1. CSL: Why did you decide to try out for the show?

Chef Chris Crary: It’s one of those things where everyone has goals and things that they want to do. I just said in the next couple years I want to lose the weight, I want to see if I can go through this process if I can make it on to the show. I just want to push myself and push myself until I reach these goals and see if it could actually come to fruition. A lot of people say fame, money…nah. It is what it is.

2. CSL: What was the highlight of the show?

Crary: The highlight for me was getting to meet so many amazing chefs, seeing their styles, seeing the techniques that they have and ingredients that I haven’t used in that way. It’s like ‘wow why did I never think of that?’

3. CSL: What do you remember about cooking as a child?

Crary: When I first started cooking I was 10 or eleven and I thought I was cooking the most gourmet food ever - tater tots on top of ground beef with cheese over it. That stands out in my mind. Some of the better ones are: we had a cabin in Canada and we would go fishing over the summers and just catching fish and bringing it back for family. Being from Ohio a lot of my family had never had fresh fish.

4. CSL: What is your favourite moment in the kitchen?

Crary: That’s hard to narrow down to one. I think it’s one of those things where it happens almost every night - at the end of the night you get done with a busy service and you feel like you’re with your family and everyone’s gone through something very stressful and sometimes painful and now you’ve grown together. It’s a really great feeling.

5. CSL: Favourite ingredient?

Crary: Right now harissa or yuzu.

CITY STYLE AND LIVING MAGAZINE WINS 2 AWARDS INCLUDING THE BIGGEST AWARD OF THE EVENING "BEST OF SHOW" AT CTO AWARDS IN TORONTO

Just back from Toronto....and City Style and Living magazine has picked up two prestigious awards for "Best of Show" and "Best Article in a Consumer magazine" from the Caribbean Tourism Organization (CTO).

The annual Caribbean Tourism Organization Media Awards Luncheon, held on December 8, 2011 at the Novotel Toronto Centre gathered a crowd of nearly 100 media, industry members, national tourism organization representatives and Caribbean dignitaries attended the luncheon.

This event serves to recognize Canadian-based media that have captured the essence of the Caribbean in their story telling.

The prizes for Best Article in a Consumer Magazine, followed by Best in Show, were awarded to Kailash Maharaj and a team from City Style and Living magazine for their article ‘Paradise Found’, which ran in the Fall 2010 issue of City Style and Living.

Inspiration for this extensive article on Grenada came from a 2010 trip to the Island. Kailash and Shivana, co-editors in chief of City Style and Living magazine said,
“We are honoured and humbled by these two awards from the CTO. Grenada is an unparallel island not simply for the awe-inspiring views of Grand Anse, the lush tropical interior punctuated with cacao trees and nutmeg plantations, the convivial Gouyave fish fry and the world class splendour of Spice Island Beach Resort, but because Grenada evokes an unmistakable rush that you can only discover when you visit.”"

Victorian carolers just steps from the market. They were very talented.

The Gladstone hotel's (Queen Street) bar. This unique restored Victorian hotels features art throughout the space where each hotel room is designed by a different artist- very cool.

An amazing meal at George restaurant. It was a full house when CSL visited, waiters rushed up and down the restaurant, and the open kitchen was bustling with activity. Chef Lorenzo Loseto creates dazzling plates with ingenuity and well balanced flavours. Each dish is completely thought through and unique.

Breakfast delights at The Fairmont Royal York. Boy is this hotel busy at holiday time.

Dining at The library bar, this very talented musician lent a serene cool atmosphere with Spanish tinged guitar. Loved it!

After CSL picked up the two awards at the Caribbean Tourism Awards (see above for more), the team decided to spend a few days in the city. The holiday season was just beginning with a mild chill in the air. It was nice to see Toronto during this time, and the hospitality of our friends at: The Fairmont Royal York, Intercontinental Yorkville and Gladstone hotels was much appreciated. Can't wait to return.

The selection of sparkling wine and Champagne for the event (post consumption). Guests began the afternoon with a take on a Kir Royal (champagne and creme de cassis), with a Kir Regina: Saskatoon berry juice and extra dry fagetto (Michael Biggatini's own concoction). Biggatini decided on a tour around the globe, through bubbles.

Buttery, crisp and flaky croissants from Willowpark Gold and Country Club chefs

Willowpark Wines and Spirits coinnaiseur Michael Biggatini sabers a bottle of sparkling. Impressive and entertaining. "I used to have this rusty machete I used to sabre with, but it got lost. This is a beautiful fine sabre."

The main: Seared filet of salmon (topped with creme fraiche and beluga caviar) with a potato rosti, poached egg with blood orange hollandaise, and asparagus wrapped with prosciutto all topped with shaved white truffle.

Italy: Adami Prosecco. Made in the methode Charmat (fermentation in a stainless steel tank) from the Griollo grape, this is a soft sparkling with less acidity.

Spain: Pares Balta Cava. Cellaring the bubbles in caves, three grapes are found in this bold and more acidic sparkling.

France: Chateau de Targe. A sparkling from the Loire valley made with chenin blanc grapes. Crisp and sharp.

"I love this plaque, it reminds me of a Monet," Biggatini offers.

California: Laetitia, Rose. Made with Pinot Noir. "This is my favourite American Sparkling right now," Biggatini tells us. A rounder, fuller sparkling with yeasty complexity. A 'masculine' style.

France: Billecart Salmon Brut reserve NV Champagne.

On a windy lazy Sunday in Calgary, a group of guests joined Willowpark wines and spirits expert Michal Biggatini for a tour around the globe via bubbles. "This is such a nice way to start the day, don't you think?" he asked. Plenty of stories and laughter filled the store (Biggatini is a riot and his humour is easy), with a beautiful brunch provided by Chef David Leudage and Ben Massine of Willowpark Golf and Country club.

Yes, the temperature was way below zero but a boisterous crowd gathered at Milk Tiger Lounge for the Calgary Bartender's Associations' Preserving Behind the Bar event. Christina Mah bedecked in a polka dot apron stirred pureed pumpkin invoking comforting memories, throughout the restaurant shadow boxes with miniature mixing tools (spatulas, whisks, wooden spoons) held recipes printed on lined cue cards (too cute), and Philippe Grandbois let guests know about the colonial practise of making a shrub (an important ingredient in the evening's welcome cocktail - vinegar and sugar preserved fruit).

Want to try the evening's cocktails at home? We've collected the recipes from Calgary's foremost cocktail experts for you (recipes courtesy Calgary Bartender's Association):

EARL'S GARDEN

Glass: Rocks

Method: Build all ingredients excluding ginger beer, in a mixing glass. Shake vigorously and fine strain into a rocks glass over fresh ice and top with ginger beer.

Garnish: Grapefruit slice

Ingredients:
1 1/2 Maker's Mark bourbon
3/4 ms grapefruit shrub
4 dashes earl grey bitters
1/2 lemon pressed
top ginger beer

OLD SCHOOL JAM

Glass: Rocks

Method: Muddle all ingredients in the base of a rocks glass, swizzle, top with ice and soda

Garnish: Lemon wedge if preferred

Ingredients:
1 1/2 oz Basil Hayden's
4 wedges of lemon
1 1/2 bar spoon cranberry-elderflower jam
3 dashes Peychaud bitters
top soda

APPLE BUTTER MANHATTAN

Glass: Martini

Method: Build in a mixing glass, add ice, stir and fine strain into chilled martini glass

Garnish: Cherry brandies, flaming orange peel, or an apple slice

Ingredients:
1 1/2 ms Knob Creek Bourbon
1/2 ms Sweet Vermouth
3 dashes Angostura bitters
1 bar spoon apple butter

Theatre Junction has also just added some exciting new events to the show- on Wednesday the 9th and Friday the 11th they will have New York style entertainment and specials before and after the show! In conjunction with UBU lounge, they will have a live jazz trio, live DJs playing sophisticated lounge music, live artists and New York styled cocktail specials!

The 18th Annual Willow Park Wine and Spirits Charity Wine Auction was themed Hollywood Glam. Audrey Hepburn, Cleopatra, Charlie Chaplin and Wonder Woman all made appearances at the event, with proceeds benefiting: Habitat for Humanity, Kids Cancer Care, Prostate Cancer Centre, Southern Alberta Institute of Urology, The Calgary Homeless Foundation, The Mustard Seed, The Poppy Fund & Veterans Food Bank, and the University of Calgary.

With food from several Calgary's restaurants and caterers: Rush, Chefs Table, Belgo, Bonterra Trattoria, Calgary Stampede, Nicole Gourmet, La Chaumiere, Kinjo sushi, Vintage Chophouse, Leonidas, Great Events, Patisserie du Soleil (to name a few) and spirits, libations and wine from a plethora of houses from Big Rock to Antinori, Clos du val to Chateau vignot, the event was a success, bustling till the wee hours of the morning. Congrats to all of the volunteers, sponsors, participants and attendees. Here's to next year!

Principals from four wineries in the Napa Valley welcomed an intimate crowd at Rush in Calgary at the Napa Valley Vintners Dinner. Executive Chef at Rush Dave Bohati created a five course (not pictured braised osso bucco) menu to pair with wines from Miner Valley Winery, Hall, Cain Vineyard and Winery, and Larking Wines.

It was a lovely evening, punctuated with sounds of clinking glasses and spirited conversation.

Willow Park Wines and Spirits' Whisky in the Warehouse in support of the Vintage Fund kicked off with a white hat ceremony for the principals of some of whisky's most distinguished names including Ronnie Cox, director of Glenrothes, Alex Bruce of Adelphi Distillery, and Joint Managing Director of Gordon & MacPhail, Michael Urquhart. Many had travelled from around the globe to be a part of the evening's festivities. After pledging an oath led by a representative of Tourism Calgary, the group were given white hats.

Meanwhile guests made their way through three levels of the store for a one-of-a-kind whisky tasting. Lads and lasses had a wee nip o' scotch at the stations of more than 40 purveyors enjoying tastings from the brands. Chefs served up small bites, tartan adorned tables, men wore kilts and the sounds of bagpipes emanated from the stage where the Calgary police service pipe band and dancers.

Brand Ambassador for Mount Gay, Chesterfield Browne spoke to a crowd including many distinguished Calgary mixologists and bartenders from the Calgary Bartender Association about Mount Gay Rum, the island of Barbados and island living.

Working for 18 years with Mount Gay, the former bartender regaled the crowd with stories of Barbados' famed rum shops, the new shape of Mount Gay's bottles, a history of the brand. Calling Mount Gay "the Rolls Royce of Rum and the oldest rum in the world, the rum that invented rum," Browne led guests through a tasting of five of the brands offerings: Mount Gay Eclipse Rum; Mount Gay Eclipse Black; Mount Gay Extra Old Rum; and Mount Gay Rum 1703. CSL's favourite? Mount Gay 1703.

It was a treat to have winemaker (and part of the Fonseca/ Fladgate family), lead a port seminar including: Taylor Fladgate vintage 1985 Porto, Fonseca Vintage 2007 Porto, Croft Vintage 2007 Porto, Taylor Fladgate Vintage 2009 Porto, Fonseca Vintage 2009 Porto, Croft Vintage 2009 Porto.

From the rust/ inky 1985 vintage Taylor Fladgate with a long finish, and delicate yet full bodied and refined structure to the tannic and eucalyptus notes of the 2009 croft vintage port, each of the six ports at the tasting were unique with something for every palate.

The Croft Pink, a youthful pink port (new to the market) makes an excellent variation on a kir royale with sparkling wine or champagne.

As one of the largest Port houses, Fonseca Guimaraens (Fonseca) maintains an estate in Quinta do Panascal Portugal and remains a leader in the market.

Perfect to pair with dessert, or as an after dinner appertif, Port is the certainly the new black. Saude!

From the Adelphi Blended Scotch Whisky to the Adelphi Stratmill and the Adelphi Fascadale, Alex Bruce of Adelphi Distillery guided guests at Willow Park Wine and Spirits through a wonderful whisky tasting. City Style and Living’s favourite? The Bunnahabhain 31 year old with notes of orange and vanilla.

We were fascinated by Bruce’s beading method for estimating alcohol strength, the inside scoop on the future of the distillery (a boutique distillery is in the works) and anecdotes spanning from 1850 to present day (imagine a whisky tsunami).
