INGREDIENTES&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Molho&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
1/4 de xícara (chá) de azeite&lt;br /&gt;
4 dentes de alho picados&lt;br /&gt;
1 cebola grande picada&lt;br /&gt;
6 tomates italianos grandes, cozidos e sem casca&lt;br /&gt;
1/3 de xícara (chá) de pinhole*&lt;br /&gt;
sal e pimenta à gosto&lt;br /&gt;
1/4 de xícara (chá) de folhas frescas de manjericão&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;massa&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
7 batatas médias sem casca&lt;br /&gt;
8 xícaras (chá) de água&lt;br /&gt;
1 ovo&lt;br /&gt;
1 xícara de farinha de trigo&lt;br /&gt;
1 pitada de sal&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Para polvilhar&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
farinha de trigo&lt;br /&gt;
queijo ralado à gosto&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
MODO DE FAZER&lt;br /&gt;
&lt;br /&gt;
Molho&lt;br /&gt;
Numa panela grande, aqueça o azeite em fogo médio e frite o alho e a cebola até começarem a dourar. Coe os tomates numa peneira e acrescente à panela. Acrescente o pinhole e deixe ferver.&lt;br /&gt;
Abaixe o fogo, tampe e cozinhe por mais 20 min. Tempere com sal e pimenta, mexa, retire do fogo e reserve.&lt;br /&gt;
&lt;br /&gt;
Nhoque&lt;br /&gt;
Em uma panela grande, coloque as batatas e cubra-as de água. Cozinhe no fogo alto por 45 min ou  até ficar macia. Escorra e passe por um espremedor apoiado sobre uma tigela grande. Deixe esfriar. à parte, encha outra panela grande e ferva bastante água. Amasse a batata e junte a farinha, o ovo e o sal. trabalhe a massa, polvilhando a superfície com farinha, até obter uma massa homogênea.&lt;br /&gt;
Retire porções da massa, faça rolinhos de 1,5 cm de espessura e corte em pedacinhos de 2 cm.&lt;br /&gt;
Aos poucos coloque os pedaços na água fervente e cozinhe até subirem à superfície. Retire com uma escumadeira, escorra e ponha-os em uma travessa. Reserve. No óleo do bacon, acrescente 1 colher de azeite e frite a cebola. Junte a cenoura ralada e coloque o tempero a gosto ( eu gosto de sazon para salada). Deixe cozinhar por 2 minutos. Junte as azeitonas picadas, os ovos e o que mais desejar. Acrescente a farinha mexendo sempre. 3 ovos&lt;br /&gt;
200g de açúcar&lt;br /&gt;
280g de farinha de trigo&lt;br /&gt;
2 colheres (chá) de fermento em pó&lt;br /&gt;
2 colheres (chá) de canela em pó&lt;br /&gt;
1/2 colher (chá) de sal&lt;br /&gt;
120ml de suco de laranja&lt;br /&gt;
50g de chocolate picado (ou gotas pequenas de chocolate)&lt;br /&gt;
60g manteiga sem sal.&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Modo de Fazer&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Misturar os ovos, o açúcar, o sal, o suco de laranja e a manteiga e bater até formar uma mistura homogênea. Vai acrescentando a farinha, sempre mechendo, até que a mistura fique uniforme. Acrescente o chocolate picado e misture com uma colher, coloque o fermento, mecha até que se misture à massa, unte as forminhas que desejar usar e asse em forno pré aquecido por uma média de 15 à 20 min dependendo da potência do fogo.&lt;br /&gt;

&lt;br /&gt;

200g de açúcar peneirado&lt;br /&gt;
1 colher (chá) de canela em pó&lt;br /&gt;
60g de manteiga sem sal&lt;br /&gt;
120g de cream cheese&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Modo de Fazer&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Misture tudo numa tigela e bata até obter um creme. Enfeite o cupcake como desejar e bom apetite!&lt;br /&gt;

Despeje metade do creme reservado e faça uma nova camada de biscoitos, espalhe o creme restante e cubra com o chocolate ralado que sobrou. Leve a geladeira por 4 horas e sirva bem gelado. Coco fresco ralado para decorar&lt;br /&gt;

300g de chocolate ao leite picado&lt;br /&gt;

Para a cobertura, em uma panela, derreta o chocolate, junte o creme  de leite e misture bem. Reserve. Em uma panela, leve ao fogo o açúcar e  a água, mexendo sempre, até formar um caramelo. Despeje em uma fôrma de  pudim e reserve. No liquidificador, bata os ingredientes restantes por 5  minutos. Despeje na fôrma caramelizada e leve ao forno, preaquecido, em  banho-maria por 40 minutos ou até que, ao enfiar um palito, ele saia  limpo. Retire do forno e leve à geladeira por 3 horas. Desligue a batedeira e adicione o fermento e as claras, envolvendo-os delicadamente na massa. Despeje em forma untada e polvilhada e asse em forno quente por 10 min. Acrescente o leite condensado, misturando sem bater. Por último, coloque as claras em neve, envolvendo delicadamente na mistura anterior. Recheio&lt;br /&gt;
1 - Em uma panela, cubra os cogumelos com água, leve ao fogo e deixe ferver. Escorra-os em seguida.&lt;br /&gt;
2 - Misture o cogumelo e a cebola e refogue no azeite. Junte o tomate, o sal e deixe amaciar em fogo baixo.&lt;br /&gt;
3 - Quando o líquido secar bem, adicione o requeijão e a salsa, misture bem e deixe esfriar.&lt;br /&gt;
&lt;br /&gt;
Massa&lt;br /&gt;
1 - Misture as batatas amassadas com o sal e vá adicionando a farinha de trigo aos poucos, sem mexer demais.&lt;br /&gt;
2 - Unte as mãos com azeite e abra porções de massa. Coloque um pouco de recheio no meio e molde a massa em formato de coxinha.&lt;br /&gt;
3 - Passe pelas claras batidas com um garfo e pela farinha de rosca misturada com a páprica. Coloque em uma assadeira untada com uma parte do óleo.&lt;br /&gt;
4 - Pincele com o restante do óleo e leve ao forno quente (250°C) por cerca de 20 min ou até dourar. &lt;b&gt;PEITO DE FRANGO ENROLADA&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredientes&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
1kg de filé de peito de frango&lt;br /&gt;
100g de azeitonas verdes&lt;br /&gt;
100g de bacon&lt;br /&gt;
100g de presunto magro&lt;br /&gt;
1 cebola média&lt;br /&gt;
1 dente de alho&lt;br /&gt;
3 colheres de sopa de óleo para fritar&lt;br /&gt;
3 colheres de sopa de vinagre&lt;br /&gt;
molho de pimenta vermelha, sal, salsa e cebolinha à gosto.&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Modo de fazer&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
- Tempere os bifes de frango com uma cebola média ralada, um dente de alho e três colheres de sopa de vinagre e sal a gosto e deixe descansar meia hora para curtir o tempero na carne. Separado, corte bem picadinho a salsa, a cebolinha, a azeitona, o presunto e o bacon, e misture tudo num recipiente.&lt;br /&gt;
- Pegue filé por filé e recheie com a mistura feita, enrolando em seguida e amarrando cada rolinho com linha branca para segurar o recheio.&lt;br /&gt;
- Numa panela, coloque o óleo misture o caldo do tempero da carne e os restos de recheio e deixe fritar até escurecer, em seguida, adicione os rolinhos e frite até escurecer a carne, sem deixar queimar, e neste ponto, cubra o restante da panela com água e cozinhe em fogo baixo.&lt;br /&gt;
- Quando secar quase toda a água, está pronto.&lt;br /&gt;
- Retire da panela os rolinhos e retire as linhas, fatiando em pedaços médios, e volte à panela para dar uma última gratinada e está pronto para servir.&lt;br /&gt;

Modo de fazer&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Bata no liquidificador os quatro primeiros ingredientes e leve ao fogo, sempre mexendo, até cozinhar bem. Quando cozido, adicione a essência. Esfrie e, num refratário à gosto, disponha alternado uma camada de creme e uma de bolacha umidecida no café com leite, até que terminem os ingredientes. Faça um suspiro batendo as claras em neve, adicionando o açúcar, e depois de batido, acrescente creme de leite, formando uma mistura pastosa. Coloque por cima do doce e deixe resfriar na geladeira. Decore a gosto.&lt;br /&gt;

1 1/2 xícara (chá) de azeite&lt;br /&gt;
1 xícara (chá) de açúcar mascavo&lt;br /&gt;
1/2 colher (sopa) de erva-doce&lt;br /&gt;
1/2 colher (sopa) de canela em pó&lt;br /&gt;
1 1/2 xícara (chá) de água&lt;br /&gt;
500g de farinha de milho&lt;br /&gt;
1 xícara (chá) de frutas cristalizadas picadas&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Modo de fazer&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Em um recipiente, dissolva o fermento com a água e adicione a farinha de trigo, mexendo até formar uma massa lisa, homogênea e maleável. Cubra com um pano e deixe crescer. Numa panela, misture o mel, o azeite, o açúcar mascavo, a erva-doce, a canela e a água, e leve ao fogo até ferver. Despeje a farinha de milho, misturando bem. Adicione o fermento levedado e as frutas amassando bem e sovando. Modele as broas numa forma untada e afarinhada e pincele sobre elas gemas, cubra-as e deixem dobrar de tamanho. Misture o açúcar e a água e leve ao fogo até virar uma pasta. Retire do fogo, deixe esfriar, adicione as gemas e leve de volta ao fogo, sempre mexendo, sem deixar ferver. Acrescente os demais ingredientes, mexendo e misturando tudo muito bem, até que desgrude da panela. Bata o açúcar na margarina. Adicione os ovos e continue batendo até ficar volumoso. Alterne a farinha com omleite na mistura anterior, batendo sempre. Desligue a batedeira e acresente as uvas e o fermento, envolvendo-os delicadamente na massa.
