My very first experience making stromboli was at one of my very first jobs as a teenager, which was in the kitchen of a pizza joint. The Italian stromboli was made with shredded steak, ham, pepperoni, onion, green pepper, mozzarella and tomato sauce. After I was married, my husband explained the Jenkins way of making Italian stromboli, which included variations of ham, salami, provolone and some veggies. It was different than what I was used to but it quickly grew on me and became my favorite way to eat it.

For Father's Day, I gave my husband the choice of any dinner in the world and he asked for this stromboli - it is definitely a top-ten favorite in my family!

Ingredients:
Yields 3 stromboli, about 14 inches x 5 inches each

Dough

2/3 c warm water

1 pkg yeast

2 c flour

2 tbsp oil

1 tsp salt

1/4 tsp garlic powder

Filling

1 tsp dried oregano

3/4 lb sliced cooked ham

3/4 lb cooked salami

3/4 lb hot and spicy ham (capicola)

1/2 c green pepper, diced

1/2 c onion, diced

1/2 tomato, diced

3/4 lb provolone cheese

Directions:

Mix together the warm water and yeast and allow it to proof until bubbly. Stir the flour, oil, salt and garlic powder with a fork. Continue to stir until a dough consistency forms. Gather the dough and knead the dough for 2 minutes, or until it becomes smooth and elastic. Cover the dough with plastic wrap and allow it to rise in a dark, warm place for 1 hour.

Cut the dough into thirds. Roll out the dough on a floured surface into a rectangle approximately 18 inches x 10 inches.

Dock the dough with a fork and sprinkle oregano evenly on top of it. Layer the cooked ham, salami, and hot and spicy ham in the center of the rolled out dough, overlapping each piece of meat halfway with another. Spread out the green pepper, onion and tomato evenly over top. Top with provolone cheese, overlapping each piece of cheese halfway with another. Carefully stretch the sides of the dough together to the center and pinch to seal. Seals the ends as well. Make slits in top of the stromboli with a sharp knife.

Place the stromboli on greased baking sheets. Bake in a preheated oven for 18 to 24 minutes, or until golden brown.

Slice and enjoy!

It's strawberry season! If you find yourself with an overabundance of strawberries as we have, consider drying them. When you dry fresh fruit, most of the nutritional value is retained and it lasts weeks longer than if it was fresh. Dried strawberries make a delicious snack on their own and they also are a great complement to cereal, granola and yogurt. These are wonderfully sweet, delightfully chewy and slightly sticky... think Craisins. The addition of tarragon gives the strawberries an extra dimension of flavor but they are just as good without it.

Firing up the grill? Try this grilled tequila flank steak with tequila-cilantro sauce. The marinade is repurposed to make a sauce that is tangy and oh, so delicious. Tequila!

Once you are finished making the steak sauce, you can leave it as is or strain it to remove the solids. I enjoy the texture that the onion brings, so I don't strain the sauce before serving.

We were having an issue with our freezer this past week and the repairman informed us that we had to unplug our refrigerator and allow the freezer to thaw out for 24 hours. Gasp! Do you have any idea how much precious food and how many valuable condiments I have in there?! Last week was all about not getting groceries and being on a mission to use up as many of the contents of the refrigerator as I could. We thankfully have a deep freezer, so I didn't have to worry about losing my frozen items. Yesterday was crunch time. What would you do with fresh spinach, grape tomatoes, heavy cream, white wine, carrots, onion, celery, cooked rice, Parmesan and mozzarella cheese? I decided to use all of those ingredients to make a chicken and rice primavera. Delicious!

Grilled peaches are a perfect dessert to finish off any cookout. When you grill peaches, it enhances their sweetness and makes them even juicier. They may look fancy but they are incredibly easy and fast to prepare. After your guests have had their fill from the dinner grill, simply brush on a little honey and place the peaches on the already hot grill for a few minutes. Once they are done, add some ice cream and serve.

Whenever I am asked to provide a pasta salad, I typically make my husband's favorite Italian Vegetable & Shrimp Pasta Salad but I wanted to try something new for a Memorial Day picnic. I stumbled across a recipe from Food.com that sounded good and received excellent reviews. I made a few changes to it and it really did turn out to be delicious! This pasta salad only gets better with time, so make it one day in advance if possible.

Live lobster was on sale for $6.99 per pound this weekend and I couldn't pass up buying a few pounds. It's amazing how something so simple to make can be so incredibly succulent. Don't be intimidated by it - it is an easy, fun and deliciously rewarding experience! I included butter in the list of ingredients but I'm pretty sure you'll agree that it is definitely not needed.

I don't know about you but 85 degrees in the middle of May is not my ideal spring day. Because my husband and I are pushing ourselves to see how long we can survive before turning on the air conditioning, I thought a crock pot meal would be appropriate for dinner. These Cuban steak tacos are hearty, succulent and perfectly complemented by the intense tart and tangy mojo cream sauce.

Lazy Saturdays. I live for those few-and-far-between days when we can sleep in until 9:00, wear our pajamas until noon, and not have a commitment until the evening. While making brunch for my family in my pajamas with Blake Shelton serenading me in the kitchen, I decided to put a little Mexican twist on our omelettes. Yum! Fresh, spicy, cheesy and delicious!

Move over, Cheez-Its! You won't believe how easy it is to make your own delicious crackers at home. Most store-bought crackers contain artificial flavors, preservatives, etc., so it's nice to know what is actually in your crackers when you're eating them. You won't be disappointed with these tasty treats!

While my recipe calls for the dough to be rolled out to 1/16 inch thickness, my family prefers them a little thicker (about 1/4 inch thickness) because they become, as my husband puts it, "delicious mini biscuits with a crispy outside".
We were blessed with beautiful weather this weekend and most of it was spent outdoors doing fun things including enjoying a community fair, grilling out, taking two long bike rides on the trail, and having a cookout with family. I didn't realize how much time we actually spent in the sun until I found myself sporting a pretty unattractive sunburn. One of the things we grilled were these amazing shrimp kabobs in white wine and garlic butter. So simple, yet so delicious! I served this with sauteed veggies and corn on the cob.
Today I celebrate 500 recipes on Cooking Creation! It's kind of hard to believe that I have posted 500 recipes in the last three short years. Of all of the meals that I make for my family, my husband's favorite is meat pie. Meat pie is a savory pie consisting of beef stew in a pie crust. My husband grew up eating meat pie usually as a special treat on his birthday. I, however, never heard of such a thing until I was introduced to it by his mother. This recipe originates from my mother-in-law but I have made a few changes to it over the years. This pie is a very hearty, stick-to-your-ribs kind of pie.

Here is a homemade, healthier alternative to those store-bought "fruit" snacks. They are easy and a lot of fun to make, especially with kids. The texture is different than your traditional fruit snack. They are firm but have a more sponge-like consistency. Try experimenting with a variety of your favorite berries! Depending on the sweetness of the strawberries themselves, you may or may not want to add the optional confectioners' sugar. Just be sure to taste the strawberry mixture before placing it in the refrigerator to set.

Cutting down the calories and fat definitely does not compromise the flavor in this Skinny Mac n' Cheese! Yes, it is possible to enjoy a delicious, cheesy macaroni and cheese with a lot less guilt! Pureed potato is used as a thickening agent in place of butter and flour, and fat free milk along with reduced fat cheeses are also used.

Note: As always, the actual calorie total depends on the quality/brand of ingredients you use, so I included that information as well in the ingredient list.

Resurrection rolls are a fun (and tasty) way to share the Easter story with your children. The hollow roll represents the empty tomb and all of the other ingredients used represent a part of the Easter story as well.

My back door was sending me conflicting information a few days ago - snow in spring? It can't be! Even though spring hasn't quite started out as I had hoped, I am still in the spirit. We have already started on our spring cleaning and I have been admiring the pretty little robins pecking away at the suet from my back door. How lovely it will be to open my windows and let the sweet spring air pour through to freshen my house. How happy I will be when I can harvest and cook with fresh ingredients from the garden again. As I found myself daydreaming, I decided to make a light, healthy and fresh salad for lunch today to help quench my thirst for the spring weather.

Just as I was about to post another fish recipe a few days ago, it was kindly brought to my attention that maybe I should consider holding off on posting it because I have been posting a lot of fish recipes recently. The thought hadn't even crossed my mind, so I was very thankful for that hot tip... which got me thinking - it has been a while since I've posted a dessert. Upon asking my husband what kind of dessert he would like me to make, he found himself reminiscing about a dessert that his mother used to make for him as a younger boy. Now, in case you don't know my husband, he is not a sweets kind of guy and there are very few desserts that he enjoys. He described it as "peanut butter bars with chocolate on top that would harden". This prompted a phone conversation with his mother, who informed us that it was a store-bought mix that was discontinued a long time ago. I did a little playing around in the kitchen over the weekend and came up with these delicious bars. The verdict? My husband finally has his childhood dessert back. Score!

Ingredients:
Yields approximately 24 bars, depending on how you cut them
150 calories per serving
