Updates, again....

2012-07-16T13:54:00.000+08:00

I was embarrassed to see the date of my last post. It's been nearly a year since I've updated this poor blog.

I'm still making chocolates if I get requests from friends, relatives, my kids' friends or just for 'suka-suka'.

For those are have budget constraints, marshmallows can make stunning and tasty doorgifts too.

'Halal' certificate for marshmallow

2012-07-16T09:42:00.000+08:00

Okay, this certificate has expired. I'd checked my supplier's homepage and thankfully there's a new certificate, expired in 2013. For those who are uncertain of the 'halal'ness of these marshmallows, I'll be glad to give you the link to my supplier's homepage. :)

Updates

There are a few chocolate moulds that I have just purchased but have not yet tried out. Will update soon.

"Halal" Marshmallows

2011-03-14T12:03:00.011+08:00

These marshmallows are 'halal'. Below are just some of the shapes available. There are 23 shapes for sale, but I've yet to try out each one. :-)

The price?

100g = RM5.00. Depending on the shape, there will be 30-35 pieces per 100g. Of course, the smaller the shape, the more lah kan? :-)

Flower marshmallow
Oval marshmallow (coated with sugar)
Twist marshmallow
Burger marshmallow
Gummy combo marshmallow

I can also dip the top of each marshmallow and decorate it with chocolate rice, coloured chocolate rice, hundreds and thousands, little sugared stars, etc. The possibilities are endless.

Some examples of my choc-dipped marshmallows:-

The marshmallows can also be packed on a mix and match basis.

Interested? Just email me. :)

Info

2011-02-14T16:37:00.002+08:00

I only knew this last week, sigh....

The 6 techniques of making chocolate:-

1) Bar = the chocolate will be in a bar form, similar to the ones sold at shops.
2) Praline = chocolates with a nutty filling eg: almonds, hazels, walnuts, etc.
3) Truffle = chocolates with soft filling eg: mint, strawberry, etc.
4) Enrobed = anything eg: biscuits, marshmallows, etc that will be dipped in chocolate.
5) Splitter = chocolates mixed with something else eg: nuts, that will be dropped onto a tray.
6) Hollow figures = chocolates made using molds.

I am ashamed to know the correct terms only last week. I first learnt how to make chocolates on 16/4/2010 and only now I know the above info from an e-book. How embarrassing. All my chocolate terms are mixed up. :-(

Looks like I have to redefine the terms in my blog.....

Helpful Hints: Tips for keeping your chocolate at its best!

2010-06-12T11:40:00.001+08:00

1) Keep the chocolate in a cool, dry place. The ideal storage location is around 65 degrees Fahrenheit and 50% humidity. A range of approximately 10% in either direction will not have any adverse effect. The normal air conditioned room provides adequate protection.

2) The chocolates may be frozen for up to six months. If frozen, the chocolates should be wrapped in double air-tight sealed plastic freezer bags (or equivalent materials). The chocolates should remain in the bags when being thawed until they return to room temperature. This will keep moisture from condensing on the chocolate.

3) Do not store near heat or in direct sunlight. The light will fade the color and the elevated temperature will cause tackiness and melting.

4) Chocolate readily absorbs other flavors and odors. Do not store near chemicals, cleaning solvents, perfumes, air freshener, etc.

5) Chocolate and moisture do not mix. High humidity or moisture may cause a white haze or spots on the surface of the chocolate. (This is known as "moisture bloom".) The chocolate will not look as appetizing, but it will generally be just as tasty.

6) In general, solid chocolate which is not mixed with other products will have a shelf life of at least six to twelve months or longer, depending on the environmental storage conditions. When mixed with other products (nuts, cream, etc.) the shelf life will be reduced.
