked lentils in my fridge at all times. They&amp;#8217;re such a perfect food. Full of fiber, protein and other important stuff. If they&amp;#8217;re sitting in my fridge, I can dump &amp;#8216;em in salads, pasta, on rice&amp;#8230;. I feel healthier already!&lt;/p&gt;

&lt;p&gt;6. FIGS. I&amp;#8217;m also SO pleased to announce that dried figs are now an essential part of my diet. LOVE! One serving (five figs) offers a good source of non-dairy calcium for vegans. We&amp;#8217;re supposed to get 6-8 servings of non-dairy calcium daily. So, between this and the kale and the orange juice (and the almond butter and hummus I love, and soy/rice milk), I&amp;#8217;m golden.&lt;/p&gt;

&lt;p&gt;7. Since we&amp;#8217;re on the topic of calcium and bones&amp;#8230;. 30 minutes of exercise a day is now MANDATORY. I have to do it&amp;#8230;. Must stay strong so I can do this forever (yes, I&amp;#8217;m posting it again &amp;#8212; must take more yoga pics)&amp;#8230;.&lt;/p&gt;

&lt;p&gt;My Rascal has been a &lt;a href="http://cheatymonkey.com/index.php/2009/02/03/thank-you/" target="_blank"&gt;terror for the past week&lt;/a&gt;. Dinner times have been fraught with screaming, since he won&amp;#8217;t eat unless he&amp;#8217;s sitting on my lap. Eventually, I give in and hold him. He eats a few bites and he&amp;#8217;s done. Until I bring out the organic blueberries.&lt;/p&gt;
&lt;p&gt;I didn&amp;#8217;t know what to make for dinner tonight. I was so distraught by all Rascal&amp;#8217;s screaming that I could hardly eat. I&amp;#8217;m also so run down from doing so much myself. The last thing I wanted to do was cook up a non-vegetarian meal for my non-vegetarian family. That&amp;#8217;s hard enough for me (vegan) to do on a GOOD day. So, I took out the lentils.&lt;/p&gt;
&lt;p&gt;I had an organic bag of dried lentils in the pantry. I poured a cup of them in a pot, along with 3 cups of water, and I brought them to a boil. I let them simmer for 45 minutes &amp;#8212; of which I kept track by watching three episodes of &lt;em&gt;The Backyardigans&lt;/em&gt; with The Monkey, while Rascal napped.&lt;/p&gt;
&lt;p&gt;Now, how to get the family  to eat the hugely healthy &amp;#8212; &lt;a href="http://www.whfoods.com/genpage.php?tname=foodspice&amp;amp;dbid=52" target="_blank"&gt;one of the healthiest foods in the world&lt;/a&gt; &amp;#8212; lentils? Hide them in pasta sauce, of course!&lt;/p&gt;
&lt;p&gt;And, it worked. Monkey loved the concoction&amp;#8230;. Here she is posing with her already half-eaten dish:&lt;/p&gt;

&lt;p&gt;One of the reasons it worked was THE PINE NUTS. They really complimented the nutty texture and taste of the lentils. It was brillers&amp;#8230;. Check it!&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;INGREDIENTS&lt;/strong&gt;&lt;br /&gt;
&lt;em&gt;(Serves 4. But, it&amp;#8217;s all to taste, really &amp;#8212; it&amp;#8217;s the ingredients, not the measurements that count here.)&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;3/4 cup Cooked Lentils &lt;em&gt;(cooking instructions described above)&lt;/em&gt;&lt;br /&gt;
Bag of Pasta &lt;em&gt;(I love kamut pasta)&lt;/em&gt;&lt;br /&gt;
Jar of Tomato Sauce of your choice&lt;br /&gt;
1 cup Pureed Broccoli &lt;em&gt;(optional; for extra veggies the children will NEVER know about)&lt;/em&gt;&lt;br /&gt;
Pine Nuts &lt;em&gt;(a couple handfuls)&lt;/em&gt;&lt;br /&gt;
Parmesan cheese &lt;em&gt;(preferably vegan)&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;1. Cook the pasta. Drain. Return to pot (at low heat).&lt;br /&gt;
2. Dump in the tomato sauce, lentils, pine nuts, pureed broccoli.&lt;br /&gt;
3. Stir it up.&lt;br /&gt;
4. Dish it out.&lt;br /&gt;
5. Sprinkle on the parmy.&lt;/p&gt;
&lt;p&gt;Enjoy! It&amp;#8217;s SO easy. Let us know how you like it!&lt;/p&gt;

&lt;p&gt;I would say that the wheatberry is my favourite grain. It&amp;#8217;s a &amp;#8220;meaty&amp;#8221; grain with lots of chew and lots of crunch. And, it&amp;#8217;s got a rich and nutty flavour. It&amp;#8217;s perfect mixed with a lemon, olive oil, and dill dressing, as in the following recipe. CHECK IT!&lt;/p&gt;
&lt;h2&gt;&lt;strong&gt;WHEATBERRIES WITH LEMON-DILL DRESSING&lt;/strong&gt;&lt;/h2&gt;
&lt;p&gt;&lt;strong&gt;&lt;span style="text-decoration: underline;"&gt;Ingredients&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;
&lt;em&gt;(Serves 1-2)&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;1/2 cup wheatberries&lt;br /&gt;
1 1/2 cup water&lt;br /&gt;
1 garlic clove &lt;em&gt;(minced)&lt;/em&gt;&lt;br /&gt;
1/4 onion &lt;em&gt;(chopped)&lt;/em&gt;&lt;br /&gt;
2 tsp olive oil &lt;em&gt;(add 1 tsp flax oil for omega 3s)&lt;/em&gt;&lt;br /&gt;
Lemon juice &lt;em&gt;(to taste)&lt;/em&gt;&lt;br /&gt;
Dried dill &lt;em&gt;(to taste)&lt;/em&gt;&lt;br /&gt;
Handful pine nuts&lt;br /&gt;
1/2 cup cooked/canned chick peas &lt;em&gt;(for protein) (optional)&lt;/em&gt;&lt;br /&gt;
Any combo of veggies &lt;em&gt;(I recommend portobello mushrooms and spinach because they&amp;#8217;re great for vegans and because they taste great with pine nuts; I used broccoli because I had some leftover steamed broccoli in the fridge.)&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;span style="text-decoration: underline;"&gt; Instructions&lt;/span&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1. Cook wheatberries: Place wheatberries and water in a pot. Bring to a boil and let sit, at low heat, for an hour or so (until they look puffed up &amp;#8212; maybe taste one just to be sure). Once ready, gently pour out the excess water.&lt;/p&gt;
&lt;p&gt;2. Meanwhile, spray a pan with light (organic, if possible) cooking spray. Stir fry the garlic and onions until onions are soft. Then add mushrooms, spinach, etc..&lt;/p&gt;
&lt;p&gt;3.  When the wheatberries and veggies are done, mix them together.&lt;/p&gt;
&lt;p&gt;4. Mix in the chickpeas.&lt;/p&gt;
&lt;p&gt;5. Drizzle with the olive oil and lemon juice.&lt;/p&gt;
&lt;p&gt;6. Divide into bowls. Sprinkle with dill and pine nuts. Enjoy!&lt;/p&gt;
&lt;p&gt;If this really doesn&amp;#8217;t float your boat, just add 1/2 cup of your favourite tomato sauce. You&amp;#8217;ll LOVE it!&lt;/p&gt;

&lt;p&gt;The reason it&amp;#8217;s sexy is because it&amp;#8217;s VEGAN (with vegetarian options), it&amp;#8217;s YUMMY, and there&amp;#8217;s NO TOFU INVOLVED, and, still, it offers a nourishing, satisfying amount of protein, fiber and nutrients. Black beans make a WONDROUS, whole-food alternative to ground meats.&lt;/p&gt;
&lt;p&gt;I had the vegan version of the dish, and my kids and Josh-O enjoyed a little organic cheddar cheese grated on top. I don&amp;#8217;t &lt;em&gt;do &lt;/em&gt;soy cheese because I can&amp;#8217;t find a brand that I like (and I&amp;#8217;m not a believer in fake &lt;em&gt;anything&lt;/em&gt;);  so, I can tell you the dish was still delicious sans any cheese. If you&amp;#8217;re really LAZY, you could sprinkle parmesan on top. But, this is Mexican we&amp;#8217;re talking about here &amp;#8212; which means GRATED cheddar. Besides, let&amp;#8217;s face it, the big parmesan brands that you buy in the grocery store, are, well, pretty-much fake and laden with salt and chemicals&amp;#8230;. Blech.&lt;/p&gt;
&lt;p&gt;You can add any vegetable you want to this. But, if you&amp;#8217;re dealing with picky children, sometimes a purée  is best. Because I&amp;#8217;m the Cheatiest cook in the West&amp;#8230;, I added a spinach purée to it, which I&amp;#8217;ll include in the recipe. Spinach is one of those super-healthy leafy greens that is a MUST in the diet, and it offers good calcium and iron for vegans (especially when combined with the vitamin-C in the tomato sauce).&lt;/p&gt;
&lt;p&gt;Okay, so CHECK IT! Oh, and by the way, I&amp;#8217;m putting vague amounts here, because they really vary, depending on how many people you&amp;#8217;re serving, how much pasta you&amp;#8217;re using, etc.. You&amp;#8217;ll see&amp;#8230;.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;INGREDIENTS&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1/2 jar tomato sauce (any variety)&lt;br /&gt;
1/2 jar mild salsa&lt;br /&gt;
1 can black beans&lt;br /&gt;
1 cup spinach (to be purée in 1/4 cup water) (optional)&lt;br /&gt;
1 cup grated soy or organic cheddar cheese (optional)&lt;br /&gt;
Cooked pasta (or rice)&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;INSTRUCTIONS&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1. Pour all the ingredients over hot cooked pasta (or rice)!&lt;br /&gt;
2. Grate your cheese on top (in front of the kids, if possible, because they find it thoroughly entertaining &amp;#8212; think making-spaghetti-with-play-dough&amp;#8230;).&lt;br /&gt;
3. Stir it up!&lt;br /&gt;
4. ENJOY!&lt;/p&gt;
&lt;p&gt;P.S.: This dish keeps really well in the fridge for a good 3-5 days. Or, freeze for later!&lt;/p&gt;

&lt;p&gt;It&amp;#8217;s a wee bit challenging to eat well as a vegan. It&amp;#8217;s like, when you pledge to become a vegan, you also pledge that you will EAT REALLY REALLY WELL. Indeed, part of being a vegan is being gentle and compassionate to your own body. And, I have not been. I&amp;#8217;ve been so preoccupied with my children, and their health and well-being, that I&amp;#8217;ve made no time for my own SELF-CARE. Cooking seems to take too much energy, and all I want at the end of the day, is to sit on my arse and eat sweet, and almond-buttery and BREAD-Y goodness&amp;#8230;. But, my lips are chapped, and my energy is low, and I slip in and out of dark moods all too easily. Not a good sign.&lt;/p&gt;
&lt;p&gt;So, &lt;a href="http://cheatymonkey.com/index.php/2009/01/14/popcorn-and-wine/" target="_blank"&gt;yesterday, I vowed to make a change&lt;/a&gt;. I decided not to make any strict rules that I would end up breaking and berating myself for breaking. Instead, I decided just to eat a little better. To eat some meals and maybe even some greens.&lt;/p&gt;
&lt;p&gt;Well, the FREEZING weather here in Canada made it difficult for me to fill my fridge with vegan delicacies (lettuce). But, I did have some KALE in the fridge&amp;#8230;. And, I steamed it with my dinner&amp;#8230;.&lt;/p&gt;
&lt;p&gt;&lt;img src="http://i92.photobucket.com/albums/l30/haley-o/Cheaty%20Kitchen/IMG_7563.jpg" alt="" width="321" height="241" /&gt;&lt;/p&gt;
&lt;p&gt;&amp;#8230;and it was good. I liked it. I didn&amp;#8217;t put a single seasoning in it, and I LIKED it. Kale is an AMAZING vegetable. It&amp;#8217;s one of the healthiest in the world &amp;#8212; as are most dark-green leafy vegetables. Maybe it was so tasty because my body really needed it&amp;#8230;. I&amp;#8217;m not sure. But, go for it, Gorgeouses. Pick yourself up a bunch of kale, steam it gently in half a cup of water, and enjoy&amp;#8230;.&lt;/p&gt;
&lt;p&gt;If your body doesn&amp;#8217;t welcome the plain steamed kale as much as mine does, add a teaspoon of low-sodium soy sauce (or tamari sauce), a minced garlic clove or two, and some pepper. Let us know how you like it!&lt;/p&gt;
&lt;p&gt;Guess who else liked it&amp;#8230;? Josh-O and the RASCAL. The monkey didn&amp;#8217;t try it. But, it&amp;#8217;s okay, because she LOVED my latest concoction: &amp;#8220;NATURE&amp;#8217;S CANDY.&amp;#8221;&lt;/p&gt;
&lt;p&gt;Last night at dinner, Monkey asked me if she could have CANDY for dessert. Instead of saying &amp;#8220;noooo,&amp;#8221; I said, &amp;#8220;sure! I&amp;#8217;m making you &amp;#8216;Nature&amp;#8217;s Candy.&amp;#8217;&amp;#8221; She was SO. EXCITED. Squealed for joy! When I finished making it, I walked into the dining room and confidently handed her &amp;#8220;Nature&amp;#8217;s Candy.&amp;#8221; And, to my delight (and surprise), SHE LOVED IT.&lt;/p&gt;
&lt;p&gt;She loved it SO MUCH&amp;#8230;that she POSED with it&amp;#8230;.&lt;/p&gt;

&lt;h2&gt;&lt;strong&gt;&lt;span style="color: #ff00ff;"&gt;NATURE&amp;#8217;S CANDY&lt;/span&gt;&lt;/strong&gt;&lt;/h2&gt;

&lt;p&gt;&lt;span style="text-decoration: underline;"&gt;&lt;strong&gt;INGREDIENTS (serves 2)&lt;/strong&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;1 apple&lt;br /&gt;
1 kiwi&lt;br /&gt;
Raisins&lt;br /&gt;
&lt;em&gt;(Really, any fruit will do; but, the raisins are a must!)&lt;/em&gt;&lt;br /&gt;
Tablespoon walnuts &lt;em&gt;(optional; great for added omega 3s)&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;span style="text-decoration: underline;"&gt;INSTRUCTIONS&lt;/span&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1. Chop up fruit and throw in a bowl.&lt;br /&gt;
2. Sprinkle with raisins.&lt;br /&gt;
3. Serve with chin up and big smile! AND MAKE SURE YOU CALL IT &amp;#8220;NATURE&amp;#8217;S CANDY,&amp;#8221; or some other name with &amp;#8220;candy&amp;#8221; in it&amp;#8230;. They&amp;#8217;re LOVE IT!  Hee!&lt;/p&gt;

In good time. In any case, I&amp;#8217;m definitely a cheaty chef. I sneak as much as I can into my children&amp;#8217;s food without them knowing it &amp;#8212; because they are truly picky eaters, and I am truly obsessive compulsive when it comes to their diets. I am MISERABLE knowing my children aren&amp;#8217;t getting EVERYTHING they need EVERY DAY. And, I do whatever I can to avoid the misery by being CHEATY.&lt;/p&gt;
&lt;p&gt;Today, I share with you my easiest, yummiest, cheatiest method of getting SPINACH and other good stuff into my children&amp;#8217;s diets&amp;#8230;. And, hey! This is not limited to children, of course. Husbands, boyfriends, girlfriends, CATS, grandmas &amp;#8212; name a loved one &amp;#8212; and YOU will love it, too!&lt;/p&gt;
&lt;h2&gt;&lt;span style="color: #ff00ff;"&gt;&lt;strong&gt;CHEATY&amp;#8217;S SPINACH YOGURT DELIGHT&lt;/strong&gt;&lt;/span&gt;&lt;/h2&gt;

&lt;p&gt;Looks good, right? You&amp;#8217;d never KNOW there was spinach in there! Now, really, anything goes here. But, the ingredients that follow worked really well. And, the combination of spinach and blueberries is ideal (iron and vitamin C should be ingested together for optimal absorption). The ground nuts provide much-coveted omega 3 fatty acids, an itty-bitty crunch, and a tasty nuttiness &amp;#8212; because I&amp;#8217;m nutty like that&amp;#8230;. Check it:&lt;/p&gt;
&lt;p&gt;&lt;span style="text-decoration: underline;"&gt;INGREDIENTS&lt;/span&gt;&lt;br /&gt;
(Serves 4)&lt;/p&gt;
&lt;p&gt;&lt;em&gt;Oh gosh. The amounts of everything really vary&amp;#8230;. You have to use your intuition. I&amp;#8217;ll try to gage it here&amp;#8230;.&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;1 cup yogurt &lt;em&gt;(soy, if you&amp;#8217;re vegan like me)&lt;/em&gt;&lt;br /&gt;
1/2 cup frozen spinach&lt;br /&gt;
1 cup frozen blueberries&lt;br /&gt;
1 oz (2 tbsp) ground almonds/walnuts &lt;em&gt;(if you don&amp;#8217;t have a coffee grinder for grinding nuts and seeds, get one! I use mine all the time. They&amp;#8217;re small and inexpensive.)&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;span style="text-decoration: underline;"&gt;INSTRUCTIONS&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;Place all of the ingredients in the blender or food processor and BLEND! If it won&amp;#8217;t blend, just add more yogurt. The monkey&amp;#8217;s loved it.&lt;/p&gt;
&lt;p&gt;My little monkeys ate spinach, Gorgeouses. They actually ate spinach! AND, Rascal&amp;#8217;s constipation has been MUCH better thanks to the blueberries, spinach, AND nuts! Sweet.&lt;/p&gt;

&lt;p&gt;So, can you handle this? Can you take the &lt;a href="http://veg.ca/content/view/26/56/" target="_blank"&gt;VEGGIE CHALLENGE&lt;/a&gt;? This is a DARE, Gorgeouses. ARE YOU GAME? OR, are ya scaaaaaared?! Bock buck buck buck buck BOCK buck buck buck buck (that&amp;#8217;s my effort to sound like a CHICKEN!!!).&lt;/p&gt;
&lt;p&gt;&lt;a href="http://www.veggiechallenge.com"&gt;&lt;img src="http://www.veg.ca/images/ad-Ch07-150x190.jpg" border="0" alt="Take the Veggie Challenge" width="150" height="191" /&gt;&lt;/a&gt;&lt;/p&gt;
&lt;p&gt;Even if you don&amp;#8217;t do the whole week, this plan &amp;#8212; devised by my city&amp;#8217;s very own &lt;a href="http://veg.ca" target="_blank"&gt;The Toronto Vegetarian Society&lt;/a&gt; &amp;#8212; is full of great tips and recipes for incorporating more plant-based meals in your (and your family&amp;#8217;s) diet. You might find you even LIKE eating this way. If you&amp;#8217;re lucky, like me, you might notice your skin take on a new glow, or you&amp;#8217;re less congested, you feel lighter, more balanced and more compassionate&amp;#8230;.!&lt;/p&gt;
&lt;p&gt;Here&amp;#8217;s an example of a day on the diet:&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Breakfast&lt;/strong&gt;&lt;br /&gt;
• Whole-grain cereal with your choice of milk, sprinkled with dried or fresh fruit.&lt;br /&gt;
• Calcium-fortified orange juice.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Lunch&lt;/strong&gt;&lt;br /&gt;
• Avocado slices with sprouts or lettuce on whole-grain bread, grape or cherry tomatoes.&lt;br /&gt;
• Cantaloupe chunks drizzled with fresh lime juice.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Dinner&lt;/strong&gt;&lt;br /&gt;
Chinese stir-fry over brown rice: toss in tofu chunks, broccoli, pea pods, and bok choy.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Snack&lt;/strong&gt;&lt;br /&gt;
Dried figs.&lt;/p&gt;
&lt;p&gt;Mmmm&amp;#8230;. FIGS. Love! I may stay away from those figs because they&amp;#8217;re high in sugar and HIGHLY addictive. But, they&amp;#8217;re also high in calcium and iron and other good stuff.&lt;/p&gt;
&lt;p&gt;You know, I&amp;#8217;ve been researching vegan weight-loss diets, like Dr. Fuhrman&amp;#8217;s well-known &lt;em&gt;Eat to Live&lt;/em&gt; diet and various macrobiotic diets. But, they&amp;#8217;re all so dang restrictive. And, the vegan diet&amp;#8217;s restrictive enough &amp;#8212; especially if you&amp;#8217;ve been a CHEESE lover all your life, like I was&amp;#8230;. So, I&amp;#8217;m excited about this Veggie Challenge. It&amp;#8217;s realistic. It&amp;#8217;s simple. And, it&amp;#8217;s not restrictive or rigid. As long as I keep the sugar and cheaty snacking to a minimum, I should lose weight on it! (Especially with &lt;a href="http://cheatymonkey.com/index.php/2008/12/30/cheaty-little-holiday-stalking/" target="_blank"&gt;my new TURBO JAM DVD&lt;/a&gt;!)&lt;/p&gt;
&lt;p&gt;Bah bye, diet full of peanut butter on bagels! Hello BALANCE and VARIETY&amp;#8230;&lt;em&gt;and&lt;/em&gt; DELICIOUS.&lt;/p&gt;
&lt;p&gt;I&amp;#8217;ll keep you posted on how the recipes are, etc.. So, you in? Or, are you too chicken to give up the chicken for ONE WEEK? (Or, even just one DAY a week?)&lt;/p&gt;
