I had the urge for meatballs but couldn't decide what kind to make.  SO I made three different batches.

First batch I went with veal, an egg, minced scallions, beef bouillon, onion powder, seasoned salt, worcestershire sauce and bread crumbs.





Second batch was beef, green chili sauce, egg, scallions and bread crumbs..

Dang they were mad!  The neighboring rancher's Red Angus bull was taunting my Black Angus bull.






Both snorted, circled, kicked dirt up as high as they could....










They talked smack for about an hour before losing interest and wandering off.  Not sure who won this argument.  lol
I was glad that there are two fences and a dirt road between them. I received a great package of Big Poppa Smoker rubs the other day (Thank you again BP!!)  and I couldn't wait to give them a try.
First on my list was Big Poppa's Chanpionship "Money" rub. I've heard so much about it!

I seasoned a brisket with the rub and threw it into the BPS drum with a kiss of mesquite.

Not the romantic kind of dinner.  The electricity was out for 2 days and I cooked in the dark. lol

Snow hit the area a couple of times in the last few weeks. One storm iced things over before snowing, thus knocking the electric lines down in many places. I still wish I had a wood burning stove but the burners on the range kept the house warm enough.

Not sure why I don't use my dutch ovens very often. They are easy to use and they put out some good eats.

I made my dough first.
1 1/4 cups of warm water

I'm not sure if this qualifies as popcorn shrimp, they were pretty large BUT they disappeared as fast as popcorn!

Kind friend Harry Soo sent some of his Slap Yo Daddy Meat rub for me to try. (Thank you again Harry!)  I have tasted his fantastic Chicken Rub and love it, so I was really looking forward giving this rub the taste test.

Ice and wind knocked the power out for 2 days and the temps dipped down to 24 F.  It snowed yesterday and today it's back up to shorts weather.
Not sure how to dress. lol

It's been an interesting week for me!

I threw a couple of racks of beef ribs into the Big Poppa drum...










Carved and bagged a few up then headed to the lake to do some thinking...





I threw a line in but didn't really pay attention to it...




Just sat on the tailgate and enjoyed being out there...

I've always loved beer battered dill pickles but wrapping them in a thin layer of bacon really takes the flavor up to a new level of goodness! Beer Battered Bacon Wrapped Pickles


To make the beer  batter I use ..


1 cup flour

1 tsp salt

1 tsp baking powder

enough beer to make pancake like batter (about 3/4 of a 12 oz bottle)

or more if you like a light batter.

 Think I have found my new favorite breakfast. :)

I seasoned some boneless, skinless chicken thighs with regular ole season all and threw them on the grill.
Cooked green onions in butter until tender and scrambled some eggs.








heated 6 flour tortillas.  (for 2 stacked enchiladas)





Then started building.
First one hot tortilla topped with scrambled eggs...

I'm still enjoying Harry Soo's Slap Yo Daddy Chicken Rub.  Harry had suggested trying the chicken rub mixed half and half with brown sugar on salmon....and I finally had the time to try it. I'm really glad I did!!





I planked the salmon and cooked on the Char-Broil gas grill. Just closed the lid and let the grill do the work.

It's wild onion time here. The first sign that spring is on the way. :)  I love using the onions while they are available. One of my favorite uses is to pair them with venison.



I gathered and cleaned a few onions, seasoned some venison backstrap steaks  from last season  
with olive oil and Tatonka Dust.




I cooked the onions in butter with one clove of minced garlic. While hanging out in the old shop after that last snow storm, I put a few beef ribs and a rack of spares on the drum to catch some smoke.





Chilled a couple of beers....





Listened to some music while sorting through a rack of old tack...






The ribs were ready after about 6 hours.. I just watch for the pull back on the bone.

I thought they were great with ketchup (everything tasted great with ketchup :)). 
I've been making patties with the cold smoked salmon that I canned in the fall. No ketchup required with these. :)

I have no idea how much snow we received. The wind was so strong, some spots had barely two inches while other places had 4' drifts.

Checking on the cattle has been the hardest part but I'm glad the cows were bred for a later calving date. No little ones to worry about!

I made a mixture of garlic powder, paprika, black pepper, rosemary, thyme.. About one TBS of each.


















Then combined 1/2 cup A-1 steak sauce, 1/4 cup of worcestershire sauce, about 1/4 cup of bufalo chipotle sauce and 1 cup of water..

I make             breakfast fatties stuffed with fried potatoes, ham, scallions, jalapenos and cheese...then wrap them in bacon and smoke until crisp.
This time I opted to do a regular ole neekid fattie. (thanks to the inspiration of talented smoking friend gtr) No seasoning, so stuffing, no bacon, no nothin'...just a chub of maple sausage on the smoker.
