I didn’t go by internal temperature; smoked until fork tender, or when you can pull the meat away easily.

Just curious because your recipe calls for far less cure #1 than most do. Most call for 3 tablespoons up to 1/4 cup in some recipes. Why does yours use so little?

No brine or water. John is suggesting soaking it in water to remove some of the salty flavour. After the cure in the fridge is done you can cut a small piece and fry it to test the flavour before smoking.

You’re suppose to put it in water? Is it going in water or a brine solution?

I found that it sometimes has issues connecting to multiple accounts at the same time, so there needs to be a delay. I use 90 seconds since each email usually takes 50-80 seconds to complete depending on number of emails that day (I run it daily).
This is what I use:

start "archiving account1" "C:\Program Files (x86)\MailStore\MailStore Home\MailStoreHome.exe" /c archive --id="1"
TIMEOUT 90
start "archiving account2" "C:\Program Files (x86)\MailStore\MailStore Home\MailStoreHome.exe" /c archive --id="2"
TIMEOUT 90
start "archiving account3" "C:\Program Files (x86)\MailStore\MailStore Home\MailStoreHome.exe" /c archive --id="3"
TIMEOUT 90
