Peel the green skin off along the white "frontier." Cut four slices 2 inches thick from the peeled watermelon. Trim each slice so they form 2-by-4 inch "steaks."&lt;br /&gt;&lt;br /&gt;In a large pot over high heat, bring the water to a boil. Cut a small X in the bottom of each tomato. Drop the tomatoes into the boiling water for 20 seconds. Drain and submerge them in the ice water. Peel them and remove their seeds. Cut the flesh into 1/2-inch cubes. Toss the tomato cubes with the vinegar and olive oil and add salt to taste.&lt;br /&gt;&lt;br /&gt;In a skillet over medium heat, heat a bit of the olive oil. Add the watermelon steak and cook for a few minutes on each side until it caramelizes around the edges. Repeat with each steak.&lt;br /&gt;&lt;br /&gt;Place the steak on the plate. Top each with a bit of the tomato relish, the pistachios and the micro greens. Thousand Island Dressing Drain and rinse sauerkraut, mix with cream cheese and Swiss cheese. Add diced corned beef and Thousand Island dressing. Cover and heat on low until cheeses are melted, stirring occasionally to blend all ingredients. Bake at 350&lt;br /&gt;degrees for 50 to 60 minutes.  Test center with knife for being done. Beat with an electric mixer or a wooden spoon until smooth and creamy.&lt;br /&gt;&lt;br /&gt;Add the egg and vanilla  and beat again.  Add the flour, baking powder, baking soda and salt and beat on low speed until well blended.  Add Chocolate chips and the walnuts, if using, and mix by hand thoroughly .&lt;br /&gt;&lt;br /&gt;Using a teaspoon as a guide, scoop a portion of the dough and , with your hands, roll each portion into a 1 inch ball.  Place the balls on a cookie sheet and bake 6 to 8 min. Each time we have a pot luck at work I always ask Judy (friend/co-worker) if she's making veggie pizza or even request it to her if she can bring the veggie pizza. wink*&lt;br /&gt;&lt;br /&gt;Here's her recipe for the Veggie Pizza...very simple but when I tried to make it doesn't taste the same, hmmm I don't know why.&lt;br /&gt;&lt;br /&gt;&lt;blockquote&gt;&lt;b&gt;VEGGIE PIZZA&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;2 pkgs. Pillsbury Crescent rolls&lt;br /&gt;2 - 8 oz. pkgs. cream cheese, softened&lt;br /&gt;3/4 cup mayonnaise (not Miracle Whip)&lt;br /&gt;1 pkg. Hidden Valley Ranch salad dressing mix&lt;br /&gt;Diced broccoli, green onions, tomatoes (or any other vegetables)&lt;br /&gt;1 small can sliced black olives (optional)&lt;br /&gt;Shredded mild cheddar cheese&lt;br /&gt;&lt;br /&gt;Roll dough on large, ungreased cookie sheet - press seams together and roll dough so it covers the cookie sheet.  Bake at 350 degrees - 12 minutes.  Cool completely.&lt;br /&gt;&lt;br /&gt;In a mixing bowl, mix together cream cheese, mayonnaise and Hidden Valley mix.  Spread on cooled dough.  Top with vegetables, sprinkle with cheese and then press the veggies and cheese into the cream cheese mixture to hold it all in place.  Chill in refrigerator before cutting into bite-size pieces. Very yummy!&lt;br /&gt;&lt;blockquote&gt;&lt;b&gt;Paula Deen's Spinach Quiche&lt;/b&gt;&lt;br /&gt;6  large eggs, beaten&lt;br /&gt;1 1/2 Cup  heavy cream&lt;br /&gt;salt &amp;amp; pepper&lt;br /&gt;2 cups, packed  chopped baby spinach&lt;br /&gt;1 lb.  bacon, cooked and crumbled&lt;br /&gt;1 1/2 Cup  shredded cheese&lt;br /&gt;1  9" pie crust   (*** I always use two crusts, because the recipe makes quite a bit of filling! ***)&lt;br /&gt;&lt;br /&gt;1.  Preheat oven to 375 degrees.&lt;br /&gt;&lt;br /&gt;2.  Combine eggs, cream and seasoning (food processor, blender, whisking, etc.)&lt;br /&gt;&lt;br /&gt;3.  Layer bacon, spinach and cheese in pie crust(s).  Pour egg mixture over the layers, and allow it to seep through.&lt;br /&gt;&lt;br /&gt;4.  Bake 35-34 minutes, until mixture is set.&lt;br /&gt;&lt;br /&gt;*** options ***&lt;br /&gt;&lt;br /&gt;•  You can mix everything together rather than layering and pouring the egg mix over the layers.&lt;br /&gt;•  Use different kinds of cheese.  Paula used cheddar on the show. You can, however, dress it up for company in a hurry: A couple of brightly colored cherry tomatoes tossed with oil, salt, and pepper and nestled in the middle of the soup are handsome additions. Even a few cilantro leaves arranged in the middle of the bowl would take this soup from everyday to elegant.&lt;br /&gt;&lt;br /&gt;1. Put the chopped avocado in a blender. Add half the milk, a large pinch of salt, and a small pinch of cayenne, and process to a purée. Adjust oven rack to upper-middle position, place rimmed baking sheet on rack, and heat oven to 450 degrees.&lt;br /&gt;&lt;br /&gt;2.  Meanwhile, toss potatoes, cornstarch, garlic powder, 3/4 teaspoon salt and 1/4 teaspoon pepper together in large bowl.  Carefully remove preheated baking sheet from oven, add oil, and tilt baking sheet to evenly coat with oil.  Place potatoes, cut side down in single layer, on baking sheet.  Roast until browned around edges, about 30 minutes.&lt;br /&gt;&lt;br /&gt;3.  While potatoes roast, mix butter, garlic, parsley and zest together in medium bowl.  Remove baking sheet from oven and using metal spatula, turn potatoes skin side down.  Roast until potatoes are crisp and deep golden brown, 10 to 15 minutes.&lt;br /&gt;&lt;br /&gt;4.  Transfer potatoes to bowl with butter and toss until evenly coated. [Before I made the cucumbers I called May because she made an excellent  Marinated Cucumbers].&lt;br /&gt;&lt;br /&gt;Here's my own version, very easy wink*. The fresh Lumpia &lt;/span&gt;&lt;span style="font-style: italic;"&gt;is easier to prepare, because the frying step is left out.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;14        Sheets rice paper&lt;br /&gt;         12" 30 cm round.&lt;br /&gt;14        Cos lettuce leaves.&lt;br /&gt;_________________________________&lt;br /&gt;3          Tbls. oil&lt;br /&gt;3          Cups chicken or pork  (your choice)&lt;br /&gt;         Diced or ground.&lt;br /&gt;1-1/2    Cups shrimp chopped.&lt;br /&gt;4          tsp. cornstarch.&lt;br /&gt;_________________________________&lt;br /&gt;3          tsp.minced garlic.&lt;br /&gt;3/4       Cup thin sliced green&lt;br /&gt;         onion's.&lt;br /&gt;3/4       Cup dried wood ear softened&lt;br /&gt;         (or other) mushrooms, minced.&lt;br /&gt;_________________________________&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Sauce - Sweet/sour/fish - dipping sauce.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1/2 Cup Boil water.&lt;br /&gt;1/4       Cup sugar.&lt;br /&gt;4          Tbls. each - white vinegar and fish sauce.&lt;br /&gt;3          tsp. each - red chili flacks and minced garlic.&lt;br /&gt;_________________________________&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Here is how. - Step's&lt;/span&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Combine (chicken or pork) with chopped shrimp and cornstarch in a bowl and mix well, let stand for 20 minutes.&lt;/li&gt;&lt;li&gt;Mince - garlic , onion , and mushrooms, (place in a bowl).&lt;/li&gt;&lt;li&gt;Heat 3 Tbls. oil in pan and add combination in (step 1), stir fry for 3 minutes, add (step 2) Stir fry for 3 more minutes. Place in a larger bowl to cool.&lt;/li&gt;&lt;li&gt;Dip rice paper in lukewarm water pored into a large round platter. (for 3 seconds). Then place paper on your work surface and place the cos lettuce on the rice paper. Add the cooled filling and roll up like an egg roll, but leave one end open.&lt;/li&gt;&lt;li&gt;Sauce - Boil water add the rest of the ingredance and simmer for 5 minutes, pour in serving bowl.&lt;/li&gt;&lt;/ol&gt;_________________________________________________________________&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Serving&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Serve with individual spoons for the dipping sauce. He made a gravy and was excellent!
