Makes 1 quart

Ingredients:

1/4 cup sea salt or kosher salt (see Recipe Notes)

Water (see Recipe Notes)

1 teaspoon sugar

1 (2-pound) head napa cabbage

1 tablespoon grated garlic (about 5-6 cloves)

4 scallions, trimmed and cut into 1-inch pieces

1-5 tablespoons Korean red pepper flakes (gochugaru)

2-3 tablespoons seafood flavor or water (optional, see Recipe Notes)

1 teaspoon grated ginger

8 ounces Korean radish or daikon, peeled and cut into matchsticks

Ingredient to make kimchi

Equipment

Colander

Cutting board and knife

Large bowl

Gloves

Small bowl

Plate and something to weigh the kimchi down, like a jar or can of beans

Clean 1-quart jar with canning lid or plastic lid

Bowl or plate to place under jar during fermentation

Instructions

Cut the cabbage. Cut the cabbage lengthwise into quarters and remove the cores. Cut each quarter crosswise into 2-inch-wide strips.

Salt the cabbage. Place the cabbage and salt in a large bowl. Using your hands (gloves optional), massage the salt into the cabbage until it starts to soften a bit, then add water to cover the cabbage. Put a plate on top and weigh it down with something heavy, like a jar or can of beans. Let stand for 1-2 hours.

Rinse and drain the cabbage. Rinse the cabbage under cold water 3 times and drain in a colander for 15-20 minutes. Rinse and dry the bowl you used for salting, and set it aside to use in step 5.

Make the paste. Meanwhile, combine the garlic, ginger, sugar, and seafood flavor (or 3 tablespoons water) in a small bowl and mix to form a smooth paste. Mix in the gochugaru, using 1 tablespoon for mild and up to 5 tablespoons for spicy (I like about 3 1/2 tablespoons).

Combine the vegetables and paste. Gently squeeze any remaining water from the cabbage and return it to the bowl along with the radish, scallions, and seasoning paste.

Mix thoroughly. Using your hands, gently work the paste into the vegetables until they are thoroughly coated. The gloves are optional here but highly recommended to protect your hands from stings, stains, and smells!

Pack the kimchi into the jar. Pack the kimchi into the jar, pressing down on it until the brine rises to cover the vegetables. Leave at least 1-inch of headspace. Seal the jar with te lid.

Let it ferment. Let the jar stand at room temperature for 1-5 days. You may see bubbles inside the jar and brine may seep out of the lid; place a bowl or plate under the jar to help catch any overflow.

Check it daily and refrigerate when ready. Check the kimchi once a day, pressing down on the vegetables with a clean finger or spoon to keep them submerged under the brine. (This also releases gases produced during fermentation.) Taste a little at this point, too! When the kimchi tastes ripe enough for your liking, transfer the jar to the refrigerator. You may eat it right away, but it's best after another week or two.

Recipe Notes

Salt: Use salt that is free of iodine and/or anti-caking agents, which can inhibit fermentation.
Seafood flavor and vegetarian alternatives: Seafood gives kimchi an umami flavor. Different regions and families may use fish sauce, salted shrimp paste, oysters, and other seafood. Use about 2 tablespoons of fish sauce, salted shrimp paste, or a combination of the two. For vegetarian kimchi, I like using 3/4 teaspoon kelp powder mixed with 3 tablespoons water, or simply 3 tablespoons of water.
Water: Chlorinated water can inhibit fermentation, so use spring, distilled, or filtered water if you can.

<georss:box>-37.2339076 65.577349699999985 24.5237944 148.19453769999998</georss:box>

About Kimchi - Korean Food - Famous Kimchi

Khao Mun Gai is rice cooked with garlic, boiled chicken, and chicken broth, served with sauce Cocol. Let’s start with the main ingredient of many-a-plate of Thai food. Rice. Most Thai dishes will use some form of steamed or boiled white rice as their foundation, and khao mun gai is no exception. Well, except for the fact that it’s not just plain old white rice. This rice is actually cooked in chicken stock, and usually has a bit of crushed garlic, ginger, and some bruised cilantro tossed in as well. This gives the white rice a sort of dingy beige color, but the flavor benefits are absolutely wonderful. I really don’t know how to describe it to you, other than to tell you to just give it a try for yourself. It’s just good.

Next, we’ve got the protein – steamed chicken (sometimes switched out with duck, if the vendor is running low… tastes just as great). Several slices of meat are placed on top of the rice, then garnished with a few sprigs of cilantro. I absolutely love cilantro, and the fact that it is used so often in Thai cuisine is yet another reason why I enjoy eating in this country. There’s just something about taking a bite of the savory rice, tender chicken, and a leaf of pungent cilantro (or coriander for my friends outside the USA) all at the same time that’s magical. Yes, I said this food is magical. Laugh if you want, but you’ll believe me when you try it for yourself.

Now, the sauce. Oh, the sauce. As I list the following ingredients, I can already see some of your noses turning up, but again, I ask you to trust me. These things are magical, too. (Go ahead and roll your eyes.) The slightly sweet, slightly sour, little bit spicy sauce that’s a little bit liquid and a little bit chunks is what really brings everything together. So, what are the scary things it’s made of – both dark and white soy sauce, some white vinegar, a few Thai bird chilies, garlic, and ginger all crunched up, a bit of sugar and… fermented soybeans. Some of you cringe at the mention of soybeans already, let alone tagging the word fermented onto it. The sauce is served in a small bowl to the side of the plate, allowing the diner to either dump the whole thing straight onto their meal and redistribute it with a fork (which is my preferred method), or simply dip pieces of meat into it while eating.

Ingredient Khao Mun Gai :

1 whole chicken (boiled)

1 tsp salt

1 tbsp minced garlic

1 gourd or radish (cut into pieces)

1 tsp pepper powder

2 tbsp oil

1 cup uncooked brown rice or any rice

Water

Soybean Sauce

2 tbsp gingers (minces)

2 tbsp minced garlic (as desire)

2 tbsp soy bean paste (find in Asian grocery store)

2 tbsp sweet soy sauce

2 tbsp soy sauce

2 tbsp lime or lemon juice

2 tsp sugar

1-2 tbsp minces red Thai chili (optional)

Fresh cilantro leaves and cucumber for garnishing

Chicken and Soup:

Put a whole chicken in a big pot cover with water and put gourd or radish, salt, pepper and soy sauce. Let it boiled. While the chicken is boiling you may see some bubble stuff, scoop it with a spoon and throw that part away.

After the chicken is cooked, remove the chicken from the pot. Slice the chicken into pieces and wait for the rice. Keep the soup in the pot for later. You will need the soup to cook rice and to have it as a soup a long with the dish when you serve.

Rice:

Wash the rice. Heat the oil in a large non-stick pan over medium-high heat and add garlic. Fry it until the garlic turned golden color then add rice.

Stir-fry for a few more minutes. Put the rice in a rice cooker or a pot. Add chicken broth or soup (the broth from the whole chicken.)

Sauce
Mix well all the sauce ingredients together.

Put rice on a plate and add chicken pieces on the top. Garnish with fresh cilantro leaves and pieces of cucumber. Put the sauce in a little bowl and soup in another little bowl. Serve.

I do like a lot of sauce on my rice and chicken and if you do too then you may want to double the sauce recipe. Enjoy.
If desired, use any convenient protein and clean out that fridge: leftovers, frozen seafood, a chicken breast or thigh, a pork chop, etc. In Thai we call this dish Khao Pad. Khao means rice, and Pad means to fry. Rice is the main export product of Thailand, and has a history of cultivation going back thousands of years. The word for meal in Thai is Gin Khao which literally means eat rice.

This is similar recipe to cook the leftover rice form other meal,You can substitute any meat you want such as pork, beef, shrimp, ham, sausage, crab meat (other favorite fried rice dish in Thailand) or meatless whatever you want be, creative.

Fried Rice is very easy and fast to make, this dish is considered fast food in Thailand and is always an option when you want to make something quick, easy and good.

Everyone makes fried rice a bit differently, so feel free to experiment with different ingredients that you have in your fridge. This recipe uses chicken, but you can substitute pork, shrimp, or tofu. You can also add vegetables such as carrots and broccoli. Experiment with what you like. There’s even a variety in Thailand called American Fried Rice that's make with ketchup!

Ingredient Khao Pad Gai:

1 cup cooked jasmine rice, day old (a bit dry) is best

1/4 cup sliced onion

1 1/2 teaspoons finely chopped garlic

2 tablespoons chopped scallions (both white and green parts)

1/3 cup diced tomato

1/3 cup small slices of chicken meat

1/2 teaspoon salt

1/2 teaspoon white soy sauce

1/4 teaspoon white sugar

1/4 teaspoon golden mountain soy sauce *optional

Prepare all your ingredients: chop the tomato into medium-sized pieces, slice the onion into thin strips, finely chop the garlic and chop the scallions. Slice the cucumbers and chicken.

It is often made with chicken, served over Chinese Bah-mi egg noodle, and garnished with fried noodles, shallots, cilantro, pickled mustard greens, fried whole chillis and a squeeze of lime juice.

The dish is a seeming cacophony of taste, each strong and distinct yet they blend into one beautifully harmonious bowl and delicious bowl, when done right, of course.

Northern Chicken Curry Noodle

Ingredients:
For the chicken curry:

3-4 pounds chicken, cut into large pieces

1 tsp. Curry Powder

(or you could use 2 legs, 2 thighs and 2 breast pieces, about 3 pounds altogether)

2 tbsp. Oil

4-5 tbsp. Red Curry Paste

3 cups Coconut Milk

a pinch of sugar

½ tsp. Turmeric Powder

1 brown (or black) cardamom, crushed or ground (optional)

1-1 ½ cup(s) of water or chicken stock

Fish Sauce to taste

The rest of the ingredients:

About 6-7 (loosely packed) cups of Chinese Bah-mi egg noodle

5 shallots, (very) thinly sliced

a handful of cilantro, chopped

1 package of Chinese pickled mustard green, rinsed and thinly sliced

3-4 cups oil for frying

6 dried chillies

3 limes, cut into slivers

First you make the chicken curry :

Into a hot heavy bottom pot, add the oil and the red curry paste, curry powder and turmeric and cook, stirring vigorously, for a few minutes until the curry paste is fragrant. Be careful not to burn the paste.

Add 1 cup of coconut milk, stir to blend and let the pan come back to a boil. Let it bubble for a few minutes over high heat, stirring often, until you see the red oil separating from the coconut milk mixture. Add the second cup of coconut milk, again wait until the oil separate.

Add the chicken pieces to the pan, with the 1 cup water and the rest of the coconut milk. Let the pan come back to a boil, then lower the heat to simmer.

Add the fish sauce, starting with 2 tbsp. Close the lid and let it simmer until the chicken is done. Check the seasonings, you might need to add more fish sauce. The flavor of the curry should be salty, spicy, and with a very slight after taste of sweetness. When you taste the curry at this stage, it should be a bit saltier than what you would like the final dish to taste like. If it is under-salted now, the addition of the other ingredients at serving time will make it even more insipid.

Then you deal with the noodles and the rest of the garnish..

Take 1 cup of the noodle, fluff up until the strands are separated. Fry a little bit at a time in a pan with very hot oil until golden, you will need to flip to noodle once in the pan to get the same color on both sides. Set aside

Use the oil to fry up the driedchilli, very quickly, be careful not to let them burn. Set aside.

Slice the shallots, rinse and slice the mustard greens, cut up the limes, chop the cilantro. Set aside.

To serve..

After the chicken curry is done, heat up a large pot of water to a full boil. Rinse the rest of the fresh noodles first in cold water to wash out the excess starch, then cook in the very hot boiling water for 2-3 minutes. Stir the noodles well to prevent sticking.

put some cooked noodles in a bowl, top with the curry, and the garnish to taste. Squeeze some lime juice into the bowl just before eating. You could add the fried chillies if you want more heat.

Sikhye is a typical Korean beverage made of rice flour fermented with yeast.

Traditionally this drink served at the time of the great days like Chuseok, Dano, Seollal and in offerings to the spirits of ancestors at the altar.

Here recipe how to make Sikhye Traditional drink from South Korea:

Ingredient:

6 -7 quarts cold water

1 lb barley malt (powder)

2 cups sugar (adjust to taste)

2 cups uncooked short-grain white rice

pine nuts, to garnish

1 ounce fresh ginger, peeled and sliced

Directions:

In a large bowl, combine malt powder and water. Stir well, then let stand undisturbed until all the powder settles to the bottom, about 2 hours.

Meanwhile, cook rice according to usual method (in a pot or a rice cooker). When rice is fully cooked, rinse it in cold water to remove any surface starch.

Drain and reserve the clear liquid from step 1; discard the dregs.

Combine the clear liquid with the cooked rice, 1 cup sugar and the sliced ginger. If you can't fit all the liquid in the pot, that's okay, just refrigerate the excess. If you have a rice cooker with a "warm" setting, use that, or a crockpot set to "warm", or a very low oven (125-150F). Keep on warm 4-5 hours, until a few grains of rice are floating on the surface.

Separate the rice from the liquid, reserving both. Rinse the rice in cold water, cover and refrigerate. Pour the liquid into a large pot, along with the ginger slices. If you had leftover liquid in the previous step, add it in as well.

Bring the liquid to a boil, adding another 1 cup of sugar. Skim off and discard any foam that forms. Boil until no more foam rises. Remove and discard the ginger. Cool the liquid to room temperature, then refrigerate.

To serve, place a spoonful of rice and a few pine nuts in a glass or a tea bowl. Add the cold sikhye and drink.

This one of my favorite dishes, mainly because I am such a sucker for soup and chicken. You do not need your knife with this dish. Your spoon will be sufficient, as the meat will literally slide off the bone! The soup will warm you up on that cold Thanksgiving night.

Beef Kebab Recipe

Marinade Ingredients:

- 1/4 cup honey
- 1 Tbsp minced fresh ginger
- 1/3 cup soy sauce
- 3 Tbsp red wine vinegar
- Freshly ground black pepper to taste
- 2 cloves garlic, minced
- 1/3 cup olive oil

Kebab Ingredients:

- 1 1/2 lbs top sirloin steak, cut into 1 1/2-inch cubes
- 1-2 medium red onions
- 1 large bell pepper
- 1/2 to a pound button mushrooms
- About 15 bamboo or wooden skewers

Methods for making kebabs:

1 Mix the marinade ingredients together in a bowl then add the meat. Cover and chill in refrigerator for at least 40 minutes, or a few hours or even overnight.

2 I would suggest, first soak the skewers in water for at least 30 minutes before grilling. This will help prevent them from actually burning on the grill.

3 Cut the vegetables into pieces roughly the width of the pieces of beef. Taking care not to poke yourself, thread the meat and vegetables to double bamboo skewers. One way to do this safely is to put the part you try to penetrate to the cutting board, and then push a skewer through a piece on the board. Using double skewers will help you turn your kebab on the grill. If you save a little space between the pieces, they will grill more evenly.

4. Cat kebab with some of the remaining marinade.

5. Prepare grill high, direct heat. Grill for 10 minutes, depending on how hot your grill, and how do you want your meat, turning occasionally. Let rest for 5 minutes before serving.
