&lt;span style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;Ingredienti per 4 persone:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
1 cavolo verza;&lt;br /&gt;
400 gr di macinato;&lt;br /&gt;
2 uova;&lt;br /&gt;
2 cucchiai di pangrattato:&lt;br /&gt;
3 cucchiai di parmigiano grattugiato;&lt;br /&gt;
1 spicchio di aglio;&lt;br /&gt;
1/2 cipolla;&lt;br /&gt;
noce moscata;&lt;br /&gt;
250- 300 gr di pomodori pelati;&lt;br /&gt;
olio extravergine;&lt;br /&gt;
sale, pepe;&lt;br /&gt;
&lt;span style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;Preparazione.&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
In una terrina amalgamare il macinato con le uova, il pangrattato, il parmigiano,l'aglio tritato &amp;nbsp;un profumo di noce moscata, sale, pepe.&lt;br /&gt;
Scottare un attimo in acqua bollente salata le foglie del cavolo verza più belle, scolarle con un mestolo forato e stenderle su di un canovaccio.&lt;br /&gt;
Mettere al centro di ogni foglia un cucchiaio della farcia, arrotolare tipo involtino e chiudere con stuzzicadenti.&lt;br /&gt;
Tagliare sottilmente la cipolla e metterla sul fondo del tegame con un filo di olio; adagiarvi sopra gli involtini e cospargerli di pomodori spezzettati, un'altro filo di olio, sale e pepe.&lt;br /&gt;
Coprire il tegame e cuocere a fuoco basso per circa 35- 40 minuti, facendo attenzione che non si attacchino.Quando la salsa sarà pronta eliminare gli stuzzicadenti e servire.( Sono buoni anche freddi )&lt;br /&gt;

&lt;b&gt;Per la pasta frolla:&lt;/b&gt;&lt;br /&gt;
300 gr. di farina 00;&lt;br /&gt;
160 gr. di burro;&lt;br /&gt;
160 gr. di zucchero;&lt;br /&gt;
4 tuorli e 1 uovo intero;&lt;br /&gt;
1 pizzico di sale;&lt;br /&gt;
scorza grattugiata di un limone;&lt;br /&gt;
&lt;b&gt;&lt;span style="font-size: large;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Per il ripieno:&lt;/b&gt;&lt;br /&gt;
1/2 l. di latte intero;&lt;br /&gt;
70 gr. di riso per dolci ( Originario, Roma )&lt;br /&gt;
150 gr. di zucchero;&lt;br /&gt;
50 gr. di pinoli;&lt;br /&gt;
50 gr. di uvetta;&lt;br /&gt;
70 gr. di cioccolato fondente;&lt;br /&gt;
30 gr. di cacao amaro in polvere;&lt;br /&gt;
1 bicchierino di liquore Strega;&lt;br /&gt;
2 uova intere;&lt;br /&gt;
noce moscata q.b.&lt;br /&gt;
&lt;br /&gt;
&lt;span style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;Preparazione:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
Lavare l'uvetta in acqua calda, strizzarla e metterla ad ammollare in una tazza con la Strega.&lt;br /&gt;
Cuocere il riso per 25/ 30 minuti nel latte, mantenendo il fuoco basso, aggiungendoci un pizzico di sale e girandolo spesso.Terminata la cottura unire lo zucchero,il cioccolato fondente spezzettato e il cacao.&lt;br /&gt;
&lt;b&gt;Preparare la frolla &lt;/b&gt;come sempre ( va bene anche nel robot purchè non si lavori troppo)farla riposare almeno un'ora in frigo.&lt;br /&gt;
Accendere il forno a 180°. Imburrare e infarinare una tortiera da crostate di 28 cm.&lt;br /&gt;
Stendere la pasta lasciando un abbondante bordo laterale.&lt;br /&gt;
Amalgamare al composto di riso ormai freddo i pinoli, l'uvetta con tutto il liquore,le uova sbattute e una spolverata di noce moscata; lavorare il composto e versarlo nella teglia livellandolo bene.&lt;br /&gt;
Ripiegare i bordo della pasta pizzicando con il pollice e l'indice a distanza di 1,5 cm. l'uno dall'altro per formare delle punte ( becchi o bischeri )&lt;br /&gt;
Infornare per 40 minuti, fino a chè la pasta non a preso un colore nocciola.&lt;br /&gt;
A piacere spolverizzare con zucchero a velo.&lt;br /&gt;
E' migliore il giorno dopo.&lt;br /&gt;

100 gr. di acqua 70 gr di zucchero e &amp;nbsp;40 gr. di Strega.&lt;/div&gt;

1 kg. di fragole, 3 cucchiai di zucchero 1/2 bicchierino di Limoncello 1 cestino di more.&lt;/div&gt;

&lt;b&gt;Per decorare:&lt;/b&gt;&lt;/div&gt;

100 gr di cioccolato fondente&lt;/div&gt;
&lt;div&gt;

&lt;span style="font-size: x-large;"&gt;&lt;i&gt;&lt;b&gt;Preparazione:&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;&lt;/div&gt;

Il giorno prima preparare il pan di spagna, montando le uova intere con lo zucchero per circa 20 minuti ( o fino a che siano triplicate di volume ) aggiungere lentamente  la farina setacciata girando dall'alto verso il basso senza smontare il composto.Imburrare e infarinare una tortiera da 26 cm. Cuocere in forno già caldo 180° per circa 30 minuti ( controllare la cottura con uno stuzzicadenti e coprire con carta stagnola se il dolce tende a scurirsi sopra, ma non prima dei 20 minuti altrimenti si affloscia.&lt;/div&gt;

&lt;b&gt;Preparazione delle fragole:&lt;/b&gt;&lt;/div&gt;
&lt;div&gt;
Lavarle molto bene lasciandone alcune intere per la decorazione; e le altre tagliarle a pezzettini molto piccoli, aggiungere lo zucchero, il limoncello e lasciarle macerare per almeno mezz'ora,in modo che rilascino il liquido.&lt;/div&gt;
&lt;div&gt;
&lt;b&gt;Preparare la crema:&lt;/b&gt;&lt;/div&gt;
&lt;div&gt;
Montare la panna. &lt;/div&gt;
&lt;div&gt;
Montare il mascarpone con una frusta aggiungendo il latte condensato a filo, infine aggiungere la panna .&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
&lt;b&gt;Assemblaggio del dolce.&lt;/b&gt;&lt;/div&gt;
&lt;div&gt;
Tagliare il pan di spagna con un coltello seghettato in tre strati.&lt;br /&gt;
&lt;b&gt;Preparazione della bagna:&lt;/b&gt;&lt;br /&gt;
Bollire l'acqua con lo zucchero e fuori dal fuoco aggiungere il liquore.&lt;/div&gt;
&lt;div&gt;
Bagnare leggermente il primo strato con la bagna di acqua zucchero e Strega, aggiungere una parte di fragole con un poco di liquido, una parte di crema, ancora pan di spagna bagna fragole e crema,per ultimo pan di spagna bagna e crema.A questo punto ho messo in frigo fino al giorno dopo.&lt;/div&gt;
&lt;div&gt;
La mattina ho tagliato una striscia di carta forno dell'altezza del dolce o poco più, circa 9 cm. e della circonferenza di 26 cm.&lt;/div&gt;
&lt;div&gt;
ho messo a sciogliere il cioccolato nel microonde, poi per tenerlo ancora morbido ho appoggiato la tazza di cioccolato su di un tegamino con acqua calda; ho spennellato abbondantemente la carta con il cioccolato fuso, l'ho fatta aderire al dolce e l'ho rimesso in frigo ( 10 minuti bastano per raffreddarsi ) a questo punto prendere un lembo di carta e tirare via leggermente e il gioco è fatto.Tuffare le rimanenti fragole nel cioccolato ( o spennellarle )lasciarle asciugare ( io le ho infilzate in uno stuzzicadenti e messe in piedi su una gratella da dolci) e guarnire con esse e con le more a piacere. (questa volta ho messo più foto per vedere il procedimento)&lt;/div&gt;

Accendere il forno a 180°&lt;/div&gt;

Imburrare e infarinare uno stampo a ciambella.&lt;/div&gt;

Grattugiare la buccia delle arance e spremere il succo.&lt;/div&gt;
&lt;div&gt;
Sbattere molto bene lo zucchero con le uova fino a farle diventare spumose.&lt;/div&gt;
&lt;div&gt;
Aggiungere l'olio, il succo e la buccia delle arance, la farina setacciata con il lievito e un pizzico di sale.&lt;/div&gt;
&lt;div&gt;
Versare il composto nella tortiera e cuocere per 40 minuti.&lt;/div&gt;

500 gr. di mascarpone;&lt;br /&gt;
130 gr di zucchero;&lt;br /&gt;
5 uova;(di cui 5 rossi e 4 albumi)&lt;br /&gt;
6 tazzine di caffè;&lt;br /&gt;
cacao amaro in polvere;&lt;br /&gt;
1/2 bicchierino di rum;&lt;br /&gt;
&lt;br /&gt;
&lt;span style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;Preparazione:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
Preparare il caffè, aggiungere &amp;nbsp;il rum e un cucchiaio di zucchero.&lt;br /&gt;
Dividere i rossi dagli albumi.&lt;br /&gt;
Montare quattro, dei cinque albumi con qualche goccia di limone;( il limone serve, per far si che gli albumi non rilascino acqua dopo che sono stati montati) dividere lo zucchero, cioè 65 gr, e metterlo in un tegamino con mezzo bicchiere di acqua; portarlo a cottura fino a raggiungere 121°. A questo punto versarlo a filo sugli albumi continuando a montarli velocemente ( per la pastorizzazione)&lt;br /&gt;
Fare lo stesso procedimento con il resto dello zucchero, aggiungendolo a filo sui cinque rossi d'uovo.&lt;br /&gt;
Ora unire il mascarpone e gli albumi facendo attenzione a non smontare il composto.&lt;br /&gt;
Con questa crema ottenuta &amp;nbsp;spalmare il fondo di una tortiera, mettere sopra uno strato di pavesini bagnati nel caffè e rum, ancora crema, cospargere di cacao amaro e ripetere lo stesso procedimento &amp;nbsp;fino ad esaurire tutti gli ingredienti.Spolverare ancora di cacao amaro in polvere e far riposare in frigo qualche ora prima di servire.&lt;br /&gt;

1 uovo intero + l'albume rimasto&lt;br /&gt;
pane grattugiato;&lt;br /&gt;
olio di semi di arachidi;&lt;br /&gt;
&lt;span style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;Preparazione:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
Lessare le patate in acqua fredda, una volta cotte passarle allo schiacciapatate (tagliate a metà senza sbucciarle,la buccia resterà nello schiacciapatate; toglierla e mettere l'altra metà di patata fino a passarle tutte.)&lt;br /&gt;
Aggiungere alle patate ancora calde il burro, la salsiccia sgranata, il tuorlo d'uovo,il formaggio grattugiato, sale, pepe e, a piacere noce moscata.Amalgamare il composto e formare delle crocchette grandi come una noce;passarle nella farina, nell'uovo sbattuto e nel pane grattugiato.&lt;br /&gt;
Friggerle in abbondante olio.&lt;br /&gt;

aglio e rosmarino tritati;&lt;br /&gt;
1/2 bustina di zafferano;&lt;br /&gt;
olio e.v.o.&lt;br /&gt;
sale,pepe;&lt;br /&gt;
&lt;span style="font-size: large;"&gt;&lt;b&gt;&lt;br /&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: large;"&gt;&lt;b&gt;Per la fonduta:&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
poco meno di1/2 bicchiere di latte;&lt;br /&gt;
100- 120 gr di toma Piemontese;&lt;br /&gt;
1 tuorlo d'uovo;&lt;br /&gt;
1 noce di burro e 1 cucchiaio raso di farina;&lt;br /&gt;
&lt;span style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;Preparazione:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
Togliere i fili ai cardi, lavarli e tagliarli a piccoli pezzi (circa un paio di centimetri) &amp;nbsp;sbollentarli &amp;nbsp;per 5-6 minuti in acqua salata; scolarli, passarli sotto l'acqua fredda e tenere in sospeso.&lt;br /&gt;
Nel frattempo che sbollentano i cardi, tagliare sottilmente la cipolla e metterla a imbiondire in un tegame abbastanza grande con olio &amp;nbsp;(che possa contenere anche la pasta).&lt;br /&gt;
Lavare molto bene il coniglio, tagliarlo a piccoli pezzettini e metterlo nella cipolla, aggiungere anche il trito di aglio e rosmarino, ed infine i cardi, aggiustare di sale e pepe e continuare la cottura per 15 - 20 minuti.&lt;br /&gt;
Mettere al fuoco l'acqua per la pasta.&lt;br /&gt;
Preparare la fonduta.&lt;br /&gt;
Sciogliere il burro e aggiungerci la farina girando con un cucchiaio per non formare i grumi.&lt;br /&gt;
Scaldare il latte a fiamma &amp;nbsp;bassa, aggiungere il burro ammorbidito con la farina, il formaggio (toma) &amp;nbsp;tagliato a dadini e girare fino a completo scioglimento, quindi togliere dal fuoco e mettere &amp;nbsp;il tuorlo.&lt;br /&gt;
Lessare la pasta in acqua salata, scolarla molto al dente, e completare la cottura nel tegame con il coniglio,aggiungendo un poca &amp;nbsp;di acqua &amp;nbsp;di cottura della pasta e lo zafferano.&lt;br /&gt;

250 gr. di salmone affumicato;&lt;br /&gt;
700 gr di broccoli;&lt;br /&gt;
1 cipollina fresca;&lt;br /&gt;
2 spicchi di aglio;&lt;br /&gt;
vino bianco secco q.b.;&lt;br /&gt;
olio e.v.o.&lt;br /&gt;
2 filetti di alici sott'olio;&lt;br /&gt;
sale;&lt;br /&gt;
&lt;span style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;Besciamella&lt;/i&gt;&lt;/b&gt;&lt;/span&gt; fatta con:&lt;br /&gt;
750 gr. di latte;&lt;br /&gt;
75 gr di burro;&lt;br /&gt;
50 gr di farina (soltanto, perchè deve essere abbastanza morbida)&lt;br /&gt;
sale, noce moscata;&lt;br /&gt;
&lt;span style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;Preparazione:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
Pulire i broccoli, dividerli a cimette e metterli a lessare in acqua salata per 3-4 minuti ; scolarli e ripassarli in olio, aglio e alici a fuoco lento per pochi minuti.&lt;br /&gt;
Preparare la besciamella sciogliendo il burro a fuoco lento, aggiungendo la farina e piano, piano il latte caldo,il sale e la noce moscata; portare ad ebollizione girandola fino a giusta consistenza .&lt;br /&gt;
A parte, in una padella soffriggere dolcemente in olio la cipollina tritata, aggiungere il salmone a piccoli &amp;nbsp;pezzetti, sfumare con poco vino bianco e aggiungerci un mestolino di besciamella per ammorbidire il composto.Mescolare e spegnere il fuoco.&lt;br /&gt;
In una pirofila da forno mettere sul fondo un paio di cucchiai di besciamella, mettere uno strato di lasagne, il salmone, i broccoli e la besciamella. Continuare cosi' e terminare con uno strato di lasagne , besciamella e un poco di parmigiano grattugiato ( a piacere)io non l'ho messo.&lt;br /&gt;
Cuocere in forno già caldo a 180° per circa 25- 30 minuti.&lt;br /&gt;

Mettere il cioccolato spezzettato e il burro in un tegamino a scioglierli a fuoco dolcissimo ( va benissimo il microonde).&lt;br /&gt;
Tritare &amp;nbsp;le noci grossolanamente con il coltello e unirle alla crema di cioccolato.&lt;br /&gt;
Separare i tuorli dagli albumi.&lt;br /&gt;
Accendere il forno a 180°&lt;br /&gt;
In una ciotola montare gli albumi a neve ben ferma con un pizzico di sale, quindi sbattere i tuorli con lo zucchero, unirvi pian piano gli albumi montati girando dal basso verso l'alto. Mettere la farina &amp;nbsp;a cucchiai setacciata con il lievito.Per ultimo incorporare &amp;nbsp;la crema di cioccolato con le noci, che nel frattempo si sarà raffreddata.Versare il tutto in una &amp;nbsp;tortiera di circa 22 cm. foderata di carta da forno e guarnire con qualche gheriglio di noci lasciato intero.Cuocere per 30 minuti in forno già caldo a 180 °.&lt;br /&gt;
Spolverizzare a piacere con zucchero a velo.&lt;br /&gt;

20- 25 code di gambero,&lt;br /&gt;
20 gr. di olio e.v.o.;&lt;br /&gt;
2 spicchi di aglio;&lt;br /&gt;
vino bianco secco q.b.&lt;br /&gt;
60 gr. di besciamella;&lt;br /&gt;
sale,pepe;&lt;br /&gt;
1 peperoncino ( a piacere )&lt;br /&gt;
&lt;br /&gt;
&lt;span style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;Preparazione:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
Preparare la besciamella con una noce di burro, 1 cucchiaino di farina e un bicchiere di latte, sale e noce moscata.&lt;br /&gt;
Versare la farina di ceci in una bacinella, aggiungere lentamente l'acqua salata, mischiando ben bene con la frusta per non formare i grumi e 20 gr. di olio ( è importante rispettare &amp;nbsp;la quantità di questi ingredienti per la buona riuscita delle crespelle).&lt;br /&gt;
Togliere il guscio, ed il filo nero sul dorso alle code di gambero, lavarle e tagliarle con il coltello a piccoli pezzi.&lt;br /&gt;
In una padella versare 2 cucchiai di olio, aggiungere l'aglio sbucciato, il peperoncino e fare imbiondire leggermente.Togliere l'aglio e aggiungere le code di gambero tagliate, saltare per circa 2 minuti, sfumare con il vino bianco, salare e pepare.&lt;br /&gt;
Oliare leggermente una padellina da crespelle, versarvi un &amp;nbsp;poco del composto da coprire il fondo ruotando la padella. Cuocere &amp;nbsp;da entrambi i lati ( ne devono venire 6).&lt;br /&gt;
Assemblare il piatto mettendo una crespella tagliata in tre pezzi ( come da foto) con le code di gambero e sopra un cucchiaio di besciamella. &lt;span id="goog_1151579627"&gt;&lt;/span&gt;&lt;span id="goog_1151579628"&gt;&lt;/span&gt;Mettere in forno caldo (anche sotto il grill ) per qualche minuto.&lt;br /&gt;

3 mele ( piuttosto grosse )&lt;br /&gt;
1 bustina di vanillina;&lt;br /&gt;
1/2 bustina li lievito per dolci;&lt;br /&gt;
il succo di un limone;&lt;br /&gt;
&lt;br /&gt;
&lt;span style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;&amp;nbsp;Preparazione:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
Imburrare e infarinare una pirofila da forno ( io quella delle lasagne ) di cm. 35 " per &amp;nbsp;25.&lt;br /&gt;
Sbucciare le mele, tagliarle a fettina sottili, metterle in una terrina con il succo del limone.&lt;br /&gt;
Accendere il forno a 160°.&lt;br /&gt;
Fondere il burro a bagno maria ( oppure nel microonde )&lt;br /&gt;
Montare le uova a temperatura ambiente con lo zucchero e la vanillina.&lt;br /&gt;
Quando saranno bianche e ben spumose, aggiungere il burro ( ormai raffreddato ) e la farina setacciata con il lievito.&lt;br /&gt;
Versare il composto nelle pirofila mettere le mele sormontandole leggermente l'una sull'altra; cospargere di zucchero e infornare &amp;nbsp;nel forno già caldo &amp;nbsp;per 55-60 minuti.&lt;br /&gt;

Mettere tutti gli ingredienti nel robot, azionare per circa un minuto, quindi togliere l'impasto, formare con le mani una palla, coprire con la pellicola trasparente e mettere in frigo a riposare almeno un'ora.&lt;/div&gt;
&lt;div&gt;
Trascorso il tempo di riposo accendere il forno a 180°.&lt;/div&gt;
&lt;div&gt;
Stendere 1/3 della pasta su carta forno ritagliata del diametro della teglia.&lt;/div&gt;
&lt;div&gt;
Bucherellare il fondo della pasta frolla con i rebbi di una forchetta;stendere la nutella aiutandosi con un cucchiaio ( possibilmente dopo averla tenuta a scaldare qualche minuto a bagnomaria )&lt;/div&gt;
&lt;div&gt;
Con il resto della pasta formare delle strisce posizionarle sopra a grata; coprire la crostata con carta da forno e infornare a forno già caldo per 25-30 minuti. Ora togliere la carta e continuare la cottura per altri 5 minuti, o fino a che avrà preso un leggero colore dorato.&lt;/div&gt;

Il fatto di cuocere la crostata coperta i primi trenta minuti serve per non fare indurire la nutella .&lt;/div&gt;

2 confezioni di vongole aperte a vapore nel sottovuoto;&lt;/div&gt;

8 -9 fiori di zucca;&lt;/div&gt;
&lt;div&gt;
Trito di prezzemolo e aglio;&lt;/div&gt;
&lt;div&gt;
4 cucchiai di olio extravergine;&lt;/div&gt;
&lt;div&gt;
vino bianco secco q.b.&lt;/div&gt;
&lt;div&gt;
1 cucchiaino di dado di pesce;&lt;/div&gt;
&lt;div&gt;
1 peperoncino;&lt;/div&gt;
&lt;div&gt;
1 cucchiaino raso di fecola di patate( in sostituzione di essa la farina )&lt;/div&gt;
&lt;div&gt;
Sale grosso soltanto per cuocere la pasta;&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
&lt;span class="Apple-style-span" style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt;Preparazione:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;/div&gt;

In una casseruola( abbastanza larga ) soffriggere dolcemente in 3 cucchiai di olio il trito di aglio e prezzemolo; versarvi le vongole con il loro liquido far cuocere a fuoco vivace un paio di minuti , quindi sfumare con il vino, aggiungere poco dado di pesce e i fiori di zucchina tagliati sottilmente.&lt;/div&gt;
&lt;div&gt;
In un bicchiere sciogliere con il cucchiaio di olio rimasto, la fecola di patate e aggiungerla alle vongole, girandola molto bene da fare addensare il sugo.&lt;/div&gt;
&lt;div&gt;
Lessare la pasta in abbondante acqua salata, scolarla un minuto prima del tempo di cottura saltarla nel sugo di vongole e servire&lt;/div&gt;

Pulire le alici privandole della testa e della lisca, lavarle velocemente e posizionarle in un recipiente di vetro o di ceramica; cospargerle di sale, versavi sopra l'aceto e il succo dei limoni.&lt;/div&gt;

Lasciarle marinare per 10 ore ( se sono piccole )fino a 24 ore se sono grandi.&lt;/div&gt;
&lt;div&gt;

Preparare separatamente i due pesti con il frullino ad immersione, e, aggiungere a ciascuno una piccola nocina di burro; coprire con la pellicola in modo tale che non cambino di colore.&lt;/div&gt;

Tritare finemente lo scalogno e metterlo in olio a soffriggere dolcemente con il peperoncino; aggiungere il gorgonzola tagliato sottilmente con la panna. ( questa salsa la scioglieremo a bagnomaria quando si metterà l'acqua per cuocere gli gnocchi)&lt;/div&gt;

Sbucciarle, tagliarle a spicchi togliendo il torzolo e metterle a cuocere in forno a microonde con un poco di aceto di mele e un cucchiaino di zucchero di canna per circa 2- 3 minuti girandole una volta. ( Se non abbiamo il forno a microonde si possono cuocere anche nel forno tradizionale oppure sul fornello).&lt;/div&gt;
&lt;div&gt;
Queste pere devono accompagnare gli gnocchi perchè essendo i pesti con un sentore piuttosto amarognolo hanno bisogno di un accompagnamento dolciastro.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Lessare in abbondante acqua salata gli gnocchi, scolarli e condirli, metà con un pesto e l'altra metà con il secondo pesto, impiattare con un poca di salsa sul piatto al gorgonzola, adagiandovi sopra gli gnocchi separatamente e due spicchi di pera.&lt;/div&gt;

400 gr. di panna fresca;&lt;/div&gt;

20 gr. di colla di pesce;&lt;/div&gt;
&lt;div&gt;
1 bicchierino di amaretto;&lt;br /&gt;

Mettere nel robot le uova, l'olio. lo zucchero, un pizzico di sale e fallo andare un attimo, spegnere ed aggiungere la farina ,il cacao amaro e fallo andare di nuovo per preparare la frolla; avvolgerla nella pellicola trasparente e metterla in frigo a riposare per circa un'ora.&lt;/div&gt;
&lt;div&gt;
Riprendere la frolla, stenderla con il mattarello aiutandosi con due fogli di carta forno( tagliata a misura)uno sopra e uno sotto; adagiarla in una teglia di circa 24-26 cm. mettere dei fagioli secchi sopra la carta, per cuocerla in bianco, in forno già caldo per circa 20 minuti a 180°&lt;/div&gt;
&lt;div&gt;
Una volta cotta togliere la carta da sopra con i fagioli e lasciarla freddare.&lt;/div&gt;
&lt;div&gt;
Intanto preparare la farcia per il ripieno.Ammollare la colla di pesce in acqua fredda, strizzarla e metterla a sciogliere nell'amaretto riscaldato in un tegamino sul fuoco.&lt;/div&gt;
&lt;div&gt;
Montare la panna con lo zucchero, aggiungere le scaglie di cioccolato, il torrone anch'esso ridotto in piccoli pezzettini, ed infine la colla di pesce con l'amaretto (fare attenzione che sia già fredda altrimenti si smonta la panna); mischiare delicatamente dall'alto verso il basso,versare tutta la farcia sulla pasta frolla.&lt;/div&gt;

Lasciare qualche ora in frigo prima di servire.&lt;/div&gt;

Lavorare 40 gr. di burro morbido con la farina.&lt;/div&gt;
&lt;div&gt;
Dividere le melagrane a metà, prelevarne dei chicchi per guarnizione ed il resto passarle allo schiacciapatate per togliere il succo, metterlo in un pentolino e aggiungervi il succo e la scorza dell'arancia. Portare ad ebollizione il liquido fino a ridurlo di poco; salarlo, peparlo e incorporarvi il burro lavorato con la farina. Mescolare accuratamente con un cucchiaio di legno fino ad ottenere una salsa densa.&lt;/div&gt;
&lt;div&gt;
Dividere ciascun petto d'anatra in due filetti.&lt;/div&gt;
&lt;div&gt;
In una padella antiaderente fondere il resto del burro e rosolarvi i filetti di anatra per 8 minuti per lato; salarli, peparli e tagliarli a fette controllando che siano ben cotti, altrimenti incoperchiare e continuare la cottura per qualche minuto.&lt;/div&gt;
&lt;div&gt;

La sera precedente mettere lo zampone in acqua fredda; tenerlo a bagno tutta la notte.&lt;/div&gt;
&lt;div&gt;
Il giorno dopo scolarlo, asciugarlo e punzecchiarlo qua e la con uno stecchino da denti; avvolgerlo quindi in carta di alluminio per evitare che durante la cottura si rompi.&lt;/div&gt;
&lt;div&gt;
Metterlo nella pesciera coperto di acqua fredda, portare ad ebollizione e cuocere per almeno due ore a fuoco dolcissimo.&lt;/div&gt;
&lt;div&gt;
Nel frattempo cuocere le lenticchie. Mondare e tritare la cipolla, la carota, e la costa di sedano; soffriggere il trito di verdure in olio, aggiungere le lenticchie lavate ( ma non tenute a bagno )salare, pepare  e fare insaporire il tutto per qualche minuto, mescolando con un cucchiaio di legno.&lt;/div&gt;
&lt;div&gt;
Bagnare le lenticchie con il vino, sfumare, versare il pomodoro, il brodo, mettere l'alloro e proseguire la cottura mescolando spesso per circa 30- 40 minuti. Se necessario aggiungere altro brodo.&lt;/div&gt;
&lt;div&gt;
Trascorso il tempo di cottura dello zampone, scolarlo e tagliarlo a fette di circa 2 cm.&lt;/div&gt;
&lt;div&gt;
Disporre  le lenticchie su di un vassoio e adagiarvi sopra le fette dello zampone, con il piedino&lt;br /&gt;
&lt;div&gt;

Lavare i peperoni tagliarli a metà e togliere i semi e filamenti;ridurli a pezzetti di circa 3- 4 cm., metterli in una teglia da forno con olio e aggiungere il resto di tutti gli ingredienti.&lt;/div&gt;

Salare, pepare e mettere il pane grattugiato.&lt;/div&gt;

1 porro;&lt;br /&gt;

300 gr di farina 00;&lt;br /&gt;
3 uova;&lt;br /&gt;
1 cucchiaio di olio;&lt;br /&gt;

Prima cosa, preparare la sfoglia ( va bene anche nel robot) e lasciarla riposare avvolta nella pellicola.&lt;br /&gt;
Scaldare in una pentola abbastanza grande l'acqua, quando bolle salarla e lessarci il cavolfiore tagliato a cimette, per circa 12- 15 minuti ( non deve essere troppo cotto)&lt;br /&gt;
Nel frattempo scaldare in un'atro tegame l'acqua con la cipolla e alcune foglie di basilico, quando bolle salarla e mettervi le carote &amp;nbsp;a lessare.&lt;br /&gt;
Quando le verdure saranno pronte toglierle dall'acqua; &amp;nbsp;mettere metà cavolo da una parte che servirà a riempire i fagottini.L'altra metà frullarla con il mixer ( non buttare l'acqua che servirà per cuocervi i saccottini.&lt;br /&gt;
Togliere anche le carote e frullare anch'esse ( separatamente).Se serve mettere un cucchiaio di acqua di cottura.&lt;br /&gt;
Aggiustare le verdure con poco olio, sale e pepe.&lt;br /&gt;
Ora preparare la farcia con il resto del cavolfiore tagliandolo a pezzettini molto piccoli, tagliare anche il formaggio e spezzare con le mani il resto del basilico aggiungendolo al composto; salare (poco) pepare, unire un filo di olio, e, a questo punto tirare la sfoglia.&lt;br /&gt;
Prendere dei pezzi di pasta, infarinarli e passarli alla macchinetta iniziando dal n°1 per arrivare al 4°&lt;br /&gt;
tagliare la sfoglia di circa 10 cm. per lato, mettervi un poco di farcia chiuderli e fermarli con delle foglie di porro tagliate &amp;nbsp;a striscioline e sbollentate 5 secondi.&lt;br /&gt;
Lessare i saccottini nell'acqua del cavolfiore aggiungendo poco sale, scolarli con una paletta forata e adagiarli sul piatto dove &amp;nbsp;sarà messo il frullato di carote, il frullato di cavolfiore e la salsa di pomodoro.Spolverare con parmigiano grattugiato e pepe macinato al momento&lt;br /&gt;

Pulire le sarde eviscerandole e togliendo squame e testa; lavarle in acqua corrente, sgocciolarle, passarle nella farina, nell'uovo e friggerle in abbondante olio. Posarle su carta da cucina e salarle.&lt;/div&gt;

Sbucciare le cipolle e tagliarle ad anelli; cuocerle  a fuoco dolce in un tegame con olio extravergine, unire l'aceto e lasciare cuocere fino a che siano diventate morbide( ma non disfatte).&lt;/div&gt;

In una terrina di vetro disporre uno strato di sarde fritte, bagnare con l'aceto e coprire con cipolle e pinoli, fare un'altro strato, versare sopra il resto di aceto e cipolle e lasciare riposare una mezz'ora. Comunque sono buone anche il giorno dopo&lt;/div&gt;

&lt;div&gt;
1/2 cucchiaino di peperoncino  in polvere;&lt;/div&gt;
&lt;div&gt;
1 pizzico di sale;&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;

&lt;span class="Apple-style-span" style="font-size: x-large;"&gt;&lt;b&gt;&lt;i&gt; Preparazione:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;/div&gt;

Accendere il forno a 180°.&lt;/div&gt;
&lt;div&gt;
Foderare con carta da forno bagnata e strizzata ( perchè aderisca meglio) uno stampo a cerniera di  22cm.( oppure se vogliamo un dolce più sottile potremmo usare uno stampo da 26 cm.)&lt;/div&gt;
&lt;div&gt;
Tritare il cioccolato e scioglierlo a bagnomaria, aggiungere il burro e far sciogliere anch'esso.&lt;/div&gt;
&lt;div&gt;
Separare i tuorli dagli albumi e montarli separatamente ( gli albumi montarli a neve ferma con un pizzico di sale iniziando a bassa velocità per poi aumentarla mano a mano che la neve diventa più spessa  e dopo un po' aggiungere lo zucchero a velo) i tuorli montarli con lo zucchero semolato, finchè il composto risulterà gonfio e spumoso.&lt;/div&gt;
&lt;div&gt;
Amalgamarci il cioccolato fuso con il burro continuando a montare, unire anche la grappa e il peperoncino.&lt;/div&gt;
&lt;div&gt;
Incorporare al composto delicatamente gli albumi con un movimento dal basso verso l'alto. Versare il composto di cioccolato nello stampo e cuocere in forno già caldo,180°  per 30 minuti. poi abbassare la temperatura a 120 e cuocere per altri 10 - 12 minuti.&lt;/div&gt;
&lt;div&gt;
Fare raffreddare il dolce e cospargere di cacao amaro in polvere. Decorare con peperoncini freschi.&lt;/div&gt;

1 cipolla tritata;&lt;/div&gt;

2 spicchi di aglio;&lt;/div&gt;

3-4 cucchiai di farina;&lt;/div&gt;

1 peperoncino;&lt;/div&gt;

qualche foglia di basilico;&lt;/div&gt;

Sbucciare le melanzane soltanto da due lati, tagliarle a dadi di circa 2 cm. metterle in uno scolapasta a spurgare per 30 minuti cosparse di sale  grosso, &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;affinchè&lt;/span&gt; perdano l'amaro. &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_6"&gt;Risciacquarle&lt;/span&gt; con cura, infarinarle e &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_7"&gt;friggerle&lt;/span&gt; in abbondante olio di semi. &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_8"&gt;Sgocciolarle&lt;/span&gt; e posarle su carta per fritti.&lt;/div&gt;
&lt;div&gt;
Preparare la salsa: sbucciare l'aglio e metterlo in olio &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_9"&gt;extravergine&lt;/span&gt; ad imbiondire leggermente, quindi toglierlo mettere il peperoncino la cipolla tritata ( con il coltello) e lasciare cuocere per pochi minuti, aggiungere i pomodori a pezzi, salarli, peparli e farli cuocere per 15 minuti.&lt;/div&gt;
&lt;div&gt;
Lessare gli spaghetti in abbondante acqua salata ,scolarli e condirli con il sugo di pomodoro.Trasferirli sul piatto da portata . Mettere una pentola di acqua al fuoco, quando bolle salarla e aggiungere gli asparagi puliti e tagliati a piccoli pezzi, cuocerli per 4-5 minuti, scolarli lasciando l'acqua sul fuoco  per cuocere la pasta.Nel frattempo tagliare a cubetti lo speck, tritare lo scalogno e tritare  il prezzemolo.&lt;/div&gt;
&lt;div&gt;
Mettere a cuocere la pasta.  Nel frattempo preparare la salsa facendo scaldare 3- 4 cucchiai di olio, aggiungere  lo scalogno tritato facendolo appassire;  lo speck a cubetti  lasciandolo soffriggere; bagnare con il vino bianco, fare evaporare e aggiungere gli asparagi, fare insaporire il tutto per un paio di minuti mettendo qualche cucchiaio di acqua della pasta; pepare e cuocere fino a cottura della pasta.Scolare la pasta al dente, saltarla in padella con la salsa per un paio di minuti aggiungere un'altro cucchiaio di acqua di cottura, spegnere,mettere il pecorino grattugiato,  il prezzemolo tritato e servire.&lt;/div&gt;
