I didn’t want to buy cocktail onions for one recipe so I skipped them…but next time, I will probably do a quick pickle on some red onion.  Note that caramelzied onions take an hour…so next time, I will make those in advance.  By the time I got to that part of the recipe, I didn’t have an hour to stand around waiting for onions!   I don’t love frying fish on the stovetop, so thinking I might use the cornmeal coating with an olive oil spray and then bake in a convection oven.]]></description>
