Nel contempo far rinvenire i funghi in acqua tiepida per 15-20 minuti e poi farli cuocere, tagliandoli a pezzettini, in padella con olio e aglio. Lessare le patate. Una volta pronta la zucca scolarla e schiacciarla in una insalatiera insieme alle patate. Aggiungere i porcini, le uova, sale, pepe e un pò di parmigiano. Io con l&#39;acqua di cottura della zucca, circa 200 gr ci ho fatto una vellutata con 20 gr di burro e 20 gr di farina e l&#39;ho aggiunta con noce moscata al composto. Mettere tutto in uno stampo da sformato e infornare a 180° per 35-40 minuti. Servire con pancetta, cotta a strisce in un padellino antiaderente e scaglie di parmigiano.&lt;/span&gt;&lt;br /&gt;

Sbattere le uova con lo zucchero in una ciotola. Poi unire,&amp;nbsp;amalgamando&amp;nbsp;di volta in volta,&amp;nbsp;il burro sciolto, il mascarpone, il latte, la scorza di limone, la farina, il lievito e il pizzico di sale. Versare il tutto in una teglia imburrata e metterla in forno, già caldo, a 180° per 35 minuti. Aspettare un pò prima di toglierla dalla teglia, decorarla con zucchero a velo e... in pasto ai leoni!&lt;br /&gt;

Ok si ultimamente non ho molto tempo... facendo la blogger non di professione, ma per puro godimento nel creare la mia bellissima libreria culinaria,&amp;nbsp;spesso altri impegni prendono il sopravvento! &lt;strong&gt;10 crespelle&lt;/strong&gt;: 350 cc di latte, 140 g di farina, 2 uova, sale, burro&lt;br /&gt;&lt;strong&gt;ripieno per 6 crespelle&lt;/strong&gt;:1/2 cipolla, 180 g di zucca arancione , 100-150 gr&amp;nbsp;di emmental o scamorza affumicata, parmigiano, olio, sale,pepe e noce moscata.&lt;br /&gt;&lt;strong&gt;condimento sopra&lt;/strong&gt;: 150 g di funghi porcini, olio, sale,1 spicchio d&#39;aglio.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Procedimento&lt;/strong&gt;&lt;br /&gt;Cuocere le crepes in un padellino antiaderente, su cui va messo un pò di burro di volta in volta, con il composto fatto frullando latte, farina, uova e un pizzico di sale. Il composto deve riposare per almeno 20 minuti prima. Nel frattempo cuocere la zucca tagliandola e mettendola con la cipolla in un padellino, nell&#39;olio. Salare, pepare e cuocere bene per 20 minuti&amp;nbsp;coperto, frullare e se liquido far addensare ancora nel fuoco. Unire poi la noce moscata. Formare le cespelle spalmando il composto di zucca,&amp;nbsp;spolverando con emmental&amp;nbsp; e chiudendole  in 4. Stenderle in una teglia da forno, con qualche fiocco di burro e del parmigiano&amp;nbsp;e mettere a 170°-180° in forno per 10-15 minuti. Cuocere i porcini, tagliati a dadini, in aglio rosolato in abbondante e olio. Comporre il piatto mettendo una o due crespelle condite con i porcini. Mamma che fameeeee!!!&lt;/div&gt;

Tostare il riso e poi portarlo a cottura aggiungendo il brodo piano piano. Alla fine aggiungere il latte o la panna far prosciugare un pò, spengere e al solito: unire una noce di burro, il parmigiano, aspettare 3 minuti girare e servire. &lt;br /&gt;

Far sciogliere il burro, possibilmente a temperatura ambiente, e incorporarlo allo zucchero. Unire, amalgamando o frullando di volta in volta, le uova, la farina, un pizzico di sale, il rum e il lievito.&amp;nbsp;Imburrare e infarinare uno stampo da plum-cake da 25 cm.&amp;nbsp; Metterci l&#39;impasto a cui si è agiunto la mela cotta, tagliata a pezzettini,&amp;nbsp;in un tegamino con un pò di cannella e&amp;nbsp;le noci, precedentemente abrustolite.. Metterne sopra un pò per adornare e infornare in forno già caldo a&amp;nbsp;180° per 45 minuti. &lt;br /&gt;

Sciogliere il burro con il cioccolato e lo zucchero a bagnomaria. Togliere dal fuoco e aggiungere le uova, la farina, il lievito, un pizzico di sale&amp;nbsp;e un pò di cannella in polvere. Imburrare e infarinare gli stampini e riempirli per metà. Scaldare il forno a 200° infornare, mettere a 180° e cuocere per 10 minuti. Importante temperatura e tempi per il cuore di cacao liquido!&lt;br /&gt;

50 gr di porcini secchi&lt;br /&gt;
un goccio di vino bianco&lt;br /&gt;
pasta fresca tagliata a rettangoli&lt;br /&gt;
250 gr di panna fresca&lt;br /&gt;
latte, se serve&lt;br /&gt;
200 gr di fontina&lt;br /&gt;
100-200 gr di emmental&lt;br /&gt;
parmigiano&lt;br /&gt;
burro, olio, sale, pepe e noce moscata&lt;br /&gt;

&lt;strong&gt;Procedimento&lt;/strong&gt;&lt;br /&gt;
Sbucciare le patate e metterle in acqua bollente e un pò salata a cuocere per 40 minuti o più a seconda della grandezza. Mettere la fontina tagliata in ammollo nella panna. In una padella antiaderente mettere una noce di burro e le cipolle tagliate a pezzettini. Far appassire bene (così sister non le senti... quelle dell&#39;insalata erano crude!).&amp;nbsp;Per evitare che si sentisse ho poi frullato la cipolla.&amp;nbsp;Unire poi un goccio di olio, l&#39;aglio tritato fine e i funghi, fatti rinvenire in acqua fredda per 20 minuti e poi tagliati fini. Aggiungere la salsiccia tagliata a pezzettini, far cuocere e amalgamare bene il tutto. Unire alla fine le patate schiacciate e formare un bello impasto, regolando di sale, pepe e noce moscata. &amp;nbsp;(o per necessità/velocità gli sfogliavelo di...)&amp;nbsp; nel tavolo e stenderci il composto di patate, una spolverata di emmental e una minore di parmigiano. Arrotolate e tagliare il rettangolo di pasta formando le rosette e metterle&amp;nbsp;in piedi su una pirofila da forno. Procedere così al riempimento della pirofila: mi sono venute circa 24 rosette belle grosse e considerando che c&#39;era un altro primo la stima era di una rosetta a testa più 1/3 di bis! Cospargerle di parmigiano e pezzetti di burro e gratinarle in forno a 170° per 15-20 minuti. Fare nel frattempo in un tegamino la &quot;fonduta&quot; mettendo la panna e la fontina, che erano già insieme, nel fuoco. Aggiungere un pezzetto di emmental e un goccio di vino bianco&amp;nbsp;e far sciogliere. Se troppo densa allungare con un pò di latte. Regolare con sale, pepe (bianco) e noce moscata se piace e comporre il piatto mettendo una rosetta e la fonduta sopra.&lt;br /&gt;

BUONISSIME FESTE A TUTTI!!!! 100 gr zucchero per il caramello&lt;br /&gt;
&lt;br /&gt;
&lt;strong&gt;Procedimento&lt;/strong&gt;&lt;br /&gt;
Far bollire il latte fino a ridurlo un pò con il baccello di vaniglia. Sbattere uova e zucchero e unirlo poi al latte, quando si è intiepidito. Far caramellare lo zucchero nello stampo da creme caramel&amp;nbsp;dove metterete il dolce e lasciare che si risolidifichi. Versarci sopra il composto, passandolo da un colino, delicatamente altrimenti fa una enorme schiuma. Cuocere in forno a bagno maria &amp;nbsp;a 160° per 40-45 minuti. Farlo freddare in frigorifero per almeno 2 ore e servire rovesciandolo su di un piatto da portata, di modo che il caramello scenda giù. Lo so la foto lascia molto a desiderare... peraltro hanno fatto prima i commensali a mangiarlo che io a trovare il cellulare per fare la foto, ma garantisco sullo bontà!&lt;br /&gt;

Dal quantitativo di ingredienti può sembrare una ricetta complessa, ma il metodo è velocissimo. Io per far prima faccio proprio come nei corsi di cucina, ovvero mi preparo tutti gli ingredienti già pesati e pronti nel tavolo e poi risulta tutto facilissimo. Vero, è così pure per gli chef che ti fanno una video ricetta, a te viene da dire beh facile hanno tutto pronto? Beh basta veramente fare allo stesso modo e anche il piatto più complesso, a prima vista, risulterà fattibilissimo. Quindi... preparati tutti gli ingredienti nel tavolo: mettere in una ciotola capiente farina,&amp;nbsp;zucchero, lievito e sale setacciati. Fare un buco nel centro e metterci tutto insieme: olio, acqua, tuorli, scorza di limone e aroma. Lasciare così e montare gli albumi a neve con il cremor tartaro. Amalgamare con il frullatore gli altri ingredienti e poi incorporarci a mano gli albumi, delicatamente.&lt;br /&gt;
Mettere il tutto nello stampo in alluminio,&amp;nbsp;NON IMBURRARE, e in&amp;nbsp;forno preriscaldato a&amp;nbsp;160° per 50 minuti e a 175° per 10 minuti dopo 20 minuti. Terminata la cottura va fatto raffreddare a testa in giù. La mia&amp;nbsp; tortiera è di&amp;nbsp;26 cm di diametro e 8.5 cm di altezza e viene pieno pieno.&amp;nbsp;&lt;/div&gt;

Io sono usualmente quella che fa i primi 3 ingredienti sopra, ma il quarto è cultura e bravura di mia figlia, che ha fatto i due cani davanti e di mio marito, che ha ricoperto la casina e ha terminato tutto il resto. Lui è il vero artista! Dunque una volta fatto il dolce tagliarlo a metà e metterci un bello strato di Camy Cream, spessore 1-2 cm.&amp;nbsp;Ricomporre&amp;nbsp;la forma e renderla geometricamente perfetta spalmandola con la colla per dolci da Cake Design&amp;nbsp;ovvero con la crema di burro (ricetta sotto).&amp;nbsp;Se vedete le foto della mia&amp;nbsp;torta non è venuta liscia perfetta, anzi... &amp;nbsp;La causa è stato il&amp;nbsp;mancato uso del corretto collante per questo tipo di dolci: la crema di burro appunto! Noi, per provare, abbiamo usato come collante&amp;nbsp;la&amp;nbsp;Camy Cream, ma la sua consistenza è risultata essere troppo molle... per quello ci sono delle bolle.&amp;nbsp;La crema di burro ha invece la consistenza tale che permette in fase di stesura della PDZ di sagomare a piacimento e poi rimanendo ferma&amp;nbsp;torna alla denistà del burro che si risolidifica e fa da colla perfetta in ogni punto.&amp;nbsp;Una volta ricoperta di crema di burro la torta, si può stendere sopra la PDZ colorata e lisciare/sagomare la torta in modo che risulti geometricamente perfetta e liscissima. I gadget sopra? Pura fantasia!&lt;br /&gt;

Io li taglio a pezzettoni solo perchè ci sono dei commensali a cui serve individuarli nel piatto per toglierli, perchè hanno capito che sia la cipolla che lo speck danno al tutto un sapore graditissimo, ma poi non li gradiscono in bocca. Dobbiamo sempre scendere a compromessi! Cuocere bene e unire la besciamella con un goccio di latte per ammorbidire. Farci saltare le orecchiette scolate al dente!&lt;br /&gt;

Rosolare bene da entrambe le parti salare e poi portare a cottura mettendo sopra le cipolle affinchè non si brucino del tutto. &lt;br /&gt;
