In this video above I am going to show you how to make fried plantain the Haitian way. I love fried plantain, I can eat it plain.

I like my fried plantain to be yellow, when it is dark it does not look appetizing to me. The secret to get that golden color is to add lime juice to the water that you will be soaking the cut plantains.

The reason we soak the plantain in salt water prior to frying it is not only to get rid of the starch that would give your plantain a dark color, but it also helps to add flavor to the plantain.

Beef tongue is a delicacy in Haiti. Knowing how to prepare it is very important to avoid any embarrassment.

The video above will show you the steps to marinade and cook the most delicious beef tongue. You must be open minded to make this dish. Some people may find it gross, but if you clean the meat properly, and add the ingredients for flavor, you will enjoy it. I prefer it fried, it has crispier texture that I love.

Conch Caribbean seafood

Conch is a great Caribbean dish. Cooking it right is what makes this seafood so succulent. It is usually expensive in certain areas such as in Jacksonville, Florida, a box of conch is about $65. There are about 20 pieces. Enough to feed about 4 people. In the carribean people eat it raw, in salad, grilled, and cooked in creole sauce. On this video below, I will demonstrate how to make it the traditional Haitian way!!! The meat is 100% muscle which makes it difficult to cook if you are not familiar with the techniques. Follow my tips on the video and enjoy a fabulous Caribbean dish.

1 Lb. Conch, shelled, cleaned, and skinned
1 Medium Onion, sliced
1 pinch of maggie
1 pinch of baking soda (speed up cooking process)
1/2 tsp Old Bay
1 tsp butter
1 Lime juice
2 tsp of sour orange
3/4 cup Water
1 Tomato, chopped
3 Cloves Garlic, minced
1/4 cup Vegetable oil
1/4 cup Scallions
3 Tbsp Tomato Paste
3 Tbsp Vinegar
1 Tsp Thyme
1 Tsp Parsley

How to make buttermilk

It is very easy to make buttermilk, all you will need is milk and some lemon juice.
1 cup milk add about 2 tablespoon of lemon juice or white vinegar.

Start by adding 1 tablespoon, then stir the buttermilk, then add the additional 1 tablespoon of lemon juice or white vinegar. After a few minutes,It will start to thicken, and voila you have buttermilk.

Now you don't need to go back to grocery because you forgot to get buttermilk. As long as you have some milk and some lemon juice, you are good to go!

How to make cod (morue) the Haitian way

For women who are nursing, eating cod is a great way to increase your milk supply. In my culture, it is customary to eat cod on Good Friday. We don't eat meat in that day, so red snapper or cod are the only meat we eat. I love eating cod, I love the texture, but if you eat from someone who doesn't know how to prepare it, it can gross you out.

To prepare it in sauce, you have to wash it at least 10x to remove all the salt--- which was used for keeping the meat fresh. As you would do with cleaning any fish, remove the scales. Then, boil the fish for about 30 minutes. Drain the water. What I like to do is to boil plain twin, yanm, and sweet potato with the cod, that way I don't have to add additional salt to them.

Some people would remove the skin and bones, but I love sucking on the bone because its a little salty and delicious. Add some oil to the pot, and place the fish with tomato, onions, green bell pepper, scallions, hot pepper. DO NOT ADD SALT!!! It's not acceptable to cook this fish salty! Add some Thyme, butter, and water. Lt it cook for about 45 min to 60 min.

Are you sick of being tired?

My daughter will be 9 months old in a few days, and yes I am still exclusively breast feeding her. My goal was at least six months, but she loves it so much I am shooting for 12 months. Honestly, I enjoy the bonding as well. It is kind of a stress relief to me. If she still wants it it pass 12 months, I'll be happy to keep breastfeeding her.

I am truly amazed by the benefits of breast feeding. Every children that I have known always get sick when they are teething. My daughter did not get sick from teething. When my husband went back to work after the holidays, he brought a cold home. My daughter had a cold for two days, and she did not look like she was sick. The breast milk protected her and strengthen her immune system. I also did some real Haitian castor oil massage for her. For hubby, I did the castor oil massage, and a secret flu weapon that I will post on YouTube. Cold was gone completely the following day. He had a high fever and was shivering, all of that was gone in the morning. He woke up well energized to get back to work.

Also with breast feeding comes tiredness. I opened a second location of Believe day spa & boutique in South Florida. I need all the energy I can get to run the business smoothly. Corn meal, black beans, bouillon, cows feet are among the things I eat to strengthen myself. I will share the recipes with you as always :)

Cows feet the Haitian way

Wash the meat with salt and vinegar

Place cows feet in a boiling water with 1/2 and orange

Also add 1 cinnamon stick and garlic

Do not add any seasoning until it's almost cooked.

It takes at least 1-2 hours to cook.

When you add salt, it will make the cooking process even longer.

~Avoid salt and lemon juice

When the cows feet becomes translucent and seems like the meat is falling off the bone, drained the excess water. In a clean pot, add some olive oil, then fry the cows feet with tomato paste. Add seasoning and some habanero pepper to taste. Add salt and a tablespoon of lime juice. Add salt and pepper to taste!

Super yummy and a great way to boost your energy, especially for breast feeding moms.

Tender roasted Chicken with Coffee

Late Night Coffee Brined Chicken

Serves 4

FOR THE CHICKEN

1 (4-5 pound) whole organic chicken

2 1/2 tablespoons brown sugar

1 1/2 tablespoons unsalted butter

2 cups 1% milk

FOR THE COFFEE BRINE

1/2 liter hot, freshly brewed bold coffee

3 ounces kosher salt

2 teaspoons whole black peppercorns

3 star anise pods

1 teaspoon whole cloves

2 juicy navel oranges, halved

15 ounces ice

1. Combine salt, peppercorns, star anise, and cloves in a small pot. Lightly crush spices with the back of a large spoon. Squeeze orange halves over mixture, and then add halves. Pour hot coffee over mixture, stir and cover pot with lid. Allow brine to steep for ten minutes.

2. Meanwhile, pat chicken dry, removing giblets and neck. Place chicken in a 2 gallon sized zip lock or other plastic bag.

3. Place the ice in a large bowl. Add coffee brine and stir until ice melts. Pour brine in bag with chicken (including oranges), seal and allow mixture to sit at room temperature for two to three hours. Then pat chicken dry and let it dry out for an hour in a bowl placed in the refrigerator.

4. Preheat oven to 375 degrees F.

5. Remove chicken from refrigerator, pat dry and rub both sides with brown sugar.

6. Heat butter in a Dutch oven over medium heat, brown chicken on both sides. Add milk, cover, and transfer to oven. Cook for an hour with the lid. Remove lid. Continue to cook for another 30-40 minutes, or until internal temperature of chicken is 165 degrees.

7. Pull meat off the bones and serve with wilted greens and rice. Be sure to spoon some of the sauce over the meat, if desired.

Use our checklist to organise your Christmas baking:

Baking Checklist

Estimate number of baked items needed for the holidays. Include gifts, parties, afternoon teas, get togethers and include extra for unexpected guests.

Decide on recipes and search for old favorites and perhaps some new ones.

Make a list of all ingredients needed. Check supplies, including staples such as butter, flour, sugar etc and make a list of ingredients needed to be purchased.

Check expiry dates on nuts and spices in your pantry. If out of date, discard and buy new ones.

Bake ahead and freeze where appropriate. Brownies and bar cookies are ideal.

Set aside a day for baking. Not everything can be made in advance, so pour yourself a glass and put on the carols. Pretty soon this may become part of your family’s Christmas traditions.

Wrap goodies for gift giving and store.

2. Pumpkin Chocolate Chip Cookies

Ingredients

1 cup canned pumpkin

1 cup white sugar

½ cup apple sauce

1 egg

2 cups all-purpose flour

2 teaspoons baking powder

2 teaspoons ground cinnamon

½ teaspoon salt

1 teaspoon baking soda

1 teaspoon milk

1 tablespoon vanilla extract

2 cups chocolate chips

½ cup chopped walnuts

Method

Preheat the oven to 180oC / 350oF and line two cookie sheets with baking paper.

Combine the pumpkin, sugar, apple sauce and egg.

Sift together the flour, baking powder, ground cinnamon and salt.

Dissolve the baking soda into the milk then add to the flour mixture.

Add to the pumpkin mixture and mix together. Add the vanilla, chocolate chips and nuts and combine.

Drop Spoonfuls of the mixture onto the cookie trays and bake for approximately 10 minutes or until lightly browned and firm to the touch.

3. Chocolate Almond Rum Balls

Ingredients

550g / 19 oz chocolate cake, crumbled

1 ¼ cups almond meal, almond flour or ground almonds

½ cup dark rum

½ cup sweetened condensed milk

Packet chocolate sprinkles

Method

In a bowl, combine the cake crumbs, almond meal, rum and condensed milk. Mix well to combine.

Roll heaped teaspoons of the mixture into balls then roll in the chocolate sprinkles.

Place the balls into mini baking cases and chill in the refrigerator until firm.

Grandma sauce

I have to give my grandma all the credit for my excellent cooking skills. Growing up, my parents would not allow me to go on the stove in fear of getting burned. When I go visit my grandma for summer break, I would mimic the servant (Very Nice lady). They cook everything fresh! They would kill the chicken, and I would take the intestines to cook, absolutely yummy!!! If you know how to cook delicious Chicken intestines, then you are a great cook. My grandma bought me a very small pot and a very small "recho". I would take charcoal, and start the fire. Clean and season my meat, then cook it.

When we are visiting grandma she makes or have her servants prepare us the best food ever. We would eat with wine, and different meal everyday. It's not typical in Haiti, but I guess she had it going on. By the time we were done eating a wonderful breakfast, they were getting ready to fix lunch, and by the time we were done with lunch, they were getting ready to fix dinner. Keep in mind that while we are waiting on lunch or dinner, we were always snacking on something. It could be dous makòs, labapen, pate kòde, etc...

Back in Port-au-Prince, I attended a cooking school with my aunt and my older sister. I was only 6 years old, but I would take notes and taste those delicious food. I am not great at following directions in cookbooks, so I memorized the recipes. When I go visit my grandma, I would make them. Also there was a cooking school right next door, those ladies would practice everything they have learned in their cooking class with me at my grandma's house. Some days we would bake cake, patties, lobster, fish, macaroni gratiné, etc... My grandma would purchase everything needed to make whatever I wanted to make for that day. Oh yes! they spoiled me :-) My grandpa was my number one judge. He is basically just like my hubby. He would eat any crap that I make lol... Most of the time they were good, but even if they weren't he was always my greatest supporter.

My mom was raised like such, so she really knows how to cook. I watch her when she's cooking, but she's the queen of cordon blue

How to make thanksgiving turkey The Haitian way

Although THANKSGIVING is a Native American Cultural thing to eat turkey on that day, but those of us Haitians who live in the country also celebrate it with friends and family. I had many requests about making a video on how to make a non-traditional turkey on Thanksgiving day. I had an overwhelming requests for my Haitian Grandma's sauce, it makes life easier.

My lovely mother gave me a turkey, it is bigger than my seven months old daughter. That turkey is super heavy! If you have a big turkey, it is best to cut it into pieces, it will taste a lot better. This year cooking was super easy, I just pour that "Haitian Grandma Sauce" and Done! I had so many orders of my Grandma's sauce, that people are on a waiting list for three weeks. Next year, I will definitely start taking orders sooner, because the sauce can stay in the freezer for at least 6 months. I feel so bad for the people who ordered at the last minute, and have to wait. I like to make sure that they come fresh on my end.

Haitian Pumpkin Soup Recipe

Ingredients:

2 pounds butternut squash or pumpkin (about 7 cups)

10 cups water, plus more if needed

Salt and pepper to taste

2 jalapeño or serrano peppers

10 whole cloves

4 carrots, peeled and sliced

2 turnips, peeled and cut into small chunks

1/2 small head green cabbage, cored and roughly chopped

1/2 teaspoon ground nutmeg

3 tablespoons lemon juice

1/4 pound vermicelli or spaghetti

1/4 cup chopped parsley

Stuff Chicken with Lime, orange, green bell pepper, thyme, challots, hot pepper

Rub the chicken with Grandma's sauce, butter, salt & pepper

Add lemons, potatoes, butter, and carrots on the side for a yummy sauce

After you rub the meat, Place in the oven for 1 hour at 350 degree or until golden brown (It looks burned, but the it was golden. The flash makes it look dark)

Soup Joumou Recipe

Soup Joumou Is also known as Soup Giraumon (French) pumpkin soup (English). We serve this soup on January 1st to celebrate our independence day. Haiti has been independent since 1804, and all Haitians should be proud since we were the first nation to fight for our liberty. Joumou was reserved for the wealthy, and the slaves were forbidden to eat it. It is an honor to sit with friends and families to eat a bowl full of soup joumou :-)

In my case, I eat it throughout the year because that's one of my favorite soup. On the video, I showed step by step on how to make this delicious soup. Although I did not have Joumou, I substituted it with packaged buttermilk, it still came out yummy!
