Peanut Butter Cookies with Peanut Butter Cups!

I just could not resist. I like both peanut butter cookies and Reese's Peanut Butter Cups. So when David's Cookies joined the two, they had my attention right away. I ordered the cookies which come in a 2 lb tin. They are large, soft cookies at 4.5oz. There are seven cookies. That seems like a small amount of cookies for the price, which is $34.95 + sh. The price qualifies them as a gourmet or "treat someone you love" item. But, if you are a lover of the two main ingredients, you should definitely give these cookies a try. They are pricey but delicious.

Best Sugar Cookie Recipe?

There is nothing like a great sugar cookie recipe. Don't buy the roll of Pillsbury Dough, you can make a superb cookie that will remind you of the days when Grandma made them.

Grandma used to sit by the fire and drink her tea and Grandpa used to sip his coffee made from his French Press, before it was trendy. I loved seeing them sit there enjoying the day. When we walked in the house there were smells coming from the kitchen you just couldn't imagine. The sweet smell of warm sugar cookies invaded your senses. You knew today was going to be a treat.

It was a tradition that we enjoyed every year. The kitchen was filled with flour storms and the counters were sticky from Buttercream frosting. We had tin cookie cutters spread all over the table. I liked the boot best, my sister liked the angel.

Grandma had a special way with those cookies and she handed down the recipe to me. I was to teach my kids how to make these wonderful holiday sweets. It wouldn't be Christmas time without this recipe of Yummy cookies.
I am publishing it because I want you to enjoy the best sugar cookie recipe ever.

Grandma's Favorite Sugar Cookie

1 cup white sugar

1 cup powdered sugar

1 cup butter

2 eggs beaten

1 tsp cream of tarter

1 tsp baking soda

1 tsp vanilla

4 cups flour

½ cup corn oil

Cream the sugars and butter together. Mix the beaten eggs, vanilla and corn oil, in. Add the dry ingredients .Mix all the ingredients well and chill overnight.
Bake at 375 F for 8-10 minutes....DO NOT OVERCOOK.

We used to make the funniest colors to decorate the cookies, most of them looked inedible. They tasted heavenly, though. We figured if we made them look gross enough, the adults would leave them alone. We were wrong. Everyone knew they were Grandma's famous sugar cookies from her handed down recipe book. This page was splattered with all sorts of colors. I have that book now. I love making these cookies with my kids.

Grandma's Favorite Frosting (don't forget the food coloring)

2 cups of powdered sugar

½ cup butter melted

1 ½ T Milk

1 tsp vanilla

Cream sugar, butter and vanilla. Add a small amount of milk (1 to 2 tablespoons). Beat until fluffy. If frosting is too sweet add a little more milk.

Try it this season. Enjoy your family and brew some wonderful tea or coffee and relax. Take the time to make memories with your family or neighbors or friends.

Endless Cookie Recipe Variations

Finding great cookie recipe variations always puts a smile on my face. If there's one sweet treat I can't say no too it's a perfectly baked cookie.

In the quest to try new flavors I've found the best thing to do is change a few ingredients instead of trying to re-invent the wheel with a whole new recipe. Simple changes can make your old cookie recipe seem like sometime brand new.

The basic structure shouldn't change but you can play around with different flavors. If your recipe called for equal parts white and brown sugar using only brown sugar will make the cookie much richer. Also using only white sugar will give a softer flavor.

Along with your classic vanilla extract you can add a few teaspoons of your favorite flavored extract or liquor. Almond extract is great for an everyday cookie, lemon gives a nice springtime flavor, brandy extract brings memories of Christmas and peppermint is always refreshing.

Some of my favorite cookie recipe variations begin with the endless varieties of chips available. Subsisting peanut butter, butterscotch or cinnamon chips can make for a whole new cookie experience. Even if you prefer chocolate there are milk, white, dark, semi sweet or mint chocolate chips to choose from.

M&M's or other candy pieces also make a great twist. Think of crushed pieces of peppermint, toffee or your favorite candy and give it a try.

Sliced or chopped nuts add extra crunch along with their distinct flavors. Chopped or crushed almonds, pecans or macadamias nuts are classics for cookies.

Dipping your cookies in tempered chocolate or drizzling them can add another layer of flavor. If you're not into working with chocolate you can make a frosting for your cookies instead.

Frost the bottom of your cookie and slap a second one on and you have a sandwich cookie. Fill two cookies with a scoop of softened ice cream and put them in a freezer for a bit and you have an ice cream sandwich.

Cookies Under The Tree

I was lucky enough to receive a couple of gifts that turned out to be from David's Cookies. One was a tin of Pecan Meltaways and the other was the Cheesecake Brownie Tray.

I'm glad I received these two as I probably would not have chosen either of them. I'm glad because they were both delicious and I would never have known how good they both are.

If you like chocolate, you'll love David's Cookies - Delicious Gourmet Brownies and Crumbcakes. The cheesecake part was a little lost in the brownie. It all tasted like the best brownie.

One caveat, by the way, is if you don't eat it all within 48hrs, it's best to freeze the rest. You can freeze it for up to six months. I say gather a crowd and make it disappear.

The Pecan Meltaways were my favorite of the two. The cookies do just that, they melt in your mouth. They're coated with just enough powdered sugar to add to the goodness and just enough pecan pieces to make you want another cookie. By the way, they both go very well with coffee. Peanut Butter Cookies
One my favorites cookies has to be peanut butter cookies. There are some good ready-made peanut butter cookies on the market. However, I'm partial to home made peanut butter cookies. In my search on the internet for peanut butter cookie recipes, I found there are as many different recipes for peanut butter cookies as there are cooks.
Peanut butter, sugar and 1 egg seem to be the basics. From there, it's whatever you feel like adding for your taste.

Here is a recipe that, I feel, has all you need for basic peanut butter cookies. Enjoy!

JIF® Irresistible Peanut Butter Cookies

INGREDIENTS:

* 1 1/4 cups firmly packed light brown sugar

* 3/4 cup JIF® Peanut Butter

* 1/2 cup Butter Flavor CRISCO® Stick

* 3 tablespoons milk

* 1 tablespoon vanilla

* 1 egg

* 1 3/4 cups sifted all-purpose flour

* 3/4 teaspoon baking soda

* 3/4 teaspoon salt

DIRECTIONS:

1. Preheat oven to 375 degrees F. Place sheets of foil on countertop for cooling cookies.

2. Combine brown sugar, JIF® peanut butter, shortening, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Add egg. Beat just until blended.

3. Combine flour, baking soda and salt. Add to creamed mixture at low speed. Mix just until blended.

4. Drop by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet. Flatten slightly in crisscross pattern with tines of fork.

5. Bake one baking sheet at a time for 7-8 minutes or until set and just beginning to brown. Do not over-bake. Cook 2 minutes on baking sheet. Remove cookies to foil to cool completely.

The Art Of The Bake

Oreo's are good cookies right out of the bag. But, there are those who have their own cookie recipes and bake their own. I have to admit, it never occurred to me to bake my own Oreo's.

Nabisco's Oreo's Has New Packaging!

I bought a bag of Nabisco Oreo cookies at a local grocery store. I don't remember the last time I had a bag of Oreo cookies. What possessed me, I don't know but I did it. They still taste the same. Two chocolate cookies sandwiched together with white sugar icing. Ummm good cookies. Nothing new about that.

News To Me!

What's new to me is the packaging. Once there was a time when you opened a package of Oreo's, that was it. You, or someone helping you, had to eat the whole bag or settle for stale cookies later as there was no easy way to reseal the package once they were opened.

What Will They Think Of Next?

Nabisco has heard the cries of the masses and come to the rescue. The new packaging comes with a easy open lift up pull tab.The pull tab is located on top of the package. This feature allows you to peel back the tab which lifts up the top of the packaging exposing the tray of cookies for easy access. When you've finished eating, you just roll the flap back down and press around the edges thus resealing what's left in the tray. The flap has some adhesive around the edge that allows the package to be resealed. Is this not news?

I think this one feature is a good improvement. It has caused me to go out and buy another bag to test. Nabisco didn't tamper with the cookies. They're still a great snack. I'm glad they left the Oreo's alone. They made it so you can enjoy them longer. That's good. I like Oreo's.

Oreo's To The Rescue!

So, if you haven't had any Oreo's in a while, go ahead and indulge yourself. You don't have to eat the whole bag. Think about it, since Nabisco came up with this resealable package, you don't have to eat the whole bag just because you opened it. Nabisco has saved your life. :-)
