I will keep this one short and sweet so you can enjoy this delicious recipe. But a huge shootout to the Awesome Ashley Tudor, Author of the awesome book Sweet Potato Power for this recipe. I wish I could be half as creative with sweet potatoes as she is with the recipes in her book but she definitely peaked my interest. I am currently on the hunt for some purple sweet potatoes just because I want to eat purple mashed potatoes haha. Huge dork right here. But for real, sometimes us Paleo peeps get a little bored with our preparations or meals with our starches and Ashley does an amazing job of spicing that back up. Plus the rest of the book that teaches you all about how amazing sweet potatoes are for you. I read it, but I am honestly just too preoccupied drooling over my photo to write anything else besides its just AWESOME. That being said, head over and pick your copy up, and please invite me over for dinner. You can also check out her site HERE.

And just for a few life updates for all you awesome people that enjoy reading my blog. Things are going great, I am just super busy so I apologize for the lack of posts. Work has been quite hectic and my new endeavor with the camera outside of food has been taking off.

Ingredients:

1 Lb Brussel sprouts, cleaned and sliced, or use a Mandoline

1-2 Lemons, depends on your taste buds, I used 2 small ones

1 Red Onion, diced

~2 Tbsp of Fresh thyme, diced

Salt and Pepper to taste

Bacon grease or coconut oil for your pan

Process:

Preheat a large saute pan over medium heat and start by sautéing your red onions in the cooking oil of your choice. I prefer bacon fat

While they are sautéing, zest both of your lemons, dice the lemon zest and set aside

Once your onions are translucent, add all of your sliced brussel sprouts to the pan as well as juice of one or two of your lemons and mix well continuing to stir while your brussel sprouts cook

Saute for about 5-10 minutes depending on how you like your texture in your sprouts, I like eating mine raw so I keep them a little on the under cooked side

Once they are too your liking, stir in your thyme and salt and pepper and mix well

Remove from the pan and plate, sprinkle with your lemon zest and enjoy

I Have also made this recipe with bacon, apples, and rosemary so feel free to experiment, they are all delicious

So I can’t take much credit for this recipe except for the fruit that’s in it and a few added spices. The Chocolate Avocado Pudding was all the mastermind of my Best Friend Jessi over at PaleoFriggenDelish. Do me a favor and head over and like her page. She has some amazing creations on her website you can find HERE. Oh and by amazing I mean it, this girl got me to eat cabbage that I had previously thought I disliked and now I crave this recipe she made. Go check out here Delish Asian Slaw and when you are done making, please deliver or send me some cause that stuff is like Paleo Crack for me. K end of that story haha. I am going to keep this short cause I am tired, have studying to do, sleep to be had and just am not feeling rants today.

Just one quick reminder cause I remembered before I hit post, I was at the amazing SoCal Regionals for Crossfit this past weekend and it was absolutely amazing. I took some awesome photos too so you can check them out HERE and make sure you let me know what you think of them. But that’s not why I started this paragraph either, I just wanted to remind you that you can get your C4 Tshirts, tanks, and hoodies by clicking HERE or clicking on the picture on the right side of my page over there and down a bit —————————-> I saw some walking around Regionals and it made my day. Thank you all for everything.

Royal Tailgater Wood Pellet Grill

I can honestly say that the Royall Line of Wood Pellet Grills has changed my life. I have always loved BBQ but was always intimidated by the thought of building/buying a smoker and having the time or know how to make it work and get the food to come out right. Between wood to use, placement, smoke, temperature etc, I was scared to even try. Well thank god I got introduced to this thing. I can not tell you how amazing it is to know you just plug it in, set the temp and leave it, it regulates itself and you can let it run all night, all day, or sit out and just smell the deliciousness smoking in front of you. All Royall Grills are handmade in the USA and these things are built to last, I have never been happier with such a versatile tool. There really are no limits as to what you can cook on here.

Le Creuset Serving Platter, Pitcher, BBQ Pot, and Basting Brush (Your color choice):

I almost feel like a broken record every time I talk about any product from Le Creuset because the same thing always comes out of my mouth. OMG what am amazing product, OMG I can’t believe I waited this long to use this, OMG how did I ever survive without these and it is all because their products are like no other. The quality and craftsmanship is above reproach and they never fail to amaze me. This set is sure gonna help out with my food photos so you can use it to impress your guests while serving your newly smoked recipes on the plates. Coaction PR provided me with these Le Creuset products to review.

Alright everyone so no hating me for luring you in and not having earth shattering life changing news. But I have to tell you, what I do have comes pretty close. Ok so I will keep this short and sweet to get my point across. So here goes:

Announcement #1:

Starting on Tuesday May 1st, 2o12 I am starting my Memorial Day Giveaway. I have been blogging for just over a year and have never seen a prize package this big with such simple steps. I honestly wish I could win this prize instead of having to shell out multiple mortgage payments just to afford it. That’s the only hint your getting but it includes the likes of the amazing US Wellness Meats, Royall Grills, and Le Creuset. Stay Tuned Tuesday morning and be ready to get your entry on. And there are additional entries everyday so you can end up with a total of 35 entries if my math is correct, WOWZERS.

Announcement #2:

Two of my dearest friends, Bill and Hayley from The Food Lover’s Primal-Palate have launched a plethora of new features on their website for FREE. These two are going to be the first official Presidential couple of the Paleo movement. They are the most unselfish, kind, and loving people I have ever met. I am blessed to have them as friends and supporters. They make me want to strive to be a better person everyday. Enough about my groveling, they have released a new item on their website called My Kitchen. You can add recipes, create shopping lists, add your own notes, etc. You can watch the video below:

With that being said, I can honestly tell you that hosting a website, server maintenance, server space, optimization, design, etc is not cheap. I have gone quite a bit in the hole and it shivers in comparison to what Bill and Hayley have so I don’t even want to imagine. So instead we are just going to thank them for how awesome they are by becoming supporting members. And I am already full of Level 3 awesomeness waiting for my personalized book. So please head over and show your support HERE, HERE, or HERE.

Announcement #3:

Nom Nom Paleo is out to change the world, one iPad recipe at a time. If you have not heard of the new Nom Nom Paleo App for the iPad 2 and 3 then I envy you for being able to avoid so much media hoopla. Ok maybe there wasn’t that much, but there should be because this app is simply amazing. I have had the pleasure of being able to use it for the past 6 weeks and I have been nothing but impressed. I first got my eyes on it at PaleoFX in March and was a giddy school kid waiting to see it. It did nothing but further impress me. Michelle and Henry are two of the hardest working people I have ever met in my life and I am so humbled to be in their company when I can. These two juggle full time jobs, kids, and blogging EVERYDAY on top of taking some of the most amazing photos I have ever seen. And just for the record, if you are reading this and just don’t like to eat, buy this app just for the food porn, it will make you want to . Well without further adieu, you can read about the app HERE and watch the video below:

3-4 Tbsp Grassfed Butter or Coconut Oil

Cinnamon, Nutmeg, and Salt to taste

Process:

Preheat your oven to 400 Degrees F

Cut your delicata squash in half length wise and scrape out the seeds

DO NOT throw out the seeds, instead go make my recipe HERE

Once they are scraped, cut your squash however you see fit. I cut mine in little triangles so I can have little bowls in them to hold my yummy grassfed butter

Arrange your squash on a cookie sheet skin side down and cut chunks of your grassfed butter and place on each piece of squash, or use your coconut oil if you choose

Sprinkle all the squash with the amount of the above seasonings that you like. I personally go heavy with the cinnamon, and just a pinch of nutmeg and salt

Place in your preheated oven and roast for ~30 minutes. I like the bottoms of mine to slightly turn black so I take them out once that happens

Thats all, now go enjoy and get creative with your applications. These go amazing with dark chocolate, maybe come Coconut Milk ice cream.

Come by and tell me what you ate them with

****DISCLAIMER: I posted a shirtless picture of myself and used a curse word, if you don’t like it I am sorry. I am not posting it for vanity, it is to show people that everyone can use a reset and benefit from it. Even though I think I am perfect paleo all the time, we all need to keep learning****

I couldn’t be happier with the results I got doing the 21 Day Sugar Detox. I am writing this post because today was day 21 but I intend on going on for at least another month or so. I am currently not training due to injury so all my progress was made just by food alone. I have to be honest, before I started I didn’t think I would benefit at all. I eat Paleo 100% of the time and can honestly say in over a year I have not had any grains, legumes, or dairy intentionally and I never plan to so didn’t think I had anything to learn. Well I am glad I did it and my stubbornness was proved wrong. Just don’t tell the amazing Diane from Balanced Bites whose program this is, I don’t like having my stubbornness proved wrong, haha. A few of the major things I learned that everyone should know:

EVERYONE can benefit from doing this 21 Day Sugar Detox. I mean EVERYONE. Paleo or not, Primal or not, Standard american diet or not, EVERYONE can benefit from this.

I don’t care how much you think you know, how much control you think you have over your body, how perfect you already think your diet is, that you are most likely wrong and you have nothing to lose by trying this for 21 days. I was the same way and sure enough I was proved wrong.

You DON’T need to be a workout junkie, competitive athlete, marathon runner etc to get lean and stay that way. About the only traditional nutrition advise I still agree with is that your abs are made in your kitchen, and that DOESN’T mean by limiting your calories. It means by eating what you should; a diet based on sustainable meat and in season vegetables and fruit. Rocket science time – Eat a Paleo/primal diet.

This has to be the easiest program I have ever followed. I mean easiest. Back in the day I used to carb cycle while doing triathlons. I did that stupid P90X and Insanity stuff with the stupid diets that followed it. I did the 6-8 meals a day thinking it would make me skinny. I did the run 8 miles a day to try and wilt away my body to look skinny. GUESS WHAT?

NONE of those things worked. You know what did work???? Sleeping 8 hours a night, not stressing, eating a crap ton of bacon, eating when I was hungry and not when I wasn’t. So pretty much what I am saying, you can be completely lazy and eat tons of delicious food and not worry about it. There should be a newsflash for this one: 21 Day Program gets you happy, healthy, and sexy and all you have to do is eat and sleep.

There are a ton of resources for 21 Day Sugar Detox friendly recipes if you aren’t feeling creative, don’t want to use my website, or just want to mix it up. Check them out Here, Here and Here.

Since today is Earth Day, you can do it a great credit by eating Paleo/Primal. The reasons for this is long but I don’t have time nor drive to write about it. I know someone who does though, His name is Google and he has never steered me wrong.

If you are still reading I feel special and loved, but I will make this easy. If you want to look, feel, and perform better. Click on that lovely image below and join me for the next 21 days. I kinda need some company anyways, keep me accountable

Closing Note:

I love being a part of this community, I know my last post was a pretty angry rant, I did not intend that to be negative at all, someone just crossed a line really close to my heart and with a dear friend. Well someone else redeemed that negativity for me on Friday. You see my day was complete SHIT, had my identity stolen again, etc etc and I go to my normal coffee shop to have an afternoon americano to calm me down after my shittastic day and was completely blown away by someones sweetness. I was standing there in my workout attire rocking my Nom Nom Paleo socks and the sweetest woman named Valerie came and introduced herself to me. She recognized me from my website and completely made my day. She has lost over 100 lbs already and completely changed her life and she reminded me why I do what I do everyday. We spent a good 20 minutes talking and I could have kept going because she is just a down to earth, sweet, amazing woman. She even scolded me for not sleeping enough and said you all wouldn’t mind if I took a break every now and then, haha. Well we shall see, but I just wanted to say thank you Valerie for bringing some sunshine back into my cloudy day on Friday.

I apologize in advance if you don’t like hostility because this post might have some, I am going to do a quick rant on something that has been pissing me the F off in the Paleo/Primal community lately. But before then let me get out a few important reminders and updates first please, well actually only two of them but only after you see the photo of this recipe:

1. I am attending the Ancestral Health Symposium in August in Boston and as most of you may know, I don’t make the big bucks being an active duty Marine and running a website out of my personal funds for no profit. I am trying to offset the costs of the plane tickets, rental cars, lodging food etc and after PaleoFX put quite a large dent in my pocket I need some help and decided to ask. If you could please donate anything to help whether it be $1 or $100 (I’d hug you and need your address to send you something, especially if I figure out how to mail hugs, haha) it would be greatly appreciated. If you can’t help, I totally understand and will never change or stop doing what I am so I hope you still stick around. If you can please click on the donate button below or use the one on the right of my website:

2. Today makes day 18 of my 21(30 for me) Day Sugar Detox and I can honestly tell you, there is no better time for me to be doing this. Work has been stressful, the website stressful, not working out due to energy etc and being in complete control of my body and its cravings has been wonderful. I have managed to stay super lean throughout the stress, get quality sleep with as little as it may be and still be full of energy. This 30 Day Detox may turn into a permanent thing with just maybe a once a month piece of fruit or reincorporating some safe starches when I start training again. But besides those this is sticking. I highly recommend EVERYONE get this program and keep it in their tool box and do it, you will love yourself for it. Interested? Click on the picture:

**RANT**

I am going to try my best to keep this short and will probably not flow well but I am really F@#KING pissed off. If I read about, hear about, or see another friggen internet bully prancing around the inter webs leaving discouraging comments I am gonna lose my shit. I know us bloggers are in the “public” eye and put ourselves out there for whatever criticisms people may feel the need to express, but Jesus if you have nothing positive to say just keep your damn fingers off the keyboard. No one is forcing you to read our pages, no one is holding your feet to the fire forcing you to eat paleo, or eat primal, or cut out dairy, or be a vegetarian or anything for that matter. So if you don’t friggen like it, just leave. I mean, I personally have no problems with the haters on my page, cause lets be honest, they are hiding their own insecurities by trying to exploit mine or others for that matters. And trust me, nothing they say is going to affect me, because I can honestly say that while they have slept in their beds comfortably at night, I have been to places they have had nightmares about. I don’t need to say anything about any of that though, I know and I know being the bigger person is right, but I am really sick of seeing attacks on all the wonderful people I have in my life.

It started with my amazing friend Nom Nom Paleo and some ass clown commenting on Paleo/Primal women looking not as lean as the men etc blah blah blah. Luckily I have some amazing friends and Laura from Ancestralize Me, rebutted that shit with style, you can read it HERE. I felt better after Laura whooped that internet ass and then the haters struck again with my awesome friends Stacy and Matt from Paleo Parents. I don’t care what your opinion is, when a family has lost over a combined 200 lbs of weight and regained their lives, if you have nothing nice to say, then shove your F@#KING foot in your mouth. Once again, I did not have to say a thing, Stacy and Matt wrote an amazing article on being the Fattest People in Paleo and that took care of that. And lastly, the one that struck my nerve was when some self absorbed prick who lives within 5 minutes of me attacked my Best Friend Jessi on her new blog I helped her start, PaleoFriggenDelish. You want to see his comments, read the Plantain and Apple Crisp post HERE. Jessi called me and asked how to deal with a hater, I talked her through it the best I could and saved my anger until we were off the phone. Not only did this prick quote a bunch of bullshit articles that were unapplicable to anything Jessi was talking about, he made a personal stab at her about coffee. You see Jessi is my amazing Barista at Ryan Bros Coffee in Temecula, CA, and this guy is a customer. He crossed a line that wasn’t even approached with her clearly separating her work from her blog and it needs to be addressed. She has done an amazing job of being professional there but he has been making it a point to have conversations with her and interact with her, knowing she has not the most respect for him. Well, I would never do anything to stoop to the level of someone like this, but you can bet your ass when I am sitting in that coffee shop and he goes to have a conversation with my best friend, who has made such an amazing change in her life to benefit herself, and push some negativity down her throat, he will have to have a nice conversation with me. I can’t wait for him to preach Paleo to me and how it doesn’t work. Can’t wait for him to try and call me fat or unhealthy. I look forward to the stumped look on his face when his wikipedia education diminishes as his phone dies and he is left looking like an uneducated asshole for even trying to bump someone off their path of self improvement. So I suppose I should close this rant with a principle we were all taught as kids: If you don’t have anything nice to say, Keep your mouth SHUT!!!!!!!

Thank you to all my fans and readers who are always so supportive in this community, we will let the haters work themselves out and keep loving each other, hell we will even love the haters. I know I was angry up there, but I will kill them with kindness, KNOWLEDGE IS POWER.

I am going to save you all continuous blabbing with this one, just have to hit a few wickets and maybe one short rant haha. Hmmm which to talk about first, well since most of you won’t read this whole we will start with the wickets. As you all know I don’t charge anything for anything on my website and I honest to god dedicate every spare minute I have to it. I am continually trying to make it better for all of you and would appreciate some help. I am going to the Ancestral Health Symposium in August and I need help covering the costs because I don’t know if you knew this, but the Marine Corps doesn’t make me rich haha. Two ways you can help, you could donate anything you can to help by clicking HERE. I mean it when I say even $1 makes a difference and I would be forever grateful. The second way, buy one of my Thsirts, Tank tops, or Hoodies. Not only do you get to help me but you get to look freaking cool in the process, WIN WIN. If you don’t believe me, look at the cool people wearing them: PaleOMG, The Food Lovers Primal-Palate, and Mee Eat Paleo rocking it in a video. And to be honest, I think I was going to rant about something important, but since I already forget I guess it wasn’t. I hope you love this as much as I did. I have had a few taste testers offer to pay me to make these for them for the week so I think they are good haha. Make sure to let me know.

Today is day 10 of 30 Day Sugar Detox I am on, I FEEL AMAZING. Shocker right, I wrote the same thing I did last post on Sunday. See a trend here, oh wait there it is………..Controlling your body and cravings is so easy. Just eat real whole foods and keep that processed junk away from you. It is so empowering being able to go to Easter Dinners, and BDay parties, and social gatherings and see all that crap food and want absolutely nothing to do with it. Put me there 13 months ago and I would have been the guy quietly eating an entire pizza in the corner, or finish a quart of ice cream topped with 5 cookies drizzled with fake hot fudge. Life is a journey and a constantly evolving classroom. I am just glad I started paying attention when I did, I will be around and healthy to hopefully influence many generations to come to make better choices. Plus, my new tshirts are pretty bad @$$ and I want to be able to look sexy in them. If you want in go check them out HERE. I have already seen some awesome peeps rocking out in them to include PaleOMG and The Food Lovers Primal-Palate. Oh and if you want in on this Sugar Detox with me, click on the picture:

Ok ok ok enough about that. Now here is what you really came for. A delicious recipe on how to eat the Easter Bunny, sorry kids he has lots of successors. It’s only fair to share the job haha. Hey and on the bright side, I waited until after easter so he got to deliver all his little baskets and hide tons of eggs. That in my eyes tells me he died right after doing something he loved so I can live with that. Plus he tasted amazing. Oh yea but on a serious note, I have never had rabbit before and thanks to my awesome friends at US Wellness Meats, they afforded me the opportunity (I didn’t think it was before I ate it) to try it. And I am so glad that they did. This is a delicious piece of meat, no game flavor and it definitely doesn’t taste like chicken. It tastes better. Head on over and order some, you won’t regret it. Plus I added bacon so you know its good.

Fresh Sage

Fresh Thyme

Ingredients (Dressing):

1/2 Cup Strawberries

Juice of 1/2 Lemon

2 Tbsp Melted and strained Pastured Bacon Fat

1 Tsp Dijon Mustard

Splash of Apple Cider Vinegar

Salt and Pepper to taste

Process:

Preheat your oven to 350 Degrees Farenheit

Cut your bacon in half or to the length needed to wrap a loin and lay them out slightly overlapping on your cutting board

Place a rabbit loin in each one and generously season the rabbit and bacon with salt, pepper, thyme, and sage to your taste liking

Once seasoned, roll them up tightly. I set mine up so the bacon met on the bottom where I seared them first to help them stay wrapped

Heat your saute pan on the stove over medium high heat, you are going to sear the bacon to finish cooking it most of the way

Once heated, add some bacon fat to the pan or duck fat or any fat and place your bacon wrapped rabbit with the bacon joint down

You are going to sear the rabbit on all sides cooking the bacon so prob 2-3 mins total rotating as it sears

Once all is seared place your entire pan in the oven and cook for 5-6 minutes turning occasionally

Remove from the oven and let rest for 10 minutes. The loin should be medium-rare or pinkish when done

While your rabbit is resting after its exhausting weekend of delivering easter baskets, take all the ingredients for your dressing and throw them in your food processor. Turn it on and let the magic happen until well blended

If you want more bacon flavor, add more bacon fat, problem solved

When done, slice your rabbit loin and plate on a bed of mixed greens and drizzle with your dressing

Garnish with a lemon if you would like the citrus and enjoy

And don’t worry Peter Cottontail has plenty of children to carry on his legacy of the easter bunny next year. So don’t fret about eating him, easter will still go on.
