Happy Cinco de Mayo weekend!

Mexican food is sooo delicious.  It’s got crunch, amazing spices, cheese, texture, and such pretty colors.

And leftovers taste great warmed up in the microwave.

Speaking of leftovers, Mexican dishes are an easy way to reinvent leftover meat like chicken, beef or pork.

Super easy too, all you really need are some corn or flour tortillas, salsa, chopped onions or tomatoes and just like that you have a taco.

Tortilla chips are at the very top of my fave list.  They’re my weakness and it never fails, I always fill up on them before the dinner is served when at a Mexican restaurant.

So let’s check out some recipe ideas for Cinco de Mayo.

Shrimp Tacos with Adobo Sauce - The adobo sauce is so good in these tacos (and the other ingredients too of course).

Crispy Breakfast Quesadillas - These are so tasty that you’ll be in a good mood all day after eating them.

Easy Guacamole - You’ll need to make extra because when no one is looking you’ll start eating this with a big spoon (of course this has never happened to me).

Easy Crispy Shell Tacos - It’s hard to stop eating these tacos once you start.

Salsa Verde - This salsa is delish and super easy to make.

Sometimes you just have to improvise.

Let’s say you have some whipped cream or whipped topping in the fridge.  And you have a basket of fresh delish strawberries.

And let’s say strawberry shortcake sounded so good but there was no shortcake in sight and you didn’t feel like going to the store.

Here’s what you do next.

You open the pantry and your eyeballs go right to the box of corn flakes that look so yummy and crunchy.

Next it all makes sense and you make this super tasty dessert that’s a cross between a parfait and a distant cousin of a strawberry shortcake.

This exact same thing happened to me and this super yummy dessert quenched my craving in a nano second.

I don’t think I can call this a recipe because it’s more like an idea.

No matter what you call it, its soooo good.

So let’s check out the ingredients….there are only three.

Whipped cream or whipped topping, strawberries, and corn flakes.

Here’s how to make it:

Slice the strawberries in about ½ inch thick size pieces.

Add about a third of the strawberries to the bottom of the serving dish.  Next, add half of the whipped cream on top of the berries.

Then add half of the corn flakes on top of the whipped cream.

Add another layer of the strawberries (add about ¾ of the remaining strawberries leaving the rest for garnish).

Next,

add the remaining whipped cream, top with the corn flakes, and garnish with the remaining strawberries.

Enjoy!
