Summer pasta with Lawry's and Giveaway!

Since summer time is upon us I love quick and easy meals. I created this simple pasta dish that is fairly light and so EASY to make using Lawry's seasonings.

I started by marinating 1/4 pounds of medium size shrimp in a quarter cup of Lawry's Herb & White Wine marinade. This marinade reminds me of an Italian pasta salad flavor and at another point in the summer I'll probably use it in a cold pasta salad. On the bottle it says it is a 30 minute marinade so I marinaded the shrimp while sauteing the other ingredients.

While the 3 pepper and onion mix were cooking (frozen, so no chopping!) I cooked the MaiFun Brown Rice noodles. They only take 2-4 minutes to cook! After the veggies started to soften, I added the marinated shrimp. While that cooked I added 1/4 cup of veggie broth to the left over marinade and added it to the shrimp and veggies. At this point I drained the noodles, placed them in a bowl and added the shrimp!

Waiting for a New Serta Mattress....

I’ve had my current mattress for almost 10 years. That is about 2 years past the lifetime of a coil mattress and I. Can. Tell. For a couple of years springs have been hitting me in the back and I toss and turn trying to get a good night of rest. Although it looks perfectly fine on the outside, laying on it tells the real story. So, earlier this year I decided that not only would I buy a new mattress but I’d also buy a new frame because again, although my bed looks pretty it is on it’s last legs. Literally! I have had to pick it up off the floor a couple of times after sitting on it the wrong way and knocking a leg off. Frustrating? Yes!

Shortly after I made the decision to invest in a new bed and mattress I received an email asking if I was interested in working with Serta. Honestly I didn’t read the entire thing, all I could see was NEW MATTRESS and I immediately responded with a resounding YES! Although I have been blessed with opportunities to work on many great campaigns with different companies, this particular one literally seems like manna from Heaven!

I am eagerly awaiting my new mattress - so eager in fact, that before I’d even signed my contract I went and tried out several Serta beds on my own. This weekend I plan on actually having a personal consultation, choosing a mattress and then waiting two weeks for delivery. If you didn’t know (I didn’t) Serta makes all of the mattress to order! So my new bed will be made exclusively for me! I know I will be choosing a bed from the iComfort line....I’ll tell you more about it when it arrives but can you say “massage and adjustable” three times fast? Yes. I am anticipating hours of rest and relaxation in the near future.

Happy Birthday Big Boy!

I can remember it like yesterday....waking up at 5AM in the morning, having final discussions about your name before driving off to the hospital. Once arriving I was scolded by the hospital staff for being late but I just smiled and laughed it off because being ten minutes late was not going to hinder your "on time" arrival. As I suspected, I sat around doing nothing but anticipating your birth for at least a half-hour before being prepped for surgery. I moved a bit during my spinal block (don't do this at home kids) and nearly gave the anesthesiologist a heart attack. But no problems and at 7:31, 5 years ago today I gave birth to you, my bouncing baby boy. Once I heard your cry I knew all was well in my world!

Happy 5th birthday birthday big boy!

I cannot wait to see what the next year has in store for us!!!
