It is Scavenger Hunt Sunday!

Sunset – From the 101 Freeway near Shell Beach.

Black and White – this is the harbor in Avila Beach.

A day in my life & Four – I did this together because one, I have a lot of pictures of Joey and Diego together so getting four of them was easy. This is also a day in my life, Mike calls me after I get home from work and always asks “what are the boys doing, are they helping you clean the house?” I always say yes, they are helping me clean but this is what they are really doing every time he asks that question. My favorite is the one where Diego is using Joey’s butt as a pillow.

Colorful – Was also taken at the harbor in Avila Beach. I was surprised this picture turned out colorful because it was very gray and stormy out. We have been having a little storm for the last couple of days. But looking at this picture you wouldn’t know that it just rained all night.

Strawberry Shortcake Stacked Pancakes…….

Here is another recipe from my new favorite vegan blogger…….Oh She Glows. I have made several things from her site and so far we have loved them all, like the raw cookie dough balls We have cut out sugar in our diets and let me tell you it hasn’t been easy. I had no idea I was such a sugar addict. Trust me it is harder than you think to cut sugar out. We replace white sugar with other things like maple syrup or cane sugar. This recipe only has a little bit of maple syrup for it’s sugar and it was really good. It looks like it would be full of sugar with that strawberry soft serve on top but, NO! There is no sugar in the soft serve.

Strawberry Shortcake Stacked Pancakes

1 cup + 1/4 cup whole wheat flour

½ cup shredded, unsweetened coconut

1 teaspoon baking powder

¼ teaspoon baking soda

¼ teaspoon nutmeg

¼ teaspoon allspice

¼ teaspoon cinnamon

Pinch or two kosher salt

¾ cup coconut milk

½ teaspoon pure vanilla extract

1 tablespoon pure maple syrup

¾ cup warm water

Oil, for skillet

Strawberry Banana Soft Serve (3 strawberries + 1 frozen banana, processed in food processor)

Preheat oven to 250F and grab a baking sheet. Whisk the dry ingredients (flour, coconut, baking soda, baking powder, spices, and salt) in a medium sized bowl. In a small bowl, whisk together the wet ingredients (coconut milk, warm water, vanilla, maple syrup) and then add to the dry ingredients. Whisk well until no clumps remain.

Preheat the skillet over medium heat and add some oil on the pan. Pour 1/4 cup of batter, per pancake, onto the skillet and quickly smooth out a circle with the back of a spoon. Cook until small bubbles appear on the surface and the bottoms of pancakes are golden. Reduce heat if necessary (I cook them on heat # ‘3’). Transfer to baking sheet and place in the oven to keep warm.

Meanwhile, slice about 20 strawberries. I also made Strawberry Banana soft serve by processing a frozen banana with a few strawberries to make the cream sauce. Once my pancakes were stacked, I scooped the strawberry banana soft serve on top. Drizzle with maple syrup and serve immediately.

I would never have guessed that if you put a frozen banana in the food processer that it would have the consistency of soft serve ice cream. I made this for Hailee but replaced it with raspberries and she ate it for breakfast with some granola on top.

Hailee and I ate this for dinner one night when Mike was out of town. Girls eat breakfast for dinner sometimes!

Sunday Snapshot…..

I live with a mischief cat, he feels that he can do what ever he wants and how dare I stop him from doing the things he wants to do. He likes to drink out of the sink. I was talking on the phone and making pizza sauce. When the sauce was done I transferred it to a jar and put the pan in the sink with water and since I was on the phone…….I thought I will come back and clean it when I’m done on the phone. So I went about talking on the phone and doing things around the house. When I was done I came back to the kitchen to find the “I can do what ever I want cat” drinking the water out of the pizza sauce pan that was full of water in the sink.

Here he is mad at me because I wouldn’t let him go. One, I needed to get a picture of his new orange goatee and two, I have a white couch and there was no way I was going to let him leave without washing his face!

Cats!

It is also Scavenger Hunt Sunday but I couldn’t get all of the items this week! I am not going to join in but I did get one of them done which was fur babies sleeping. I have two fur babies who (when not getting into trouble)do nothing but sleep all day. I’m just going to show you them since this is another Diego post. It was hard to choose because he is so cute when he sleeps.

I can’t forget Joey he likes to sleep in his heating blanket.

Take a new look……..

I don’t feel qualified to share photography or photo editing tips with anyone since I’m just learning and I still need to learn a lot! Except…….. I learned some new tricks with PSE and thought I would apply them to some old pictures. I love how the colors pop now, but then I saw this article on HDR photography (have you seen this?) and thought the pictures were so pretty and wanted to try it. But the process is were you take three pictures at different exposures and then combine them together. I didn’t have three pictures that were at different exposures. I found this app called HDR Darkroom and they can do it with one picture. Look at the difference, it is suppose to make it look more dramatic. Check out this website by Trey Radcliff, his pictures are amazing and gorgeous…..also he has tutorials.

What do you think of HDR Photography? Will you try this or have you tried it?

The Cottage Sisters Starring Diego……..

We are going to have to change the name of the blog to The Cottage Sisters starring Diego and Joey. I can’t help it. When I want to practice playing with my camera they are always around and it is not my fault that they are cute! Right?

One of the great things about blogging is that people share everything. I love how photographer’s will share how they do things. Everything I have learned about photography and photo editing has been from bloggers. As you know, because I have mentioned it several times, PW’s 70’s action is my favorite. I found a new action called Urban Delight from Paint The Moon, that I really like. Check out her pictures they are gorgeous and she also has other actions you can purchase. Thanks to Amanda at Everyday Elements, I figured out how to install actions on my Mac. Thank goodness for bloggers!

Hailee said this next shot is a typical Diego face. I call it “not the camera again” face. Or the “get that camera out of my face!” face. Doesn’t he look like he tried to outline his nose with a too dark of a liner? He didn’t really that is what his nose looks like after he is done playing outside. Just like a little kid who comes home from school filthy dirty.

On a trip to Morro Bay, we met this cute little girl named Rika that is seven months old and she was so sweet…..I was in love! She lives on this boat with her dad who is in the coast guard and she is being trained as a search and rescue dog. Vizsla’s are loyal dogs and they have the best temperament (she was so mellow and happy). I also found out they don’t have that dog smell that most bigger dogs get. That is a big plus to me and her ears were as soft as velvet. This is the kind of dog I want but Hailee wants a French bulldog.

Rolls and Leftovers…….

Leftovers are just as good the next day as the food was the day it was made. I made these rolls because Mike had a vision of what he wanted his Thanksgiving day leftovers to be. He wanted an open sandwich with veggie turkey, which our favorite is the Quorn turk’y roast, stuffing and mash potatoes with vegetarian gravy. I didn’t take pictures of the gravy but my favorite gravy is from Baked Bree. I made it last year and liked it better than the one I had made for years. It tastes so good and it is much easier than my old one. I found this roll recipe over at The Sisters Dish and they were so easy to make and they were delicious. I only made a few changes, I’m not a big fan of shortening so I used Earth Balance and I don’t know if the sisters melted their butter but I did. I also made my rolls bigger so they were more sandwich size.

Rolls

1 package (1/4 ounce) active dry yeast

1 cup warm water (110° to 115°)

2 tablespoons butter, melted

1 tablespoon sugar

1 teaspoon salt

1 cup white-whole wheat flour

2 ½-3 cups all-purpose flour

2 egg whites (1/4 cup liquid egg whites)

Cornmeal

------------------------------------------------------------------------------------------------------------

In a bowl, dissolve yeast in water. Add butter, sugar, salt and 1 cup flour; beat until smooth.

Add egg whites; mix well. Add enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes (dough will be stiff).

Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 ½ hours.

Punch dough down; divide into 5-ounce pieces and shape into balls for sandwich rolls or 2 ½-ounce pieces for dinner rolls. Sprinkle silmat-baking sheet with cornmeal.

Place rolls 2-inches apart on baking sheets. Cover and let rise until doubled, about one hour.

Place a large shallow pan filled with boiling water on lowest rack in oven.

Bake rolls on middle rack at 425° for 10-11 minutes for smaller rolls and 15 minutes for sandwich rolls or until golden brown.

Mike piled leftover veggie chicken, stuffing and mash potatoes on top of the roll and covered it in gravy. He said it was just what he wanted.

Favorite Snack….

My favorite snack these days is an apple cut up into chunks and then I add one tablespoon of protein powder that has cinnamon, allspice, ginger and nutmeg. I don’t really have a recipe for it. Depending on how big your jar is mine is a smaller one, I put 7 scoops of protein powder in the jar and added 3-4 tablespoons of cinnamon and one teaspoon each of allspice, ginger and nutmeg to it. Add more or as little of the spices to your taste. Put the cut up apples in a baggie or container and add 1 to 1 1/2 tablespoons of the protein mixture and shake them up. These are really good!

They make a perfect snack…..enjoy!

Scavenger Hunt Sunday is here.

Waiting - This is Hailee patiently waiting for me to stop taking pictures.

Foliage – Avila Barn has a lot of sunflowers right now.

Candid – This was a photography lesson for me, I had to look up what Ashley wanted when she said candid. This is what I found out……candid photography is best described as un-posed and unplanned, immediate and unobtrusive. This one is from the archives but when it was taken I didn’t even realize I had taken it until I got it home and was going through the pictures.

Knife, Fork or Spoon - I love my silverware……I think it is so pretty it looks like jewelry.

Rule of Thirds – This is my office buddy Bentley.

Peanut Butter Cups…..

I made vegan peanut butter cups from The Kind Diet cookbook by Alicia Silverstone. They were really good and very easy to make. I left off the peanuts on the top just because Hailee doesn’t really like them, next time I will probably do half with peanuts and half without.

Vegan Chocolate Peanut Butter Cups

1⁄2 cup Earth Balance butter
3⁄4 cup crunchy peanut butter (preferably unsweetened and unsalted)
3⁄4 cup graham cracker crumbs or 10 graham cracker squares
1⁄4 cup maple sugar or other granulated sweetener
1 cup grain-sweetened, nondairy chocolate or carob chips
1⁄4 cup soy, rice, or nut milk
1⁄4 cup chopped pecans, almonds, or peanuts
-----------------------------------------------------------------------------------------------------------
Line a 12-cup muffin tin with paper liners. (If You Care makes unbleached liners made from recycled paper.) Set aside.
Melt the butter in a small saucepan over medium heat.
Stir in the peanut butter, graham cracker crumbs, and maple sugar and mix well. Remove the mixture from the heat.
Evenly divide the mixture, approximately 2 tablespoons per cup, among the muffin cups.
Combine the chocolate and milk in another pan.
Stir over medium heat until the chocolate has melted.
Spoon the chocolate evenly over the peanut butter mixture.
Top with chopped nuts.
Place in the refrigerator to set for at least 2 hours before serving. They are great soft, but even better a little firmer
MAKES 12

Vegan Mac and Cheese……

In our effort to eat healthier, we had to find a mac and cheese recipe because it is Hailee’s favorite comfort food. We have been trying to cut out sugar and dairy. I have to say we all feel better and Hailee and Mike both have lost a lot of weight. Hailee who is very picky has been so good at trying new things and being open about it. I think the fact that she feels so much better has opened her mind at trying new things to eat. Instead of cheese this mac and cheese has nutritional yeast which has a cheesy taste. I found this at my new favorite vegan blog Oh She Glows. Oh She Glows used different spices. It isn’t Mac and Cheese to us without the nutmeg and cayenne pepper. This is also a lot easier to make than regular mac and cheese, which I love.

Vegan Mac and Cheese
¾ cup + 2 tablespoons unsweetened, unflavored almond milk
5 tablespoons nutritional yeast
4 tablespoons Earth Balance or other non-dairy buttery spread
1 tablespoons all-purpose or white whole wheat flour
¼ - ½ teaspoon kosher salt +ground pepper
½ teaspoon nutmeg
1/8 teaspoon cayenne pepper
½ box elbow noodles
-----------------------------------------------------------------------------------------------------------
In a skillet or pot, melt the Earth Balance over medium heat.
In a medium sized bowl, whisk together the flour and milk until all clumps are gone.
Add milk & flour mixture and nutritional yeast to pot and whisk well.
Add salt, pepper, nutmeg and cayenne and whisk frequently until the sauce thickens up, for about 5 minutes. If it’s still too thin you can add more flour to achieve the thickness you desire.
To reheat: reheat in the microwave or on the stove top (add a splash of milk if it’s too thick) and whisk well. Store in an airtight container for up to 5 days.

This is a keeper it was so good, I have made it numerous times already. Have a great day,

Custom Bokeh – I tried to do this one and my husband made me a heart cap but I don’t know what I did wrong. Here is one of the pictures that didn’t work.

Which pair of shoes should I wear? Hailee saw these and it was love at first sight.

Little Features - I don’t have those cute little hands and feet around me anymore, so I had to do little features with the cat. He has cute little paws! It has turned cold here and one night we looked over at him and he had some how got himself under a blanket and all that was sticking out was his head and paws.I hope everyone is having a wonderful weekend!

Can you believe it is already November? Here is this weeks Scavenger Hunt Sunday shots.

Food – Raw Cookie Dough - These are so good! My family whined about not being able to eat these until I could photograph them in the daylight.

Purple – Lavender is my favorite smell. I have a huge lavender plant outside my front door, this isn’t my lavender plant though (I wish my yard looked like this one) this was taken in a beautiful garden some where in Rome.

In Disguise – This might be a stretch but this little guy looks like a caterpillar for a while then he turns into a moth.

Shapes – This tulip sculpture was in a park in Beverly Hills.

Photographer's Choice - We went to the Getty Museum in Los Angeles yesterday, here is a view of LA.

Raw Cookie Dough…..

We are always changing our diet here and we have decided to cut out proceed sugar. So I went looking for vegan blogs because my family has a major sweet tooth and I still needed a way to give them desserts. But in a healthier way. I found this blog called Oh She Glows and she had this dessert called Chocolate Chip Cookie Dough ‘Blizzard’ and she put these raw cookie dough balls in the Blizzards. The Blizzards are really good, I had no idea if you put frozen bananas in a food processor it would turn it into the consistency of soft serve ice cream. But the stand out in this recipe is the Raw Cookie Dough. Rarely, do I make the soft serve because these things don’t last long enough to get into the blizzard. My crew likes to just eat them plan from the freezer. I try and the key word here is try, to keep some in the freezer at all times but it isn’t as easy as it sounds. I also make a double batch……don’t bother making the recipe as it is, just double it now. I get two cookie dough balls out of one small ice cream scooper. I was using the small scooper for one, but thought in an effort to get more and have them last longer, I would make them smaller. It doesn’t make them last longer…..I am going to have to triple the recipe. They are that good!

Cookie Dough Balls

½ cup unsalted cashews

¼ cup rolled oats

¼ cup whole wheat pastry flour (other flours may work)

½ teaspoon kosher salt

1 ½ tablespoon natural cane sugar (sugar in the raw)

½ teaspoon pure vanilla extract

3-4 tablespoon pure maple syrup (or a bit more if dough is too dry)

¼ cup mini-dark chocolate chips

-----------------------------------------------------------------------------------------------------------

In a food processor, add the cashews and oats and process until it forms a fine crumble.

Now add in the salt, sugar, and flour and process for a few seconds more.

Add in the maple syrup and vanilla and process until combined. It will be sticky.

Add in your chocolate chips and stir by hand or process. Form into balls. Store in freezer.

Yield: 1 cup packed cookie dough

Halloween……

Hailee thinks it is the funniest thing to dress the boys up. This year she got Diego and cow costume and made Joey into a pimp, because he is such a ladies man. Diego really hates his costume he pretty much just lays down and won’t move.

Scavenger Hunt Sunday 10/30…….

Here is this weeks Scavenger Hunt Sunday. I have been having fun trying to come up with pictures for these the last few weeks. It is fun and challenging.

Macro/Close-Up – A macro of sparkly nail polish.

Found Texture – Warning the next picture is kind of gross. This is gum alley in San Luis Obispo. I don’t really get it but it made a great texture picture.

Home – The best thing about home is my family and these two funny boys. Nothing is better at home, as when Hailee is laughing. When these two are dressed up, she laughs the cutest, most contagious laugh.

Cover – Diego loves to be covered up with his favorite blanket.

The Tree – These trees are from Rome, Italy. I just thought they were cool when we were there.

Scavenger Hunt Sunday 10/23……

It is Scavenger Hunt Sunday. I didn’t get one of the items, but I made up for it with two extra orange items. I had three orange pictures and couldn’t decide so I instead of “Always Look on the Bright Side” I used all three orange pictures.

Words - This is a sign at a restaurant in Avila Beach.

Under - This one is obvious, the hermit crab under his shell.

Orange - I couldn’t resist Joey in his orange tie. Isn’t he handsome? This is part of his Halloween costume, the tie from his pimp costume. He has a purple hat that is really cute but he doesn’t like to wear it. Since it is Halloween you have to have pumpkins and the Monarch Butterflies are back in Pismo Beach.

Fly – I couldn’t get a picture of an actual bird flying, so I had to settle for something that flies. I like pelicans they are fun to watch.

Don Juan Diego the Sunbather…….

Diego follows the sun around the house all day. He starts off in the living room moves to the kitchen mid-day and you can find him in the closet with the skylight late afternoon. This is the early morning sun.

Shooting in Raw and Actions……

I finally took the Canon class, a few months ago, that was offered when I purchased my camera. It was very helpful and one of the things they highly recommend was to shoot in raw. Now I wish I had been shooting in raw the whole time. I like the way you can adjust the pictures in raw better than compared to the jpeg form.

We have been having crazy weather here. When everyone else is taking out their sweaters for fall we had to get out our tank tops and shorts because it was in the 90’s yesterday, the surf has been high. Which here we are known for our low to no waves and it never gets higher than 80 here a few days. Most people here don’t have air conditioning. I tried to go get a fan just to move the air around in our house and they were sold out. The guy said he sold out yesterday.

I was driving through Nipomo and the clouds looked cool over the mountains and I stopped along the side of Thompson road and took this picture. I always show you pictures of the beach but we also have a lot of mountains and open land here. I also added my two favorite actions PW’s 70’s, which I think is my favorite and Colorized, is a close second.

Have you switched to raw yet? Please share what your favorite actions are and where did you get it? I have my eye on a couple at Florabella Collection.

Roasted Chickpeas…….

I don’t know why I haven’t tried these before. They make a very healthy protein snack and you can have so many different flavors. My first batch was garlic salt and they were good. Some of them were really crunchy like a corn nut and some where the texture of French fries. My second batch, I used BBQ sauce which made them a little sticky but still good. Hailee was coming up with a dozen new flavors to try. I think the next one is going to be taco seasoning. These don’t have to just be savory you can make them sweet too. How about vanilla and cinnamon? That sounds good! Make them with your favorite flavors. I really like lime and cumin together, I will have to try that.

I have seen these on a lot of blogs, but this is the last place I saw it at The Healthy Foodie. She warned everyone they were additive and I didn’t really believe her. I only made one can and between Hailee and I they were gone and Mike didn’t get any. So I highly encourage you to double the recipe. These are great snacks to take to school or work. I’m thinking the next long road trip I will have to make these to go with us.

Roasted Chickpeas

2 15-ounce cans chickpeas (aka garbanzo beans)

2 tablespoons light tasting oil (olive, grapeseed etc)

Garlic Salt

Garlic pieces

Preheat oven to 350F. Line a large baking sheet with a silicone mat or foil.

Drain and rinse chickpeas in a colander. Drain them well, shaking excess water let air dry or pat dry with towel.

In a medium mixing bowl, combine oil, and spices. Add chickpeas and toss to coat the chickpeas well.

Spread the chickpeas onto baking sheet in a single layer and bake for 40-50 minutes until crispy, shaking pan once or twice in the middle of cooking. Serve warm or let cool and enjoy!

Store in air-tight container once completely cooled.

Scavenger Hunt Sunday 10/9…

Here are this weeks Scavenger Hunt pictures.

Landscape – This was taken from the mountain in Shell Beach.

Complementary – This was taken in Pismo Beach at sunset. The sky was orange, but I enhanced to make the orange stand out against the blue more. Blue and orange are complementary on the wheel.

Black and White – Diego is one of my favorite models and he was so comfortable. This is my favorite picture this week.

Food – This is so good! I highly recommend trying it, here is the recipe.

Blank Space – I looked this up in the dictionary to help me get an idea. This is what it said. “The blank space that surrounds the text on a page; "he jotted a note in the margin".” I’m reading Going Home by Harriett Evans and I hope this interpretation works.

It is Scavenger Hunt Sunday here are my pictures.

Inspired by a Book or Movie – One of my favorite movies is French Kiss with Meg Ryan and Kevin Klein. “Your French aren’t you”?

Brown - There isn’t anything cuter than brown puppy dog eyes.

Hazy – It is always hazy at the beach.

Coffee or Tea – This is my favorite coffee cup.

Linger - I think this boat has lingered around a little too long.

Go visit the other participants and have a wonderful weekend.
