Hello! A quick question about your delicious sounding horchata recipe...Why not use the water that we used to soak the nuts all night? Also, I have never heard of almond horchata b4 reading your blog (which I like!). I am used to the one made with rice...do you know anything about that one? Have a great night!

i think it would be gross without sugar...it's just purple corn so it would be sort of bitter. can you do agave?
i don't know the price per bottle. in peru you can buy dry packets like kool aid or buy on the street by the cup (which is much better, as it is fresh)

i think you are right regarding the flax seed making it thick. it is definitely a thickener. but the aloe makes it slimy and viscous. cola de caballo is a called horsetail in english. what type of soya meat? tofu and tempeh are easy to make at home. seitan (wheat gluten) is also relatively easy. but the processed soy fake meats i think are more commerically processed. i really like joanna's chickn nuggets recipe if you need a starting point: http://www.joannavaught.com/2009/08/27/nuggets/
