I feel that I am very regular in the sense of fashion, cooking and decorating... Some of these blogs have a perfect feel of old time and comfort. I want to make my blog more like that. I think one of the reasons I love to look at so many people's wonderful blogs is because their writing is utterly captivating! Their descriptions of memories and moments of cooking is very visual. I can see exactly what they are talking about. I want to be like that!

Here are the few of the blogs that I have been looking at today!
teaandcookiesblog.com
notwithoutsalt.com
sevenspoons.net

Go check them out for yourselves. You may be surprised what you find! Some of the food looks fantastic as well. I think I might have to do some investigating to try and get my blog to go back in time without really changing who I am and what I love to do.

In the news of my own cooking; last night I made a Trifle! Delicious! A Lemon Berry Trifle. However, in my excitement to eat it, I forgot to take a picture of it before I dished up! I also was so excited to try it, that I didn't give it much time to set and get cold in the fridge... So it sank... (Another reason I did not want to take a picture of it) Sinking Trifles aren't pretty.

Even still, this Trifle is FABOULOUS! Thank you to Mel's Kitchen Cafe for the recipe. Thank you Chris for making this for the family, so we could all fall in love with it! I love it because the recipe gives you options to make it all from scratch, or make it a little easier on yourself and get a few items from the store. I am fine with either. This was the first time I made it, and I wanted to do it all from scratch! I did it in a two day time period, and it was so fun!

This was something that did take some time, but every bite is worth it! I PROMISE! I will be making this Trifle throughout the years.

Here is a picture of Mel's Lemon Berry Trifle! ( Mine kind of looked like this... before I cut into it) If you want the recipe, just click the link for Mel's Kitchen Cafe. It should take you right to it.

I'm sorry

I realized that it has been months since I have written anything for this blog. I guess I have been so busy with work and being with my husband and son!! Lately I have wanted to make some really delicious desserts. I am saving up some of my money to indulge in some fun cooking tools and ingredients.
Tarts with Lemon curd and fresh berries
Cheesecake ( Perhaps a new flavor such as lemon and raspberry, or the usual chocolate)
Donut Holes
Delicious Thai recipes with sticky rice (Thanks to Mom and Dad Garner for the thai rice cooker)

I am so excited for warm weather... that means fresh fruit and veggies! Can't Wait. Lemons are something that sound so good to me lately! Until we meet again, happy baking!
It was Devin's Grandpa's birthday yesterday and I volunteered to make dessert! I don't know what it is about making something sweet, but I love it. I have wanted to make Strawberry Shortcake with scones instead of angel food cake and yesterday was the day!!! I found awesome strawberries at Walmart and made the scones from scratch! I found this recipe on joyofbaking.com. It turned out wonderfully. This recipe was so easy as well. I had my my niece and nephew help me mix and cut the scone dough. We all had fun!

Strawberry Shortcake

Ingredients

Scones:

<span class="bod" style="color: #663300; font-family: Arial; So I decided that we would make it. It is so simple and so tasty! My brother in law served a two-year mission for the LDS church in Italy, and it reminds me of him! I am sure he would enjoy it. The ingredients are as follows:

Caprese Salad

Mozzarella Cheese

Tomatoes

Fresh Basil

Olive Oil

Balsamic Vinegar

Salt and Pepper

You want a soft mozzarella for this dish (preferably one in a long roll) and slice it up. (Into as many circles as you want) Then slice the tomatoes as thin or as thick as you would like. The basil is torn up into same size pieces as the tomatoes. Drizzle olive oil and balsamic vinegar over each piece. End it with some salt and fresh ground pepper. It is such a simple recipe and it can be made however you desire it. With as much or as little amount of each ingredient!

I plan on using these recipes to create fun memories with all of my family; especially, my children. I hope that when they are older they will look back at these recipes and have fond memories.

My husband has a little business where he makes videos for companies, family, and friends. So, we together made a little cooking video featuring this recipe. It was a lot of fun and look forward to creating a few more down the road. :)
Well I was really wanting it this year, since I haven't gotten it in the last 2 years. So I made it. The recipe is super easy. Buy the corned beef at the store. It comes with a little packet of spices that you throw in with it. Easy, right?? All you do is put the beef in the crock-pot with the spice packet and cover with water. I also added a whole head of cabbage diced into quarters about 30 minutes before eating. On the package, it will tell you how long to cook it!

To go with our Main Event, we would have a side of Irish Soda Bread! Yum!
Some of my favorites include Caramels, Sugar Cookies, Oyster Stew, and Scones.

I love that three out of the four are more treats, than a main dish. Even though these are some of my favorite things to make at Christmas time, they can be easily made any other time of the year. It was my first time making caramels and they turned out perfect, thanks to the help of Devin's parents, they knew exactly when it was time to take them off of the heat. We were able to enjoy lots of them and even give some away to friends and family.

Caramels are done when the ball is chewy, but not crackly. The ball will have trails of caramel which form. Pour into a well buttered 9 by 13 in. pan. Let cool. Cut caramels into 1 in squares.
What I feel makes my mom's recipe of Sugar cookies so wonderful is the almond extract in the cookie and the coconut flavoring in the frosting! This recipe makes lots and lots of cookies. You can freeze the dough very easily as well as freeze the cookies once they are baked. :)

Oyster Stew is an aquirred taste for most people, but growing up we had it every Christmas Eve at our annual Christmas Eve party! It is always served in a styrofoam cup with oyster crackers. I was brave and asked Devin's parents if I could make it as part of our dinner on Christmas eve, and they gladly excepted. I did not make a very large batch of it, but most everyone enjoyed it... even Devin (who hasn't enjoyed it in the past).
The very last thing on my list today is Scones. Growing up we had these Christmas Morning at my house. They were served with yummy jams and jellies or honey. This was the first time I made this recipe and it turned out great. It is so nice to have a little fryer to do it in. These are not the traditional baked scones that you might get in Europe, but they are fried!!!
Serve with honey, apple butter or your favorite jams and jellies.

I loved having extra to snack on after breakfast. Just a warning making that many scones may effect your eyes because of the oil... But so worth it!

I feel pretty impressed with myself that three out of the four recipes I had never made until Christmas break. I will make them all again. Though it may be worth every bite of chewy sweetness, I have decided that candy making may take a little too much time for my own enjoyment, so I will limit the times that I make caramels.

I am sorry that I only have pictures for my caramels.. I guess I got too involved with the cooking, before taking pictures of them. So for your enjoyment, here are just some of the pictures that I took of things we ate over Christmas Break. :)
In years past I have made a german chocolate cake, but it has been from the box... and I wanted to make it from scratch. So I did. It was not a hard cake to make. Just a little time consuming, but OH SO WORTH IT! :) I got the recipe from the back of the Baker's Sweet Baking Chocolate.

German's Sweet Chocolate Cake

1 pkg. (4 oz.)Baker's German's Sweet Baking Chocolate

1/2 C. water

2 C. flour

1tsp. baking soda

1/4 tsp. salt

1 cup (2 sticks) butter or margarine, softened

2 C. sugar

4 egg yolks

1 tsp. vanilla

1 C. buttermilk**

4 egg whites

** I just made my own buttermilk.. Really easy 1 Tb. vinegar or lemon juice per 1 c. milk. Put in vinegar or lemon juice first. Add milk up to the amount needed. Let sit for 5 to 10 minutes.

Directions: Heat oven to 350 Degrees F. Line bottoms of 3 (9 in.) pans with wax paper. Microwave chocolate and water in large microwavable bowl on high 1-1/2 to 2 minutes or until chocolate is almost melted, stirring half way through heating time. Stir until chocolate is completely melted. Mix flour, baking soda and salt; set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add egg yolks one a time, beating well after each addition. Stir in chocolate mixture and vanilla. Add flour mixture alternately with buttermilk, beating after each addition until smooth. Beat egg whites in another large bowl with electric mixer on high speed until stiff peaks form. Gently sit into batter. Pour into prepared pans.

Bake 30 minutes or until cake springs back when lightly touched in center. Immediately run spatula between cakes and sides of pans. Cool 15 minutes; remove from pans. Remove wax paper. Cool completely on wire racks. Spread Coconut Pecan Filling and Frosting between layers and over top of cake. Makes 12 servings.

Note: This delicate cake will have a flight slightly sugary top crust which tends to crack.

Now for the delectable frosting:

Coconut-Pecan Filling and Frosting

1 can (12 oz.) Evaporated Milk

1 1/2 C. sugar

3/4 C. (1 1/2 sticks) butter or margarine

4 egg yolks slightly beaten

1 1/2 tsp. vanilla

1 pkg. (7 oz.) coconut (about 2 1/3 C.)

1 1/2 C. chopped pecans

Stir milk, sugar, butter, egg yolks, and vanilla in large saucepan. Stirring constantly, cook on medium heat 12 minutes or until thickened and golden brown. Remove from heat. Stir in coconut and pecans. Cool to room temperature and of spreading consistency. Make about 4 1/2 cups.

This is an extremely long post and I apologize for the length, but I need to add a few more things...

I did toast my pecans. Just put them in a pan and let them heat up on the stove. Stir occasionally on low heat. I also let my frosting cook on the stove until it started to boil.

I didn't notice that my cake cracked, so if it does or doesn't it will be wonderful. It is also really important that the frosting cools. I didnt make my frosting with enough time to cool, so I made it work, and it turned out great, but it would stay better if the frosting was cooled all the way.

Good luck and happy baking!

Tonight, I made a dish that I remember having as a young girl during Halloween! The name of the dish is "Dinner in a Pumpkin" It turned out really well and it was yummy! It took a bit of time to prepare, but it was worth it. Thanks Mom!

Dinner in a Pumpkin

1 small to medium pumpkin
4 oz. sliced mushrooms
1 onion, chopped
1 10-oz. can cream of chicken soup
2 Tbs. Vegetable Oil

1 8-oz can sliced water chestnuts, drained
1 1/2 to 2 lbs. ground beef

1 1/2 C. cooked rice

2 Tbs. Soy Sauce

2 Tbs. Brown Sugar

Directions: Cut off top of pumpkin; clean out seeds and pulp. In a large skillet, saute onion in oil until tender; add meat and brown. Drain drippings from skillet. Add soy sauce, brown sugar, mushrooms and soup; simmer 10 minutes, stirring occasionaly. Add cooked rice and water chestnuts. Spoon mixture into pumpkin shell. Replace pumpkin top and place entire pumpkin, with filling on a baking sheet. Bake for 1 hour @ 350 degrees in oven or until inside meat of pumpkin is tender.

Put pumpkin on a place; remove top and serve. For your vegetable, scoop out cooked pumpkin and serve!

Serves about 6-8 people

I hope you enjoy it! Have a wonderful Halloween!

This weekend I got online and found a DELICIOUS recipe for Pumpkin Cupcakes. I am sorry that I forgot who's blog I received this great recipe, but thank you! For any of you who do not know me... I think that cupcakes are one my favorite things to bake! In this area I am learning how to tweak and adjust ingredients quickly. (But mostly with the frosting) Tonight I will share with you the recipe and pictures to go along with it. I must admit, I did not take the pictures. My husband did and they look great. He is more skilled in the photo department than I am. (I know little to nothing about lighting and the settings on my tiny digital camera) Thanks Devin for helping me out!

Cream Cheese Frosting (Adapted from Cynthia Cockriel)

8 oz. cream cheese

1/2 T. milk

6 T. butter

1 tsp. vanilla

3 C. powdered sugar

Cream together cream cheese, milk, butter and vanilla. Slowly add powdered sugar. You can add chopped nuts if you so desire. ( I would assume it is delicious and it would add wonderful texture.)

I have decided to bake wonderful things, you don't necessarily need all of the fancy equipment. I put the frosting on by placing it in a ziplock bag and cutting the tip. I just squirt it out in a circular motion. There isn't a need for a pastry bag. This is where your creativity can come in, have fun and decorate however you desire.

When I made this recipe, I made miniature cupcakes. I will definitely go back to this recipe throughout the years.

Friday Night Classic

Pizza is a Friday night classic dinner. I made it the other night... It was not on a Friday, but I decided that Pizza is not just for Friday nights. I remember my mom making homemade pizza often. We usually had pepperoni with cheese. I love pizza.

On Wednesday I made a combination of toppings. I wanted to put mushrooms, onions, and green pepper on the side with the olives and hamburger... but we didn't have any of those things, so I made do with what we had. It turned out great.
