<p>Vongole, which are known in the English speaking world as clams, can be used for a variety of dishes ranging from simple appetizers to chowders down to pasta and risotto. For me the best way to eat them is either simply sauteed over bruschetta or with spaghetti, but strictly tomato-less. This is the best way to enjoy their taste, a heady mix of mellow sweet flesh and iodine.</p>
<p>As usual with clams, there are a couple of things to do before cooking them. First of all discard any open clams that do not react when you touch them. Second, given vongole’s natural habitat, they need to be purged to eliminate any sand they might have ingested: to do this, simply cover the telline with 1 quart of cold salted water (about 1 tablespoon of salt will do) and let them rest for 3 hours somewhere dark. </p>
<p>After that time, simply lift them from the water leaving any sand behind.<br />
The recipe below is for spaghetti with clams, yet if you leave the pasta out and stop once the clams are open, you have sautée di vongole, a tasty antipasto on its own. </p>
<p>Also, I have made the parsley optional in the recipe because some people aren’t particularly fond of this herb, yet traditionally parsley is a must on pasta with any sort of shellfish. Clearly, you can use this recipe with any sort of small clams that are typical of the area where you live. The freshest your clams the better, and what’s fresher than local?</p>
<p>    * 1 kg (2.2 lb) clams, purged as described above<br />
    * 500 gr (1.1 lb) spaghetti<br />
    * 2-3 tablespoons of extra virgin olive oil<br />
    * 2 garlic cloves<br />
    * 1 dried peperoncino (or more to taste)<br />
    * 1/2 glass of dry, white wine (optional)<br />
    * 1 tablespoon Italian flatleaf parsley (optional), chopped<br />
    * Salt</p>
<p>Bring a large pot of very lightly salted water to a boil, in the meantime start heating the oil over a medium flame in a pan wide enough to hold all the clams in one layer.</p>
<p>Once the oil is hot but not smoking, add the garlic and peperoncino, and as soon as the garlic turns golden brown, crank up the heat up to the maximum and add the clams. Shake the pan to distribute the clams as much as possible. Add the wine here, if using, letting it evaporate. Cover the pan and allow the shells to open for 2-3 minutes.</p>
<p>Discard any clams that fail to open, the garlic and the peperoncino. By no means discard the precious clam juice collected at the bottom of the pan! You’ll be using it to dress the pasta together with the clams themselves. If you properly purged the vongole, there should be no sand there, but if there still is some, simply strain trough a clean cheesecloth.</p>
<p>The pasta water will probably be boiling by now, so add the spaghetti, pushing them down so they fit into the pot if you don’t have a special high spaghetti pot, stir and check from time to time. Never, under any circumstance, break the spaghetti to make them fit the pot!</p>
<p>You can add the clams to the pasta in their shells, something many of us do in Italy, yet, in regards to your guests, it is courteous to remove the clam meats from most of the shells, keeping only a few to decorate the dishes. The best way to do this is getting messy and using your fingers. (I would recommend you get someone else to help you, so that you speed up things while the pasta cooks.) Once shelled, return the clams to their juice.</p>
<p>As soon as the pasta is cooked slightly short of al dente, drain and add it to the vongole pan, together with the clam meats and juices, tossing for a minute over a medium flame to blend the flavors. At this point, the aroma in the kitchen will force you to come to terms with the fact that there will be no leftovers.</p>
<p>Divide the seasoned pasta among four (warm) dishes and garnish with the remaining clams in their shells and, if you like, parsley. Uncork a bottle of chilled white wine and luxuriate.<br />

<p>Food Processing is a technique used to convert raw food into eatable food (Or REAL food as we like to call it!). Let&#8217;s look at an example. Kids will eat nuggets easier than the pre-processed chicken &#8211; it just looks more appealing to them. So basically, food processing is used to make food more marketable and appealing. As for food preservation; one method to slow down food spoilage. The main function is to prevent the growth of bacteria, fungi and other organisms harmful for consumers.</p>
<p>Basically, the food processing industry uses both these methods to give us -the consumer- a nutritious, easy to store and easy to cook product. A number of techniques are used to get the final preserved product e.g. drying, freezing, vacuuming etc. and we will look at some of them below:</p>
<p>Lowering the temperature: Refrigerating or freezing is probably the most common method used, especially at home. It takes some time for food that is chilled or frozen to spoil. The cold temperature slows down bacterial action and therefore keeps your food unspoiled for longer. Freezing is even better, as the bacterial action reduces to a negligible amount when frozen.</p>
<p>Dehydration: Some foods have to be dehydrated for preservation e.g. dried fruits, dried vegetables, powdered milk etc. When foods are dried, bacteria will become inactive. So, foods in air-tight containers will therefore last a long time.</p>
<p>Freeze-drying: This is the next step on from dehydration and is a better process as it does not affect taste so much. This is widely used to preserve coffee and some fruits.</p>
<p>Salting: One of the oldest (one can call it ancient) methods for preservation of food (meats in particular) is salting it. This is because bacteria and other micro-organisms can&#8217;t survive in a salty environment. In addition, if meat is salted in cold weather, it can last for years.</p>
<p>Sterilization: Using heat to kill bacteria is a very good method of food preservation. This method is not only used for food but also in a number of hospitals to clean/sterilize the surgical instruments. People in the third world countries boil milk (and even water in some cases) to make sure that it is bacteria free.</p>
<p>Vacuum Packing: This is based on removing all air around the product, therefore removing the one thing bacteria need to thrive. This is done with industrial food processing equipment which removes all the air in the packaging around the food, using a vacuum packer machine. Food is first heated to kill the bacteria and then sealed. Canning was the original method used, but nowadays plastic packaging is just as common.</p>
<p>The use of food processing machinery in itself is not necessarily bad : The key factor to look at when making your food choices, is how the food has been processed and preserved, and what &#8211; if any &#8211; chemicals have been added to it.</p>

Everyone has a favorite recipe and I love to give them a try as well as share some of my own. Food is and always will be such a big part of our lives and the creating, the smells, the presentation and of course the flavor of it can be such a enjoyable thing. &#8220;That is unless it is that one dish you can&#8217;t stand that mom makes you eat anyways!&#8221;</p>
<p>There are so many choices of <a href='http://www.squidoo.com/Recipe-Sharing-' target='_blank'>mushroom stuffing&#8217;s to</a>  choose from. Some of the stuffing&#8217;s I have been told about are crab, sausage, escargot, spinach and imitation crab. You can even get the recipe of some restaurants that serve stuffed mushrooms like Red Lobster or The Olive Garden.</p>
<p>Here is my special recipe that was my nephews favorite, he gave his life for us in Iraq at the age of 20 but he so enjoyed these so keep the recipe alive in his honor!</p>
<p>2 dozen mushrooms (the size of a ping pong ball<br />
2 large packages cream cheese (softened)<br />
1 bunch of green onions (green ends only, finely diced)<br />
1 jar of Hormel bacon bits<br />
1 package finely shredded sharp cheddar cheese</p>
<p>Mushrooms: clean, snap off stems, use a melonballer and take out a scoop for stuffing (don&#8217;t make walls to thin).</p>
<p>Stuffing: cream cheese, green onions, bacon bits (mix well)</p>
<p>Fill mushroom with stuffing with spoon and make level not rounded on top.</p>
<p>Take a good size pinch of cheese and set on top of mushroom.</p>
<p>Bake at 350% for about 20-30 minutes. You will know they are done when the Mushroom juices are running on the cookie sheet.</p>
<p>Let sit for at least 10 minutes and then nothing else to do but gobble them up!</p>
<p>I don&#8217;t know if you have tried my first recipe on here for stuffed mushrooms but this Stuffed Portabello Mushroom recipe is a much heartier version with a new addition of spinach.
