*Recipe*

Ingredients:

6 garlic cloves, minced

1 cup chopped onion

1/4 to 1/2 teaspoon crushed red pepper flakes, or to taste

2 cans (16 ounces each) black beans, drained and rinsed

1 tablespoon chili powder

2 to 3 teaspoons ground cumin

2 tablespoons vegetable oil

1 can (6 oz.) tomato paste

1 teaspoon dried leaf oregano

1 bay leaf

1 can (28 oz.) diced tomatoes in juice

1 tablespoon soy sauce

1 1/2 cups water

1 tablespoon red wine vinegar

2 cans (16 ounces each) beans -- pinto, garbanzo, great northern, kidney beans, etc. -- drained and rinsed

grated cheese, sour cream, chopped parsley, chopped hard-cooked egg, green onion, or other garnishes

Preparation:

Heat the pan with some oil. Add garlic, red pepper flakes, onions and saute them. Add cumin and chili powder cooking for a couple of minutes. Add the mixture to the crock pot. Mix in the rest of the ingredients into the crock pot.

Now this is the whole reason we use a crock pot. Its just that simple. Mix everything in and go to work or whatever you may be doing, come home and you have yourself a black bean crock pot chili to enjoy with the family.
1/2 cup diced carrots
1/2 c. finely chopped green bell pepper
1/2 c. finely chopped celery
2 tbsp. minced parsley
2 medium cloves garlic minced
1 bay leaf
2 tbsp. chili powder
1 tsp. salt
1/8 tsp. pepper

Preparation:

If you think vegetarian can't enjoy the wonders of chili because you believe chili always has meat. Here is a vegetarian recipe for chili I hope you can enjoy. Serve with grated cheese, onions, and tortilla chips for dipping.

Vegetarian Chili Ingredients

• 3 Tablespoons olive oil
• 1 1/2 cups chopped onion
• 8 large garlic cloves, chopped
• 2 19 oz. cans red kidney beans
• 2 19 oz. cans dark red kidney beans
• 1 envelope taco seasoning or 1/4 cup taco seasoning
• 1 teaspoon dried basil
• 1/2 teaspoon dried oregano
• 1/2 teaspoon dried thyme
• 1 15oz can tomato sauce
• 3 cups chicken broth or vegetable broth
• 1 6oz can tomato paste

Vegetarian Chili Directions

Remember any recipe can be made in the crock pot instead. You just simply have to put all the ingredients into the crock pot instead of the stove top pot.

Heat oil in heavy saucepan over medium-high heat. Add onions and garlic. Saute about 7 minutes or until onions are cooked down some. Add beans, taco seasoning, basil, oregano, and thyme. Stir 2 minutes. Mix in tomato sauce, chicken broth and tomato paste. Simmer until thickened to desired consistency, stirring occasionally to prevent sticking, about 1 and a half hours. Season to taste with salt and pepper. Refrigerate until cold then reheat over low when ready to serve.

Chili is one of America's favorite dishes, and we have searched all over to find such famous chili recipes as Hot and Spicy chili, Crockpot chili, Vegetarian chili, as well as many other famous chili recipes. There is a lot of controversy surrounding the origins of chili as well as how to make the dish. It all seems to come down to how you like to dress up your favorite chili recipe. If you ask anyone for a chili recipe these days, chances are that you will get a different recipe from every person.

All chili recipes have changed over time with new recipes being created on a daily basis people are always adding their own little things into chili and thats where those recipes come from. You can pretty much add anything to chili and it will taste great.. But where did it all start? There are people that believe in the 1840's Texas cowboys pounded beef fat and dried beef with chili peppers and salt to make a sort of trail food for their treks to the gold fields. They would boil this concoction to make a dish they called chili.

A variation on the cowboy origins of chili recipes says that cowboys would plant oregano, chiles, and onions along their well travelled trails in patches of mesquite to keep foraging cattle from eating them. As they moved along the trails, they would harvest the spices, onions, and chiles and combine them with beef to create a chili recipe called "Trail Drive Chili".

Yet another version of the origin of chili says that the first chili recipe was made in the Texas prison systems because only the cheapest meats were served in prison. To make the meats a little tastier and less tough, they were cut into very small pieces that were boiled with chiles and spices. The reason this works is when meat is cut into smaller pieces it has more surface area therefor it can absorb flavors easier. (if you can remember back to grade 11 science!)

Yet another theory is that Canary Islanders who were transplanted into San Antonio as early as 1731 used peppers and onions combined with various meats to make early chili dishes. This theory also gives credit to Canary Islanders for first bringing cumin spices, an essential chili recipe spice, to the United States.

One largely disregarded theory is that chili was founded by the U.S. Army. The first Army chili recipe was published in 1896. Garlic and beans were added by World War I and tomatoes by World War II.

Chili's most plausible origin is 1828 when J.C. Clopper observed the poor people in San Antonio cutting what little meat they could afford into a has like consistency and stewing it together with as many pieces of peppers as pieces of meat.

Anyways who cares how chili was discovered!, it is a dish enjoyed in many homes in America today and in many different ways. The easy chili recipes within this site are just a few of the ways to concoct your own chili specialty. Take a look at each chili recipe and choose one that you might like. Add your own twist to the recipe - this will surely keep the evolution of every chili recipe moving.
This is a little update on my recipe that works well for all of the people out there who are hunters. This year was the first year I have ever gotten ground venison from this years hunting season. I wasn't sure how I would cook ground venison? I assumed I would just try cooking with it instead of beef. I put venison in my crock pot chili and it was fantastic! This is great for anyone who does not like the "game taste" of venison. Give it a shot, you will not be disappointed with this crock pot chili made with venison.

</b:if>

Chili is a fantastic way to warm you up on those cold days or even a simple appetizing meal. There are many ways to cook chili and everyone has their way. You can't really go wrong when it comes to crock pot chili. Throwing a few things in the crock pot and off you go for the day, come home and your worry free crock pot chili is done. Here is my crock pot chili recipe.

Crock pot Chili

Ingredients:

1 can of red kidney beans

1 can of brown beans

1 can of diced / stewing tomatoes

1 can of tomato paste

1-2 pounds of ground beef

1 can of corn

1-2 small cooking onions

minced garlic

chili powder

1 can chick peas

1 can of pineapple (yes pineapple!)

Cooking steps-

The steps to making the crock pot chili are really quite simple. First you cut up onions and place into a frying pan along with a tsp. of minced garlic and your ground beef. Stir until meat becomes browned. Place everything from pan into the crock pot. Strain and rinse kidney beans and chick peas then place into the crock pot. Cut pineapple to desired size and add to crock pot. Open the rest of the cans and dump into crock pot. Sprinkle chili powder on top. If you want your crock pot chili to be spicy then add a little more. Stir everything together.

Note-

You may need to add a little bit of water to the crock pot. Do not add too much, once it cooks the liquids will come out more. Personally I like my crock pot chili thicker.

As you can see crock pot chili is a very simple yet delicious meal to cook any day. There is nothing better when you come home from a long day of work and dinner is served! I hope everyone enjoys my recipe for crock pot chili.
