I prepared to make fruit enzyme by using various type of fruits that include apple (green and red), orange, grapes, pears, lemons and so on. the ratio was one kg of honey, 3kg of mixed fruit and 10L of distilled water.
I used a plastic container which is not exactly air-tight.
I shaked the container everyday for the first month. However, after the first month i noticed a white layer started to form on top. My question and concern are:
1. can the fruit enzyme still be good for drinking when it matures after 6 months?
2. will it be alaright to use a plastic container that is not exactly air tight?
3. Which is beter, a plastic container or a glass one?
Regards

Herlo,

thanks for the nice description of the whole process. Is't compulsory to get the photostated documents to be certified?

Hi,

I have made my own enzyme (dragonfruit/lemon/ apple) but on the 3rd day, there is some mold on the top of the fruit. Should I remove the mold and then put the candy sugar all over again or just on the affected area?

It is necessary to rock it daily?

People, I do not know who tell you that enzymes is good for drinking. It is pure alcohol after the fermentation process because sugar will be coverted to alcohol.

I recommend that you don't drink the enzymes. Perhaps you should consider making apple cider vinegar instead.

Use the "enzymes" for washing your floor is ok...

i have made some fruit enzyme with ratio 1: 3: 10. After one month of fermentation, the mould and the slices of fruits in some bottles will sink down at the bottom of the bottles while some still float on the top of the enzyme. Can someone help to explain? Thank Q.
