The non-profit Mississippi Wildlife Federation has successfully hosted the Extravaganza for 24 years. MWF is the state's largest non-profit, private conservation organization and is the state affiliate of the National Wildlife Federation. Proceeds from these wildlife shows support Mississippi conservation education programs and promote ethical and safe sportsmanship as well as stewardship of our dwindling natural resources.&lt;br /&gt;
&lt;br /&gt;
The show includes a full slate of hunting, fishing, photograph and wildlife seminars and demonstrations. Kids and adults alike will enjoy the archery ranges, shooting galleries and live animals. There will be a Fetch-N-Fish Fetch Tub for the kids.&lt;br /&gt;

Earlier this month I had the pleasure of meeting Regina Trosclair Charboneau of Twin Oaks in Natchez. She has owned several restaurants and I have thoroughly enjoyed her recent cookbook "Regina's Table at Twin Oaks". I found a great recipe, one of many, that I wanted to share.&lt;br /&gt;
&lt;br /&gt;
Roasted Pepper &amp;amp; Olive Salad&lt;br /&gt;
&lt;br /&gt;
&lt;ul&gt;&lt;li&gt;4 Red Bell Peppers&lt;/li&gt;
&lt;li&gt;8 Roma Tomatoes&lt;/li&gt;
&lt;li&gt;4 cups mixed salad greens&lt;/li&gt;
&lt;li&gt;1/4 cup Kalmata Olives&lt;/li&gt;
&lt;li&gt;1/4 cup balsamic vinegar&lt;/li&gt;
&lt;li&gt;1/4 tsp salt&lt;/li&gt;
&lt;li&gt;1 tsp sugar&lt;/li&gt;
&lt;li&gt;1/2 cup PECAN OIL&lt;/li&gt;
&lt;/ul&gt;&lt;div&gt;&lt;ol&gt;&lt;li&gt;Preheat oven to 400 degrees. Spray baking sheet with oil. place red bell peppers on baking sheet. put peppers in oven and roast for 20 minutes.&lt;/li&gt;
&lt;li&gt;Quarter roma tomatoes then salt and pepper the roma tomatoes quarters and place on baking sheeet with red peppers and roast for another 12-15 minutes&lt;/li&gt;
&lt;li&gt;Peel skin off roasted red peppers. cut in half and remove the seeds. then slice peppers into 1/2 inch strips.&lt;/li&gt;
&lt;li&gt;Arrange mixed salad greens on platter, then arrange roasted roma tomatoes around the edges. put roasted red peppers down the center. arrange the Kalmata olives around the peppers.&lt;/li&gt;
&lt;li&gt;in &amp;nbsp;small bowl mix vinegar, pecan oil, slat and sugar, drizzle over salad and serve.&lt;/li&gt;
&lt;/ol&gt;&lt;div&gt;Come to the farmers market to purchase most of the ingredients for this recipe.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;

We put up our feeders last nite in anticipation of more Hummingbirds arriving. We also have had many new flowers with the warm weather and I look forward to all of my many and different types of bulbs blooming so I can cut flowers and bring them inside to put on the different tables.&lt;br /&gt;

We had a great time, the weather was beautiful and it was great for me to get back out in the orchard again. I have been working in the shop so much I forgot how &amp;nbsp;much fun it is to work in the orchard. It even inspired me to work in my yard and garden!!! I wanted to show the difference between the new trees (the stick next to the red flag) and the mature trees. The water tank is what Mike uses to water the new trees until the irrigation is turned on. We have also added some more pictures of the orchard so you can see how it looks. We have had some great dinners so far in Jackson. Tonite we ate at Georgia Blue a nice restaurant at 111 Colony Crossing, Suite 130, Madison MS. We had the Georgia Blue Grilled Chicken over a bead of wonderful mashed sweeet potatoes. On top of the grilled chicken was thinly sliced ham with melted cheese. I also enjoy experimenting with different Mexican dishes and adding America's original nut the PECAN. Of course, I always substitute DELTA PECAN OIL whenever it calls for oil. These two recipes along with some great tacos or enchiladas warm you up on the inside on a cold winter night - which we in the South have had too many of this year.&lt;br /&gt;

Remember, anytime a recipe call for oil you can substitute DELTA PECAN OIL. It has a high smoke point at 470 and does not overpower anything you cook.&lt;br /&gt;

According to what I have read it is great for children or adults who cannot tolerate dairy products. Pecan milk can be made in your own kitchen, if you are patient enough to wait for the process. I located several recipes but thought this sounded the best. Personally, I just don't like milk so think I will give it a try. &lt;br /&gt;
&lt;br /&gt;
Pecan Milk&lt;br /&gt;
&lt;ul&gt;&lt;li&gt;1 1/4 cups raw or roasted Delta Pecans (unsalted)&lt;/li&gt;
&lt;li&gt;4 cups filtered or spring water&lt;/li&gt;
&lt;li&gt;1/4 cup raw honey&lt;/li&gt;
&lt;li&gt;1/3 cup coconut milk&lt;/li&gt;
&lt;li&gt;1 tsp ground cinnamon&lt;/li&gt;
&lt;li&gt;1/4 tsp freshly grated nutmeg&lt;/li&gt;
&lt;li&gt;1/2 tsp sea salt or Kosher salt&lt;/li&gt;
&lt;li&gt;Additional honey for sweetening&lt;/li&gt;
&lt;/ul&gt;Combine the pecans, salt and water in an air tight container. Seal and leave to soak in the refrigerator for at least 8 hours or overnight. Pour the soaked pecans and the water mixture into a blender (note that the water will have turned slightly golden from the nuts). Add the honey, coconut milk, cinnamon, and nutmeg. Process on high for two minutes or until the mixture is well combined and smooth. Sweeten to taste and store in the refrigerator. This will last one week refrigerated in an air tight container. If you would prefer a smoother beverage, pour the pecan milk through a sieve lined with cheesecloth.&lt;br /&gt;

Everything went smoothly and we hope everyone enjoyed their gifts. We had one set back after Christmas - our house was robbed! It is a shame that people think they have to steal from others rather than work and purchase what they need and want.&lt;br /&gt;
&lt;br /&gt;
I have found some new recipes which I have modified for DELTA PECAN OIL - try them at &lt;a href="http://www.deltapecan.com/pecanrecipes.aspx"&gt;http://www.deltapecan.com/pecanrecipes.aspx&lt;/a&gt; . There is a wonderful Duck Purlow recipe that any hunter would enjoy.&lt;br /&gt;

We are experimenting with some new "Delta Truffles" and will let you know when they are available. Better try them out on friends and family first to get the thumbs up.&lt;br /&gt;

A new Cafe is in production in Memphis - will let you know more about that later also.&lt;br /&gt;
