vllt. lateinamerikanisch sozialisierte an Tamales. So hat mich eine liebe Freundin
gefragt ob ich ein Rezept dafür hätte. „Fácil“ also einfach am besten 😉.

gemerkt.

Also Tomaten, Zwiebeln, Paprika
Oregano, Salbei.

deine Tamales (Usted invente!).

Hier so nette Videos dazu.

"No Indian, however, would have referred to his or her food as a curry. The idea of a curry is, in fact, a concept that the Europeans imposed on India's food culture. Indians referred to their different dishes by specific names ... But the British lumped all these together under the heading of curry." --- Collingham (2006)[2].

Mit Currypulver, Currypaste, Curry-Kraut oder Curry-Blätter?
Curry hat ähm… ja Curry! Also Moment…

Curry, Eintopf, Auflauf, Maultaschen?

Wieso?
Naja, also ich möchte Bananenschalen ausprobieren.

Renán A. this time I decided to reunite with my friend the curry.
so many recipes to have...
for this opportunity it goes something like this (danke liebe Anika =D )

rice+legumes+spices

not just to spare time but also to get the feelings and aromas going, why not start them at the same time.
I used, mustard, cardamom, porree, chili, ginger and onions
nice stir fry and mix with some nuts (I like whole and grind nuts) and dried fruit
at the same time, the legumes and the rice begin to cook

one beautiful stew

once my spices are brown nice and smelling amazing I placed everything in a layered pot :)
legumes + spices + cauliflower + spices + cauliflower
shower everything with some coconut milk
place the lid on top
and wait for the deliciousness to happen

And I acknowledged it must be a common issue, as I was talking to a friend going through the menu at a vegan restaurant: “Vegan” this, “vegan” that and “something that looks like and taste like”…

a whole bunch of – like-like food….

Maybe we or I won’t come that easy off that horse, but! A way for me to try to do it have become the alternative ways of preparation. This means, don’t just adjust your ingredients, change your procedure. Most of the time (like in the recipe below) I end up doing the same thing… but in a way it allows me some freedom to play with the ingredients. In this sense, here is one of my first experiments to share with you:

Vegan Cereal Pancakes

First , make your own Cereal "Milk".

I leave 3 spoons of Soy Flakes, 3 spoons of rice Flakes, 3 of Oatmeal Flakes and 6 almonds with double the amount of water over night. The next day you just blend everything with your mixer. If you want to drink it, you can filter it and it looks very much like Milk, otherwise take it as it is, for cooking its perfect.

This procedure is very versatile, I’ve tried very different cereal and nuts combinations using; millet, sesame, Chia seeds, walnut, hazelnut… I have found the mixture that works for me, mostly because I like the taste and I can always find the ingredients, but don’t be shy and try to find your own after what you have available and what seems tastier to you.

For your pancake mixture...

Instead of using eggs, you can use soy flour. since my cereal milk has already whole soy, I skip this ingredient. (soy is another great source of lecithin *as eggs are*, which helps emulsify your mixture) /// 1 big spoon of soy flour and 3 of water makes an egg

Other than that you can follow your own preferred pancake recipe. Just remember to use a recipe which is not fully counting on the egg whites to make the batter fluffy!!!

I use about a cup o flour, a cup of Milk, one egg, a tea spoon of baking powder, 3 spoons of sugar and quarter of a teaspoon of salt. Mix together and cook on an oiled pan. Enjoy with your favorite fruits and some curd or yoghurt on the side. Make it a friends and family event, that way you can use a group plate for everyone so you can share different fruits without planning or thinking about portion size.

Well, my thoughts go directly to fresh produce and amazing colors... but wait... I had no time whatsoever to do some shopping, and it's been raining cats and dogs lately... so forget about the market... let see what we can make with the stuff I tend to have around... That is what I call this, a pantry dinner... I know it may not all be pantry articles, but well, those are different in every home I suppose.

Vegan Bean Medallions, Country Potato Wedges and Tomato&Peas Salad

Very easy Country Potatos. Cut into wedges, season as you like, and bake for a while. I use Onion, salt,
garlic powder, pepper and I coat them with tortilla
corn flour, it gives them a very crisp brown color, and they turn out
quite crunchy outside while soft and moist inside.

The salad is a
no-brainer. Cut tomatoes in dices or wedges and mix with peas. I season
with balsamico and sesame oil. Anyhow, I believe it's the color what
does the trick :). I like to put a big spoon of cottage cheese in the
middle, not so vegan... but well, it's not all black and white.

Now for the Medallions... I used about a cup of kidney
beans, a cup of oatmeal flakes, an onion, chili, cumin, salt, pepper and
a little teaspoon of sugar. Mix all together with your hands and make
little round patties. I make mine while the potatoes are baking, since
they need around half the time to bake. They work great as meatballs,

You can very often hear about the benefits and wonders of the mediterrenean diet. However, most of what you will find, is about fish consumptions, omega fatty acids and antioxidants (through red wine). What about greens?

Yes, wild greens, leafy green vegetables- I want it all green! , and that is in deed what you would use to make some green greek pies, a nice pesto, green filling for a calzone, or thick vinagreta for your new antipasti.

Let me focus on the forgotten and often thrown away miracle leaves.

Maybe you dont eat them every week, but I believe everyone can imagine some dish or at least the looks on spinach, chicoree, urugola, kale... or some other well established greens. (Popeye anyone? )

And although somehow missleading (the whole iron and Vitamin C issue ), these greens actually represent the most important source of antioxidants.

Radish, Kohlrabi, Carrots... Yes they all have lots of green leaves, and most important, you can eat them and they can be very tasty. As a plus, well, they happen to be in many ways even more nutritios then the part of the plant we usually eat (Rich in antooxidants, high dosis of vitamin C and A, relative good iron quantities and very good mineral sources) and yes they have an amazing green color allowing us to have some colorful fun with our dishes.

----

Rezept? ganz Einfach!

zB.

Viel Spass!!!

Most of us enjoy to get together with friends, have some drinks, watch a movie, maybe game night or just a nice evening chatting among great people and no such gathering would be as great without some snacks. With great snacks, comes great responsibility...

Or so you could say, as they can actually make any party a wonderful one, without having to invest to much money or effort.

Perceived diversity and abundance.

Expectation and perception are among the key factors of having that killer dinner party. Both of which you can easily upgrade with some few ideas.

For example: having the same amount of food and dishes distributed in many smaller dishes, instead of fewer larger ones, gives guests the illusion of there been more food and variety of it.

Mingling.

Not only our guests, but the food! If you are only having snacks try avoiding dishes that look too complete and have instead of them a variety of elements which you can mix together. The Finger-Food-Party principle is a very good example. This way you wont have specific foods some of your guest might not be able or want to eat (think about food intolerance, special diets or just food preferences) thus allowing your food as a whole to be an instrument of bringing the party together.

Key Brick stones.

Though having some elements here and there may motivate your guests to mindlessly eat and have fun, it is more likely of your Key Brick stones or Signature Foods to be the ones which can not only help you gain time in the preparation but also make your guest feel great.

What do I mean with Key Brick stones? Well, easy recipies or food Elements, which you can learn and practice to be your good old friends in the kitchen. Easy ingredients, and the possibility to do lots of it at best with some pantry stock items. For a party, I love some country potatoes, or some cheesy breadsticks out of buttermilk dough. Goes easy, and you can make a lot, put them in the oven just before your guest arrive and keep them coming nice and warm. The short travels to the kitchen to get more, wont keep you from enjoying the party (as maybe some fajitas or keeping up with the grill would) and it grows the expectation of people around the preparation and effort put into your food (good points on that).

Day to day; create your own!

These ideas work also perfectly to brighten your everyday meals and could help you save money and time taking the best out of your own ingredients. Key Brick stones can be cooked once a week and help you as a side dish, or with some little twist become your next meal. (Leftover recycle?; more on that later).

Because pizza it’s sometimes not just pizza or any pizza, this is what I sometimes think about once I decide to make some pizza. Do I have the time? What am I craving for? How many will join us? Red or green? And so on…

I think pizza is always more than just pizza, and whether you are nuts about food like me or just order in without thinking to much, pizza is an all time favourite. It might be its soul food potential, the easy way to eat it, the many ways to share it or just on the whole how versatile the concept can get. And I talk about a concept as it goes beyond one or two recipes; it can be a whole new dish and you can give 100 names and references to them, but I think everyone would take it as a pizza. Fast food, slow food, greasy bomb or healthy treat, my dear pizza friend is one of my favourites to do and share with my friends. Vegetarian, vegan, lactose free, fructose free, and gluten free… you name it, you can make a pizza (I know I have tried and enjoyed many). But there will always be one particular one, you would personally really call a pizza.

For me, it’s a not so paper thin crust you can do some chewing on, and for the taste im looking for, you need some time and the right ingredients and know how. This dough will formed on a gluten basis and you therefore need high protein wheat flour, but much more important knead thoroughly. Not exactly the recipe for when you want pizza NOW!, will have some friends come over in an hour or just don’t want to work on it. So, as a friend of cooking and a pizza lover, I have many recipes and ways to make your desired pizza and I would like to share them with you.

This time, I wanted something faster, so I went for the low energy version. It is not my fastest pizza (that would be a sour milk dough- pizza in 20 minutes!), but I only need one key ingredient for the dough. A Tip for your pantry elements, always have some bread machine bread flour. (It’s the nearest to hard flour –which is a high protein wheat flour- and ha usually already the right yeast amount mixed with it)

Its very easy, just mix your flour with water (1:3 ratio ; 1 cup of flour will make 3 small thin crusted pizzas or 2 medium), add some sugar (1 Tsp for every cup will do) knead for about 3-5 minutes and let it rest for around 10 minutes. After that, put it on a warm place for another 20 minutes then stretch it as desired and put everything you like on it!.

Bake for about 15 minutes at 190° and your done.

Once you know how it goes, you can have your pizza ready to eat in 1 hour.

If you are working with whole-wheat flour or any other flour that has seeds or nuts in it, you will have to use more, otherwise your dough will be to moist. Try it out with your standard flour first, then you will know how your dough should feel like.

Neee. vielleicht morgen n_n.

so desired goals? What does it take to start a diet, to keep up with it?
One of New Year’s most popular resolution is to lose weight, yet over
80% of those resolutions end in failure and 1 out of 4 don’t last even a
week… (check this amazing info graphic about new year’s resolutions

found on a few lifestyle magazines with their new even scientific
approaches on dieting and weight loss. First of all, as an ongoing
Nutrition scientist, the supposed scientifically approached piece of it,
could have not been more or less bad… and as always, just another piece
of vague inaccurate garbage, any person could have come up with. But
that is not what really turned us mas, oh no… Once you started on the
actual tips and sometimes actually very good looking recipes, you then
understood, healthy and tasty eating had been scientifically proven to
take forever to make, or to be rich and have a personal cook.

We wonder if these good looking unachievable sort of suggestions, are
actually what people are looking for when buying and reading the
magazines, or whether there could be an improvement, starting from the
fact that food choice can’t only be made on a health related concerns
basis (lets reduce dieting to health related concerns…) , but also
convenience, price, and sensory appeal have been proven to be important
determinants for food choice. (McIntosh, 1996; Rappoport et al., 1993;
Steptoe et al., 1995)

I would like to believe I’m not really into complicated cooking, but
don’t get me wrong, those who know me understand its more to speak of
elaborate and full of joy and love recipes, which oh yeah sometimes are
very easy and actually very fast, some other times the time spent in
them only rejoices my love for food, cooking and well, sharing with my
dearest friends. These blog should serve a platform to show some food,
exchange ideas, tips, even maybe some nutritional guidance? Please do
comment, get in touch and interact with me.

Renán A.
