<p>These are for the kid in everyone! Mini Peanut Butter and Jelly Cups. This is a quick easy treat that will have you thinking about memories of peanut butter and jelly sandwiches from the cafeteria tables as a kid to a midnight snack of a toasted PB+ J sandwich. One memory comes to mind for me, I recall my brother making some really yummy cocktail and naming it a PB+J, hmmm&#8230;.I will have to ask him about that one again. It&#8217;s been about 20 years since I had one. In the meantime I&#8217;ll just have to have another one of these.</p>

<p>1 package Peanut Butter Cookie Mix (Betty Crocker*plus items required from package)</p>
<p>1 tablespoon water*</p>
<p>3 Tablespoons oil*</p>
<p>1 egg*</p>
<p>1 cup flour</p>
<p>Mix peanut butter cookie mix with water, oil, egg and flour.</p>
<p>Roll about two teaspoons of dough into balls and place them into paper lined mini cupcake pans.</p>
<p>Create a well in the center of each. You will find step by step instructions <a href="http://www.createdby-diane.com/2011/11/gingerbread-cheesecake-bites.html" target="_blank">here</a>.</p>
<p><strong>Strawberry filling</strong></p>
<p>4 oz cream cheese</p>
<p>2 cups powdered sugar</p>
<p>4 tablespoons strawberry jam</p>
<p>Beat room cream cheese with powdered sugar and jam.</p>
<p>Place a teaspoon of filling into the peanut butter cups and bake 350 8-10 minutes</p>

Maybe this isn&#8217;t technically a whoopie pie, but it does say that whoopie pies may be considered cookies, pies, or cakes and so I think this counts, but call them creme pies if you must.</p>
<p>I love how fast and easy cake mixes can be made into lots of great treats, so these are Whoopie Pies the Easy Way!</p>
<p>Some days I love easy&#8230;..some days are hectic and the thought of measuring may just put you over the top, these are perfect for those days. You&#8217;ve had those days, right? Well a few days ago that is what my day was all about.It didn&#8217;t seem to go as planned, I cut my index finger with a razor blade, ouch and you never realize how difficult some things are to do with a band aid on, until of course you are forced to do them. I also dropped my phone, and this time it wasn&#8217;t like all the other times when everything was alright. This time I shattered the screen well, lets just say it wasn&#8217;t my best day. Well maybe it&#8217;s just me. Rush, rush, rush the day is flying by and you realize you needed to make some really great cookie to bring&#8230;who knows where&#8230;.well you know, it&#8217;s on your calendar along with 500 other tasks for that same day. These are just the thing for &#8220;those&#8221; days, or any day you&#8217;d like to <strong>take it easy</strong>. That is what I&#8217;m going to start doing, take it easy. Who&#8217;s with me? Lets make 2012 the &#8220;Take it Easy Year&#8221;. (how hard are you laughing? me take it easy&#8230;.for a whole year, don&#8217;t think it will happen, but it&#8217;s worth trying)</p>

<p>1 box chocolate cake mix</p>
<p>(and ingredients on package minus the water)</p>
<p>1/2 cup oil</p>
<p>3 eggs</p>
<p>Mix all three ingredients together and place on cookie sheet by two tablespoons sizes balls. Bake at 350 for 10-15 minutes, depending on how crispy you&#8217;d like them. I baked my for 12 minutes, a little crispy on the outside and chewy on the inside, perfect for whoopie pies.</p>

<p>I was in such a hurry, I didn&#8217;t even space them out enough, but luckily you can cut them apart when they are warm and it won&#8217;t matter, well at least it didn&#8217;t matter to me there were still 499 things left to do!</p>
<p><strong>Peanut butter filling</strong></p>
<p>1/2 cup peanut butter</p>
<p>3 tablespoons butter</p>
<p>2 cups powdered sugar</p>
<p>3 tablespoons milk</p>
<p>Beat peanut butter and butter together then add powdered sugar and milk and mix until creamy.</p>

<p>These cookies were iced the EASY way, no piping bag. I wouldn&#8217;t have believed it myself if you would have told me so.Nope, just dipped them into the glaze icing and viola!</p>
<p>I&#8217;m so happy that I figured out a new way to ice cookies, especially since I had 6 dozen cookies baked and ready to be iced with an annoying pain that was preventing me from icing them. It did take me a couple of tries to get the icing correct along with the method of how to dip them and have the extra icing run off the cookies with out making a complete MESS.</p>
<p><strong><span style="color: #ff0000;"><a href="https://docs.google.com/document/d/1wTZvMtVSCSQ8bYV0d8z1Pyq6Z7ZC88QwXUKlppWJBoo/edit" target="_blank"><span style="color: #ff0000;">Glaze Icing Recipe</span></a> </span></strong>{printable}</p>
<p>4 cups powdered sugar</p>
<p>1 tablespoon corn syrup</p>
<p>2 tablespoons water (more may be needed)</p>
<p>1 teaspoon vanilla extract ( or flavor of your choice)</p>
<p>a few drops of food coloring (I use Americolor gel colors)</p>
<p>Mix the powdered sugar along with corn syrup and water and extract until it&#8217;s smooth and creamy.</p>
<p>The glaze worked best when it&#8217;s was not runny. I ran my spatula through the icing and drew a line, it too about 5 seconds for it to fill back in where I drew the line. Adjust the water so it&#8217;s fluid, but not runny.</p>
<p>Extract and food coloring are both in liquid/gel form, so adjust accordingly if you add more, you may need more powdered sugar.</p>

<p>I placed the icing in an oval dish and strapped a lollipop stick with a rubber band going under the dish attaching to each side of the stick.</p>

<p>I love how pretty cookies that have been piped on look, but I&#8217;m dealing with some shoulder pain right now so, this is how I have be icing cookies. I was surprised how quickly it went, I finished dozens of cookies in a matter of minutes.</p>

<p>I did not scrape the icing off of the cookie. I dipped the top edge of the cookies into the icing and then ran the majority of the excess of the icing off by holding the cookie about 1/4 inch away from the lollipop stick. Then I turned the cookies over onto a drying rack. After icing these, I realized if the cookies were just a little bit thicker, my fingers wouldn&#8217;t get in the icing. The cookies I did with the red icing were just a bit thicker and it worked, no icing on my fingers!</p>
<p>The lollipop stick helps remove the majority of the excess icing without having to wait for the excess to drip off without messing up the icing you want to remain on the cookie. It also allows for an even layer of icing to remain on the cookie, and when turning the cookies upright, no drips went over the edges of the cookies (iced in red, as that was the correct consistency of icing) the pink was too runny and ran over the edges-that is why I&#8217;m showing you both. Hopefully the photos will help you to achieve the consistency needed for smooth finished cookies.</p>

I used special dark chocolate cocoa, that is why they are extra dark. The recipe if from Lilaloa.  The second time I tried dipping the cookies was the red icing in the beginning of this post, I made the glaze icing a bit thicker and it worked out great. So a little trial and error or the icing allowed me to see the difference.</p>
<p>* Cookies that are a little thicker (like the ones on top iced in red) were less messy as there was more cookie to grab onto and my fingers didn&#8217;t need to touch the icing.</p>
<p>**Glaze icing dries hard, if you let them icing air dry for 12 hours before stacking cookies or packaging them.</p>

<div>2 cups flour<br />
1/4 cup sugar<br />
3 tsp baking powder<br />
1 tsp salt<br />
1/2 cup butter<br />
1/4 cup cream<br />
4 T lime juice<br />
zest of 2 limes<br />
1 cup sweetened shaved coconut<br />
1/2 teaspoon coconut emulsion (or coconut extract)<br />
1 tsp vanilla extract<br />
2 eggs<br />
Mix together flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Add cream, lime juice, zest and extracts along with eggs and coconut Mix until blended. Knead on a floured surface, cut with cookie cutter to desired shape.Bake at 400 degrees for 15 minutes until golden brown.<br />
<strong>Coconut Icing</strong><br />
Mix 2 cups powdered sugar with two tablespoons water along with 1/2 teaspoon coconut emulsion (or coconut extract)<br />
I used a drop of electric green and avocado green Americolor food coloring.<br />
I placed the icing in a bowl and dipped the top of the scones in the icing and allowed the remaining icing to drip off before turning them right side up. Be sure the consistency of the icing is not too thick or thin, check it by dipping a spoon into the icing and see if it stays in a thick layer or runs completely off the back of the spoon, once it sticks nicely you&#8217;ll know you have the right consistency.</div>

<p style="text-align: center;">This may not be your ordinary Mocha, it won&#8217;t spill, it&#8217;s not too hot but it&#8217;s just as delicious, maybe better that would have to do with the Coffee Frosting.</p>
<p style="text-align: center;">&#8230;..Coffee ice cream was a favorite of mine as a kid and I have to say one lick of this Coffee Frosting and oh the memories came flooding back. You see we typically had ice cream in the freezer at my house when I was growing up. Everyone wanted to babysit at our house. Yes they actually told us so. They liked that we had ice cream. (and my brother and I were also easy to babysit, so I&#8217;m told) So if you want your babysitters to keep coming back apparently the trick is to stock the freezer with ice cream. I would recommend two containers. One coffee, or coffee ripple or what ever they called it with the fudge swirl, and well the second container is up to you. Me, I like mint chip, peanut butter, chocolate&#8230;yea, I pretty much like them all.</p>
<p style="text-align: center;">That is my tip for the day.</p>
<p style="text-align: center;">How to keep a good babysitter&#8230;ice cream is the answer, and by the way it&#8217;s the answer to making your kids happy to, I use it all the time. Kids were mean, lets go inside and get some ice cream! Had to get a shot at the doctor, that calls for a milkshake. You see I don&#8217;t always reward things with ice cream, there are moments cookies and cupcakes are required <img src='http://www.createdby-diane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p style="text-align: center;">Then again if there is no room in your freezer, make these! I&#8217;m sure the babysitter, you kids, neighbors and friends will all come over to enjoy them.</p>

<p>These Mocha Cupcakes with Coffee Frosting really start with these two wonderful ingredients. I kept this real simple so no excuses.  You can whip up a batch really quick and if there are any extras, just call me over I&#8217;ll help you finish them.</p>

<p><strong>Coffee Cupcakes</strong></p>
<p>2 1/3 cups First Street Chocolate Cake Mix</p>
<p>1/2 cup brewed Ambiance Classic Coffee (double strength then cooled)</p>
<p>2 eggs</p>
<p>1/4 cup oil</p>
<p>2 T cream</p>
<p>To brew double strength coffee Place two times the amount of coffee recommended. In this case I used 4 tablespoons Ambiance coffee with 12 oz water to be sure I made enough. Then I let the coffee cool, before adding it to the rest of the ingredients.</p>
<p>Place cake mix, eggs, oil, cooled coffee and cream into bowl and mix on medium for 30 seconds or until all ingredients are combined. Place 3 tablespoons batter into each cupcake liner. I used a  dark coated cupcake pan and baked these cupcakes at 325 degrees for 24 minutes.</p>

<p><strong>Coffee Frosting</strong></p>
<p>1/2 cup butter</p>
<p>2 cups powdered sugar</p>
<p>2 tablespoons coffee</p>
<p>2 tablespoons cream</p>
<p>1 teaspoon vanilla</p>
<p>Beat butter with powdered sugar add in coffee and cream and vanilla.</p>
<p>This made plenty of frosting for 12 cupcakes so I piled it high and am not divulging if I just ate the rest of the frosting or not.</p>

<p>Oh how I love these beautiful Brown Land O Lakes Eggs. I purchased the Cage Free Variety and look how carefully they are packed with a clear insert to hug all the eggs!</p>

<p>Eggs</p>
<p>Corn tortillas</p>
<p>Heat tortillas in microwave for 10 seconds to soften them so they are pliable to be able to fit into cupcake pan.</p>
<p>Spray the cupcake pan so that it is lightly oiled.</p>
<p>Place one 4 inch tortilla into each well of the cupcake pan.</p>
<p>Crack one egg and place it into each well of the cupcake pan.</p>
<p><strong> </strong>Bake at 375 degrees for 10-12 minutes until desired firmness.</p>
<p>*Carefully remove from hot pan and serve with chopped scallions.</p>
<p><strong></strong>*I like that it&#8217;s easy to bake a dozen eggs at a time, or just a few if that is all that is needed.</p>

<p>To fit the tortillas into the pan they may rip a bit, but the tortillas laid nicely when filled with egg and I didn&#8217;t end up with any messes. The tortillas fit snug into the pan.<br />

<p>I recently made five loaves of Stuffed Jalapeno Bread and mixed up just a bit to much of the spread. I couldn&#8217;t decide if I needed 5 or 6 loaves of bread, so I made 5 and had some of the spread mixture left over. The spread is a mixture of roasted jalapenos, cream cheese, cheddar cheese, scallions and cilantro.</p>

<p>On top of the pasta I put the spread, since the pasta was hot the cheese began to melt. I heated it in the microwave for 20 seconds and viola, I created a new favorite.</p>
<p>One bite and I wondered why I hadn&#8217;t thought of it before, it&#8217;s mac and cheese meets Jalapenos and bacon. I know you don&#8217;t see bacon in the bowl above&#8230;neither do I. I took this photo and then took one bite and realized I forgot the bacon. How could I have forgotten the bacon, I&#8217;m still not sure. I did add it on and stick my dish under the broiler to heat up the crumbled bacon, so trust me on this, don&#8217;t forget the bacon.</p>
<p>As we know bacon goes well on everything!!! I just heard a commercial on the radio today and I agree. I love the bag of cooked crumbled bacon I get a Costco. It&#8217;s not like that bacon in a jar, that has a weird smell, it&#8217;s real bacon, cooked and crumbled, anyway if you haven&#8217;t tried it, go ahead. I love it and add it to so many dishes. Bacon is good on so many items like,</p>

Otherwise, start roasting those jalapenos so you can enjoy this delicious version of mac and cheese. Since Jalapenos, Cilantro, Scallions and pretty much why I love Mexican food so much, I thought it fitting to call this Mexican Mac and Cheese. <p>Nowadays there are so many dark chocolates available, I wouldn&#8217;t have to dig through a whole bag just to get a few. I sure am glad about that. Because I really LOVE dark chocolate. I recently found Hershey&#8217;s Special Dark Chocolate Cocoa. I knew I was going to make chocolate chocolate chip cookies with it and I&#8217;m so glad I did, these cookies are DELICIOUS!!!</p>

<p>The funny part about these cookies is that I didn&#8217;t use semisweet chocolate chips in them,which I normally would have. I used these really large milk chocolate chips that I found my local store. I wished they had the large chips in dark chocolate, but I figured I&#8217;d give them a try in these cookies and I&#8217;m glad I did, they were great!</p>

<div>½ cup butter<br />
¾ cup brown sugar<br />
1 egg<br />
1 ¼ cup flour<br />
¼ cup Special Dark Cocoa<br />
½ teaspoon baking powder<br />
¼ teaspoon salt<br />
2 teaspoons vanilla</div>
<div>1 cup large milk chocolate chips</div>
<div>Mix butter and sugar together until creamy then add egg and mix thoroughly. Add flour, cocoa, baking powder and salt along with vanilla mix until all ingredients are incorporated. Stir in chocolate chips.</div>
<div>Drop by two tablespoon size or mold and flatten three tablespoons of dough for a smoother cookie.<br />
Bake at 375 degrees for 12 minutes. (cooking times vary by oven, I checked my cookies each minute after 10 minutes)</div>

<p>I dropped 2 tablespoons of dough onto the cookie sheets and bake the cookies at 375° for 12 minutes. <p>They were really delicious, rich and thick and almost brownie like. I didn&#8217;t want them to spread out to much, but I was hoping for smoother shape.</p>

<p>I didn&#8217;t want to add sticks to these cookies so, I covered the pan with Reynolds Release Foil. I pressed the foil in each area to be sure the cookies would have a uniform shape.</p>

I will definetly be making these again and again, they were so good. There is only one left and I may just have hid it. I&#8217;ll share if anyone asks but I&#8217;m pretty sure that everyone thinks they are all gone <img src='http://www.createdby-diane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

The key for me to have this soup cook quickly is to be sure all the items are chopped up small enough to cook quickly, but not too small that they disappear when cooked. I&#8217;ve added Chicken to this Italian Classic soup.</p>

<p>2 celery stalks</p>
<p>1/2 medium onion</p>
<p>32 oz chicken broth</p>
<p>2 cups water</p>
<p>1 1/2 cups small pasta</p>
<p>1 cup Tomato Sauce</p>
<p>1 15 oz. can Cannellini beans</p>
<p>2 boneless skinless chicken breasts</p>
<p>1 tablespoon oregano</p>
<p>1/4 cup grated Romano Cheese</p>
<p>salt and pepper to taste</p>

<p style="text-align: center;">Dice carrot, celery, onion.</p>
<p>Place the vegetables into a 4 qt. stockpot and heat them on medium heat with a tablespoon oil.</p>

<p style="text-align: center;">This is a Mirepoix. It&#8217;s the base for a lot of soups and stews.</p>
<p>Begin cutting two <strong>First Street Boneless Skinless Chicken Breasts </strong> into 1/2 inch pieces. Add the chicken to the vegetables, along with oregano stir and cook 5 minutes.</p>

<p>Add chicken broth and water and bring to a boil.</p>

<p>Place 1 1/2 cups small pasta (<strong>First Street Salad Macaroni</strong> type of Ditilini pasta) into broth.</p>

<p>Bring to a boil on high heat, when it comes back to a boil add 1 cup Tomato Sauce, ( I used <strong>Ragu Pasta Sauce</strong>) Cannellini beans, salt and pepper.  Cook for 5 minutes on medium heat and serve with Grated Romano or Parmesan Cheese.</p>

<p>Being left behind can be the best thing ever! There always seems to be an apple lying around my kitchen, just like the last banana. This is for the lucky apple that didn&#8217;t make it along the way to someones exciting day. You may first think being left behind is bad, this is one time that it&#8217;s not. It&#8217;s not the kind of day that you&#8217;re left behind and no one cares. It&#8217;s completely the opposite. You know those kind of days don&#8217;t you? Reminds me of the movie where the girl tells her mom of a party that she didn&#8217;t &#8220;get to be invited to&#8221; and the mom says oh who&#8217;s having the party and the daughter tells her mom the name of the girl and it so happens to be the popular name of it&#8217;s time. Well you get the idea. (if you know the name of the movie and like guessing go ahead I&#8217;ll let you know if you guess the scene from the movie I&#8217;m thinking of) anyway this is one of those recipes that I could make just about every day.  Well that is as long as I have an apple lying around. If you&#8217;ve been left behind today, yesterday or any day than this is for YOU! and me too. I&#8217;m not telling how many of these I had to taste to be sure they had just the right amount of caramel drizzled on top.</p>

<p>2 cups flour</p>
<p>1/4 cup brown sugar</p>
<p>3 teaspoons baking powder</p>
<p>1 teaspoon salt</p>
<p>1/2 cup cold butter</p>
<p>1 medium Fuji Apple peeled and grated (1/2 cup)</p>
<p>1 egg</p>
<p>3 Tablespoons cream</p>
<p>2 teaspoons vanilla</p>
<p>1/4 teaspoon cinnamon</p>
<p>3 Tablespoons caramel sauce</p>
<p>&nbsp;</p>
<p>1/4 cup caramel sauce for drizzle</p>
<p>&nbsp;</p>
<p>Mix flour, sugar, baking powder and salt in large bowl. Cut in cold butter, until crumbly. In small bowl mix apple, cream, caramel sauce, cinnamon, vanilla, and lightly beaten egg. Add the small bowl of wet ingredients to large bowl of dry ingredients and stir until incorporated, pour out onto floured surface and knead until smooth. Roll dough a half inch thick and cut with circle cutter. Bake at 375 degrees for 15-18 minutes or until lightly golden.</p>
<p>Makes 18 scones. Let cool for a few minutes. Then drizzle with caramel sauce.</p>

<p>I place a piece of parchment paper under the scones to drizzle the caramel sauce, so the caramel sauce it&#8217;s all neatly in one area. I&#8217;m not saying I don&#8217;t lick the heck out of that parchment paper when no one is looking and I won&#8217;t tell on you if you do the same.</p>

<p><strong>S&#8217;more Peanut Butter Bites</strong></p>
<p>1 package Peanut Butter Cookie Mix (Betty Crocker*plus items required from package)</p>
<p>1 tablespoon water*</p>
<p>3 Tablespoons oil*</p>
<p>1 egg*</p>
<p>1 cup flour</p>
<p>1 cup cream</p>
<p>1 cup chocolate chips</p>
<p>3/4 cup mini chocolate chips</p>
<p>72 mini marshmallows</p>
<p>2/3 cup graham cracker crumbs</p>
<p>Makes 36 Peanut Butter S&#8217;more Bites</p>

<p>Begin by making the ganache filling:bring one cup of cream to a boil then pour it over one cup of chocolate chips. Let the chocolate chips melt for a minute then stir until creamy. Let cool.</p>
<p>Mix peanut butter cookie mix with water, oil, egg and flour.</p>
<p>Roll about two teaspoons of dough into 36 balls and place them into paper lined mini cupcake pans.</p>
<p>Create a well in the center of each. You will find step by step instructions <a href="http://www.createdby-diane.com/2011/11/gingerbread-cheesecake-bites.html" target="_blank">here</a>.</p>
<p>Place a teaspoon or so of the cooled chocolate ganache into each well and top with a few mini chocolate chips, two mini marshmallows and graham cracker crumbs.</p>

<p style="text-align: center;">A few months ago I found this Rosette Iron in an antique shop and thought I would give it a try. So glad I did! It was a dollar. I did look to see if these iron are still available, they are. I found <a href="http://www.amazon.com/Nordic-Ware-Swedish-Rosettes-Timbales/dp/B00004RFPJ" target="_blank">these</a>. In case you don&#8217;t find one in your local antique shop like I did and still want to make them.</p>

<p style="text-align: left;"><span style="font-size: medium;">Rosette Cookie Recipe</span> <span style="font-size: x-small;"><a href="http://allrecipes.com/recipe/rosettes-i/" target="_blank">from All Recipes</a></span></p>
<p style="text-align: left;">2 eggs</p>
<p style="text-align: left;">1 tablespoon sugar</p>
<p style="text-align: left;">1/4 teaspoon salt</p>
<p style="text-align: left;">1 cup flour sifted</p>
<p style="text-align: left;">1 cup milk</p>
<p style="text-align: left;">1 teaspoon vanilla</p>
<p style="text-align: left;">powdered sugar for dusting</p>
<p style="text-align: left;">Mix eggs, sugar and salt. Add in the flour milk and vanilla and mix with a whisk until smooth.</p>
<p style="text-align: left;">Heat oil to375 degrees. ( I poured 32 oz of oil into a four quart pot)Drain excess oil off, place iron in hot oil for two minutes, then dip the hot iron into the batter but don&#8217;t let the batter touch top of iron or they won&#8217;t release. Fry rosette in oil until lightly golden, it only took 10-15 seconds, mine released off the iron and I was able to flip each one over and they came out light and crisp.I checked the oil temperature with three thermometers and they all said a different temperature. If the oil is to hot they did not seem to swell up, they just cooked to quickly and started to burn. Oil temperature is key for these to turn out right.</p>
<p style="text-align: left;">You have to heat the iron and oil it for each rosette, it took some time to make them. But they were worth it.</p>
<p style="text-align: left;">I didn&#8217;t think the amount of batter was going to make many rosettes, I was wrong it made over 48.</p>

<p style="text-align: center;">Ham, Egg and Cheese Waffle Sandwich</p>
<p style="text-align: center;"> I love large brunches with a a glazed ham, the sweet and savory combination is my favorite. This sandwich wraps up all the things I like together.</p>
<p style="text-align: left;">This all began with two hot and toasty waffles. I added to them two slices of Gouda Cheese, it  melted on the hot waffles. Followed by a couple slices of <a href="http://farmerjohn.com/">Farmer John</a> Ham, topped  off with an egg. I cooked the egg mixed with a tablespoon water like an omelet in a small round shape, to fit on the sandwich.</p>
<p style="text-align: left;">I bet some of you have ham leftovers from Christmas dinner and this would be a perfect use for those leftovers.</p>

She would bake them in one pound coffee cans and they would look so wonderful topped with icing and sprinkles. I love being the helper and delivering them to neighbors and friends for her. When I got married I&#8217;d make them and oh how I loved a slice heated then spread with cream cheese. I knew I wanted to make a version of her Date Nut Bread, so I adjusted the recipe a bit and added cream cheese frosting and well. Well no more storing coffee cans, no more greasing and flouring the cans, then baking then washing the cans again. Yea this is way more fun. Just bake and eat!</p>

<p>1 pound dry sugar coated pitted dates</p>
<p>2 tsp baking soda</p>
<p>1 cup boiling water</p>
<p>1 cup butter</p>
<p>1 1/2 cups sugar</p>
<p>4 cups flour</p>
<p>2 teaspoon baking powder</p>
<p>1 teaspoon salt</p>
<p>1 cup chopped walnuts</p>
<p>2 eggs</p>
<p>2 teaspoon vanilla</p>
<p>In bowl place dates with baking soda and boiling water. Stir and let cool.</p>
<p>In separate bowl beat butter and sugar, add flour, baking soda, salt. Stir in slightly beaten eggs vanilla and nuts. Add cooled date mixture, stir until Incorporated.</p>
<p><strong>Cream Cheese Frosting</strong></p>
<p>4 oz cream cheese</p>
<p>2 cups powdered sugar</p>
<p>1 teaspoon vanilla</p>
<p>beat cream cheese then add in the sugar and vanilla, mix until smooth.</p>
<p>Pipe frosting on cooled Date Nut Bites and top with sprinkles.</p>

<p>This recipe made over 50 minis and a dozen cookies.</p>
<p>Oh did I mentions I made cookies too. Since there was plenty of batter I used a large scoop and made drop cookies. They are soft and muffin like, not crisp cookie texture, but I&#8217;m calling them cookies <img src='http://www.createdby-diane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>8 oz sour cream</p>
<p>1 avocado</p>
<p>1/4 teaspoon garlic powder</p>

<p>2 15 oz. cans cannellini beans drained and rinsed.</p>
<p>1 4oz. can diced green chilies</p>
<p>2 cups cooked chicken or turkey *great recipe for turkey leftovers</p>
<p>juice of 1/2 lime</p>
<p>1 bunch cilantro chopped</p>

<p>For the ganache: bring one cup of cream to a boil then pour it over one cup of chocolate chips. Let the chocolate chips melt for a minute then stir until creamy. Let cool.</p>

<p>Once the ganache is cooled add it to 4 oz. cream cheese that you have lightly beaten. Mix until all the chocolate is incorporated. Place into a piping or plastic bag with tip cut off to make it easy to distribute into each cookie cup.</p>
<p>Now for the cookie part:</p>
<div>I used one 30 oz. Roll/Chub of Pillsbury refrigerated peppermint sugar cookie dough. If you aren&#8217;t able to find this, my estimated guess on how to make it would be use a sugar cookie recipe and add about one cup peppermint white chocolate candy pieces chopped up and a teaspoon peppermint extract.***To the cookie dough: Add a cup of flour, so the dough doesn&#8217;t swell and cave in when baked. I made this recipe three times. Trust me, add the flour.The 30 oz roll of dough made 48 cookie cups.<br />

<p>(this photo I took on the first try before I added the flour, but I&#8217;m showing you this photo for you to see if you re-roll the dough into a log how you can easily cut it into the 48 pieces)</p>
<p>I added the cup of flour to the dough and rolled it into a log like they had it and cut the log in 1/2 then 1/2 again lengthwise. Then made 10 slices in the dough, and rolled each one into a ball and placed them into  the mini cupcakes pan with paper lines.</p>

<p>Make a well into each cookie dough ball so that you will be able to add the filling. <a href="http://www.createdby-diane.com/2011/11/gingerbread-cheesecake-bites.html" target="_blank">This post</a> has step by step instructions on how to make the wells into the dough if you&#8217;d like to see the cookie cups before they are filled. Note**it&#8217;s not a little indentation, you press dough firmly to create a large enough well so you have plenty of filling.</p>

<p>Place them into a preheated 325-250 oven, if you oven runs hot, bake them at 325. They won&#8217;t swell up as much. If you are using nonstick pans bake at 325 degrees. Bake the cookies for 9-11 minutes, watch them. Take them out before they swell up TOO much over the edges of each cupcake area. They do sink a bit when cooling. As you can see in the photo below these are not the same as the <a href="http://www.createdby-diane.com/2011/11/gingerbread-cheesecake-bites.html" target="_blank">Gingerbread Cheesecake Bites</a>, that were quite full when cooled.  You can test for the doneness of the cookie with a toothpick, some dough will stick on the toothpick, if nothing is sticking, most likely you over baked them.</p>

<p>Mix together flour, sugar, baking powder and salt. Cut in cold butter until mixture resembles coarse crumbs. Add milk,  and extract along with one egg and one egg yolk (reserve other white) Mix until blended. Knead on a floured surface, cut with floured cookie cutter. Brush tops with reserved egg white. Bake at 350 degrees for 20 -25 minutes until lightly golden brown.</p>
<p><strong>Peppermint Icing</strong><br />
Mix 1 cup powdered sugar with ¼ teaspoon peppermint extract. Then drizzle on top of scones when they are cool.</div>

Connecting food bloggers with cookies. Everyone who signed up bakes three dozen cookies. You are to make a new recipe or a recipe you haven&#8217;t published yet. Then send one dozen cookies to three recipients that they paired you with. You will in turn receive one dozen cookies from three other bloggers. What a great way to get to know six new bloggers as well as all the others who signed up to join in the fun. There were 625 participants. They are already talking about next years swap!</p>

We&#8217;re met in real life and I think of her as my friend. It was fun to send her cookies, you see I don&#8217;t often send out cookies to people I know across the US. I am always afraid they will break or get lost in the mail or won&#8217;t taste any good when they arrive. Julie assured me they arrived safely.</p>

<p>1 cup butter<br />
1 ½ c confectioner&#8217;s sugar<br />
1 egg<br />
2 tsp<br />
1 tsp peppermint extract<br />
1 tsp vanilla<br />
2 ¾-3 c all purpose flour<br />
2 tsp baking powder<br />
1tsp saltCream together butter and confectioner&#8217;s sugar.  Add to this the egg and flavorings.  Sift together flour, baking powder, and salt, adding this mixture one cupful at a time to the wet ingredients.  Mix until the dough forms a ball on the paddle.  Roll out on floured surface and cut into desired shapes.</p>
<div> Bake at 400° for 7-8 minutes.</div>

1 cup powdered sugar<br />
1 Tablespoon corn syrup<br />
2-3 Tablespoons water<br />
½ teaspoon peppermint extract<br />
3 drop soft pink color<br />
Mix sugar with corn syrup and water along with extract and food coloring until icing is smooth. Pipe onto cookies using a #3 tip.</div>
<div>I put some edigle glitter on the cookies to make them shine!</div>
<div>Let icing dry before packaging at least 12 hours.</div>
