My mom did not put in Mozzarella, but would add raisins and pine nuts to the meat, they were delicious. My first attempt at making them, everything stuck to my hands and they were so large that I made half as many as expected. Then the oil was too hot and the first one turned black almost instantly. I am building up my confidence to try again soon.

Katia, I am pleased to read your dreams have come true!
As a young girl I fell in love with an Italian from Puglia, where I lived for 22 years. In 1993 I returned to London with my 2 children to start a new life (my husband passed away), but Italy remained in my heart.
Here I am again in Puglia, running a luxury 'Boutique Hotel' with my American/Italian husband. I love cooking authentic traditional food, and we grow almost all our own organic produce and Olive Oil!
Ti auguro successo e felicita',

@Joe Mortillaro:

thanks for writing. We will conduct some research into that and post something if we find this information. Perhaps, Katia knows the recipe too.

Does anyone know of a recipe for "casadeddi" (I'm not sure of the spelling) ? My mother used to make these when she was alive. It is a dough half moonshaped delicasy stuffed with recotta cheese. cinnimon. orange zest.sugar. or whatever and fried. Mt mother was from Vita in Scicily. Would love to get a proper recipe. Thanks.

Besides having these rivers, Sicily also has plenty of water. There "would be" no reason to leave Sicilians without water in the towns or distributing it badly as it happens. So much water is wasted. It's only a matter of bad administration.
