Luego pensé que debía acompañarlas de una salsa diferente al alioli y surgió la idea de la salsa española. Verduras bien pochadas y vino tinto, una salsa con personalidad. Pienso en las guarradas de salsas con que se acompañan hoy en día muchos platos, que comparadas con la española, no hay color. En fin, lo dicho, patatas de toda la vida, verduras y vino tinto y por supuesto, un buen trozo de pan. Rico.

Estos deliciosos pastelitos son muy sensibles al calor, así que la segunda vez los horneé a 170 grados y sólo durante 20 minutos. Los financiers no suelen ir rellenos pero les he puesto un arándano a cada uno y tengo que decir que estaban francamente buenos. La masa tiene como base almendra o avellana, en este caso me he decidido por las avellanas, azúcar, un poco de harina y claras de huevo, siendo el resultado final un bizcocho relleno fino y jugoso.
