Adoro abbinarlo alla carne alla griglia ma anche semplicemente spalmato sul pane carasau. Potete servirlo come antipasto, aperitivo, oppure appunto per accompagnare secondi dai sapori forti come l'agnello.&lt;/div&gt;&lt;div&gt;Eccovi comunque la ricetta che preparo:&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI&lt;/span&gt;: 400 grammi di yogurt greco intero (se trovate quello sfuso al banco delle gastronomie é ancora più buono), 1 cetriolo intero, 2 spicchi di aglio, olio evo, sale, origano.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE&lt;/span&gt;: per prima cosa sbucciate il cetriolo e grattugiatelo con una grattugia a fori larghi, poi lasciatelo scolare per circa 30 minuti. A questo punto strizzatelo bene e travasatelo in una ciotola insieme allo yogurt greco. Una volta freddi tritateli e lavorateli insieme alla feta, al formaggio, alle uova sbattute, alla noce moscata ed all'aglio tritato. Poi spennellate una teglia rettangolare con il burro e mettetevi sopra un foglio di pasta fillo e ripetete l'operazione di spennellare con il burro fuso fino a raggiungere 4 fogli, infine versatevi il composto di spinaci e chiudete con i restanti 4 fogli di pasta fillo. Si tratta di una cosa che potete fare all'ultimo minuto se vi arriva gente all'improvviso a casa o se vi chiedono di portare un dolce che mangiano anche i bambini.&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI&lt;/span&gt;: 600 grammi di fragole, pan di spagna pronto vincenzi, crema al mascarpone, bagno con succo di oimone, scorza e zucchero.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE&lt;/span&gt;: preparate una crema al mascarpone con 500 grammi di mascarpone, 2 tuorli, due albumi montati a neve e 90 grammi di zucchero a velo. Poi a parte preparate uno sciroppo con 200 ml di acqua che farete bollire insieme a 2 cucchiai di zucchero, al succo di mezzo limone e ad un cucchiaino di scorza. Infine tagliate le fragole e lasciatele insaporire per un'ora con 25 grammi di zucchero ed una spruzzata appena di limone. A questo punto assemblate il vostro dolce facendo 3 strati: pan di spagna bagnato, crema al mascarpone, fragole e ripetete per tre volte. Queste tagliatelle sono state aromatizzate con il basilico, spezia che amo enormemente. E poi, anche se qui non si vede, le ho condite semplicemente con punte di asparagi, scorza di limone e scaglie di grana, una delizia vi assicuro.&lt;div&gt;La differenze di questa ricetta rispetto a quelle tradizionali é che io quando preparo la pasta fresca non cuocio mai le erbette ma semplicemente le trito con la farina. Questo vale anche se volete farle con gli spinacini oppure con le ortiche. Per il resto le proporzioni sono quelle tradizionali.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI&lt;/span&gt;: 2 uova bio, 150 grammi di farina 0, 60 grammi di farina di semola, 10 foglie di basilico perfettamente asciutte, 300 grammi di asparagi gobbi, 1 cucchiaino di scorza di limone non trattato, 80 grammi di robiola, scaglie di grana.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE&lt;/span&gt;: per prima cosa mettete nel mixer le foglie di basilico con le farine e tritate. Quando la farina é diventata di un bel verde aggiungete le uova, un pizzico di sale ed azionate ancora. Poi fate riposare la pasta per 10 minuti circa e stendetela con il mattarello oppure se avete un Kitchen Aid o una macchina per stendere la pasta usatela e tiratela fino al numero 5. Lasciate asciugare le sfoglie per 15 minuti e poi tagliatele e fatele seccare con una manciata di farina per almeno 2 ore.&lt;/div&gt;&lt;div&gt;Pulite gli asparagi, sbollentateli appena in acqua salata e poi freddateli con il ghiaccio così manterranno il loro bel verde. In una padella scalate abbondante olio evo e fateci rosolare le vostre punte per 5 minuti. Spegnete la fiamma e mettete dentro sia la scorza di limone che la robiola girando lentamente in modo da far sciogliere il formaggio. Ho trovato questa ricetta davvero fantastica, dei biscotti semplici semplici che mescolano burro di arachidi (vi consiglio caldamente il calvè con i peanuts tritati grossolanamente) e marmellata. Io ho utilizzato della marmellata di fragole home made e ci stava davvero bene, ma la ricetta originale utilizzava quella di lamponi.  Volendo potete realizzare questi biscotto anche sotto forma di slices, ovvero stendete tutto l'impasto su una teglia rettangolare lo cuocete e poi una volta cotto lo tagliate a quadrotti o a rettangoli!&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI:&lt;/span&gt; 100 grammi di burro a temperatura ambiente, 100 grammi di zucchero di canna, 2 tuorli d'uovo, 150 grammi di farina autolievitante, 1 cucchiaio di latte, 2 cucchiai di burro di arachidi, 2 cucchiai di marmellata.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE:&lt;/span&gt; montare insieme il burro con lo zucchero fino ad ottenere una crema, poi aggiungere un tuorlo per volta e mescolare. Infine aggiungere la farina, il burro di arachidi ed il latte. A questo punto avrete ottenuto un impasto morbido ed appiccicoso, bene ora mettete la marmellata tentando di ottenere un effetto "ripple" , non omogeneo. &lt;/div&gt;&lt;div&gt;Ora potete o formare delle palline che schiaccerete sulla carta da forno ottenendo così circa 22 biscotti, oppure potete stendere l'impasto su una teglia da forno rettangolare ed ottenere poi delle slices. Spennelate i fogli di pasta fillo con l'olio e piegateli a metà, mettete un paio di cucchiai di condimento su ciascuno, della feta sbriciolata e chiudeteli a mo' di strudel. Di solito acquisto quella intera e poi la faccio a scaglie per condire la pasta, invece una parte la faccio sempre a scaglie e la metto sott'olio ma se non ne avete voglia potete anche surgelarla. Comunque in questo caso io l'avevo surgelata così sono riuscita più facilmente a grattugiarla con il grattaformaggio ed a spargerla tipo polverina sulla pasta. Devo dire che mi é piaciuto molto il contrasto tra la polvere della bottarga e i riccioli del pecorino rigorosamente romano.&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI&lt;/span&gt; per 4 persone: 160 grammi di bottarga, 2 spicchi di aglio, pecorino romano, 320 grammi di spaghetti Garofalo.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE&lt;/span&gt;: portate a bollore l'acqua salatela e cuocete al dente gli spaghetti. Scaldate l'olio evo con uno spicchio di aglio tritato, scolate la pasta e conditela fuori fuoco con l'olio bollente e la bottarga ed amalgamate il tutto. Eh si perché su questa buonissima base potete poi introdurre le variazioni che volete. In inverno io lo lascio nella sua versione base e lo arricchisco con bacche di ginepro e pepe rosa in grani, in primavera invece potete farcirlo con gli asparagi o con le carotine novelle, in estate invece potete servirlo freddo accompagnandolo con una buona maionese alla senape fatta in casa, ed in autunno?! beh fate voi ci sono zucche, funghi e radici di ogni genere!&lt;div&gt;&lt;span class="Apple-style-span" &gt;&lt;span class="Apple-style-span"&gt;INGREDIENTI&lt;/span&gt; &lt;/span&gt;per 8 persone&lt;/div&gt;&lt;div&gt;600 grammi di petto di pollo, 300 di ricotta, 100 grammi di speck o pancetta arrotolata.  Se volete farlo più saporito fate 200 di ricotta e 100 di pecorino grattugiato.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" &gt;PREPARAZIONE&lt;/span&gt;&lt;/div&gt;&lt;div&gt;nel mixer frullate il pollo con una presa di sale e del pepe macinato. Poi trasferite il tutto in una ciotola e lavorate la carne con la ricotta fino ad ottenere un composto omogeneo. A questo punto formate il vostro polpettone, ricopritelo con le fette di speck, avvolgetelo bene nella carta da forno e fatelo cuocere in una teglia con 150 ml di acqua a 170 gradi per 1 ora circa. Una volta pronto potete emulsionare il sugo rimasto nella teglia con 2 cucchiai di olio, un trito di erba cipollina ed un cucchiaino di balsamico ed usare questa salsina per servire il vostro arrosto.&lt;/div&gt;&lt;div&gt;Mi raccomando va tagliato da freddo. Aprile é stato un mese intenso in tutti i sensi: impegni, lavoro, cucina, amici, affari ma soprattutto é stato il mese in cui si é realizzato un sogno che io e mio marito condividevamo da tempo. Ovvero quello di costruirci una piccola tana, un rifugio in cui infilarsi quando le cose da fare e da pensare diventano troppe. Ed il nostro luogo dell'anima é la montagna. Per cui dopo diversi mesi di ricerche, ripensamenti e giri burocratici siamo riusciti a realizzare questo nostro sogno. Pertanto appena é stato possibile siamo partiti insieme alla nostra cucciola per raggiungere appunto la nostra tana. E siccome relax significa per noi contatto con la natura, con il bosco e lunghe passeggiate allora non ci portiamo neanche il computer e naturalmente nessuna connessione internet. Il tempo durante le vacanze é solo nostro. Si tratta di piccoli momenti di rinascita e condivisione familiare, di momenti in cui si gioca e in cui si galleggia su una specie di Iperuranio Lucreziano. Davvero piacevole! Che poi é un modo francese, ma sinceramente questa é la mia zuppa di cipolle gratinata, nel senso che ho nel tempo adattato la ricetta al mio gusto ed ai miei sapori. L'unica cosa é che non ho pesato alla perfezione gli ingredienti per cui solitamente vado "ad occhio".&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI&lt;/span&gt; per 4 persone&lt;/div&gt;&lt;div&gt;cipolle dorate 4 medie, 1 patata media, 50 grammi di burro, 2 cucchiai di farina di riso o fecola di patate, brodo di pollo a coprire, pepe nero macinato fresco, 1 tazzina di latte di capra, 100 grammi di Guyere, 4 fette di pane tipo toscano o baguette.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE:&lt;/span&gt;&lt;/div&gt;&lt;div&gt;affettate in modo sottile le cipolle e la patata ed infarinatele. Poi in un tegame dai bordi alti fate sciogliere il burro, rosolatevi appena le verdure (non devono abbrustolirsi), e coprite con il brodo di pollo ed il latte di capra. Portate a bollore, aggiustate di sale e fate cuocere a fiamma bassa con il coperchio per un'ora circa. Se vedete che si ritira troppo aggiungete dell'acqua calda. Una volta cotta frullate la vostra zuppa con il minipimer ma in modo grossolano, non deve venire una vellutata. Al momento di servire mettete la zuppa nelle ciotole, adagiatevi sopra il pane e coprite con il Gruyere grattugiato. Passate le vostre ciotole sotto il grill fino a quando il pane non sarà ben tostato. Sfogliando il libro ho trovato giusto la ricetta di questa torta al cioccolato che sembra essere un&lt;i&gt; must &lt;/i&gt;della cucina inglese per la &lt;i&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;Pasqua&lt;/span&gt;&lt;/i&gt;. Ho provato a farla ed é venuta buonissima, io ho solo modificato la ricetta della glassa perché era davvero eccessiva come quantità di burro.&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI:&lt;/span&gt;&lt;/div&gt;&lt;div&gt;Per la torta: 50 gr di cacao in polvere, 175 gr di farina autolievitante, 225 gr di burro a temperatura ambiente, 225 gr di zucchero, 4 uova bio. &lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;Per la glassa&lt;/span&gt;: 100 gr di cioccolato al 70%, 200 gr di burro (io ne ho messi 50), 200 gr di zucchero a velo (io ne ho messi 75). Per guarnire: mandorle in scaglie o riccioli di cioccolato bianco.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE: &lt;/span&gt;mettere la farina ed il cacao in una ciotola e setacciarli per togliere eventuali grumi. Montare a parte il burro e lo zucchero fino ad ottenere una crema soffice. A parte sbattete le uova e poi unitele alla crema di burro sempre usando una frusta elettrica. Infine aggiungere poco per volta la farina con il cacao. Imburrate uno stampo da 24 cm e cuocete in forno caldo a 180 gradi per 50 minuti circa.&lt;/div&gt;&lt;div&gt; Quando la torta é pronta preparate la glassa nel seguente modo: montate il burro con lo zucchero a velo, a parte a bagnomaria fate fondere il cioccolato ed incorporatelo alla crema di burro. Quando la glassa si sarà stiepidita allora versatela sulla torta e stendetela con 'aiuto di una spatola. Ed adorandole io anche tutta la mia famiglia é "costretta" a mangiarsele almeno una volta alla settimana. Anche perché non sono una grande amante della carne, mi piacciono i salumi ma la carne a dire il vero mi piace ben poco. Le mie cose preferite? formaggi, verdure e uova. Comunque questa é una di quelle ricette di famiglia che é stata adeguatamente rivisitata per partecipare al contest di&lt;a href="http://farinalievitoefantasia.blogspot.com/2011/03/contest-150-anni-in-tavola.html"&gt; Ramona di Farina lievito e fantasia.&lt;/a&gt; Rivisitata nel senso che l'ho scoperta, infatti mia nonna umbra la preparava "chiusa" e la farciva con i suoi asparagi di campo, con il formaggio di capra e con i pomodori e l'origano. La preparava per mio padre che é un grande amante degli asparagi, credo in verità che siano forse la cosa che gli piace di più. Ora a me piacciono molto i colori di questa ricetta, proprio perché mi ricordano questo paese che amo tanto ma che sembra destinato a soffrire in continuazione. Mi piace l'Italia e mi piace la tenacia degli italiani che continuano a credere nella loro terra malgrado tutto ciò che ci circonda tenta di allontanarci da un qualunque anelito di patria. Comunque veniamo alla ricetta:&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI&lt;/span&gt;: un rotolo di pasta sfoglia, 300 grammi di asparagi medi, formaggio di capra tipo brie, qualche pomodorini, origano secco, un pizzico di sale ed un filo di olio&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE&lt;/span&gt;: sbollentate gli asparagi in acqua salata, scolateli e lasciateli freddare. Srotolate la pasta sfogli, conditela con gli asparagi, il brie di capra con la buccia, i pomodorini spaccati a metà, un filo di olio e l'origano. Infornate a 180 gradi in forno già caldo e cuocete per 35 minuti circa. Si tratta di una torta al cioccolato dal cuore morbido e goloso. Ogni bambino ne va matto ma devo dire che anche i grandi non scherzano. Comunque l'altro giorno&lt;a href="http://mammahelp.blogspot.com/"&gt; Maria Cristina&lt;/a&gt; del blog &lt;a href="http://mammahelp.blogspot.com/"&gt;mammahelp&lt;/a&gt; mi ha invitato a partecipare al suo &lt;a href="http://mammahelp.blogspot.com/2011/03/contest.html"&gt;contest&lt;/a&gt;&lt;div&gt;"marmellata che passione". Così ho pensato di arricchire la classica tenerina con la composta di mirtilli neri, e l'abbinamento é stato davvero grandioso. Il sapore del mirtillo con quello del cioccolato fondente sono straordinari insieme. In più vi devo dire che ho utilizzato del burro artigianale acquistato sulle montagne del modenese e questo ha contribuito al risultato davvero buonissimo. Considerate che le dosi sono per uno stampo quadrato di circa 15x15 cm.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" &gt;INGREDIENTI: &lt;/span&gt;&lt;/div&gt;&lt;div&gt;2 uova bio, 100 grammi di zucchero, 100 gr di burro, 100 gr di cioccolato fondente buono, 2 cucchiai di farina, zucchero a velo per spolverare e composta di mirtilli per guarnire i quadratini.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" &gt;PREPARAZIONE&lt;/span&gt;&lt;/div&gt;&lt;div&gt;fate fondere a bagnomaria la cioccolata con il burro girando con la frusta in modo da ottenere una crema. Montate bene i tuorli con lo zucchero ed una volta che avranno raggiunto una consistenza cremosa aggiungete il cioccolato con il burro. Incorporate anche la farina ed infine con una spatola versatevi le chiare montate a neve fermissima. Un accorgimento: per far crepare bene la crosticina sopra prima di versare la torta nello stampo dategli un'ultima girata con le fruste.&lt;/div&gt;&lt;div&gt;Infine cuocete in forno caldo a 180 gradi per 20 minuti scarsi e comunque spegnete non appena sulla superficie non comparirà la crosta. Aspettate che si freddi completamente, spolverizzatela con lo zucchero a velo, tagliatela a quadratini e guarnitela con la composta di mirtilli. Si tratta di un Cake tratto, come ispirazione, dal libro della Chovancova ma poi adattato a quello che la dispensa metteva a disposizione. In origine era Cake e zenzero, poi é diventato Pere, mandorle e vaniglia. Vi devo confessare una vera bontà!&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI: &lt;/span&gt;3 pere medie, 10 cl di olio di semi, 10 cl di latticello, 2 bustine vanillina, 100 gr di farina di mandorle, 200 grammi di farina autolievitante, 140 gr di zucchero, 2 uova bio.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE&lt;/span&gt;&lt;/div&gt;&lt;div&gt;più facile di così non si può: si mescolano da un lato tutti gli ingredienti secchi e dall'altra quelli liquidi. Anche perché quelli pronti spesso sono gommosi. Comunque circa due settimane fa qui a Ferrara c'é stato un mercatino interessante che aveva come protagonisti i sapori dell'Emilia e tra questi c'era un banchino del modenese con delle prelibatezze degne di questo nome. Tra le varie ghiottonerie avevano anche un crema di parmigiano reggiano notevole e del burro spaziale, naturalmente non potevo esimermi dal comprare anche un kg di grana visto che qui a casa mia si mangia praticamente in continuazione. Ognuno di noi quando ha fame va e si stacca un pezzo di grana. Comunque questo per dirvi che mi sono dilettata a fare una straordinaria salsa al formaggio e salvia per condire gli gnocchi che sono risultati davvero strepitosi!&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI&lt;/span&gt;:&lt;/div&gt;&lt;div&gt;dose per gli&lt;a href="http://cuoca-a-domicilio.blogspot.com/2010/02/buon-lunedi-con-gli-gnocchi-della.html"&gt; gnocchi&lt;/a&gt; per 4 persone, 125 grammi di crema di parmigiano, 80 grammi di grana grattato al momento, 100 ml di latte di capra, 25 grammi di burro, qualche foglia di salvia e pepe macinato fresco.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE&lt;/span&gt;&lt;/div&gt;&lt;div&gt; fate sciogliere a fiamma molto bassa i formaggi ed il burro insieme alla salvia girando con la frusta in modo da montare appena la vostra crema. Quando gli gnocchi sono pronti tirateli su ed adagiateli nei piatti, condite con la salsa e con una spolverata di pepe nero. La mia scelta é caduta su&lt;a href="http://www.amazon.co.uk/Falling-Cloudberries-World-Family-Recipes/dp/1740453646"&gt; "Falling Cloudberries",&lt;/a&gt; innanzitutto perché c'é quel bellissimo sorbetto in copertina ed inoltre ci sono una tale quantità di ricette da tutto il mondo che mi sono fatta intrigare. Comunque ho subito provato la ricetta del suo pollo all'origano e limone, una vera delizia. Naturalmente l'assunto è che il pollo sia ruspante.&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;Ingredienti&lt;/span&gt; per 2-3 persone&lt;div&gt;1 pollo da 900 grammi circa, 2 cucchiai di olio evo, 50 gr di burro, il succo di 2 limoni, 1 cucchiaio di origano secco.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE&lt;/span&gt;&lt;/div&gt;&lt;div&gt;Scaldare l'olio,un pizzico di sale e 30 gr di burro in una padella, aggiungere il pollo schiacciato, farlo dorare per bene su tutte e due i lati e portarlo a metà cottura (circa 15 minuti). Prendere una teglia da forno e rivestirla di carta da forno, spolverarla con metà succo di limone, il rimanente burro, parte dell'origano, un pizzico di sale ed adagiarvi sopra il pollo. Versare il restante succo di limone, origano e 125 ml di acqua e mettere in forno bollente a 250 gradi fino a cottura completa. A me piacciono incredibilmente ma solo fritte. E con lo stesso impasto ci faccio anche i tortelli ripieni di visciole, crema o ancora nutella.&lt;div&gt;Eccovi la ricetta semplice, veloce e golosissima!&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;ingredienti&lt;/span&gt;: 150gr di farina, 1 uovo, 20 gr di burro fuso, mezzo cucchiaio di zucchero, la scorza di mezza arancia non trattata ed il suo succo.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE&lt;/span&gt;&lt;/div&gt;&lt;div&gt;mettete tutti gli ingredienti nell'impastatrice con la frusta piatta ed amalgamate fino a quando avrete ottenuto un impasto liscio ed elastico. Poi tiratelo con il mattarello o con la macchinetta per la pasta fino a raggiungere uno spessore di 3 mm ( a me piacciono sottili). Infine tagliate tanti piccoli nastri -per i crostoli - e tanti quadrati per i tortelli. Insomma qualunque dolce io faccia tra quelli descritti in questo magnifico libro riesce in modo superbo. Ed io non sono un'amante né del fare i dolci né del mangiarli, però devo confessarvi che mi piace avere per colazione un dolce fatto in casa. Insomma alzarmi con una bella coccola aiuta sempre la giornata! e quindi ora deciso di provare praticamente tutti i dolci riportati in questo libro. Ragazzi miei non ho le foto perché la mia macchina si é rotta ed é in riparazione, pertanto per ora se volete vi accontentate della semplice ricetta. A proposito lo sapevate che nell'impasto di questa sublime torta c'é una mela grattugiata?&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI &lt;/span&gt;( per uno stampo da 26 cm): 200 gr di burro, 100 gr di zucchero, 6 tuorli d'uovo, 150 gr di farina di grano saraceno, 30 grammi di frumina, 150 gr di farina di nocciole, 1 mela golden grattata, 1 bustina di lievito, 6 albumi+100 gr di zucchero&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE&lt;/span&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;montare il burro (tirato fuori dal frigo 2 ore prima) con lo zucchero fino ad ottenere una crema spumosa, aggiungere i tuorli uno per volta ed amalgamare ancora con la frusta. Infine aggiungere le farine e la frumina con il lievito. A parte montare gli albumi con i 100 gr di zucchero a neve fermissima ed una volta pronti incorporarli gradualmente all'impasto. A questo punto imburrare ed infarinare lo stampo, versarci la torta e farla cuocere a 180 gradi per 40 minuti circa. Una volta cotta lasciarla freddare e con l'aiuto del filo tagliarla a metà e farcirla con la marmellata di mirtilli rossi. Quando vado in montagna prendo spesso la loro crostata di albicocche perché mi piace enormemente e così con l'acquisto di questo libro ho provato a rifarla e vi devo dire che il risultato é stato buonissimo! complice anche l'aver usato una marmellata acquistata a Vipiteno che profumava perfettamente di albicocca di montagna!&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI&lt;/span&gt;: 250 gr di farina autolievitante, 100 gr di burro di montagna, 75 gra di zucchero, 1 uovo, 1,5 cucchiai di latte, 1 bustina di vaniglia, scorza di limone grattugiata (io non l'ho messa).&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE&lt;/span&gt;: lavorate tutti gli ingredienti insieme fino a quando il burro non sarà stato completamente assorbito, avvolgete poi la frolla nella pellicola e fatela riposare per 30 minuti in frigo.&lt;/div&gt;&lt;div&gt;Stendete l'impasto con il mattarello dello spessore di circa 2cm, spalmatevi sopra la marmellata di albicocche (con i pezzi), circa 200 grammi, e coprite con le striscioline di frolla.&lt;/div&gt;&lt;div&gt;Cuocete in forno caldo a 160 gradi per circa 40 minuti.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="blogger-post-footer"&gt;&lt;img width='1' height='1' src='https://blogger.googleusercontent.com/tracker/5350641671335675295-281918501495461263?l=cuoca-a-domicilio.blogspot.com' alt='' /&gt;&lt;/div&gt;

Questo nostro bel paese dopo aver toccato il fondo sia da un punto di vista della cultura tout court sia da quello della dignità forse si sta preparando alla risalita, ed io lo spero perché prima d'ora ho provato imbarazzo nel sentirmi italiana.&lt;div&gt;Comunque consoliamoci e rinfranchiamoci anche con una bella torta rustica, la pasta brisée l'ho presa dal libro di Trish Deseine ma, sinceramente, l'ho rimodulata perché troppo burrosa.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI&lt;/span&gt;: 250 grammi di farina 00, 125 grammi di burro salato freddo (io 80), 3 cucchiai di acqua ghiacciata (io 7), per il RIPIENO: 3 carciofi, 80 grammi di prosciutto cotto affumicato, besciamella - in questo caso va bene anche quella pronta -,4 cucchiai di grana, 2 tazzine di latte. sale e pepe.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE:&lt;/span&gt;&lt;/div&gt;&lt;div&gt;per prima cosa preparate la frolla mettendo tutti gli ingredienti nell'impastatrice con la frusta piatta, una volta pronta avvolgetela nella pellicola e fatela riposare per 30 minuti in frigo. Nel frattempo pulite i carciofi e tagliateli a fettine sottili, metteteli in una padella con un filo di olio, il sale ed il latte e portate a cottura a fiamma medio bassa (ci vorranno circa 10 minuti). Lasciateli intiepidire e poi mescolateli con la besciamella, il grana ed il prosciutto cotto a dadini. Infine dividete la brisée in due e stendetela piuttosto sottile, poi adagiate un disco sul fondo di uno stampo da 18 cm, versateci dentro il ripieno e coprite con l'altro disco. A questo punto dovete sigillare bene i bordi e praticare delle incisioni sulla superficie (tipo camino), se volete spennellate con un uovo sbattuto insieme ad un filo di latte ed infornate a 180 gradi per 40 minuti circa.&lt;/div&gt;&lt;div&gt;NOTA: per me le torte rustiche sono sempre state un modo goloso per "far fuori" i fondi di formaggi e salumi del frigorifero per cui divertitevi a combinarli nel modo che più vi piacciono insieme alle verdure!&lt;/div&gt;&lt;div class="blogger-post-footer"&gt;&lt;img width='1' height='1' src='https://blogger.googleusercontent.com/tracker/5350641671335675295-634818722205976087?l=cuoca-a-domicilio.blogspot.com' alt='' /&gt;&lt;/div&gt;

E proprio guardando tra le loro ultime pubblicazioni ho trovato questo volume "Dolci Dolomiti" carico di leccornie. Ora io sono sempre perplessa dai libri di ricette italiani sui dolci perché spesso non sono validissimi. Mi spiego meglio: o sono troppo complicati ( per addetti ai lavori) oppure le dosi non sono corrette al grammo e quindi vanno sempre un pochino rimesse a posto. Invece questo é stato una vera rivelazione, sto provando diverse ricette e finora sono tutte perfette! quindi comincio con i Buchtlen che trovo stratosferici per bontà e morbidezza. Si tratta di una pasta lievitata leggera adatta ad essere farcita sia con la marmellata di albicocche sia con gli speculos in versione spread o ancora con la nutella! a voi la scelta me non sarà facile!&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;INGREDIENTI&lt;/span&gt;&lt;/div&gt;&lt;div&gt;per 12 &lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;buchteln&lt;/span&gt;: 25 gr di lievito di birra,40 gr di zucchero,100 ml di latte tiepido, 2 uova bio, 1 bustina di vaniglia, 1 cucchiaino di scorza di arancia grattata, 2 cucchiai di rum, 300 gr di farina 00 bio, 40 gr di burro fuso, 1 pizzico di sale, farcitura a piacere.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE:&lt;/span&gt; in una ciotola mescolate il lievito con il latte e lo zucchero e fatelo riposare in luogo caldo coperto per 15 minuti.&lt;/div&gt;&lt;div&gt;Mescolare le uova, la vaniglia, la scorza di arancia ed il rum per qualche minuto, in modo che si scaldino. A questo punto unire la farina, la biga, il burro fuso ed il pizzico di sale e impastare fino a quando si formeranno delle bolle. Coprire a far riposare per almeno 30 minuti. (Io avevo tempo e l'ho lasciato a lievitare per 3 ore).&lt;/div&gt;&lt;div&gt;Con le mani formate delle palline, schiacciatele bene, riempitele con la marmellata e richiudetele mettendo la parte della chiusura verso il basso. Adagiare  i vostri Buchteln su una pirofila con la carta da forno, spennellarli con del burro liquido e farli riposrae ancora 15 minuti. Ma ad essere sincera vi devo confessare che le ha preparate mio marito. Lui si diverte a sperimentare ricette nuove e tra l'altro gli piace fare la pasta fresca ripiena. Quindi domenica si é messo in cucina e ci ha preparato questo delizioso primo piatto. Anzi no delizioso ma davvero fotonico!&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;MEZZELUNE RIPIENE DI PATATE&lt;/span&gt;&lt;/div&gt;&lt;div&gt;Ingredienti per 6 persone: per la pasta 250 grammi di farina 0, 1 uovo, mezzo bicchiere di latte (100ml), 1 cucchiaio di olio evo, sale. Per il ripieno: 500 gr di patate a pasta gialla, un porro piccolo, 65 grammi di burro, 1 uovo, formaggio di malga (la quantità non é specificata per cui fate a gusto!), panna per condire, sale e pepe.&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color:#FF0000;"&gt;PREPARAZIONE:&lt;/span&gt;&lt;/div&gt;&lt;div&gt;lessate le patate e schiacciatele, nel frattempo fate appassire il porro con il burro, il sale ed un pizzico di pepe ed unitelo alle patate. A questo punto aggiungete anche il formaggio a tocchetti, l'uovo ed amalgamate il tutto in modo da ottenere un battuto. Preparate la pasta lavorando nell'impastatrice tutti gli ingredienti fino a quando avrete raggiunto un impasto elastico. Mi raccomando stendete subito la pasta, non fatela riposare perché si tratta di una sfoglia piuttosto asciutta. Comunque se usate la macchina per tirare la pasta arrivate al numero 4. Poi con un coppapasta o con un bicchiere ricavate diversi cerchi, riempiteli con un cucchiaino di battuto e chiudeteli a mezzaluna ripassando i bordi con i rembi della forchetta. Se vedete che la pasta si asciuga troppo sui bordi allora inumiditevi con l'acqua le dita e pressate bene per chiuderla.
