			<content:encoded><![CDATA[<p><strong>Daylight savings time is the practice of advancing clocks so that afternoons have more daylight and mornings have less.</strong> Although it was originally designed to reduce electric usage, there&#8217;s controversy over whether it&#8217;s actually had this effect. Now, daylight savings is primarily used a marker for the beginning of a season and to take care of certain items like changing your clock and changing your smoke detector batteries. You may be saying, &#8220;But, Chef Todd! This is interesting and we love the info, but what in the world does it have to do with the art of cooking?&#8221;</p>
<p><strong>I&#8217;m so glad you asked!</strong></p>
<p><strong>Whether we change the clocks or not, the days get longer naturally.</strong> This is a signal for the plants to start getting ready to provide fruits vegetables, herbs and spices for us in the coming growing season. Now we&#8217;re cooking!</p>
<p><strong>If you have a love of cooking, there are some cooking tasks that you should associate with daylight savings time.</strong> The most cooking fun of the year is cooking outdoors. Some might say it&#8217;s an art form.</p>
<p><strong>As with any artist, some preparation is in order for you to prepare for the season of fun, outdoor cooking.</strong> First, to be able to practice the art of cooking outdoors, you will need clean cooking tools.</p>
<p><strong>Let&#8217;s start outside:</strong></p>
<p>Inspect and clean the BBQ grill, smoker, and/or your outdoor cookers.<br />
Look for spiders and dirt.<br />
Check your gas tank for leaks (put some soapy water on a pastry brush and brush the liquid mixture onto the top of the tank, turn on the pressure…you don&#8217;t want to see bubbles)</p>
<p><strong>Cooking is a lot more fun when you have enough gas, charcoal or wood chips for your outdoor cooking.</strong> It&#8217;s certainly no fun to run out of gas in the middle of cooking a steak.</p>
<p><strong>As soon as you feel the last frost has come, spend some time preparing your herbs indoors and outdoors. </strong>Window box herbs will give you a small, quick start, but your outdoor garden should be tilled and fertilized for the coming season. If you start putting some love into your garden now, you&#8217;ll be ready for some fun, tasty cooking early in the season.</p>
<p><strong>But your outdoor herbs aren&#8217;t the only things that need attention for you to have some fun cooking.</strong> In my next post, we&#8217;ll talk about how the art of cooking outdoors also requires some inside preparation.</p>

			<content:encoded><![CDATA[<p>As humans, we all make mistakes. It is human nature to do so, and cannot be prevented each and every time. When it comes to barbequing, this rule is no different. We often make mistakes that we do not even realize until we taste our food, or something potentially dangerous happens.</p>
<p>Some mistakes just mean that the food you cook is not going to taste very good, while others could potentially mean a trip to the hospital, or a visit from your claims representative on your home insurance policy. No matter the severity of the mistake, you should do your best to try to avoid them whenever possible.</p>
<p>Cooking Mistakes</p>
<p>You must properly prepare the meat you are cooking, before cooking it. You should never attempt to cook meat on a grill when it is still frozen, or even partially frozen. Thaw your meat by sitting it out about 12 to 24 hours before you plan on cooking it, or by thawing it in a microwave.</p>
<p>Once meat is cooked, never put it back in on the same plate you had it on when it was raw. This could cause the spread of many unwanted illnesses.</p>
<p>Cooking with charcoal lighter fluid can be good or bad. The lighter fluid will cause the food you are cooking to taste different then with other types of grills. Alternatively, attempting to not use lighter fluid may cause a lot of frustration due to the fact that charcoal can be difficult if not impossible to light without lighter fluid.</p>
<p>Never poke you meat while it is cooking. Poking holes in meat will cause the juice inside to leak out into the bottom of the grill.&nbsp; Not only will this make your food dry and unappealing in the end, but it also could potentially ruin your barbeque grill. At the very least, it will cause a buildup of unwanted grease and juices on your grill, which will make cleanup harder.</p>
<p>Once the meat is on the grill, try not to open the lid to many times. Each time you open the lid, you change the temperature in the grill. The constant change in temperature and the air flow will cause your meat to dry up quickly.</p>
<p>Remember that the higher the heat is not always the better. While it is ok to quickly cook food, turning the heat up will just cause the meat to dry up and potentially burn.</p>
<p>While using tin foil or aluminum foil will make cleaning easier, it will cause your food to have more of a fried taste then a grilled taste.</p>
<p>Dangerous Mistakes</p>
<p>Never, under any circumstance, should you leave a grill alone when it is in use. Grilling does have fire involved, and accidents can happen. Fire spreads quickly, so being aware of your grill could mean the difference between a small fire that is quickly extinguished, and a visit from the fire department.</p>
<p>Never place a hot grill against a wall, even if the fire is already completely out. A hot grill can heat up an exterior wall to the point of combustion. Also, do not put the grill cover back on until you are sure that the grill is completely cool.</p>
<p>You grill should be cleaned after each and every use, no exceptions. While no one likes cleaning the grill, it is essential for the life and safety of your grill. If you allow your grill to sit dirty, not only are you causing a potential fire and health hazard, but you are ultimately making it harder on yourself when it does come time to clean your grill.</p>
<p>Make sure that your grill is completely cold before cleaning it. Spraying oil and cleaning agents on a hot surface could cause it to ignite. Be careful, because the grill may seem cool, but may still be hot in certain areas. You do not want to sustain a burn.</p>

<p>Most weight watcher recipes seem to involve fruits and vegetables. There are those which involve shrimps and meat, but keep in mind that a recipe that uses meat excessively, would probably not bring about the results that you desire. Some of these weight watcher recipes seem to use chili quite generously so, beware of such recipes if you are one of those people who cannot stand chili.</p>
<p>Preparing your food according to some weight watcher recipes might actually cost you quite a lot. There are those which involve caviar so, if you are not prepared to spend a lot do not go for such recipes. The most expensive recipes might not be the most effective ones.</p>

			<content:encoded><![CDATA[<p><strong>It&#8217;s time to eliminate the idea that you have in your head that you don&#8217;t know how to cook </strong>and possibly can&#8217;t even learn how to cook! In fact, I say that you already have some cooking knowledge and I&#8217;m going to prove it to you. How? Well, you are eating something at home right? We all have to feed ourselves at some point, even if it&#8217;s opening a can of soup and heating it up.</p>
<p><strong>Opening up a can of soup, emptying it into a pan, mixing in some milk and heating it up</strong> was one of the first meals I was ever able to make for myself. When I was a kid, I used to love Campbell&#8217;s Cream of Shrimp Soup and I played hockey. Somehow, along the way, I had convinced myself that eating Campbell&#8217;s Cream of Shrimp Soup made me a better hockey player and I had to have a bowl before every game. (I know, some people think they play better with a new pair of shoes, I played better when I cooked myself something…go figure.)</p>
<p><strong>Adding Variations</strong></p>
<p><strong>After some time went by, I realized that there really weren&#8217;t that many shrimp in the soup</strong>, so I added some whole fresh shrimp. I didn&#8217;t have the cooking knowledge at the time, but I was poaching the shrimp in the liquid. Then, I noticed that while I had more protein, now the soup itself seemed thin. So, I added some American cheese to thicken it and then some cayenne pepper for a little more flavor. Eventually, I put some sherry in the soup to give a little smoky flavor. I took something as simple as opening a can of soup to expanding on the method and created variations.</p>
<p><strong>If you can open a can of mushroom soup and pour it over a &nbsp;pan of chicken breasts, that&#8217;s a method!</strong> Maybe you could do that with fish instead. Or you could decide that the cream of mushroom soup is a sauce and make the sauce better by adding different items. Add variations to a method that you already understand and you&#8217;re increasing your cooking knowledge and learning how to cook.</p>
<p><strong>Each time you make a new variation, you&#8217;ll gain more confidence and as you explore</strong>, create and discover, you&#8217;ll increase your cooking knowledge and be where you want to be as a cook.</p>
<p><strong>Grilling Example</strong></p>
<p><strong>Let&#8217;s say that you&#8217;re great at grilling but you&#8217;re not a good cook inside the house. </strong>So, here&#8217;s what you do…pay attention and make a mental note of your grilling steps. Perhaps you heat the grill, put a burger on, look for grill marks.&nbsp;Now, go inside and put yourself in a zen-like state (you can do it!) and pretend as you look down into the sauté pan on the stove that it&#8217;s actually the grill. Perform the same steps or method as you would outside.</p>
<p><strong>Really, this works! Grilling is a conductive heat method and sauteing is a conductive heat method</strong> as well. Because the transfer of heat is the same, you can simply try variations.</p>
<p>If your one dish is mac and cheese, you make it great, but you might say you can&#8217;t make a good alfredo sauce. <strong>If you examined the method, </strong>you&#8217;d see that making a white sauce and putting cheddar for mac and cheese is no different than adding parmesan for alfredo sauce.</p>
<p><strong>Variations…Like Driving a Car</strong></p>
<p><strong>You do this already in other areas of your life. Let&#8217;s take driving for instance.&nbsp;Think about it. </strong>You drive the same way to work everyday: start on Main Street, take a right on Jones St., left on Smith St. and you&#8217;re at work. One day when you&#8217;re driving, you notice a cool place that&#8217;s closer to your home but it&#8217;s on the way to work. Well, you may not realize that if you took Washington St. from work you would get there quicker, but if you don&#8217;t know the route, you will take the route that you know and make a slight change to get to your destination. You will make a variation on the driving route or method that you already know.</p>
<p><strong>You do know how to cook, eliminate the doubt, because you do know how.</strong> You might not have a wide range of cooking knowledge, but you have a start. <strong>Experiment, learn and build on it.</strong></p>
