All-Natural Red Velvet Cupcake Recipe for Valentine’s Day

Unlike most red velvet recipes, there is not a hint of food coloring in this mixture. Instead, the rich color results from the interaction of baking soda with vinegar.

Lanlard is a stickler for using the very best, all natural ingredients, including Nielsen-Massey Vanillas. Lanlard uses Nielsen-Massey products at his London pastry shop, Cake Boy, and on his UK TV series, Baking Mad because they offer delicious flavor that artificial products can’t complete with.

RED VELVET CUPCAKES from Cake Boy by Eric Lanlard
Makes 24 cupcakes
Preparation time: 30 minutes
Cooking time: 20 minutes .

For the cupcakes:

¾ cup pure cocoa powder
1½ tsp Nielsen-Massey Vanillas Pure Vanilla Extract
¼lb plus 1 tbsp (11/8 sticks) unsalted butter, softened
1 generous cup superfine sugar
4 egg yolks
1 cup buttermilk
1 tsp fine salt
2¾ cups all-purpose flour, sifted
1 tsp baking soda
1 tsp white wine vinegar

For the frosting:

1 cup milk
3 tbsp all-purpose flour
a pinch of fine salt
8oz of either bittersweet chocolate (62% cocoa solids) or white chocolate, broken into pieces ¼lb plus 6 tbsp (1¾ sticks) unsalted butter, softened
2¾ cups confectioners’ sugar
2 tbsp pure cocoa powder (omit if making white chocolate frosting)
1 tsp Nielsen-Massey Vanillas Pure Vanilla Extract (omit if making white chocolate frosting)

Directions:

Preheat the oven to 350ºF. Line two 12-cup muffin pans with cupcake papers.

Sift the cocoa and mix with the vanilla in a small bowl. Set aside.

Beat the butter and sugar together in a large bowl, using an electric hand mixer set on medium-high speed, or a stand mixer. Once the butter and sugar mixture is pale, light, and fluffy, add the egg yolks, one at a time, and beat until everything is combined. Add the cocoa mixture and beat well for another minute to combine.

Stir the buttermilk and salt together and add it to the butter and sugar mixture, a third at a time, alternating with the flour. Mix the baking soda with the vinegar and blend into the batter. Then, with your mixer on high, beat everything together on a high speed for about 5 minutes, until you have a smooth, glossy batter.

Fill each cupcake paper to three-quarters full. Bake for 18–20 minutes or until a skewer inserted in the cupcake center comes out clean.

Cool in the pans on a wire rack for 10 minutes. Remove the cakes and cool completely before frosting.

For the frosting, whisk the milk, flour, and salt in a small saucepan over a medium heat until the mixture thickens and begins to bubble, about 1–2 minutes. Transfer to a small bowl and allow to cool.
Melt dark or white chocolate. Set aside to cool.

Beat the butter, sugar, and cocoa (if using) together until fluffy. Add to the cooled chocolate followed by the milk mixture and vanilla extract (if using). Beat together until smooth, then spoon into a pastry bag with a small plain or star tip. Pipe immediately onto the cupcakes.

Tip:

It is really important that an electric hand-held or stand mixer is used to blend the cupcake batter thoroughly, so that a loose, glossy mixture is achieved.

Author Interview: The Scrapbook of Frankie Pratt

Country Bookshelf caught up with Caroline Preston, author of the simply delightful novel in pictures: The Scrapbook of Frankie Pratt.

Preston gives us the inside scoop on how and why she created a scrapbook novel:

What gave you the idea for doing a novel as a scrapbook?

PRESTON: I like to say the idea of making a scrapbook novel was 40 years in the making. As a little girl, I used to pore over my grandmother’s flapper scrapbook filled with dance cards, letters from old boyfriends, ocean liner tickets, and even long curls snipped when she got her hair bobbed.

My first three novels were what I guess you’d call “conventional” format—i.e. just words. My third novel Gatsby’s Girl was inspired by the meticulous scrapbook F. Scott Fitzgerald kept about his first love, Ginevra King—her first note to him, her handkerchief, and a newspaper clipping about her marriage to another man. Later he would turn the story of his unrequited crush into The Great Gatsby.

When I was casting around for the idea for my fourth novel, I wanted to create something that was as visual and powerful as a scrapbook. And then I had a crazy idea—why not make a novel that WAS a scrapbook. Not a digital scrapbook, but an actual one made of real stuff that I cut up with scissors and pasted together with glue.

What came first—the story or the memorabilia?

PRESTON: I started with my character, Frankie Pratt, and the outlines of her story, which was set in the 1920’s. I imagined an 18-year-old girl who wanted to become a writer and her journey which would take her to Vassar, Greenwich Village, and Paris.

Then I hunted down and bought all the things that a girl like Frankie would glue in her scrapbook—postcards, movie tickets, Vassar report cards, menus, sheet music, fashion spreads, popular magazines, a New York subway map, a Paris guidebook, and of course love letters. In all, I collected over 600 pieces of vintage 1920’s ephemera.

Where did you get a lot of the things featured in the scrapbook?

PRESTON: I had a surprising number of 1920’s items in my own collection of vintage paper. I stopped at every roadside antique store and junk shop I passed- in Mississippi, Virginia, New York and Illinois. (My favorite store is Whiting’s Old Paper in Mecanicsville, Va.) And also I bought over 300 items from eBay—so many that my mailman complained.

Do you think this was easier or harder than writing a novel in a more traditional manner?

PRESTON: Creating a scrapbook novel may not have been easier than writing a traditional novel, but it sure was a lot more fun! Writing a 300 page novel requires thousands of hours of sitting in a chair and staring at a blank computer screen. With Frankie Pratt, I could spend countless hours and dollars on eBay every day and tell my husband with a straight face that I was “working on my novel.”

What are you working on next?

PRESTON: I have started in on my next scrapbook novel, this one kept by a bride during her first year of marriage 1959-1960. I like to think of it as a prequel to Mad Men. My favorite finds so far: a 1959 Brides magazine, the Betty Crocker Bride’s Cookbook, a 1960 sex manual, View-Master slides, a set of bride and groom paper dolls…

He Sees You When You’re Sleepin’...

Do you recall trying to sleep on Christmas Eve while waiting for Santa to come to town? The anticipation of Saint Nicolas and all his goodies was just too much—who could sleep? The lyrics of Santa Claus is Coming to Town taunted me. “He sees you when you’re sleeping—he knows when you’re awake…” I tossed and turned trying to fall asleep, fearful I’d miss out on Santa’s visit if he caught me awake. I never doubted Santa’s ability to be aware of my wakefulness.

Unfortunately, as adults, the issues that keep us awake during the Christmas season are more complicated than those we experienced as kids. Financial burdens, strained relationships, difficult decisions, brooding regrets and fretful thoughts race through our minds and hinder our rest.

There is someone who “sees you when you’re sleeping and knows when you’re awake.” It’s not Santa Claus. The Bible reminds us, God’s eyes never close. Perhaps this truth can tuck us in for the night.

“He will not allow your foot to be moved; He who keeps you will not slumber.
Behold, He who keeps Israel shall neither slumber nor sleep.” (Psalm 121:3-4)

We erroneously think that as we “turn in” that God somehow “turns off” or moves on to do more important things. But God doesn’t wait for us to wake up before He returns to work. God is just as active during our sleep—or sleeplessness. Believers can rest assured knowing God is awake guarding our lives.

What does God do as we slumber? Psalm 127:1-2 reminds us that God gives to those that He loves as they sleep. What does God give? Understanding God’s generous nature, one rendering would be that God gives to the believer whatever is needed at the time. God can give you wisdom and direction with decisions as you “sleep on it” overnight (Psalm 16:7, James 1:5). Maybe there is a financial need. The scriptures are filled with examples of how God provided for the physical needs of those He loved as they rested (I Kings 19:1-8; Exodus 16:1-8).

God’s gifts are good, perfect (James 1:17), eternal (Ephesians 1:3) and purposeful (Galatians 5:22-25). They do not require batteries, warranties and cannot be purchased in stores. But they are available 24/7/365—not limited to one night each year. God’s greatest gift did not arrive under a tree but on a tree (John 3:16). “He who did not spare His own Son, but delivered Him up for us all, how shall He not with Him freely give us all things?” (Romans 8:32)

It’s plain to see, God has our back as we sleep. Try this Christmas recipe for rest.

Repent—in areas where we are aware of our transgressions. “A clean conscience
makes a soft pillow.”
Release—control of problems you’re facing and give them over to God.
Relate—connect with God through prayer and meditation while in bed.
Rest—allow God to do what you cannot do for yourself as you sleep.
Receive—God’s unmerited forgiveness, grace and blessings while you sleep.

An English proverb reminds us, “As you make your bed so you must lie in it.” The truth of God’s Word helps us face our situations. Although we cannot change the failures of our past, we can rest with a clean conscience based on God’s gift of forgiveness. Our current circumstances may appear overwhelming, but God gives His presence and His guidance in our hour of need. Our future is secure and hopeful when God’s greatest gift—His Son—is kept in view. A life supported by a vibrant, healthy relationship with the Shepherd of Sleep makes the most comfortable mattress. In childlike faith learn to trust Him as you lie down to sleep and remember: “He sees you when you’re sleeping.”

You'll find out why radioactive iodine treatment should usually be the LAST resort, even though it's often the first suggested. Hyperthyroid diet tips essential to your recovery and nutritional supplements and herbs which are important for any hyperthyroid condition.

Sections I found to be very helpful are "They Role That Stress Plays," "The Immune System Component," and "Thyroid Storm & Natural Hyperthyroid Treatment Methods." As someone combating hypothyroidism, thyroid storms can be brought on periodically, often via medication adjustments. So, it's great to now have a plan to deal with them.

Another thing I love about this book is that it is written by someone who is living through the same challenges. Author Dr. Osansky was diagnosed with Graves' Disease, and successfully used natural treatment methods to restore his own health.

If you are concerned with or dealing with hyperthyroidism or Graves' Disease, this is a must read. If you are hypothyroid, like me, you'll also find gems of useful information to use in managing your disease. Overall, double thumbs up for this incredibly comprehensive guide.

CB: Give us one fun fact from your life that relates to "Eat Drink, and Be Married."

BLOOM: I started writing Eat, Drink, and Be Married as a single girl about town and finished the last draft as a wife/mom knee deep in diapers. I guess for me writing a novel about a wedding led me to mine! Sort of like the movie field of dreams, if you build it he will come.

CB: Why do feel you had to tell this story?

BLOOM: There is something unique and special about going to weddings of and with your best friends. Life usually gets in the way of seeing those nearest and dearest but at weddings there is this collision of sentimentality and friendship that i find fascinating.

CB: What was one of the most surprising things you learned while writing "Eat, Drink, and be Married"?

BLOOM: I learned while writing Eat, Drink, and Be Married that time itself is a luxury once you have kids!

Dishing Up Oregon

I'm not certain whether to label this one a cookbook, cultural experience, or regional guide... it's all three rolled up into one wonderful goodness of a great book.

The recipes are distinctly Oregon but translate easily into your kitchen, wherever that may be. From Homemade Ricotta to Coffee Caramel Sauce and Vin Glace Cake, there's a rich variety for all tastes and seasons.

I cannot pick one thing I love most about this book as there are too many goodies to savor. I love the the celebration of farm and incorporating local foods into your kitchen. I love the gorgeous illustrations and rich history behind each region of Oregon featured. I enjoyed the introduction to local growers and businesses. And I find each recipe included makes me want to rush to the kitchen and try it right away.

I also want to visit Oregon for a culinary tour after reading, though I'm content with immersing myself into the pages of Dishing Up Oregon for now.

Overall= Fabulous!

I am simply enamoured with this kitchy-quirky, astoundingly helpful book!

Farm Anatomy: The Curious Parts and Pieces of Country Lifeis a visual plethora of important information from A-Z for country folk, but I have no doubt that our city dwelling friends would equally love and learn from this amazing guide.

From distinguishing barn yard doors to detailing parts of beef to making carrot cake, there's not a whole lot that Farm Anatomy: The Curious Parts and Pieces of Country Lifedoesn't cover. How many eggs will an average hen lay in a year? How much wood is in a cord? How do you shear a sheep? The answer are all found within this curious book.

Certainly, there are other farm encyclopedia-like books on the market and they all have their merits, what I like about Farm Anatomy that distinguishes it from the pack is that every topic is fully illustrated and chock full of tongue-in-cheek humor. A guide that makes you smile each time you learn from it is worth its weight in farm animals.

Farm Anatomy is a super handy guide to keep on the Country Bookshelf and have an extra stashed in the barn for quick reference. Two thumbs up for this fabulous book!

There are countless weight loss books on the market, certainly I've read my share. The Great Fat Fraud: Why the "Obesity Epidemic" Isn't, How to Be Totally Healthy without Losing Weight and If You Should Lose Some Pounds, How to Keep Them from Finding You Again is not what I would refer to as a weight loss book, rather, it's a much needed addittude adjustment for your approach to weight loss.

Many of us need to shed a few pounds but it's often confusing on how to get there realistically. We've had success with some diets or fitness efforts, but typically the results can be short-lived or the programs unfulfilling. We sometimes forget the simple, down-to-earth, practical ways in which our bodies work, store fat, and maintain our health. The Great Fat Fraud is a great reminder, backing a reasonable approach to weight loss with closer look at fact verses hype.

I enjoyed reading this book and the author's endorsement of walking, which I, too (and, of course many experts) agree is a top-notch form of excercise to promote optimum health. I also like the author's realistic approach to dieting and the reminder not to take every "claim" at face value.

If you are struggling with weight-loss or could use a boost towards getting off the weight-loss roller-coaster and living a healthier lifestyle, this could be the shot of self-esteem building adrenaline you need. Warning, though, this is not a diet book with step-by-step instructions and menus- it is a fitness book that may, perhaps, help you get closer to the optimum health you desire.

I'm always on the look-out for quality books that enhance learning, particularly dealing with nature and the "great wide open." Curious Critters more than fits the bill with a gorgeous pictorial education on some of nature's most fascinating creatures.

Do you know the different between the American Bullfrog and the American Toad? I now do and thoroughly enjoyed learning about these intriguing critters.

In Curious Critters you'll find amazing images and facts about a wide variety of critters including a red flat bark beetle, an Eastern spiny softshell turtle, a spotted salamander, and even goldfish. Each critter gets a chance to tell their story from their point of view: the Ohio crawfish explains what he waves his giant claws, the Bluejay clues us in on bird calls, and the bush katydid tells us how she got that bright pink color.

Overall, Curious Critters is a joy to view and read- a book you'll turn to over and over again for the sheer pleasure of delving into the delights on each page. This would make a terrific holiday gift or simply a wonderful addition to your Country Bookshelf.

When I first heard about The Scrapbook of Frankie Pratt: A Novel in Pictures I was instantly intrigued. Novels and scrapbooking together? Two of my favorite hobbies combined, this 'ought to be good...

and indeed it is!

Reading through The Scrapbook of Frankie Pratt: A Novel in Picturesis like getting and intimate peek into the diary (and soul) of a 1920's flapper who is creative, witty, adventurous, and relateable.

This is a book I had a tough time putting down, the story is thoroughly engaging and the pictorial representation of the era is an amazing visual. I wound up reading through the complete story and then going back to examine each page to absorb the history through the fabulous collection of souvenirs and memorabilia.
I truly enjoyed following Frankie on her journey from youthful girl to womanhood and often felt like I was there with her on her excursion while reading the intimate thoughts and captivating visuals. A memorable, enriching experience.

The Scrapbook of Frankie Pratt: A Novel in Picturesis truly a unique novel creation- and a trend I hope to see more of. This is the type of book you'll love to pick up again and again, each time discovering something new and wonderful.
