If you bake it along with the filling, the tart dough comes out translucent. This is an adaptation of the only biryani I ate growing up.  Whenever I make Hyderabadi Biryani, the aroma takes me back to my childhood.  For me, this is the easiest biryani to make as it&amp;#39;s very hands off.  The original recipe I started with is from my cousin, Rizu appa. It is well known in our family that my mom makes some of the best Hyderabadi desserts.  Her Badaam ki Jaali and Puran Puri are two of the most loved desserts she makes.  The desserts are definitely labour intensive.  I remember growing up helping her peeling the almonds for desserts and always being asked to go give the mixture on the stove a stir.&lt;br&gt;

One of my cooking goals for the past few years has been to learn how to make soft, delicious rotis.  My biggest challenge (besides being able to roll a round roti) has been to make rotis soft.  A lot of experimenting and research has led me to my secret for making soft rotis....Boiling hot water!  Knead your dough in a mixer using boiling hot water.  Once I started doing this, my rotis have been coming out so soft and absolutely delicious!&lt;/div&gt;

Today I&amp;#39;m sharing the classic Hyderabadi dish, Tamatay Ka Salaan, which is essentially a very simple tomato and beef/veal dish.  It&amp;#39;s a dump all the ingredients in the pot and cook recipe.  I actually don&amp;#39;t remember having this dish growing up.  The first time I heard of it was when my friend, Sara, told me how it was her favourite dish and she couldn&amp;#39;t believe I had never eaten it.  I asked my mom about this dish and she told me that my dad didn&amp;#39;t like it so she never made it.&lt;br&gt;
&lt;br&gt;
Few years later on after getting married, my husband and I had the Korma at Bamiyan Kebob and loved it.  When my parents were over we had ordered it and my mom said it was basically Tamatay Ka Salaan.  She made it for us and we&amp;#39;ve been hooked ever since!&lt;br&gt;
&lt;br&gt;
I used to make this dish in a pressure cooker, but I find if you cook it low and slow on the stove the flavours develop much better.  Since there are a lot of tomatoes, it takes some time to cook because even after the meat gets tender there is a lot of water left that you have to dry out.  We love to enjoy this with roti or naan, but there is a good amount of sauce so it would go well with rice as well.&lt;br&gt;

When my boys come home from school the first thing they do is wash their hands and then check what&amp;#39;s for dinner.  They always have to take a taste.  My eldest, Hasan, will then declare if it is Hasan Approved!  This Chicken 65 got a Hasan Approved +!  They absolutely love this dish.  If there are any leftovers, my kids like to take it for lunch in a sandwich.  This recipe is from my mom.  There is one major difference from the way she makes it from how I do. She deep fries the chicken.  I prefer to shallow fry in a skillet.  Of course, the deep fried one is more tasty and the chicken gets a little crispy from the cornstarch.  I shallow fry in an effort to try to make it a little more healthy.&lt;br&gt;

I don&amp;#39;t know where the name Chicken 65 originates from.  There are lots of theories from it being first made in 1965 to it having 65 chillies.  There are different ways of making it as well.  Some use soy sauce and some are very dry.  We&amp;#39;ve also tried Chicken 65 in restaurants but my mom&amp;#39;s version remains our favourite.&lt;br&gt;

Today I&amp;#39;m sharing a recipe for Karahi Chicken.  It is one of my husband&amp;#39;s favourite dishes.  There are a lot of tomatoes and they have to be cooked down and reduced so this dish takes some time to make. I prefer to make it with boneless chicken.  In the picture, I have double the recipe so it took quite a long time. In this recipe, I initially cook the chicken separately.  I find adding raw chicken to the tomatoes releases a lot of water.  Then reducing it results in the chicken becoming very dry.  I&amp;#39;ve tried this with bone-in chicken, but prefer it with boneless.&lt;br&gt;

This cholay recipe has been on repeat in our home.  Originally I was adding sour cream because I would make it too spicy and wanted to tone it down.  The picture above has sour cream added to it.  Once I forgot to add the sour cream and it was just as tasty.  So I&amp;#39;ve made the addition of sour cream an option.  I have tried making it by frying my own onions, but we prefer how it turns out by using the ready made fried onions.&lt;br&gt;

Today I&amp;#39;m sharing another soup recipe.  This has become a favourite in our home and I&amp;#39;ve probably made it 4 times in the last two weeks.  The last two times, I doubled the recipe!  I&amp;#39;ve called this Umami because I&amp;#39;ve used umami seasoning that I had picked up at Trader Joe&amp;#39;s when I was in America during the winter break.  I didn&amp;#39;t need to add any salt as the umami seasoning and vegetable broth had enough.  This soup will be great even without the umami seasoning.  I&amp;#39;ve made this a low fat recipe, by using sour cream instead of heavy or table cream.  When I first made the soup, there was a lot of clumping of the flour.  To solve this, I added one cup of broth at a time and whisked thoroughly.  This reduced the clumps of flour to a minimum.  The last two times I&amp;#39;ve made this soup, I was not able to find dried porcini mushrooms in the grocery store and it still turned out delicious.  I hope you enjoy this soup as much as we do!&lt;br&gt;

A couple of years ago, we were at an Italian restaurant in Markham, Kara Mia.  The soup of the day was Beef Barley Soup.  My husband ordered a bowl to share and really enjoyed it.  After I tried re-creating the soup at home and today I&amp;#39;m sharing what I came up with.  I started with a recipe from &lt;a href=&quot;https://www.skinnytaste.com/beef-barley-soup/&quot; target=&quot;_blank&quot;&gt;Skinnytaste&lt;/a&gt; and made some adjustments.  The soup we had at Kara Mia had some tomato in it so I added tomato paste.  I also added in some thyme and paprika.  This is an easy recipe to make and is very filling.  I use my pressure cooker to speed up the cooking time.  I&amp;#39;ve also used dried porcini mushrooms that add a lot of flavour.  I am not able to always find this at the grocery store, so if you don&amp;#39;t have if, feel free to proceed without it.&lt;/div&gt;

Growing up, whenever we had extra and overripe bananas my mom would make this cake for us.  It was a favourite!  I loved the combination of banana and the lemon icing.  For the best results, use three very ripe bananas.  I don&amp;#39;t know the original source for the recipe.  My mom would have these little pieces of paper that looked like tracing paper with recipes typed up on them.&lt;br&gt;

This dish tastes best with some hot roti or naan.  You have to make your own Achaar Masala which is very simple to do. It&amp;#39;s been a long time since I&amp;#39;ve posted and I have not been posting regularly for the past couple of years.  I&amp;#39;ve been contemplating what is it that I want for this blog.  There was a time when I was very active and working with a lot of brands.  But as life goes on, other things have taken precedence over blogging.  After thinking about the future of this blog, I&amp;#39;ve decided that I want it to be a place to record my mom&amp;#39;s Hyderabadi recipes that I grew up on and the dishes my kids are growing up with.  A place where we can reference back to and to record our culinary history.&lt;br&gt;

Lately I&amp;#39;ve been trying to add more Sweet Potatoes to our diet.  I&amp;#39;ve always had a tough time with making Sweet Potato Fries as I can never get them crisp.  Recently, I tried spiralizing them and baking and they turned out great!  The kids ate them up with no complaints.  They are simply seasoned with extra-virgin olive oil and salt.&lt;br&gt;

Originally I had a hand held spiralizer and it was difficult to use.  I bought the spiralizer attachment for my mixer and it has made spiralizing much easier.  After you have spiralized your sweet potato, you are left with a core.  I slice this up and mix in with my potatoes.  I also don&amp;#39;t peel my potato.&lt;br&gt;
