I can honestly say that I would rather use my pastry degree for baking bread much more than decorating cakes. I love baking all kinds of things but I don't enjoy the decorating of cakes nearly as much as making yummy baked goods like yeast and quick breads and cakes, teabreads, cookies. The whole frosting and decorating part is just not my thing as much as the baking part.&lt;br /&gt;&lt;br /&gt;This past week I made a 9 grain bread and an olive loaf with my team. Our team is great and is starting to really work well together. I am getting to be a whiz at the baker's percentages, too. Bring mixture to a boil and boil for 1 minute (no less). Turn heat off and add the peanut butter and I whisk u&lt;span class="text_exposed_show"&gt;ntil it is combined and then add the oats. Mix and drop from a spoon onto a parchment or wax paper on the counter or on a cookie sheet. Let them cool and get firm. That is when we had the cake, too.  It is a devil's food cake (no box mix) and a 7 minute frosting made with brown sugar instead of white.  The brown sugar makes it a Sea Foam frosting. Then I add the sugar and butter and combine.  It will still be very crumbly.  You put it into the pie pan and press the bottom and up along the sides until it is evenly distributed.  Bake in a 350 degree oven for about 12 minutes and then remove and cool.&lt;br /&gt;&lt;br /&gt;While it is cooling you can make the pie filling.&lt;br /&gt;&lt;br /&gt;Ingredients include...&lt;br /&gt;&lt;br /&gt;To food processor add:&lt;br /&gt;&lt;br /&gt;*   8 ounces cream cheese&lt;br /&gt;*   1 cup powdered sugar&lt;br /&gt;*   3/4 cup creamy peanut butter&lt;br /&gt;*   6 Tablespoons milk (I used almond milk)&lt;br /&gt;*   8 ounces whipped topping&lt;br /&gt;*   chocolate chips (optional)&lt;br /&gt;*   chopped peanuts for topping (also optional)&lt;br /&gt;&lt;br /&gt;Combine cream cheese, powdered sugar, peanut butter, and milk in processor and blend until smooth.  Fold in topping (I use a separate mixing bowl and not the food processor to do this).  Spoon into baked crust.  I also put some chips into the pie and some on top.  Garnish as you like with chocolate chips and/or peanuts. On this road we went through a tiny little town on the Continental Divide called Pie Town, New Mexico.&lt;br /&gt;&lt;br /&gt;There really is a pie shop... actually there are two pie shops right on the divide. Top with seasonings, chili and pinon mix well. Set aside to blend flavors while the crust is being prepared.&lt;br /&gt;&lt;br /&gt;Pastry crust (makes four crusts)&lt;br /&gt;This recipe will use two crusts.&lt;br /&gt;The other two can be frozen for future use&lt;br /&gt;&lt;br /&gt;2 ½ c. flour&lt;br /&gt;¼ t. baking powder&lt;br /&gt;1 t. salt&lt;br /&gt;½ c. salted butter&lt;br /&gt;½ c. shortening&lt;br /&gt;1 egg&lt;br /&gt;1 T. white vinegar&lt;br /&gt;1 c. cold water&lt;br /&gt;&lt;br /&gt;Combine flour, baking powder and salt. Cut in butter and shortening. In separate bowl, mix egg, vinegar and water. Add to flour mixture and blend with hands until dry ingredients are moist (more water may have to be added).&lt;br /&gt;&lt;br /&gt;Divide dough into four sections. Roll out one section on a floured board to fit 9” pie pan. Put crust into pan. Place apple mix , mounded in the center. Top with one rolled section of crust. Flute edges, cut vent holes into top crust. Brush with egg wash and sprinkle natural sugar on top (optional). Bake at 425 degrees for 15 minutes, then 400 degrees for one hour. This whole plate was raw and pretty yummy.  I must say that I like my coleslaw better, though.  The flax seed crackers were the best. It has been a while.  My mom has all the news she can get and she will have to undergo chemo.  The tumor was removed and there were no lymph nodes involved but the cancer was aggressive and not hormone related so they are taking all precaution to keep the cancer from coming back.  Please continue to pray for her as she undergoes this chemo over the coming months. &lt;br /&gt;&lt;br /&gt;We just returned from a week long trip through the Gila National Wilderness.  What a great time we had! He won, for the second year in a row, a composition competition held by the TMTA (Texas Music Teachers Association).  All our children are student affiliates with this program. I had originally bought some but made my own this morning and it was better than the store bought stuff.  I basically mixed all of the following and stored it in a bag...&lt;br /&gt;&lt;br /&gt;6-8 cups rolled oats&lt;br /&gt;1 package of dates&lt;br /&gt;1 cup sunflower seeds shelled and unsalted&lt;br /&gt;1 tsp salt&lt;br /&gt;&lt;br /&gt;You can add just about any fresh fruit when you serve it and I pour rice or almond mylk over it and that is a typical breakfast for me these days.  I love the crunch and texture and you don't bake or cook it at all. I also find that I am craving grains and whole wheat carbs.  I have no huge desire for white food (things made with white flour and sugar) so that is good.  I do admit that I want chocolate, though. Those French fry looking things next to it are NOT fries at all... they are Jicama slices tossed in a bit of lime juice and chili powder.  I am not used to eating Jicama so it was a bit different but not unpleasant at all. I also picked up some books to read on the subject and am trying some new things.  One of my favorite sites that I have found (along with her book I just picked up) is &lt;a style="font-weight: bold;" href="http://www.aniphyo.com/"&gt;Ani Phyo&lt;/a&gt;.  She made a &lt;a style="font-weight: bold;" href="http://www.aniphyo.com/2008/03/13/aston-martin-race-day-7/"&gt;wild rice salad&lt;/a&gt; that is really great!  I made a few changes for my own tastes and ingredients I had on hand and this is what I came up with ...&lt;br /&gt;&lt;br /&gt;Soak wild rice for 24+ hours changing water 3-4 times.  It is recommended to use filtered water but I did not have any on hand.
