Oxtail is a common tapas dish in Spanish Tapas bars.&amp;nbsp; While many find this strange, in many countries around the world, it is not uncommon to eat the tail of the cow in various forms. While in Spain, most Oxtail stew uses sherry to cook, what makes ours more special is the use of Madeira wine to braise our Oxtail. Madeira wine originates from Portugal and it is a type of fortified wine that is famous in Portugal. This tapas is stewed for many hours to give our dish a distinctive taste. This is not a very Spanish dessert but a rather Italian dessert called Pannacotta.&amp;nbsp; And, it's a hit with ladies here because, it's sweet , it's smooth and it smells heavenly!&amp;nbsp; Why the heavenly smell? Because our Panna Cotta has real vanilla seeds mixed with the cream, if you look closely, you can see the little black dots of the vanilla pod. The slightly tangy berry sauce goes well with sweet cream giving it the right balance. &lt;br /&gt;

Panna Cotta, means cooked cream in italian,&amp;nbsp; originating from the Northern parts of Italy. However, this dessert is now eaten all over Italy and around the world.&amp;nbsp; As you can see, everyone serves this up with berry sauce. At Chef Diary, we make it a bit more special by adding some Soy milk to make the dish even healthier, so ladies you can eat without worrying about putting on weight! Tapas actually means appetizers either in the hot or cold form. Traditionally in Spain, dinner time is normally 9pm to 12pm and after work and before 9 is bar hopping time! The small dishes of food served is not supposed to fill you up but just to get you going before you hit the main meal.&amp;nbsp; In fact in Spain, whole rows of shops are just devoted to serving Tapas only and specializes in different flavors of the region in Spain. Normally, there are small tall tables that people put their choice of tapas on the table and stand and chat!&lt;br /&gt;

Today, i want to introduce one of our favorites in Chef Diary, which is the Hickory Smoked Duck Tapas with Apple Cider. For ducky lovers, this is delightful dish of thinly sliced duck. The infusion of hickory into the duck, is absolutely heavenly and with a bit of sour from the apple and tomatoes, this gives the dish a light and refreshing feel to it.&lt;br /&gt;

What's in a paella? Well rice of course! It's either Bomba rice or Calasparra rice.And the saffron added is to give the Paella it's trademark yellow and the flavor. The paella from the region of Valencia has a lot of vegetable, meat ( in this case, chicken ) seafood and spices for flavor. We decided we  needed a "facelift" on our blog and this ... ( drum roll ) is our new  look. We thought of a more simpler, cleaner and minimalist look for our  website. This goes in the same grain as our interior, simple and clean  lines. &lt;br /&gt;
